<p>Pizza Dough and Bread Dough Hydration.Anthony Spinelli. The formula is 60% water to flour ratio. 5% oil to flour ratio. 2% yeast to flour ratio. 2% salt to flour ratio. Example. 80 ounces of flour would ta e 60% water content or 48 ounces of water. 5% oil content would be 4 ounces of oil. 2% yeast would be 1.6 ounces of yeast. 2% salt would be 1.6 ounces of salt. I have been wor ing my dough with this formula for many years, and it has made a super product. If you use a greater percentage of water it will be harder to wor the dough by hand.It will require a mixer. Enjoy this formula and i wish you the best pizza and bread dough.
