HOW TO USE KNIVES
1. Understand and sign your site specific JSA-029
2.Put mat or cloth underneath correct coloured chopping board to avoid it slipping
3.Select the right sharp knife for the job
4.Utilise the correct PPE (Kevlar glove/FoodSafe glove)
5.Hold food securely when slicing
6.Use correct positioning and technique of the fingers on food being prepared
7.Slice away from the body
8.Clean and sanitise knives before / after and between products
9.If knife falls do not attempt to catch it
10. Carry knives with the blade pointing down
11. Do not put knife in sink and leave to air dry
12. Store knives in toolbox or knife pouch
13. Store with blade to wall and in a safe obvious place
