Spring Green Salad

Potato Salad Strawberry Basil Mint Lemonade

Sangria (non-alcoholic)

Ingredients• 8 to 10 cups (about 1 pound) of mixed spring greens• 2 tablespoons finely chopped chives• Kosher salt and freshly ground black pepper• 2 to 3 tablespoons extra virgin olive oil• Juice of 1/2 a lemon

DirectionsWash and dry greens, place in a large bowl. Add chives and season with salt and pepper; drizzle over about 2 tablespoons of olive oil. Toss well to coat. Squeeze lemon juice over the greens and toss again. Taste and adjust seasoning. Serve immediately.

Ingredients• 4 pounds Idaho potatoes• 4 jumbo eggs, hard boiled• 2½ cups mayonnaise• 4 green onions, finely chopped• 3 stalks celery, finely chopped• 1 tablespoon yellow mustard• 1/2 teaspoon freshly ground white pepper• 1 teaspoon kosher salt

DirectionsIn a large pot, add potatoes and water to cover. Bring to a boil and cook until fork tender. Drain and cool. Peel cooked potatoes and cut into small chunks. Put in a very large serving bowl or container. Peel and finely chop hard boiled eggs and add to bowl. Add mayonnaise, green onions, celery, mustard, white pepper and salt. Mix until combined. Cover and chill in the refrigerator for 3 hours before serving.

Ingredients• 3 cups freshly squeezed lemon juice• 1 cup granulated sugar• 2 cups strawberries, hulled and cut in half• 6 basil leaves• 8 mint leaves• 6 cups cold water

DirectionsCombine the lemon juice with the sugar and mix until the sugar has dissolved in a pitcher. Puree the strawberries, mint and basil in a blender until smooth, then add to the pitcher. Mix in the 6 cups of cold water and serve over ice.

Ingredients• 2 cups boiling water• 2 cinnamon sticks• 2 black tea bags (or 2 teaspoons loose-leaf tea in an infuser)• 1/2 cup sugar• 3 cups pomegranate juice• 1 cup freshly squeezed orange juice• 1 cup strawberries, hulled and cut in half• 1 orange, sliced into thin rounds• 1 lemon, sliced into thin rounds• 1 lime, sliced into thin rounds• 1 apple, cored and cut into 1/2-inch chunks• 3 cups carbonated water

DirectionsPour boiling water over tea bags and cinnamon sticks and steep for 5 minutes. Discard tea bags and stir in sugar to dissolve. In a large jar or pitcher, combine tea, cinnamon sticks, pomegranate juice, orange juice, orange, lemon, lime, and apple. Refrigerate for at least 1 hour and preferably overnight. Just before serving, stir in carbonated water. Serve in glasses over ice.

You can use this game to promote the products in the monthly brochure. All you need is a pack of alphabet cards, raffle tickets, and enough brochures for each guest. Every time you hold a letter up, the first person to find a product in your brochure that begins with it, wins a ticket. Make sure every letter you use has at least one product that starts with it. Tell your guests about each product once it is called out. The person with the most tickets at the end of the game wins a product.
