Pomegranate-Mint Fizz
So you didnt make a mint at The Game of Life and retire to
Millionaire Estates? No worries,
you can get a dose of the green stuff here. Refreshing,
colorful, and quick to make, this
cocktail has easy-breezy flavors that all your guests will
love.
About 1 hour before serving, pour the pomegranate juice into
a cocktail pitcher. Rub the mint leaves between the palms of
your
hands for a few seconds and add them to the juice. Stir to
mix
and refrigerate.
Just before serving, add the vodka, seltzer, and simple
syrup
to the pitcher and stir to mix. Half-fill 8 tumblers with ice,
pour
the fizz over (through a small sieve to hold back the mint
leaves, if
desired), and garnish with mint sprigs.
MAKES 8 COCKTAILS
Double or triple all the ingredients, refrigerating the extra to
the refill pitcher as
needed.
Halve all the ingredients.
Combine the pomegranate juice and mint up to 4 hours ahead;
finish just
before serving.
3 cups pure pomegranate juice
14cup loosely packed mint leaves
1 cup currant vodka or other berryvodka
34cup plain seltzer or sparkling
water
14cup simple sugar syrup (page 9)
Mint sprigs, for garnish
