• PROCEDURES:

– (3) diet types: Control, Camelina ml (10%), Flaxseed (10%)

– (2) copper levels: 0 ppm or 150 ppm

– Cobb x Avian-48 broilers

– 1-21 days in battery cage

• RESULTS:

– 150 ppm Cu improved BW of Control and Cam birds; not Flax birds

– FC was not different (except Con+Cu)

Sensory Testing Methods

Triangle Test Instructions: You are three samples.

Two of the three are the same, one is different. Taste the samples in the order indicated below and identify the DIFFERENT sample.

Balanced numbers of all six possible serving orders (ABB, BAA, AAB, BBA, ABA & ABA)

Analysis: compare number correct to chance (p=1/3) using binomial distribution

Preparation & Serving Thawed, skinned, deboned thighs

were vacuum packed in plastic bags 1 day before test

Day of test, bags were cooked to 165F in a temp controlled water bath (‘sous-vide’) No oil, fat, salt or other items that might

add or mask flavor were added prior to cooking or serving

15-20g meat cut into ~1cm squares were served warm in lidded Styrofoam cups

Red light was used to reduce any potential color differences

Panelists 59 regular chicken consumers:

Most (49 of 59) consumed chicken at least once a week
