THE PERFORMANCE PACT

Performing to PROTEIN BAR® standards is everyone’s job—including during training. This Performance Pact outlines everyone’s responsibility:

TEAM MEMBER AGREEMENT:

• Take responsibility for the effectiveness of my training and performance

• Work hard to stay on track

• Ask for help when needed

TRAINER AGREEMENT:

• Set clear performance expectations

• Provide tools and resources

• Recognize and reward performance

MANAGER AGREEMENT:

• Provide context for training

• Reinforce how the training supports PB’s success

• Help the team member put skills and knowledge to use

TIME FRAME & EXPECTATIONS

Rookies hired for the Team Member position are expected to complete their training in either the Back-of-House or Front-of-House positions within their first 60 days at PROTEIN BAR®. Rookies hired for Team Lead positions and above will follow a custom training plan designed for rapid completion of the basics.

No matter your role, you, your trainers, and your manager will work together to complete your training on time and for strong performance.

If you don’t understand something—speak up. No one will hold it against you. Your leaders and trainers want you to succeed and want you to perform well. If you are feeling frustrated, confused, or haven’t been given clear performance goals—tell them. They’ll work with you to ensure you get it.

The Standards GuideThe Team Guide is your resource for many of the questions that come up during training and throughout the course of your career with PROTEIN BAR®. All of our policies and benefits are outlined in detail here.

Rookie’s GuideThe Rookie’s Guide contains everything you need to know to be successful in the basics at PROTEIN BAR®. It contains information about how and why PROTEIN BAR® got started, our food and what is expected of our team members. It will guide you through your 16 training shifts through readings, activities, and quizzes while giving an overview of each station. You will use your workbook each shift until your basic training is complete.

The Kitchen GuideThe Kitchen Guide walks you through the food preparation process. It is a resource that contains all the recipes for our food, information on how to clean and care for our equipment, and images of what the food should look like.

Station AidsStation Aids are found at each station and are full of useful information to help you make the best food and drinks for our guests. They will guide you through making each menu item so you can focus on quality and speed.

Schedule and Deployment ChartYou can easily find your weekly schedule posted within your location. You can also view your schedule, sign up for text & email notifications, request time off, and swap shifts by logging in at myworkforce.me

The Deployment Chart is posted at each location to help the Manager on Duty (MOD) communicate the position you will be working in during each shift.

Hospitality HighlightsOur weekly Hospitality Highlights are published each Friday and feature the latest Superfan feedback, as well as tips for focusing on hospitality in your restaurant.

The PB® BeetThe “Beet” is the place for the latest PB news. The Beet will publish Monday nights with all the information you need to have a solid and productive week.

OUR HISTORY

While working in Chicago, Matt realized how difficult it was to get a meal on–the–go that supported his goals. With street corners littered with unhealthy fast food, he decided to create something better.

On May 18th, 2009, Matt opened his first restaurant across from Chicago’s Sears Tower (now Willis Tower) where people could escape the doldrums of corporate life to refuel. Guests lined up “at the bar” to order high-protein smoothies and snacks that gave them healthy energy to make it through that day.

As people made PROTEIN BAR® part of their lives, they quickly wanted more. Dedicated to the needs of his guests, Matt worked to expand the menu to include Bar-ritos, bowls, salads, and breakfast made with high-protein ingredients like quinoa and black beans.

Through its innovative menu and amazing hospitality, PROTEIN BAR® gained more and more fans everyday and by 2011 began its expansion. Today, PB® isa staple for people looking for an on–the–go meal that is better for them.

Matt Matros, FounderGrowing up the “fat kid” was not easy for PROTEIN BAR® founder Matt Matros. At the age of eleven, Matt’s father died of a heart attack. Ten years later, Matt realized he was on the same unhealthy path. It was then that Matt decided to drastically improve his life.

By switching to a high-protein diet and leading an active lifestyle, Matt lost 60 pounds.

Our mission is to Change The Way People Eat On The Go. This means our menu, our service, our restaurants, and our work is focused on healthy food that can be served in a quick, engaging way for active, on–the–go people.

If you think back to “the old days”, people used to eat at home most of the time and occasionally would splurge on a meal out, but times have changed. Eating on the go has become a daily necessity. Sadly, at the same time, the available options to eat on the go have become more and more unhealthy. The idea of PROTEIN BAR® sprang from this exact issue. Matt struggled to find places to eat that supported his active, on–the–go lifestyle.

Our focus is on serving healthy food people crave quickly so our Superfans can get back their day. Our menu, our service style, and our restaurants are set up for quality, style, and speed.

As we continue to grow and serve more Superfans, we are changing people’s lives by giving them alternatives that support their active, healthy lives. Whether a long time health nut, someone trying to get on track, or someone just trying to fuel their body, we have them covered!

PROTEIN BAR® food is prepared without compromises. Our ingredients and recipes are both flavorful, craveable, and purposeful. PROTEIN BAR® is food people feel good about eating—and they love to eat it.

Since we believe healthy eating should taste great and fit into an activelifestyle, we focus on the following healthy, flavorful options:

BowlsOur signature bowls start with an organic blend of quinoa

(keen-wah), flax seed, amaranth, and millet. They are then mixed with delicious combinations of fresh produce and house-made

ingredients such as our seasoned black beans.

SaladsOur Super 6 Salad Mix was specifically designed to pack maximum health in each bite through a combination of six nutrient-dense vegetables: spinach, romaine, broccoli, carrots, kale, and purple cabbage. Oh, and don’t forget about our dressings and sauces, many of which are made fresh each day, vegan friendly, and gluten-free.

BAR-ritosOur “Bar-ritos” are packed with high quality proteins such as free-range antibiotic-free chicken and organic tofu, and are wrapped in a low-calorie, whole wheat flax wrap. Not sure what you’re in the mood for? We have a wide variety of BAR-ritos to suit any taste.

Signature Drinks & Cold Pressed JuicesWhether you’re looking for a healthy snack, pre/post workout energy, or detoxifying meal replacement, our Signature Drinks and Cold Pressed Juices can be exactly what you’re looking for. We use only high-quality proteins, ingredients, and milks (dairy/dairy-free) in our Signature Drinks. Our Cold Pressed Juices use only the freshest produce and don’t undergo heat-based pasteurization.

BreakfastFor the most important meal of the day, choose any of our steel-cut oatmeal bowls or fluffy egg scrambles made and a variety of

fresh ingredients that will leave you feeling full for hours.

How Matt does PROTEIN BAR®:“I started everyday with a Millennium Perk with Whey and Almond. With a third of the calories and six times the protein as a frappucino®. It’s the perfect way to get things going. The protein gives me sustained energy and keeps me from having a caffeine crash that I would get from a normal coffee drink.

After a workout, I usually go basic with The Red Line, extra whey, almond milk, and multi-vitamin boost. Dinner time is hard to resist our flavor-packed Buffalo BAR-rito, Southwest Salad, or Quinoa Chicken Chili.”

AllergensWe recognize that allergens can often hinder our food choices. To that end, we take proper care to ensure there is no cross-contamination or potential allergens, including thoroughly cleaning all food prep after a single use and never handling more than one food type at a time. We can also build practically any menu item to adhere to your allergen needs.

Vegan & VegetarianBeing vegan or vegetarian often means you have limited options when it comes to your protein and overall food choices. We recognize that and can make practically any menu item vegetarian or vegan. We also keep veganism in mind when we choose our ingredients. We even stock items specifically for vegans and vegetarians such as vegan cheese, almond milk, and quinoa. And we can put marinated tofu instead of meat in any menu item.

Gluten-freeGluten is the protein found in wheat, barley, and rye, and it has many health benefits. But for some of us, it can be difficult to digest. As such, some people choose to adhere to a gluten-free diet. All of our salads, almost all of our drinks (the ones that do not contain our cocoa malt powder), and bowls (all but those with Spicy Korean Sauce) are gluten-free.

Low-CalorieMost of our menu items are under 600 calories.

We don’t consider ourselves a “health food place”, nor do we think that great tasting food is the playground of those who have given up on their waist line. Food should always be flavorful—and it should usually help sustain life. We like to blend the two together for great tasting food that also packs a nutritional punch. From our in-house dressings to our chef-crafted chili, we put flavor into everything we do.

For shifts longer than 4 hours, team members receive a menu item on the house!

TEAMMEMBER

Rookies are the newest Team Members on the block. Your goal during this time is to get yourself ready to be a Team Member. This is a 60-day provisional period. Rookies are required to finish their basic training during this period.

Team Members can work different positions in the store: front of house (FOH), including register, assembly, drinks, expo, dining room, and back of house (BOH), including kitchen, dish, and delivery. They create Superfans through connection and a hospitality driven guest experience every time.
