Our July Beach Blast was really a lot of fun! Thanks to the Social Committee for the great
decorations. And how about that “Sundae Bar”? It was really fantastic. Again I want to thank all
the Members and their guests who attended to make this a fun evening.
Coming up Saturday, August 16, 2014 is our “Speakeasy Night”. Ok, ladies and gents – here is your
chance to dress up like Gangsters and Flappers. (Please check all guns at the door!!!) It’s going to
be an exciting night filled with surprises. Get your tickets now because this event will sell out fast.
On to business: The Board and I are working hard to move this club forward and we need your
help. Please try and come to our General Membership meetings. We need your votes to pass
important issues. Our Chef Michael always has a delicious meal prepared before the meetings, so
please join us. We had 20 new members join this month. Wow! This has to be a record. The
board and I would like to thank you and Welcome all of you to “The Best Club on the Strip”.
Something else new is our very own Facebook page and an updated website. Special thanks to our
Member Amy Higgs for the Facebook page and Joe Sermarini and Sandy Ostresh for the website.

Naples
The Italian name is Napoli. The people living there are in English, Neapolitans. Yes, it is an ice cream too. In Italian they are Napolitani, the singular being Napolitano. Many individuals have that as a last name and usually they originate from Naples. Naples is the regional capital of Campania. The city is famous for its rich history, art and cultural aspects to the extent that UNESCO classified it as a world heritage site. Historians believe the city is 2,800 years old. The ancient Greeks founded the city and it was a part of Magna Graecia until the arrival of the Romans. They made Naples a capital for that part of the empire. The Greek name for the city was Neapolis or in English, New City. The town has seen a multitude of cultures and conquerors come and go. It was, as stated a part of Magna Graecia, then the Roman Empire, part of France, part of Spain, part of the Empire of the Saracens. Then it became an independent Kingdom and for a period of time an independent Maritime nation and lastly it became a part of Italy during the unification struggles in the 1860’s. Besides its rich history, it is also famous for its music; cuisine and pizza. The people speak a Neapolitan dialect that is consistent with the dialects of the surrounding area. The bordering provinces are Lazio, Molise, Basilicata, and Puglia. When thinking of Naples the most frequent aspects that comes to mind is Mt. Vesuvius (Monte Vesuvio) and Pompeii. Mt. Vesuvius has erupted many times, (thirty-three since 1800 BC.) The worst one, The Avellino Eruption, occurred that year. Italy has three volcanoes, the aforementioned, Stromboli and Etna, both being on islands and not posing as much a threat to populated areas. Mt Vesuvius, has the honor of being the most dangerous volcano in the world. Not only, because its history of eruptions, but also for the human victimization. Presently, three million people live in the danger zone. The name comes from Greek and refers to the son of Zeus, who is Hercules. In ancient Greek language Hercules works into Vesuvius. Its’ most famous, or noted eruption was the one of AD 79 when its ash covered Pompeii and a number of other towns around its base. This occurrence provided archeologist and historians a wealth of information on how people lived two thousand years ago. Two ancient writers of that time Pliny the Elder and Younger were away from the 'eruption on the other side of the bay, however, Pliny the Elder sailed across the bay to rescue friends, but due to the winds and smoke he was unable to return. He died on the beach trying to make it to his boat. Others with him survived. Historians conjecture he died from a heart attack. The most reliable account of the eruption is from Pliny the Younger (the nephew) who was seventeen years old at the time and subsequently wrote about it. Nearby, of which many people are unaware is the ancient city of Paestum, settled by the Greeks in the 7th century B.C. The local Oscan people and the Greeks lived harmoniously. Its original name was Poseidonia after the Greek god Poseidon. The name is equal to the Roman god Neptune. When Hannibal was raising havoc in the peninsula the citizens of Paestum kept their allegiance to Rome. After the defeat of Hannibal it received special recognition and was able to make its own coinage. The town declined in the middle ages and became overgrown with weeds and vines until 1840 when a new interest in things ancient became popular. The city was uncovered to reveal a number of temples still standing that were built in the 7th Century B.C. Paestum is about fifty miles south of Naples. It is well worth a visit.

Tuscany
Tuscany as a whole both borders on the sea, and has an extensive inland area, which has a different eating tradition from that of the coastal areas. Throughout Tuscany, olive groves and wild herbs are everywhere. Many of the best olive oils produced in Tuscany are reserved for use as a condiment at the table, rather than as an ingredient in cooking in the kitchen. Olive oil has become a symbol of Tuscany and is known as “liquid gold”. “Give me a crust of bread and I’ll prepare you a regal meal” is a good way to describe the Tuscan culinary tradition. Until quite recently, bread was the main food in Tuscany and was considered and treated with almost religious respect; no one would dare to waste it. Not only in poor, but also in wealthy families, it was the housewife’s duty to collect the bread left over from the table. This was because breads tend to be made without salt. Salt used to be very expensive because of a tax on it, so the money-wise Tuscans simply stopped using it. The downside about bread is that without the salt, it doesn't stay fresh as long, so Tuscan breads are often only good the day of their baking. Bread soups are made throughout the region.
Tuscan tradition tends not to combine onions and garlic in the same dish. Butter is mostly used as a condiment at the table, rather than in cooking.
Pasta plays a small role in the diet, but certainly not as big a role as it does in other parts of Italy. Tuscans, however, tend to eat more salads than other Italians, and a good deal of beans, particularly broad beans. The traditional Tuscan method of cooking beans was to put boiled beans in a glass flask with olive oil and garlic, then setting the flask overnight at the side of a gentle dying fire in the hearth so they'd be ready the next day.
Meats and fish tend to be grilled simply over fire. Vegetables are served raw, steamed or briefly sautéed. In Florence, people didn't cook with tomatoes until the late 1600s. Their use until then in Florence was restricted to decorating tables.
Bruschetta You will need 4 six-inch wide slices of Tuscan bread. Toast them, over the coals if possible (though a toaster will work fine if
need be) gently rub them with a cut clove of garlic (you don’t want to overwhelm the oil), then drizzle them with good olive oil.
Season with salt and pepper to taste, cut the slices in half, and serve. Serves 4.
There are lots of variations to bruschetta. Here's one of the tastiest: After rubbing the slices with the garlic, rub them with
a very ripe cut tomato as well (or spread a thin layer of chopped tomatoes seasoned with basil, salt & pepper over the slices).
Then sprinkle with olive oil and season. In addition to being a fine appetizer, this is a traditional merenda, or afternoon snack
Ribollita (Vegetable and bread soup)
Ingredients 300g potatoes (10.5 oz) 200g Swiss chard (7 oz) Thyme
300g Savoy cabbage (10.5 oz) 1 Red Onion 4 Tbsp. extra-virgin Olive Oil
300g black cabbage (kale) (10.5 oz) 3 cloves Garlic Whole Meal Bread, a day or two old
4 ripe tomatoes 2 sticks Celery Chili Pepper
500g fresh cannellini beans (17.5 oz) 2 Carrots Salt
(250g if dried) 2 Zucchini
It is best to cook the beans on their own first, perhaps the day before, as they cook much more slowly than the rest of the
vegetables. Clean, wash, peel and chop all the vegetables and put into a large saucepan. Cover with water and cook for 40
minutes. Remove from the heat and add the cooked beans. Fry the onion with the oil and chili pepper (if liked) in an
earthenware casserole; add the thyme leaves. Cut the bread into cubes and put into the casserole; now pour in the soup and
cook gently for about ten minutes, then leave to stand off the heat.
Before serving, it should be put in the oven to cook again for twenty minutes, with olive oil drizzled on top. You can also
garnish the soup with rings of raw onion before putting it into the oven as, once it is baked, they give a really special flavor to
this favorite classic.

Free Lunch (and Breakfast) programs in our schools. Once
they go home on the weekend, they go without. The
Kiwanis K-Kids of Belle Terre Elementary began a program
they call C.H.O.W. N.O.W.
(Children Hungry on Weekends – Not on my Watch!)
The K-Kids collect Individual Serving size non-perishable
food and drinks which are discreetly packed into
backpacks by teachers and sent home with the children
identified by the school counselors as most at risk.

On Friday nights there will be no more reservations
for a 6 or an 8 top table. We will only reserve
tables for 10 or more. There are only 3 10-top
tables available so this will be on a first come, first
served basis and the majority of the table must be
filled by 5:30 or the table will be unreserved and
open to all members. ALL BANDS will have a table
of 8 only reserved by the stage. Under no
circumstances are they to reserve any more tables.

stage you need to come early and please have
consideration for each other.
