Primary Objectives: Cleanliness and Appeal

The Dining Zone should create and maintain a great customer impression. In order to produce an inviting atmosphere for guests, and be easy to maintain during operation, Unger recommends using blue-coloured SmartColor™ tools. SmartColor™ tools not only clean effectively, but will create a visually intuitive cleaning procedure for employees.

Primary Objectives: Cleaning Safety and Efficiency

The Kitchen Zone is a fast-paced area that needs to run efficiently. In order to establish safe cleaning practices and reduce the potenti-al of cross-contamination that can lead to food-borne illness, Unger recommends using green-colored SmartColor™ tools. SmartColor™ tools are ergonomic, efficient and visually coded.

Primary Objectives: Safety and Efficiency

The Dishwashing Zone is an area which focuses on cleanliness and efficiency. In order to establish safe cleaning practices, Unger recommends using yellow-coloured SmartColor™ tools. SmartColor™ tools, used in conjunction with the aluminum Hold Up/Hang Up storage racks, provide an organized cleaning solution.

Primary Objectives: Safety and Sanitation

The Washroom Zone needs to be a safe, clean atmosphere that promotes customer satisfaction. In order to make the Washroom Zone a “no touch” area that is also clean, bright and odour free, Unger recommends using red-coloured SmartColor™ tools. SmartColor™ tools clean effectively and resist bacteria, making the washroom easy-to-clean and promoting employee and customer satisfaction.

Zone Cleaning with the SmartColor™ System

The spread of microorganisms through cross-contamination is a major food safety concern. To assist your staff in maintaining HACCP principles Unger has developed the SmartColor™ System. This system encourages users to designate a distinct colour and zone for cleaning tools. The SmartColor™ System provides an instant visual signal to employees indicating what tools to specify, use, and store in each cleaning zone.

• Bacteria Control - SmartColor™ products are manufactured with synthetic materials that resist bacteria absorption.

• Easy Cleaning – All tools have a smooth finish that resists food and soil.

• Sustainability – Unger’s quality tools are manufactured to provide years of worry-free service, reducing costs and producing safer, more comprehensive cleaning results.

• Reduced Cross Contamination – Visual coding with the Zone system helps employees intuitively identify where to use and store tools, deterring the spreading of bacteria from area to area.

Microfibre is one of the most revolutionary cleaning technologies to be developed in recent years. Created by repeatedly splitting cloth fibres during the manufacturing process, a super absorbent microfibre fabric is produced that is 30 times finer than cotton. The microfibre cloth surface is packed with filaments that trap soil, remove bacteria, and absorb moisture, creating an optimal cleaning solution for just about any surface.

Microfibre

Dual Bucket And Side Press WringerThe Unger patented Dual Bucket design creates a water separationsystem that reduces cross-contamination and improves cleaningefficiency. The soiled cleaner is directed into the high-profilerear compartment when using the side press wringer. The frontcompartment keeps the fresh cleaning solution free of dirt and oil.

• Improves cleaning effectiveness and efficiency.

• Keeps mops cleaner, resulting in increased oil pick-up and faster drying floors.

• Ergonomic design reduces user back strain.

• Colour coded to reduce cross-contamination.

• Easy to sanitize.

The HACCP system, „Hazard Analysis Critical Control Point“ is a security concept for the implementation of the legal requirements for food safety. An important goal for the hygienic cleaning in kitchens are perfect surfaces clean and slip-resistant floors.Legal Basis: EU Regulation 852 / 2004 LMHV (national regulation on food hygiene).

Conduct A Hazard AnalysisDefine company-specific risks. Examples:1. Grease and oil are tenacious, slippery dirt films.2. Food waste or fluid collections form a breeding ground for germs.3. Sanitary facilities are exposed to a high bacterial load.4. In case of insufficient cleaning in many areas, it can lead to cross-contamination.5. Cross-divisional use of cleaning utensils.

Determine The Critical Control Points - CCPs that you can influence by appropriate measuresCCP 1 - Grease and oily dirt.CCP 2 - Contamination by inadequate removal of food residues.CCP 3 - High bacterial load.CCP 4 - Risk of cross-contamination.CCP 5 - Incorrect assignment of cleaning tools.

Fixing measurements for the targeted influence of control points:Examples:CCP 1: Fat and oily soilage: grease and oily dirt must be removed immediately. The soil in the production area must be cleaned thoroughly every day several times if necessary. All floor surfaces must be cleaned thoroughly after working hours and disinfected weekly.CCP 4: Risk of cross-contamination measure: tables in the guest area should be cleaned immediately and disinfected if necessary. Door handles, switches and controls are included in the daily cleaning and disinfection.CCP 5: Incorrect assignment of cleaning tools.Measurements:Cleaning tools are available only at the designated places to store and Unger colour coding is used. In the Kitchen cleaning cloths are used exclusively in the colour green, the colour blue in the guest area and sanitary facilities only yellow and red.

Create a disinfection plan based on the action requiredGather all relevant areas of hygiene in their operations. Create a plan for each area (Kitchen, sanitary facilities, guest room).•Setthecolourcodingforthedifferentareas.•Theplanmustincludethefollowinginformation:•Whatisclean?(Workspace,equipment.).•Whenmustbecleaned?(Daily,afteruse).•What?(Cleaningproduct=productname).•How?(Spraying,wiping,letexpose).•Who?(Whodoesthework?).

Ongoing review of the cleaning system:Our objectives are flawless production areas and a pleasing ambience for the guests.Set up a checklist:Example:•Arethecleaningmethodsappliedcorrectly?•Isthecolour-codingexceuted?•Arecleaningtoolscleanedafteruseaccordingly?•Iscleaningequipmentkeptseparatefromfood?•Aretheexposuretimeofdisinfectantskept?•Arenewemployeestrainedinthecleaningsystem?

Verification Procedures:Regularly check the quality of cleaning work•Arethefloorsslipresistant?•Microbiologicalexaminationofgermreduction.•Arequalitymaterialsmaintainedinthehostspace?•Arethedisplaycountersclean, eveninslantedlight?

Documentation:Desirable is any kind of a protocol or checklist system, which is suitable to the actual and desired state to be understood. These documents should be available during inspections. Examined are the implementation of operations and the current operation. The documents provide so the proof that the legal requirements are met. HACCP-related proof documents have a retention period of 2 years.

Conventional mops and rags leave dirt and moisture in grout lines and surface pores.

Unger microfibre absorbs soil and excess water on floors, grout lines, and surfaces.

• Remove up to 96% surface debris and bacteria.*

• Absorb 6x their weight in liquids, making clean-up, rinsing, and water conservation easy.

• 4 grades of microfibre withstand between 500 and 1500 commercial washing cycles.

• Colour coded to provide easy visual identification and prevent cross-contamination.

• Microfibre flat mops are lightweight and can swivel easily to clean baseboards.

• Microfibre string mops offer superior liquid and bacteria absorption for traditional kitchen mopping.
