Want a healthy alternative to eating, while still getting your red-meat fix? Well today we have a chef and dietician from PlainSmart, a new weight-management clinic to share a healthy bison recipe with us.

Welcome.

(Anchor) Lindsey, tell us more about bison. Why is bison such an important part of the diet and program at PlainSmart?

(Interviewee)Bison is the leanest protein available that packs a lot of flavor and nutritional benefits. Our weight-management program includes a lot of bison options, such as meatballs, short-ribs, meatloaf, bison Bolognese and much more. We have options with pre-packaged meals or recipes that you can cook at home depending on what fits best for your lifestyle. Today were grilling a lean bison sirloin which is one of our summer recipes.

(Chef seasons the bison with salt and pepper and places it on the grill)

(Anchor) Lindsey, tell us how the health plan is different for PlainSmart other than incorporating bison into the menu?

(Interviewee) We being with a meeting with a registered dietitian, like myself, where we will build a customized nutrition plan based off your needs, goals and lifestyle. Youll also meet with our fitness professionals who will help build a program that fits your lifestyle.

(Anchor) Scott, a chef from PlainSmart develops healthy recipes with the dieticians.

Tell us how long should we grill bison?

(Interviewee) 5-7 minutes on each side. Always remember to let the meat sit for 5 minutes after removing from the grill before slicing.

(Anchor) Scott, do you have any tips on what to look for when buying lean protein like as bison?

(Interviewee) Most grocery stores sell bison, the key is to look for lean meat that is trimmed. We have a store at PlainSmart where we sell bison sirloins, other lean meats and produce.

(Chef removes cooked bison from the grill using tongs and lays on a plate)

(Anchor) You should smell this right now! This salad also looks delicious. Scott, tell us what else youre including in this dish.

(Interviewee) Since were looking to achieve a balanced meal, the bison sirloin is served with a arugula with grilled peaches and caramelized onions topped with gorgonzola and almonds. Its finished off with a sweet balsamic dressing.

Lindsey All of these ingredients can be purchased at our PlainSmart store produce, meats, and pre-packaged meals we make it convenient for people to eat healthy, flavorful meals.

(Chef assembles the plate arugula, onions, peaches, slices of bison sirloin, tops with gorgonzola and almonds and then sprinkles the balsamic dressing on top - - - Anchor will sample the meal on air we will need 2 small made with the salad so we can top them with the warm bison for the anchor to sample)
