- Never operate the oven unattended

- The use of alcohol, prescription or non prescription drugs may impair your ability to properly assemble or safely operate the oven.

- Never operate this oven within 7.5 metres (25 feet) of any flammable liquids.

- Keep the area clear of all flammable liquids, combustible material including but not limited to wood, dry plants and including grass, brush, paper and canvas.

- Use this oven only on a level, stable non-combustible surface like brick, concrete or dirt. Do not use oven on or around any surface that will burn or melt, such as on wooden decks dry grass, wood rails, vinyl or plastic.

- Never use inside an enclosed area such as screen patios, garages, buildings and tents. Keep a minimum clearance of 3 metres (10 feet) from all sides of the oven to all overhead construction and 1 metre (3 feet) from any walls or rails.

- Never operate this oven under any overhead roof covering, awning or overhang.

- Keep your hands, hair and face away from the firebox flame. Do not lean over or into the firebox when lighting or operating the oven. This oven has an open flame. Be careful of loose clothing and hair that could catch fire during operation of the oven.

- Always wear shoes and protective clothing during operation of this oven.

- The oven is HOT while in use and after use. Always wear protective gloves or mitts when operating the oven. Avoid touching hot surfaces at all times.

- Keep CHILDREN AND PETS away from the oven at all times. Do not allow anyone to conduct activities around the oven during or following its use until the unit has cooled.

- Never move the oven when it is in use. Allow the oven to cool below 40°C (115°F) before moving or storing it.

- Never use this oven as a heater.

- Never leave the firebox door open when in operation.

- Never use in or on recreational vehicles and/or boats.

- Never use this product for anything other than its intended purposes. This oven is not intended for commercial use.

- Accessory attachments and cookware not supplied by Hark are not recommended for use.

- Never use glassware, plastic or ceramic cookware in the oven.

- Do not use in windy conditions or days of a Total Fire Ban.

- Do not allow charcoal and or wood to rest on the walls of the firebox. Doing so will greatly reduce the life of the metal finish.

- Only build the fire on top of the fire bricks.

1. PRIOR TO ASSEMBLY

Read all safeguards and instructions before assembling and operating your oven. In order to properly assemble your oven, you will need the following tools (not included):

1. Phillips head screwdriver2. Pliers or 3/8’ & 7/16” wrench

You will also need the help of three to four able-bodied persons to lift the unit once the stand is attached to the oven. The oven is very heavy and must be moved during assembly.

STEP 1:

ATTACH WHEELS TO STAND

Open the box marked “Stand”. Carefully remove all packaging material and lay out all the parts for easy access and identification. Do not discard the carton or packaging until your oven is fully assembled and operating to your satisfaction.

Attach the 4 wheels to the stand. Make sure that you attach the castors with the lock to the same side of the stand. This is important when you liftthe oven upright in step 3.

STEP 2:

ATTACH STAND TO OVEN

Open the box marked “Oven”. Open the end cap which is marked “Open this End”.

With the help of 1-2 people, gently slide oven unit 15cms out of the box and attach the stand onto the pizza oven body using 4 pieces of M8-20 screws.Attach the stand with the locking castors on the same side, closest to the ground.

STEP 3:

STAND UNIT UPRIGHT

Make sure the screws attaching the stand to the pizza oven are done up tightly.

Make sure the castors are locked.

With the help of 3-4 able bodied people, carefully lift the unit upright. Be careful not to place too much weight onto the castors. Slide the cardboard box off the pizza oven.

The oven is extremely heavy. Use caution when moving or lifting the oven to prevent strains or back injuries.

STEP 4:

ATTACH OVEN DOOR HANDLE & HINGES

Attach the oven door handle. Use 2 pieces of M8nuts to secure the handle onto the oven door.

Slide the hinges onto the oven door support brack-ets. The support brackets are already in place and are welded onto the oven door.

STEP 5:

ATTACH OVEN DOOR

Once the hinges are in place secure these onto the oven body using 4 pieces of M6-30 screws and 4 pieces of M6 nuts.

You may need another person to hold the oven door while you fasten it onto the oven body as it is heavy.

STEP 6:

ATTACH FIREBOX LATCH DAMPER AND HANDLE

Attach the damper onto the firebox door by sliding the damper in the back of the firebox door, making sure that it is fitted behind the positioning lugs.

STEP 7:

ATTACH FIREBOX DOOR ONTO PIZZA OVEN

Attach the firebox door onto the pizza oven body by sliding the door supports into the firebox hinges which are welded to the pizza oven.

STEP 8:

ATTACH MESH GUARDS

Attach the side and back protective mesh guards onto the oven body with 16 pieces of M6-12 screws. Attach one section of mesh on the left and right sides and two pieces at the back of the oven.

STEP 6b:

ATTACH FIREBOX LATCH AND HANDLE ONTO THE FIREBOX DOOR

Attach the firebox handle through the firebox and the damper, securing with 2 pieces of M8 nuts to fasten.

Attach Firebox latch onto the firebox door with 1 piece of M6-18 screws and 1 piece of M6 nut.

* NB: Do not over tighten the nuts as the handle must be able to slide easily from side to side, in order to adjust the damper.

STEP 9:

ADD FIRE BRICKS

Place the fire bricks into the fire box. Place 3 pieces at the back, 2 pieces to the right side, 2 pieces to the left side and 10 pieces on the base of the fire box.

STEP 10:

ADD PIZZA STONES

Place the 2 pieces of pizza stone onto the oven floor supports then slide the roast rack onto one of the two supports.

*NB: Only one roast rack provided

STEP 11:

ASSEMBLE FLUE

Attach Flue cover onto upper flue stack with 3pieces of M5-10 screws.

Connect upper flue stack and lower flue stack with 4 pieces of M5-10 screws.

STEP 12:

ATTACH FLUE TO OVEN UNIT

Attach flue stack onto body with 4 pieces of M6-12 screws.

STEP 13:

ATTACH TEMPERATURE GAUGE

The temperature gauge is supplied with a wing nut to lock it into place on the Pizzeria oven. Place the thermometer probe through the hole in front of the oven and secure from inside the oven with the wing nut.

3. OPERATION – BEFORE USE

3.1 LIGHTING THE OVEN

When you are ready to use the Pizzeria oven for cooking, please follow the instructions set outbelow:

- Always wear a BBQ mitt or protective fireproof gloves when lighting and operating your oven.

- Make sure that you have removed any packaging that maybe left over in both the oven and firebox chamber.

- Obtain some small dry wood, no longer than 30cm in length.

- Open the door of the fire box and build the fire on the fire bricks.

- Use some newspaper, firelighters or both to aid with the lighting of the fire.

- Close the firebox door, but leave the sliding baffle fully open to allow oxygen into the fire.

- Open the firebox door occasionally to add some wood or to stoke the fire when required.

- Be careful when you open the firebox door. The firebox has an open flame, be careful of loose clothing and hair that could catch fire during operation of the oven.

- The inside of the oven and firebox will be lightly coated with vegetable oil to protect against rusting during transportation. When you first light the oven you will need it at approximately 180°C /350°F) for around 60 – 90 minutes to cure the inside of the oven. This will burn off any of the oil and also any residue that maybe left over from the manufacturing process.

4. COOKING GUIDE

4.1 HOW TO COOK PIZZAPrior to cooking pizzas, you will need to allow some time to pre-heat your Hark Pizzeria oven to approximately 350°C. Note that pizzas can be cooked in the Pizzeria oven in temperatures ranging from 300°C to 400°C.

It is recommended that when opening and closing the oven and firebox doors, you use a long,

- 1-3 minutes later, use a pizza paddle to remove the pizza from the oven and serve immediately.

- If you are going to cook pizzas over a long period of time, ensure that the flame in the firebox is kept alive by continuing to add wood to the fire, piece by piece.

TIPS FOR COOKING PIZZA

- You will know your pizza is ready when the base is crispy and the pizza topping has melted and is simmering at the surface.

- If your pizza base is burning before the topping is cooked, it may mean that pizza stone is too hot. In this case, it is advisable to first cook the pizza on the roast rack for 1-2 minutes, before placing it on the pizza stone to crisp quickly,

- Note that there will be a variance in cooking times and heat distribution as a result of the type of pizza base used (example dough or precooked pizza bases) as well as the type and thickness of the toppings utilised.

Before cooking, it is crucial to pre-heat the oven. Once you have reached your desired temperature, it is crucial that you maintain this temperature for another 10-15 minutes to allow the temperature to stabilise and the flames to reduce. Once the temperature stabilises, you can then maintain this temperature over time by simply adding one small piece of wood at a time.

Please note that when you open the oven door during the cooking process, the temperature on the gauge may drop slightly. Do not add more wood to the firebox. It is best to close the oven door and wait a few minutes to see if the temperature returns to its previous level. If more heat is required, add one piece of wood at a time until you reach the desired temperature.

4.2 COOKING PIZZAS

The key to producing the best pizzas in the Hark Pizzeria is to obtain HIGH TEMPERATURES & LOW FLAME.

Prior to cooking, you will need to pre-heat your Hark Pizzeria oven to approximately 350°C.

Ideal temperatures for cooking pizzas in the Hark Pizzeria range from 300°C to 350°C.

The time it takes to obtain high temperatures will depend on:− weather conditions, and − the type of wood used.

Next you will need to ensure that flames in the firebox have reduced in order to avoid excessive smoking and burnt pizza bases. Once you have reached your desired temperature, you will need to wait 10-15 minutes to stabilise the temperature and to allow the flames to subside.

It is important to understand that there will be some variance in heat distribution and cooking times resulting from:− the type of pizza base used (fresh dough vs pre-prepared pizza bases), as well as− the type and thickness of the toppings selected.

Cooking Steps

It is recommended that when opening and closing the oven and firebox doors during operation, use always use a long fire-retardant mitt to protect your hands and forearms.

− Open the oven door and use a pizza peel to carefully place the pizza directly onto the stone

− After 2-4 minutes, use a pizza paddle to remove the pizza from the oven and serve immediately. (Or place the pizza in a pan or on a tray and cook on the oven rack for 2-3 minutes. Use a pizza peel to take the pan tray out and place the pizza directly onto the stone for another 1-2 minutes to obtain a crispy base.)

− You will know the pizza is ready when the base is crispy and the pizza topping has melted and is simmering at the surface.

− If you’re going to continue to cook pizzas over a long period of time, ensure that the flame in the firebox is kept alive by continuing to add wood to the fire, one piece at a time.

Trouble shooting

PROBLEM: PIZZA BASE IS BURNING BEFORE THE TOPPING IS COOKED

SOLUTION:

− Allow flame to lower before placing pizza on the stone.

− Allow stone to cool slightly before cooking by reducing the temperature over time.

− Push fire to one side of the firebox and cook on the side of the stone without the flame.

− Alternatively, cook the pizza on the roast rack for 1-2 minutes, before placing on the pizza stone for another minute to obtain a crispy pizza base.

PROBLEM: EXCESSIVE SMOKE

SOLUTION:

− Consider changing the type of wood used

− Ensure wood is dry and free of contaminants

− Use small pieces of wood as large pieces may smother the fire and cause excessive smoking.

− Small sticks work best to maintain a clean burning fire.

4.3 PIZZA RECIPES

If you prefer to make your own pizza dough, here are just two recipes, for Thin Crust Pizza Dough and Basic Pizza Sauce that may be to your liking.

THIN CRUST PIZZA DOUGH RECIPE

[2 Small Pizzas]

Ingredients

225g (1 1/2 cups) Plain Flour, sifted

1 tsp (1/2 x 7g sachet) Dried Yeast

1/2 tsp Salt

185mls (3/4 cup) Water, lukewarm

2 tsp Olive Oil

Method

− Pour sifted Plain Flour, Yeast and Salt into a large bowl and mix well.

− Make a well in the centre and pour the lukewarm Water and Olive Oil in with the dry ingredients.

− Mix thoroughly with a wooden spoon until all the ingredients are combined.

− Use clean hands to knead and bring the dough together in the bowl. Ensure the dough is soft and slightly sticky.

− Turn the dough onto a lightly floured surface and knead with the heel of your hand for approximately 3 minutes, or until the dough is almost smooth

− Lightly coat the inside of a bowl with Olive Oil and roll ball of dough around bowl to coat the surface with the oil to prevent drying.

− Cover with a damp cloth and leave to rest in a warm, dry place for ½ hour.

− Divide the dough into 2 equal portions.

− Roll out each portion on a lightly floured surface and form either a circle or a rectangle

− Prick the flattened dough all over with a fork and cover with your favourite sauce base & topping.

BASIC PIZZA SAUCE RECIPE

Ingredients

1kg Tomatoes, preferably vine-ripened

40ml (2 Tbsp) Extra Virgin Olive Oil

1 Large Onion, chopped

3 Garlic Cloves, crushed

2 Tbsp Basil Leaves, chopped

Method

− Score crossed into the base of the tomatoes. Place in a large bowl, pour over enough boiling water to cover and set aside for 1 minute.

− Drain thoroughly.

− On a chopping board, remove the skin from each tomato. Cut in halves, discard the seeds and the liquid from the tomatoes and chop roughly into small pieces.

− Heat the oil in a large pan, over low heat. Add the onion and fry for 5 minutes until translucent.

− Add the garlic and cook for a two minutes and finally add the tomatoes.

− Bring the mixture to the boil, reduce to a low heat and simmer for 40 minutes. Stir occasionally to avoid burning at the base.

− Season the sauce with salt and pepper and blend once cooled.

− Stir through chopped basil leaves and serve immediately or refrigerate for up to five days.

5. MAINTENANCE 5.1 CLEANING THE OVEN The oven’s roast rack can be cleaned periodically. Do not use abrasive or corrosive products as these could scratch the steel. 5.2 CLEANING THE FIREBOX It is necessary to empty the ash from the firebox on a regular basis. When the oven and firebox are cool use a dustpan and brush to gently remove the ash. 5.3 CARE OF THE PIZZA STONE - The role of the pizza stone is to distribute the heat evenly across the pizza base and to extract moisture so that your pizza base is nice and crispy. - Always wait until the stone is cool before cleaning it. - The pizza stone is porous so never wash it with any type of soap, detergent or oils. Use a damp cloth to remove any remaining food. If you have some stubborn food pieces that remain stuck to the stone, gently remove with a wooden or plastic spatula. Do not use a steel spatula or harsh scrubbing agents as this may damage the pizza stone. - Do not soak your pizza stone in water as it is absorbent and may retain small pockets of water on the inside even if appears dry. This water will expand when heated and may cause the stone to crack. - Always have your pizza stone in the oven when you light the fire and let it gradually heat up. Exposing a cold pizza stone to a hot oven could cause your pizza stone to crack. Never pour cold water or any other liquid on a hot stone. Do not put frozen pizzas onto a hot stone as the difference in temperatures will cause the pizza stone to crack. - Dark stains on a heavily used pizza stone is considered ‘seasoning’ and is desirable. 5.4 STORING THE PIZZA OVEN - Once the Hark Pizzeria has cooled, it is advisable to store the oven in a sheltered position where the unit will remain completely dry. It is strongly recommended that the oven is further protected by securely fastening the Hark Pizzeria Cover over the entire unit. This will help keep you Hark Pizzeria dry and minimise any damage that exposure to outside elements can cause. *NB: Ensure that the oven is completely dry before placing the Hark Pizzeria Cover over the unit to avoid the chance of rust developing on the steel and mildew affecting the cover.
