Douro Region The Douro region of northern Portugal is the home of Port. It takes its name from the Douro river, which flows east to west from the Spanish border to Oporto, where it meets the Atlantic Ocean. Though Douro is best known for its fortified wines, total production here is fairly evenly split between port and table (non-fortified) wines. !The area divides into three sub-regions, each expressing different aspects of Douro’s hot continental climate. Starting at the Spanish border is the arid Douro Superior. This emerging sub-region is covered in terraced vineyards and takes up about 20% of available vineyard land in Douro. !Near the town of Pinhao is Cima Corgo (Upper Corgo), where most high-end vintage port originates. Cima Corgo is the largest of the Douro's three sub-regions, and accounts for almost half of the valley's total wine production. The steep vineyards of Cima Corgo are predominantly composed of schist with sizable granite deposits. Vines nearer the river tend to ripen much earlier than those at higher elevations, meaning that the harvest is often completed in multiple sweeps of the same vineyard. !Baixo Corgo (Lower Corgo) is the most westerly of the sub-regions and is best suited to the production of table wines. The area is cooler and wetter than its neighbors, but also more accessible, meaning that more bulk-wine operations are possible. !Port wine can be made from more than 80 different grape varieties, but in practice the vineyards are dominated by five key varieties; Touriga Nacional, Touriga Franca, Tinta Barroca, Tinto Cao and Tinta Roriz (Tempranillo). Of these, aromatic Touriga Nacional is the most highly regarded, and Touriga Franca the most widely planted. Vineyards tend to be an eclectic cross-section of port grape varieties, often with more than 20 present within a single vineyard. !Douro table wines are typically made from the same grape varieties as their esteemed port cousins, but a number of international varieties have also found a home in the valley. Cabernet Sauvignon, Sauvignon Blanc and Gewurztraminer are among the more common non-native grapes planted here.

Matching food & Douro Region wines !!When pairing food and wine, the goal is combination and balance. The wine shouldn’t overpower the food, nor the food overpower the wine. Think of wine as if it was a seasoning - it should complement the food. !Young Douro whites are great with grilled fish dishes. Try a robalo grelhado (grilled seabass) accompanied by a light salada mista (mixed salad). Shellfish also pairs well, such as sapateira (stone crab) mexilhões (mussels) and ameijoas (clams). You can find plenty of these foods when dining in the city of Porto, the gateway to Douro. !Mature Douro whites are nice with light bacalhau (saltcod) dishes, such as bacalhau cozido com grão (boiled saltcod with chickpeas) or bacalhau assado (roasted saltcod) as well as light frango (chicken) and coelho (rabbit) dishes paired with white sauces. !Rich, earthy intense Douro reds demand a rich, earthy meat. Especially at this time of the year, there’s nothing better than local caça (game meat), such as veado (venison) and javali (wild boar). The Portuguese enjoy making roasts and stews out of game meats, and if you’re lucky to find them accompanied by some local cogumelos silvestres (wild mushrooms), then you’ve won the lottery! Additionally, any roasted or stewed beef (lombo de vaca assada/estufada) is a nice pairing. Mature reds are also lovely with certain types of cheese, such as the locally produced goat cheese. !For the younger, fruitier Douro reds, enjoy them with the Northern dish cabrito assado (roasted kid goat), or cabrito in any form - grelhado (grilled) or estufado/guisado (stewed/braised)! Costoletas de vitela (veal chops) and coelho estufado (stewed rabbit- normally prepared with red wine) are also common and a great pairing with young reds and even some types of bacalhau (saltcod) dishes that are on the heavier side, such as bacalhau com natas (saltcod “potato gratin”), bacalhau à gomes de sá (shredded saltcod baked with onions, potatoes and topped with boiled eggs, olives and parsley) or bacalhau com broa (baked saltcod crusted with a local cornbread). Young reds also pair well with some Portuguese sheep’s milk cheeses.

Alentejo Region Alentejo is a well known, highly respected wine region in eastern Portugal. This hot, dry area is best known for its red wines, the best of which are sold under the and Alentejo DOC (Denominacao de Origem Controlada) title. These wines are typically made from Aragonez (Tempranillo), Castelao, Trincadeira or a rich, ripe, jammy blend of the three. Although famously diverse in its portfolio of wine grapes (navigating the many names and their synonyms is a challenge), Alentejo has not been sluggish to adopt such globally popular varieties as Syrah and Cabernet Sauvignon. One of the most remarkable things about modern Alentejo winemaking is its ability to create a uniquely Alentejano wine style from quintessentially French grape varieties. !Alentejo has been a key center of Portugal's wine renaissance over the past few decades. Although wine production here was once dominated by a handful of government-supported co-operatives, the quantity of premium wine now generated by the region's independent smallholdings is impressive. The European Union, which has been involved in various wine improvement schemes around Europe (most obviously vine-pull schemes in France and Italy), has been quick to provide assistance here. Few in the wine world can be ignorant of the impact that Portuguese wine is now having in the market place, a great deal of which is down to this aid, and the new focus the country's wine industry has adopted. Proudly, Alentejo is leading the charge. Although temporarily suffering from the 'value for money' tag which dogged Chile and its wines for so long, Alentejano wines have already shown their ability to take on the crus of France, the big-name reds of Spain and even the most highly respected DOCG wines of Italy. !How Alentejo's upwards trajectory continues is something only time can tell. Similarly, whether the region's wine fortunes are inextricably linked to those of Portugal as a whole remains to be seen. For now, whatever the case, Alentejo continues to offer some of the best value Old World wines available.

Matching food & Alentejo Region wines !!When pairing food and wine, the goal is combination and balance. The wine shouldn’t overpower the food, nor the food overpower the wine. Think of wine as if it was a seasoning - it should complement the food. !The first and most well known principle, elementary but too simplistic, is to “serve white wines with fish and white meat and red wines with red meat”. It conveys the idea that light dishes or dishes with a delicate flavour, for example grilled fish, poultry and some pasta dishes, normally go well with equally light and light-bodied wines, like white wines. The opposite is also true, since more full-bodied wines go well with heavier dishes. If the dish is greasy then the wine should have a good acidity. It is the attraction of opposites at work in this case. If the dish is acidic, for example some salads, shellfish, with corn, tomato or garlic, and some equally acidic fruits, then the appropriate wine should also have a good acidity. If the dish is salty, like some fish, molluscs and bacalhau (dry salted cod), then a sweeter wine should be served, with a good acidity and low alcoholic content, for example some young and smooth reds and some whites which, in the case of bacalhau, can also be aged in wood. If the dish includes strong sauces, then the sauce should dictate the wine. Smoother white sauces can go well with equally light white wines. Heavier and darker sauces require a red that is just as strong. Sweet deserts or fruits require wines that are just as sweet. Light but hot and highly seasoned oriental dishes go well with aromatic white wines, rosés or young reds, that are just as light, less full-bodied and have a lower alcoholic content. Grilled (rare) red meat dishes go well with red wines with more tannins, which are therefore younger or have spent less time in the barrel. Red meat or game dishes, roasted and with sauces, require stronger red wines, which are more full-bodied, have good tannins and a greater alcoholic content.

Vinho Verde Region The first thing you should know about Portugal's Vinho Verde wine region is that the name, which translates to "green wine," doesn't describe the color of the wine produced here. Instead, the name refers to the tradition of drinking Vinho Verde wines while they are young. !Vinho Verde is the biggest DOC of Portugal, up in the cool, rainy, verdant north west. The vines grow in fertile, granite soils along rivers that flow from the mountains of the east to burst out into the ocean between golden surfing beaches. !The outer boundaries of both the “Vinho Regional” Minho and DOC Vinho Verde are the same, stretching from the River Minho in the north, which forms Portugal’s border with Spain, as far down the coast as the city of Porto (Oporto), but inland extending a further 30km south of the river Douro. !Vinho Verde is still distinguished by its high acidity. Flavour depends on the grape varieties used - floral Loureiro, steely Trajadura, mineral Arinto (known here as Pedernã), creamy and mineral Avesso, and the fine, mineral, subtly fragrant Alvarinho. Azal Branco is hard to ripen and declining in popularity, and in any case tends to get blended with more aromatic grapes. Most white Vinho Verde can be relied upon to be light, crisp and aromatic, often with a light prickle of fizz, sometimes with a touch of sweetness. !The fine Alvarinho grape rules around the towns of Melgaço and Monção in the north, along the Minho river. The climate here is warmer and drier, the maritime influence partially blocked by hills, and the combination of grape and climate makes for richer, fuller, subtly complex wines, made dry and totally still. !The DOC Vinho Verde has also permitted fully sparkling wines since 1999 – a growing and promising venture. And there is a lot of red Vinho Verde, too - dark, high in acidity, low in alcohol, made principally from the late-ripening, red-fleshed Vinhão grape.

Matching food & Vinho Verde Region wines !!When pairing food and wine, the goal is combination and balance. The wine shouldn’t overpower the food, nor the food overpower the wine. Think of wine as if it was a seasoning - it should complement the food. !Vinho Verde White (Light, refreshing, fruity whites)- All of these are wines to drink young, ideally from the latest vintage. Vinho Verde and other light, fresh wines are by definition ideal in summer. Whatever time of year, they make refreshing aperitifs, are perfect with salads (balancing the acidity of the dressing), good with seafood and fish, and a foil for fatty foods or dishes. Try them also with Thai or other South East Asian cuisines. !Vinho Verde White (Full body whites) -Full-bodied whites may be further enriched by fermentation in oak, which adds more fullness and texture, and/or maturation in oak, which may give richness and gentle oaky flavours, or sometimes dominant oak flavour. The oak-ageing of top-of-range Reserve whites from Dão and Lisboa (and occasionally elsewhere) rounds them out to full-bodied status. These are all wines for correspondingly bigger food flavours and richer food. Wine with very obviously oaky flavours are harder to match well with food in general, but they can be a good match for smoked foods. !Vinho Verde Rosé -Lovely, fruity and fresh alternatives to crisp dry whites, most rosés slip down all too easily and you might do well to choose your beach or summer barbecue bottle from the lower end of the alcohol scale. Dry, fruity rosés are good with a whole array of light-flavoured food, including vegetable and salad dishes, thanks to their gentle (even if consciously imperceptible) sweetness. !Vinho Verde Red (Light-bodied, tangy, fruity reds) -Relatively low tannin makes these wines quite easy to pair with food, but the food flavours need to be equally big if they are not to be overcome by the wine. Game, lamb, beef, pork, offal, charcuterie, plainly cooked meats or richly sauced meats, all can work well with this style of red wine. Ripe Touriga Nacional (so long as it is not too heavily oaked) is particularly wonderful with beef, as is Aragonez with lamb, especially lamb flavoured with thyme. !Vinho Verde Red (Robust red) -Robust reds are a fine match also in summer for game, meats, and offal. The tannin of young robust wines seems softer and easier with meats cooked in stews, especially when red wine is an ingredient. Both Douro/Trás-os-Montes wines and Bairrada Baga make good matches with certain cheeses; both are, surprisingly, delicious with fresh, curdy goat’s cheese.

Dão Region !

Surrounded on all sides by mountains, the Dão region is protected both from the direct influence of the continental climate, and from the chill and rains from the ocean. !This is high country, rising from 200 metres above sea level at its lowest spots to 1,000 metres in the Serra da Estrela, the high mountain range to the south and east of the region. High altitude makes for cool nights, slower ripening, good acidity and aroma, and the potential for great elegance in the wines, both red and white. !Dão wines can usually age well. Vineyards, often very small patches of vines, are scattered at various altitudes amidst pine forests. Soils are very poor and granitic, with some schist to the south-west. For red wines, Touriga Nacional and Alfrocheiro perform very well here, with the help of Tinta Roriz (also Known as Aragonez, or, in Spain, Tempranillo), along with the traditional Jaen, Baga, Bastardo and Tinta Pinheira. !Star white grape is the Encruzado, making styles ranging from light, fresh whites to richer, barrel-fermented versions. Supporting white varieties are Bical, Cercial, Malvasia Fina, Rabo de Ovelha and Verdelho.

Palmela, Ribatejo and Tejo Region !

Palmela is a DOC, predominantly focused on red wine, of Portugal's Setubal Peninsula, immediately across the Tagus (Tejo in Portuguese) estuary from the capital city of Lisbon. It was created through a merger of two IPR (Indicacao de Proveniencia Regulamentada) titles: one covered the Serra da Arrabida hills, the other covered the sandy coastal plains east of Palmela township. !The Serra de Arrabida is a compact range of coastal limestone ridges which rises sharply to the west of Palmela and Setubal towns and runs along the coast towards Castelo. The ridges reach 1640ft (500m) within less than a mile of the coast. Vineyards here are planted on steep slopes whose white limestone soils induce a squint in the bright Iberian sunshine. Within this area, 42 square miles (108 square km) is covered by the Parque Natural da Arrabida, founded in 1976. Immediately to the north and east of the park is an area of coastal plains which connect the estuaries of the Tagus and Sado rivers. While these two terroirs produce quite distinct wine styles, they are united under the Palmela banner. !The most important grape variety in the red wines made here is Castelao Frances (known as Periquita in some parts of Portugal). Castelao Frances grapes are also used in rose and sparkling wines.

Port Wines Region Long famous as the source of port wine, the Douro is now also renowned for its fine, rich unfortified wines, both red and white. This is one of the wildest, most mountainous and rugged wine regions of Portugal, cut through in deep twists and turns by the River Douro. Defying gravity on the steep slopes along the banks of the river and its tributaries, the vines are planted in poor, schistous soils. Man has engraved his own contours here – in the centre of the region, the historic, narrow, stone-walled vine terraces have been named a UNESCO World Heritage Site, while elsewhere, modern terraces are wider, buttressed by steep banks of earth.The wine region follows the course of the river down from the Spanish border to a point near the town of Mesão Frio, about 90km up-river from the city of Porto (Oporto). Here the Serra do Marão rises up, protecting the region from the influence of the Atlantic Ocean. Rain falls mainly on the western side of the Marão range, and to a certain extent in the western end of the Douro wine region, but dwindle further up-river, and by the Spanish border conditions are almost desert-like. The Douro region is divided into three sub-regions: from west to east the Baixo Corgo, Cima Corgo and Douro Superior. The fertile, cooler, rainier Baixo Corgo, closest to the Serra do Marão, is the sub region with the most vineyards. The Cima Corgo, including the towns of Pinhão, São João da Pesqueira and Tua, is the heartland of fine port production, also the source of many of today’s fine unfortified wines. The Douro Superior, very cold in winter, infernally hot in summer, is the biggest of the sub-regions (by no means all planted but much planting is underway).The Douro has a huge selection of local grape varieties, and many vineyards of impressive, gnarled old vines that give small yields of rich, complex wine, whether for port or for unfortified wines. Dozens of different grape varieties may be mixed together in these old vineyards. In modern vineyards, vines are planted separately, and five grapes have been declared the top choice for port: Tinta Roriz, Touriga Franca, Touriga Nacional, Tinta Barroca and Tinto Cão. Plantations of the red-juiced, high-acid Sousão, as known as Vinhão elsewhere, have increased recently. Another black grape much planted in older vineyards is Tinta Amarela (as known as Trincadeira). Amongst whites, notable grapes are Gouveio, Malvasia Fina, Moscatel, Rabigato and Viosinho. Some of these, from old, mixed-variety vineyards at high altitudes, are being used for a new generation of dry white wines.

Matching food & Port Wines Region !!!The combination of Vintage Port and Stilton cheese, which has been part of the tradition of enjoying Vintage Port in England since the 18th century, is a classic example. The richness and body of the Vintage Port complements the intensity of the blue cheese, hence creating a perfect Pairing. In recent years, the interest in food and wine pairings has encouraged the creation of a whole series of new Port and food pairings including a more specific approach to cheese, desserts and above all chocolate. Port and chocolate (particularly dark) is a classic pairing that has increased in popularity over the past decade as dark chocolate has become more fashionable. The sweet and full berry flavours of Port complement the sweet, bitter, acidic and fruity flavours of chocolate. Premium Ruby styles (Reserve, LBV and Vintage Ports) pair with dark chocolate desserts, particularly in combination with red fruits, while the Aged Tawnies (10 or 20 year old) combine with chocolates that have a spicy or nutty component. Other successful combinations with Aged Tawnies include dishes such as foie gras, providing a rich nutty alternative to sauternes, as well as presunto (Portuguese cured ham) or Spanish jamon iberico. A classic dessert combination is an Aged Tawny with a crème brûlee. The richness and concentration of flavour in these Tawny Ports, that have been aged in oak barrels for many years, complements the smoky character of the ham and helps to cut through the richness of the foie gras and the crème brûlée. Alongside these more classical Port and Food pairings is the creation by a new generation of top chefs of a some more innovative combinations. These include serving young Vintage Port with fish based dishes such as roasted wrasse and smoked eel, drinking mature Vintages with delicate meat dishes such as braised ox cheek and young venison ribs and offering the 20 and 30 year old Tawnies alongside cod fish or pigeon based dishes. Combinations that are perhaps unfamiliar but clearly demonstrate the complexity and the versatility of the flavours of Port. Today, our understanding of the true potential of pairing Port with Chinese cuisine is still very much in its infancy however a number of successful combinations particularly with Aged Tawnies have been identified including serving 10 Year old Tawny Port with hairy crab or Beijing duck.

Sparkling Wines !

Espumante, pronounced esh-pu-man-te, is the Portuguese version of a sparkling wine. And unlike Cava, produced solely in northern climates, Espumante is not only produced in the northern wet region of Vinho Verde, but also throughout Portugal all the way to the southern region of the Alentejo, known for its extreme temperatures and arid climate. Now, this is where things get tricky. While Spain has one regulating body, DOC Cava, spread across several different political regions, quality Espumante is produced solely in DOC Bairrada, located just south of Vinho Verde. In order for a wine to be certified as a quality Espumante from DOC Bairrada, it must be made in the traditional Champagne (indicating the year of harvest) and stamped with the VEQPRD (Vinho Espumante de Qualidade Produzido em Regiao Determinada) certification. The remainder of the Portuguese sparkling wines may either fall into one of three categories, sparkling wines from a specified set of regions called, VFQPRD (Vinho Frisante de Qualidade Produzido em Regiao Determinada), wine produced under the DOC or IPR classification, called VQPRD (Vinho Frisante de Qualidade Produzido em Regiao Determinada), or your run of the mill table wine called Espumoso. VFQPRD: is a regional sparkling wine made in the traditional champagne, charmat or transfer method in one of the following determined regions: Douro, Ribatejo, Minho, Alentejo or Estremadura. VQPRD: is a sparkling wine that can made by injecting the wine with gas in the traditional champagne, charmat, transfer method anywhere in Portugal. Espumosos: the cheapest and lowest level of sparkling wine, made by injecting the wine with CO2. As for varietals you’ll most often encounter in a Portuguese Espumante, Arinto is most predominate, renowned for elaborating wines with ridiculously high acidity. Other commonly used white varietals include Avesso, Bical, Malvasia, Chardonnay and Fernao Pires, alongside their red counterpart Baga.
