Inflammation is your

body’s protective response

to infection or injury. Yet

this normal response can become

a chronic condition when it occurs

even though there is no threat to

your body. Long-term inflamma-

tion can damage your body tissue

and create disease.

“Inflammation is a key under-

pinning of every disease process,”

writes Jack Challem, personal

nutrition coach and author of

The Inflammation Syndrome.

Furthermore, the dominant diet

in North America consists of pro-

inflammatory foods and drinks

that are high in trans-fats, sug-

ars, and refined carbohydrates.

This low-quality nutrition induces

inflammation and creates a body

environment where disease

thrives. According to Challem,

this inflammation-promoting diet

leads to insulin resistance, high

levels of body fat, high blood

pressure, accelerated aging, and

inflammatory diseases, including

allergies, Alzheimer’s, heart dis-

ease, cancer, and arthritis. Many

experts agree that poor nutrition

depresses the immune system and

opens the door to life-threatening

illnesses.

The unnatural nature of arthritis Inflammation is a major factor in arthritis – joint inflammation. Arthritis

comes in over a 100 different conditions ranging from tennis elbow to crip-

pling rheumatoid arthritis. The most common form is osteoarthritis, which

affects the joints that bear your weight, such as hips, knees, and feet. But it can

also cause pain in your finger and thumb joints. Even though it is classified as a

non-inflammatory arthritis, inflammation is a factor.

The pain of osteoarthritis results from the breakdown and wearing away of

cartilage – a continually remodeled, durable tissue that covers the ends of your

bones. Cartilage is kept slippery by synovial fluid. If you think of your body as

a machine, synovial fluid would be the oil your body needs to keep your move-

able parts in good working order. However, the synovial lining and fluid, which

lubricates your joints and keeps your cartilage smooth, strong, and healthy, can

become inflamed as the disease progresses. If your cartilage degenerates, the

ends of your bones rub together, causing pain.

Osteoarthritis affects one in 8 Americans. Up to 90 percent over the age of 75

are affected by osteoarthritis but it is starting to show up in those much younger –

even children. Whatever your age, osteoarthritis is not a natural fact of life. And

whether the risk factors are dietary, hereditary, injury-induced, or from being

overweight, your actions can help to prevent its onset or relieve its symptoms.

Avoiding the pain of arthritisCommon sense tells us to eat nutritional meals that include several daily serv-

ings of fruits and vegetables, which promote alkalinity. Maintaining an alkaline

body environment is one of your best defenses against inflammatory diseases

like arthritis.

More common sense tells us to exercise regularly. Similar to the modern

diet that lacks many of our essential nutrients for good health, modern life-

styles eliminate the movement that is so necessary to keep your body in shape

and your joints healthy. Sitting in front of computers for work or play is not a

physical workout. You have to find some form of exercise that gets you moving

regularly.

acids that are known to maintain blood

At first he did not notice any great improvements and was ready to

When it comes to The AIM Companies™, some Members use business cards or testimonies

to share information and promote good health. Mr. Hua Te

Su uses the thing he knows best: authentic Chinese cuisine.

When many people think of Chinese food, they picture

the popular Americanized version: fried, greasy dumplings,

buttery noodles, and sugary sauces. The terms “healthy”

and “Chinese cuisine” don’t typically fit together. But Mr.

Su’s secret to a healthier menu is in the barley: the AIM

BarleyLife®, to be specific.

Mr. Su began apprenticing under a Shanghaiese chef in

Taipei at the age of 14. He lived in the restaurant, spoke the

Shanghaiese language, and learned the techniques for making

ancient Shanghaiese cuisine. He and his wife Helen opened

their first Chinese restaurant in Seattle, Washington, in

1990, and they opened up a larger restaurant in Issaquah,

Washington, in 1997.

The search for pure, good nutrition is what led him to

discover the endless benefits of barley. Mr. Su had learned

the extensive nutritional value of barley, and in 1993, he

started looking for a product to use in his dishes. One day,

a neighbor came in to eat and saw Mr. Su working hard at

juicing barley, so she introduced him to AIM’s green barley

powder.

Today, Mr. Su uses one-half of a canister of BarleyLife

for every 10 pounds of flour for his hand-shaven noodles

and homemade pot stickers; both are very popular among

customers, who say they like the barley flavor. Mr. Su and

his family also eat the noodles and pot stickers themselves.

Mr. Su now has two restaurants in Seattle and one in

Issaquah. His children – Kathy, Betty, Christine, and Dan

– all work in different capacities of the family

business. Mr. Su’s daughter Kathy Tsow is an

AIM Associate Director. One of the res-

taurants in Seattle sells nothing but noodles.

They used to sell white noodles, pumpkin

noodles, carrot noodles, and barley noodles,

but now only the white and barley noodles are

sold, since those are the most popular among

customers. Mr. Su also teaches a monthly

class on how to make the noodles, and some

of the students are also his customers.

When Mr. Su places an order with AIM, it is usually

80 canisters of BarleyLife powder at a time. He displays a

container of BarleyLife on the counter of the restaurant in

Issaquah, and there is a picture of AIM’s flagship product on

the menu. The BarleyLife dishes are described as “barley

green hand-shaven noodles.” He says he has had so much

success with using the barley dough that he is afraid of the

customers’ reactions if he were to change the name.

Shanghai Garden has been publicly recognized numer-

ous times for its unique and savory dishes. Other than the

barley noodles and pot stickers, some of the most popular

dishes are beef with dried orange flavor, crisp shrimp with

chili sauce, and pan-fried scallops. Mr. Su also makes his

own ice cream, experimenting with flavors like sour plum

and dried dragon fruit.

Mr. Su has been invited to attend a recognition cere-

mony for his restaurants in Las Vegas more than once but

has always turned down the offers because he says he is

very busy. And because the

noodles and pot stickers with

BarleyLife have gotten so

many good reviews on the

internet, Mr. Su has received

order requests from other

states for several hundred

barley noodles per week.

Mr. Su and his family have

successfully proved that

cooking with barley can enrich a food’s taste and nutri-

Nine months ago, Marie Smith thought her sarcoidosis had

finally gotten the best of her. Her lungs were only functioning at 60 percent capacity, and she left the hospital expecting to die soon.

“I struggled to breathe and was not strong enough to

do anything for myself,” says Marie, an AIM Wholesale

Member from Southport, Florida. “My voice was weak

and my health was gone. I weighed 203 pounds, and

no matter what I tried in the past, the weight would

not come off. I no longer cared about my weight. I just

wanted to be healthy. My mind did not function well,

and I often felt like I was outside my body with no con-

Marie’s disease had been taking a toll on her lungs for

For many years since 1981, I have been suffering with chronic arthritis and fibromyalgia. My rheumatologist
