T he North Cape Coastal Drive is a smorgasbord of classic Island scenery, Acadian, Celtic and Aboriginal culture, small-hall to large-

scale entertainment and classic Island delicacies, featuring of course, world-famous oysters which have earned us the nickname The Canadian Oyster Coast. Life along the drive is very sea-centric, evoked in dozens of place names, attractions and community festivals. This is the Island coast you can be up close and personal with: red-clay roads that lead to secret coves; boats adorned with locally-imagined names like Water Tight Alibi; the City of Summerside’s

expansive Baywalk Coastal Trail; and people who share with their ancestors a love for the sea and a deep appreciation for the richness it brings to their lives.

RâpureLocal Recipes

1 ¼ cup of cubed pork10 lbs potatoes2 tbsp salt1 tsp summer savory¼ cup lard1 cup peeled and cooked potatoes1 large onion, finely chopped

In a frying pan put lard and cubed pork, cook until browned. Peel and grate potatoes. Squeeze out excess liquid. Add cooked potatoes, onion, summer savory and salt to taste. Mix cooked pork, undrained, over the mixture and mix. Cook in a greased pan 9” x 13” pan for 20 min at 375°F. Lower heat to 325°F and cook for 2 hours.

Quick Chocolate - Potato Fudge3 squares chocolate (2 sweet and 1 unsweetened)

3 tbsp. butter or margarine

1/3 cup mashed potato

1/8 tsp. salt1 tsp. vanilla4 cups sifted icing sugar (approximate)

Melt chocolate and butter over hot water. Add the

mashed potato, salt and vanilla. Blend in sugar.

Knead until smooth. Shape into a long roll about

1 inch in diameter. Cool and cut into slices.

Variations: Try 3 ounces of semi-sweet chocolate

chips instead of the squares. You can also use

butterscotch, peanut butter or chocolate mint.

1 tbsp. Mozzarella cheese

Shuck oysters and drain.Place on a baking sheet in a bed of

course salt.Top oysters with the list of ingredients

except parsley.Place under broiler or on BBQ grill

for approx 3 minutes.Sprinkle with parsley.

4 strips of bacon cut up into pieces1 tbsp. butter1 garlic clove chopped3 cups loosely packed fresh spinach1/2 red onion chopped 2 oz. Sambuca or other anise- flavored liqueurHot pepper sauce to taste1/4 cup of heavy cream (34%)1 Roma tomato small diced1/2 cup chopped fresh lobster Salt & Pepper to taste24 fresh Cascumpec Bay oysters, shucked, bottom shells reserved1/4 cup freshly grated Parmesan cheese

In a medium sized sauce pan render the bacon till almost crispy then add in the butter, red onion and chopped garlic. Sautee until onion is soft then add in the spinach and hot pepper sauce and stir. Carefully add in the sambuca and flambé. Once the flames have gone down add in heavy cream and stir. Let the cream simmer until it becomes thick. Remove from heat and puree mixture in a blender or food processor. Transfer to a mixing bowl and fold in the lobster and tomato and season with salt and pepper. Top each oyster with the mixture about a tsp. for each and then cover with parmesan cheese. Oyster Apple Soup (Serves 8 portions)

Local Recipes

200 g of mushrooms (sliced)450 g of onions (sliced)One large (or three smaller) local carrot (peeled/sliced)

2 cloves of garlic (slivered finely)

50 g of butter3 local apples such as Cortland, MacIntosh, etc. (peeled and sliced)

6 medium-large potatoes (peeled and sliced)

White wine or brandy (optional)

Pepper, salt2.5 - 3 litres of waterOne cube of chicken bouillon (optional)

One head of fresh cabbage (or any white/green cabbage)

Thyme and green onion300 ml of whipping cream16 P.E.I. Oysters (shucked and reserved with their juices)

Warm a large soup pot to medium heat, melting the butter until it has foamed and begun to brown.Add mushroom, onion, carrot and garlic to the pot and allow to cook on medium heat until they begin to get translucent and just begin to brown. Salt and pepper to begin the seasoning process.Add a splash of wine or brandy and stir a bit to scrape up any browned bits of onion.Add the water, potatoes, apples and bouillon cube if you are using one.Bring the pot to a rolling boil and cook until the potatoes are fully cooked.Meanwhile, finely slice the cabbage avoiding the core.Add the cabbage and the thyme to the boiling soup, stirring to incorporate. Add the cream and allow to simmer for 5 minutes more, checking the seasoning and adding salt and pepper to your taste. (Remember the salty oysters are still to come!)Finally, add the oysters to the soup and blend it until it is very smooth.Top each serving with some finely sliced green onion and enjoy with good company!FOR A FANCY FLOURISH, WHIP SOME EXTRA CREAM AND ADD A LITTLE FINELY SLICED APPLE, SOME CRACKED BLACK PEPPER AND USE A SMALL DOLLOP TO DECORATE EACH SERVING.

Rustic Apple and Maple TartLocal Recipes

2011 Applelicious Pie Baking Competition Winning Recipe

PASTRY2 ½ cups of all-purpose flour ½ tbsp vinegar½ tsp salt ½ slight beaten egg, (reserve other half for1 cup lard pastry wash)1 ½ tsp b. powder Very cold water to top to half a cup (see directions)

Combine flour, salt and b powder in a large bowl, stir till well combined. Using a pastry blend, blend in lard until mixture resembles coarse crumbs. Slightly beat egg in measuring cup, pour off about half and reserve. Mix in vinegar and top up with water to measure half a cup in total and mix well. Pour over flour mixture. With fork blend until the dough holds together. Form the dough into a ball and flatten into a disc. Wrap in plastic wrap and refrigerate for at least one hour and up to a day. Roll the dough into a 20 inch round disc, approxi-mately 1/8 inch thick. Transfer to pie-plate, leaving a large overhang. (Or make a traditional bottom and top crust.)

FILLING¼ cup ADL unsalted butter 2 tbsp. lemon juice1 cup maple syrup 3 tbsp. all-purpose flour3 tbsp. cornstarch 1 tsp. ground cinnamon2 tbsp. cold water ¼ tsp. ground nutmeg¼ tsp. saltApproximately 3 lbs. Paula Red and Jersey Mac mix, or enough to fill pie shell (Arlington Orchard)

Place the butter and maple syrup together in a medium-sized saucepan over medium heat. Place the cornstarch in a small bowl. Add the cold water, stir to make a paste and add to the maple syrup mixture. Stirring constantly, slowly bring the mixture to a boil, reduce heat and simmer for 4 to 5 minutes or until mixture thickens. Cool to lukewarm before continuing. Meanwhile place the apples in a large bowl and pour in the lemon juice. Mix the flour, cinnamon, nutmeg and salt. Sprinkle over the apples and toss until the apples are coated with the mixture. Pour the cooled syrup mixture over the apples and toss well to coat the apples. Preheat oven to 375°F. (190°C). Spoon the apple mixture over into the prepared shell. Fold the overhanging dough over the apples.

PASTRY WASHMix the reserved egg and 1 tbsp. of ADL cream or milk in a small bowl. Brush the pastry mix over the dough. (Course white sugar may be sprinkled on dough at this time if desired). Bake until the crust is golden brown and the filling is set, approximately 1 hour and 15 minutes. If rust browns too quickly, place tin foil loosely over the pie.

O yster-shucking is a connoisseur’s art form, an entertaining,

conversational show in the hands of the most nimble and dexterous shuckers. World champions you should know, have come from Western Prince Edward Island!

• Hold oyster in the palm of your hand, or hold tightly against a hard surface with the cup or deep side down.

• Protect your hand by wearing a heavy-duty rubber glove or folded kitchen towel.

• Keep the bottom shell level to prevent spilling liquor.

• Locate the hinge and insert a knife between the shells by gently working it back and forth.

• When the knife is well in, twist back and forth to open.

• Slide the knife across the top of the shell to cut the muscle and run under the body of the oyster.

Steaming Lobsters

Use seawater or salted water. In a large pot, bring about 2 inches of water to a rolling boil over high heat. Drop in the live lobsters, one at a time. Cover and

return to a boil as quickly as possible. When water returns to a boil, cook approximately 18 minutes for a 1- to 1¼-pound hard-shell lobster and 20 minutes for a 1½-pound hard-shell lobster. If the lobster has a soft shell, reduce the cooking time by 3 minutes. Lobsters will turn bright red when cooked.
