II’M IN THE PROCESS OF MAKING SOME renovations to my home… finally! The scope of the project is not big by any stretch, but I’m amazed at the time that’s been required on my part to select fixtures, finishes and paint colours. It seems like every decision I make, I then second guess.

The thing is, while I enjoy beautiful and well-functioning rooms I really do need professional help when it comes to creating one. I’ve learned it’s one thing to be inspired by design trends and great products, but quite another to put elements together pleasingly for myself. I see a light fixture I like, but when I get it home I realize it’s too big, or too small, for the scale of my room. I go through sample tin after sample tin of paint, and never seem to find just the right hue. I ask, how many blue-greys can there be in that colour deck?

Fortunately, I know someone with a great eye for this kind of thing and she has helped me immeasurably. That’s why my advice is, ask the experts.

There are many of them around, some of whom can be found in these pages. You might be interested in Modern Living London’s great new showroom, featured on page 26, where owner Rawle Blackman is introducing us to sleek, contemporary looks from a variety of manufacturers most of whom I’m happy to say are Canadian. Speaking of contemporary, you will want to spend some time with our Home and Architect feature on page 18, where you’ll see how exterior architectural features have also been used inside to create an intriguing statement. The trend to purchasing and selling home furnishings and accessories through upmarket consignment has come to London with the recent opening of ReDecor (page 40). It makes a lot of sense if we’re serious about recycling what we have and, after all, who isn’t serious about getting a good buy?

Hopefully, my little renovations will be finished soon, and I can finally enjoy my new spaces rather than fret about how they will look. Having said that, I’m glad I took the time to get what I wanted… and I’m really glad I got professional advice.

CABIN CHICDesigner Stephanie Redmond shares her ideas.

Cabin chic seems a fitting décor choice for winter months. The aesthetic evokes images of cosiness and warmth, reminding us of what it is to be Canadian. Rustic interiors with wood, wool and hot chocolate come to mind. However, let’s not forget that, in August, we sweat, fight blackflies, and if we’re lucky, swim in our wonderful fresh water. Winter or summer, the cabin makes me feel truly Canadian. Here’s how to achieve that rustic setting, with a few modern conveniences.

First of all, I have to stress comfort. No modernist furniture in my cabin, please! How about this extra long sofa from Lee Industries? It will accommodate a mass of people (perfect for the weekends) and is ultra comfy for lounging, reading and napping. Of course, I’d prefer it in a natural linen colour, so it doesn’t clash with my collection of antique Bay blankets. If you don’t have one, they are always available (and always in style) at The Bay. Now, if you’re a bit allergic to colour, you can always go with the Millenium Stripe, which is a more neutral approach, but just as lovely.

Of course, all of this must sit on a rustic base of something, so let’s talk about wood flooring. In the cabin, I see pine, but if you have dogs or kids, or simply a busy household, pine will be too soft. You can apply an oil or wax finish (this will not protect it from grooves) but the wear will be slightly less noticeable than a deeper stain finish. If you’d like to

modernize, try a grey wash quarter sawn oak with an oil finish. More Belgian than Canadian, but the results will be stunning.

As tempted as I am to put an antler chandelier in here, I like my lighting a bit more modern. You can try the Mori light by Rich Brilliant Willing for a beautiful, soft glow. With more rustic companions like wood and textural fabrics, a modern light will fit right in without making the scene appear too contemporary. (For a cheap fix, you can always use a big white paper lantern – always a winner as far as I’m concerned!)

A cabin shouldn’t feel like it was pieced together yesterday, or it becomes too decorated and too stiff. Throw a fur rug on the floor and a few oddball pieces to make it seem like a collection from bygone times. I like rattan because its low-key style never looks right off the shelf. I found these chairs on 1stdibs.com for a bit of rustic charm. They’re quirky and will look great with pine floors.

There is one more piece that every cabin needs: Monopoly! I would add a deck of cards and Scrabble, too; the list is never-ending. Whatever your game, don’t forget to include an antique pine chest of drawers filled to the brim with games that the whole family can enjoy in front of a roaring fire. Now that is wonderful living. WWhat do you do when one half of a married couple dreams of country life, while the other needs a quick commute?

You purchase the final lot on one of London’s most private courts with views of protected green space and the Thames River. And if you share an interest in modern architecture, you hire Bradley Skinner of Skinner & Skinner Architects Inc. to design a home where you can put down roots for life.

“We drove through this development years ago and thought the houses were amazing,” says the homeowner. “We realized how secluded it was, and loved the proximity to the river and bike paths.”

With a growing family, the time was right to make the move from luxury rental living in downtown London to a custom-designed home that reflects the couple’s personal taste and fits their busy lifestyle.

“We knew we wanted a modern home that was not in a typical subdivision,” notes the homeowner. But it had to be a contemporary living space that still felt “cosy.”

Built by Crown Homes of London, the home’s sense of intimacy begins outside with a design that opens towards the back. “From the street you might not even know it’s a two-storey house,” comments Skinner. A striking combination of architectural block from London Ferrell Brick and Stone and Galvalume siding (corrugated galvanized aluminum) from Kind Metal Roofing Ltd. give the exterior a slightly industrial look, punctuated by a red front door.

While most traditional homes boast a spacious front hall, visitors to this 3,000 plus sq. ft. three-bedroom house enter into an uncluttered and understated foyer that invites further discovery. “I want people to come in and be intrigued by the space,” says

the homeowner, who drew inspiration from American architect Frank Lloyd Wright.

In fact, this home literally opens up as one enters the living space, with ceiling heights rising from eight feet in the foyer to nine feet in the adjacent kitchen, and finally soaring to over 20 feet in the adjoining great room.

And after years of apartment living, this couple was adamant that their home have no wasted space, a place for everything, and plenty of storage. Instead of a hall closet, a combined mud room/laundry room off the

foyer is hidden from view behind a sliding Galvalume barn door.

They did not see the need for a formal dining room, so the house doesn’t have one. “We didn’t want it because we’d only use it twice a year,” the homeowner notes.

Instead, a large open-concept kitchen and dining area provides a multi-functional hub for daily life. Wrapped in floor-to-ceiling windows by Glass Canada Limited, the room provides stunning views of the backyard and is bathed in natural light – always an important consideration in any Skinner design.

The kitchen area is defined by grey porcelain tile (Centura Tile) in contrast to the natural maple hardwood (Halls Flooring Services) used throughout the rest of the home. White quartz countertops by Coni-Marble Manufacturing Inc. and a large stainless-steel coffee bar create a clean, modern look, while pendulum lighting from Guildwood Lighting & Fireside adds a slightly traditional touch.

“One of the main challenges involved with open-concept design is achieving enough opportunity for cabinetry, particularly in

the kitchen,” comments Crown Homes’ interior design consultant Michelle O’Hagan, who worked with the couple throughout the design process.

This kitchen proves that looks can be deceiving, thanks to a cleverly concealed walk-in pantry and plenty of additional cabinetry tucked beneath the coffee bar.

“I also wanted a corner in the kitchen where I could keep an eye on both sides of the house,” the homeowner says. In order to accommodate that request, Woody’s Custom Cabinetry designed a desk that overlooks the front driveway and provides unobstructed views to the backyard as well. With a built-in charging station, it’s the ideal spot for this busy mother to work at her laptop while keeping an eye on the kids playing outside.

The kitchen leads into the great room, which is anchored by a feature wall built from the same architectural block used on the home’s exterior. A polished, black stone fireplace surround balances the wall-mounted television, making it fade into the background when not in use.

In addition to a stunning red sectional sofa, the room also boasts a cosy window bench, upholstered by European Upholstery with the owner’s own fabric, and built-in audio-visual shelving. These were two important items on the couple’s wish list.

Lori Matthews from Callidus Engineering designed a zoned lighting plan with LED pot lighting (Pro Electric Inc.) that enables the couple to set the mood with the flick of a switch. “The lighting, combined with the natural textures in the home, created a very warm living space,” says O’Hagan.

As a car enthusiast, the man of the house added a discreet, purpose-built garage to his wish list. Hidden from the road, the work space

includes a storage loft, a wall of tool cabinetry and a row of carefully-placed windows that provide natural light while preserving privacy.

Downstairs, the couple stays in shape in a workout room outfitted with equipment from Fitness Depot and The Treadmill Factory. A seven-seat media room, painted Black Iron by Benjamin Moore, features surround sound by Homematix Systems Inc. and offers the perfect retreat for a home movie night.

A floating wood staircase (Roes Stair Company) leads to the second-floor bedrooms and two home offices. With sloped ceilings that follow the home’s roofline and a long narrow hallway, the upstairs living space is a fascinating mix of modern architecture and old-world charm.

The master retreat, featuring an en suite with fixtures and faucets by Atchison Plumbing & Heating Ltd., is reached by crossing what the couple calls “the bridge” – a floating walkway overlooking the great room and kitchen. Two home offices connected by an exterior balcony, a child’s bedroom, playroom, and bathroom, complete the second-level living space.

The entire house is painted in tranquil shades of Moonshine and Fernwood Green by Benjamin Moore. “We achieved a modern, cosy home through the use of warm tones, natural wood and restoration metal accents,” says O’Hagan.

The backyard provides a welcome outdoor retreat (landscaping and hardscaping designed by Arthur Lierman Landscape Architecture and installed by Crosby Landscape + Design and Stone In Style), without the burden of maintaining a large lot.

A spacious covered porch wraps around the back of the house while the Lierman-designed cement terraces extend almost to the property line. “We get the benefit of all the natural space beyond our fence without having to look after it,” says the homeowner.

As the final home built in this exclusive enclave, the project marks a milestone for Skinner. “I started this development in the mid-1990s with the first house, so it’s almost like a time capsule of my career,” says the architect. “It’s nice to see it complete.” OH

something that’s aligned with their regular production design, something that they can possibly repeat in the future,” says Luck.

Reid’s Heritage Homes, which has built thousands of houses in southwestern Ontario, recently broke ground for the first of its five single-family Net Zero homes in Guelph. Blake Seeberger, the company’s senior vice-president, estimates the first house will be finished by spring 2015. “We’ve had an overwhelming response from the general public,” he says. “We have people lined up saying, ‘How can I get one of these?’”

Seeberger expects Reid’s will take the lessons learned in building these homes and apply them to future developments. “You have to have some kind of a test to work out the bugs, before you go out and build a community of 300 homes,” he says. “You’ve got to be able to understand how best to build the home and make it affordable to the end user.”

Ranging from 1,500 to 2,600 sq. ft., the Guelph homes will be built with high-efficiency, triple-pane windows, an air barrier system and thicker walls with added insulation. Extra insulation will be installed in the attic and below the basement floor. Homes will be equipped with solar panels to generate electricity, a cold climate air source heat pump instead of a furnace and a hybrid heat pump water heater. Owens Corning will provide the CodeBord™ air barrier system while Jeld-Wen® Windows and Doors, Canadian Solar Inc., Mitsubishi Electric Sales Canada

WFive builders, two in Ontario and three in other provinces, have embarked on an experiment to build 25 homes that produce at least as much energy as they consume. Called Net Zero homes, they are extremely energy efficient. They’ve been around for years. Any home built off the grid could be considered a Net Zero home. But they’ve typically been custom-built, often at considerable expense, beyond the financial reach of all but the most dedicated energy misers.

Partnered with Owens Corning Canada LP, and with $1.9 million from Natural Resources Canada, five selected builders will construct Net Zero homes using off-the-shelf equipment and materials. Their goal is to make these homes available to the mass market and to more homeowners than ever before. “It hasn’t been tried in a production setting,” says Candice Luck, director of strategy and programs for buildABILITY Corporation, the project manager. “We wanted to see whether Net Zero could be done in an affordable manner in a production setting and across Canada.”

Builders Reid’s Heritage Homes, of Guelph; Minto Communities, Ottawa; Mattamy Homes Limited, Calgary; Construction Voyer, Laval, Quebec and Provident Development Inc., Halifax, were chosen for their track records in building energy-efficient homes, and their expertise, drive and motivation to build leading-edge homes. “We wanted to make sure these houses are built for any homebuyer,

The technologies have to be readily available and affordable, something any other builder could buy, says Luck. “The builders are really trying to show the industry that this is feasible and hopefully drive the prices down on some of these technologies.”

Seeberger estimates a two-storey, 2,000 sq. ft. Net Zero home will cost about $60,000 more than a typical home of the same size. Solar panels, he says, would account for most of the added expense. Mortgaging that extra $60,000 at today’s interest rates would cost about $300 a month, an outlay that could be offset with savings of $3,000 to $5,000 on annual energy bills. As energy-saving technologies become more popular and more widely used, Seeberger expects their costs will decline, just as prices for CD and DVD players dropped after those technologies became widespread and mass-produced.

He and Luck agree it’s hard to predict how well these Net Zero homes will serve the individual families who live there. The lifestyles and energy-consumption habits of occupants will vary and determine whether these homes produce all the power they require. Reid’s is working with the University of Guelph to monitor this aspect of the experiment. “We’re trying to figure out what truly is the lifestyle and the load that we need to prepare for and how should we build those houses to offset those uses,” Seeberger says.

Mattamy Homes is building five single family Net Zero homes in Calgary, Provident Development is building five in Halifax. In Ottawa, Minto will build one single family Net Zero home and a row of four townhouses, while Construction Voyer is building a two-storey, six-unit building in Quebec. AA few years back, one of London’s most talked about homes sat in wait. The vacant Lawson estate near Wonderland and Gainsborough had been purchased by Sifton Properties and the company was in the process of developing the land for a residential enclave of luxury homes. But what to do about the 19th-century stucco and concrete mansion nicknamed “the castle” for its distinctive architectural and interior features, not to mention underground tunnels, secret passageways and five grand fireplaces?

The last of the Lawsons had not lived there for some time and there was talk of demolishing the derelict structure. That is,

until Sue-Anne Richardson, a London expat who’d been living in the U.S., returned to town and just had to have it. Taking on what most would consider a daunting challenge did not trouble Richardson in the least. Richardson was passionate about home and design. She also had a few renovations under her belt already – well, eight to be exact, plus two new-builds. Most importantly, Richardson was willing to see her project in terms of a big picture that would be years, not to mention mega bucks, in the making.

Since purchasing the 10,000 sq. ft. home in 2010, she’s been fascinated by everything from soup to nuts about her restoration

project, as interested in figuring out how to properly update the ancient wiring and plumbing as in planning the decorative and functional redesign.

When Richardson and her family walked through the door for the first time, the house had no running water, heat or electricity. There was an old septic tank in the back courtyard, critters living in the walls of one bathroom, evidence of vandalism while the house had sat empty and a pile of wood panelling that had been removed along with the library’s original plaster. In short, the place was a mess. Right away, however, they rolled up their sleeves and got out the elbow grease. Hyde Park Plumbing & Heating Ltd. was hired to dig a moat around the house in order to find previous drain pipes that had fed the old septic tanks. Glass Canada Limited painstakingly repaired many antique windows that were cracked with age, and extensive wood repair was needed. Richardson says Will Beatty became her “carpenter extraordinaire.”

Now, nearly five years on and with help from many other home and design trades, Woodholme’s singular interior is shining again thanks to modern upgrades and, as Richardson puts it, “new uses for old spaces.”

The large library, situated at the end of a hallway off the centre foyer, functions as her office as well as a cosy gathering place. It underwent one of the biggest transformations at Woodholme.

“When I arrived I saw there had been substantial damage to this room,” recalls Richardson, adding it was built as an addition to the original home in 1920, and was where, around a card table, London’s esteemed Lawson Foundation was born.

After cleaning and water damage repair were completed, new insulation, walls, ceiling and radiators began to revive the room. The original wall panelling, crown moulding, baseboards and mantel were then put back in place, a task that Richardson says was like “building a puzzle.” Matt Scott of Omega Audio Visual Inc. used one of the library closets to install a hidden but centralized Wifi and electronics control centre, which can be accessed remotely to activate the Lutron lighting system or turn on Sonos music. Richardson says the system is one of her favourite features of the renovation and has been a “magical” transformation, allowing the family to appreciate their home’s stately attributes with the luxury of modern convenience.

The other side of the foyer (where there is also a doorway to a surprise hidden stairway) opens to the rest of the manor’s main living space. This includes the formal dining room, the living room that Richardson and her children enjoy referring to as “the

ballroom” since that is what it was called originally, and the kitchen (formerly a sun room).

In the ballroom, Woodholme’s largest fireplace is baronial in size and produces and returns heated air not only to this room, but to the upper level as well. Other decorative features of the ballroom can be found in the adjoining dining room, including the octagonal patterning of the ceiling woodwork and inlaid hardwood, nested like colourful tile within the concrete floor. There is a working coal fireplace in the dining room, as well as double french doors leading to the front of the house. Similar doors in the ballroom lead to the back of Woodholme’s one-acre property.

Vandals destroyed the former sunroom’s artistic focal point, a stained-glass light fixture that Helen Lawson installed years earlier. The fixture was restored by The Beveled Edge Glass Studio and is a focal point

once again, this time over the island in the new kitchen. Richardson recalls that flooring in this room was originally a poured glue and wood composite, scored with lines to look like tile. She had it pulled out, tested for asbestos (fortunately negative) then replaced with solid bamboo.

“This space makes a fabulous kitchen with its oversized, south-facing windows on one side and entryways to the dining room and ballroom on the other,” Richardson says, adding the room`s fireplace is the only one in the house that is not wood burning. For ease and practicality, Patio Palace installed a gas insert, which is now framed by the original hearth, surround and mantel.

Back to the foyer, a massive stone and wood staircase leads to the second floor’s teenager wing, where Sue-Anne’s son and daughter like to hang out with their friends or play games. The master suite is also on the second level. Here, Richardson loves to deposit herself by the fire in her room after an evening out, curled up in her chair with a book and a glass of wine. Later she often heads into the adjoining bathroom for a soak in her deep tub (Brouwer Plumbing and Heating Ltd.) which, she says, she “coveted” for months before giving way to temptation.

The bathroom required a total gut. Since it had been an add-on to the original house, Richardson decided to expose the existing pebbledash stone and glass exterior wall for artistic effect. To complete the room, which now has a heated Travertine floor, Brouwer supplied fixtures, and JRS Plumbing installed them.

Richardson kept a piece of her bathroom’s original pink marble and had it made into a windowsill above her soaker tub. She loves the way the sill and other pieces of the original house remind her of the people who once lived at Woodholme Manor.

As she puts it, “My goal has been to honour and respect the past within this home, as well as to enjoy and celebrate its present and future”. A little over a year ago, Lorean Pritchard and her husband, Ted, were in Collingwood attending a wedding. The next day, Ted was chomping at the bit to get home to London for Sunday football, that is until Lorean coaxed him into a local furniture consignment store.

“Right away he bought a table and a picture,” recalls Lorean of her husband’s enthusiastic shopping. They then hit a similar shop in town where Ted left with a soapstone carving, his thoughts of football now replaced by thoughts of how a similar business model could work in London.

“This is what you should be doing,” he told his wife. Ted knew Lorean had a head for business and an interest in home

décor. She was working in a local shop at the time but looking around for something else. Buoyed by Ted’s enthusiasm and her own interest, she started creating a business plan for London’s first upscale furniture and décor consignment store, ReDECOR.

In March, the Pritchards took possession of a 3,000 sq. ft. showroom

on Sarnia Rd. near Hyde Park, an area that Lorean believes is the fastest growing in London. Within two weeks, they had painted and completed renovations. Lorean started accepting consignments in early April, and she opened the showroom doors at the end of that month.

Lorean’s son, Sebastian, runs the business with her. He maintains the website, coordinates all deliveries and pickups and assists in the staging of all consigned furniture.

Consignors are responsible for bringing their pieces to the store’s receiving area after Lorean has viewed online pictures and approved the intake.

“Pricing is the most time-consuming aspect of the process,” says Lorean, “and the most critical. If we don’t price it right, we don’t sell the item and it is returned to the consignor.”

The idea is to keep the showroom fresh and lively. To move sales, the price is reduced by 15 per cent after day 30 and after day 60 a further 10 per cent is taken off. If a consigned item has not sold within 80 days,

the consignor has five days to retrieve it or it becomes the property of ReDECOR. At that point, the item goes into the clearance section, with a portion of an eventual sale going to Salthaven, an animal rehabilitation centre in Mount Brydges. The Pritchards are devoted animal lovers. If the furniture does not sell from the clearance section, it is donated to local social services like Life Spin or Habitat for Humanity.

Lorean believes there are key reasons why ReDECOR will do well in London’s home and design market.

“A lot of people are downsizing,” she observes. “Their furniture is too good for a garage sale and they may not want to sell online. On the buying side, many younger couples in this area are furnishing their first homes. One of the best parts of this store is it allows people to buy quality furniture they might not otherwise be able to afford.”

Recently a woman purchased a mahogany dining suite as a house-warming gift for her daughter and son-in-law. She spent around $900 for something Lorean says would have been valued at $3,000 new.

“We’ve had some wonderful pieces,” she says, referring to a sleek, glass-top extendable table with nine black leather chairs made by

Italian furniture designer Calligaris. There has also been a Wesley Hall sofa as well as pieces by Gibbard, Thomasville and Drouin. ReDECOR also offers lighting fixtures, artwork and other décor accessories.

Getting to know her sellers and buyers is part of the joy. “We’ve got some of the friendliest customers and consignors I can imagine,” she says. “People like telling me their stories and people have fun in our

store because there is so much to see. We always say you have to do laps around here to take it all in.”

New “treasures,” as Lorean likes to call them, arrive all the time and she says this makes running ReDECOR as exciting as unwrapping Christmas presents or redecorating the house.

“Who,” she asks, “doesn’t like that?” OH

TThis chutney gets better and better over time. In fact, it is best when “aged” from four to six months. Whether you make it for the holidays for gifts or wait until the new year, this tangy grill-buddy is perfect for summer barbecue season. Its spicy, rich marmalade flavour lends zest to grilled vegetables, fish and chicken. Don’t be put off by the overnight macerating of the rind, flesh and salt because it’s easy: all you do is peel and chop the lemons, combine with salt, cover and let sit overnight.

Because I like this chutney to have extra heat for grilled foods, I add either dried chipotle or hot red pepper flakes, but you can omit these if you wish. Use a small, heavy spice mortar and pestle – mine is cast iron – or a rolling pin to crush the seeds and a micro-grater to grate the fresh ginger.

LEMONSUN-FILLED

CHUTNEYSTORY AND PHOTOS PAT CROCKER

LEMON CHUTNEYMakes 4 cups (1 L)

8 thick-skin lemons, scrubbed

2 tbsp (25 mL) pickling or Kosher salt

4 large cloves garlic, minced

½ cup (125 mL) dried currants

½ cup (125 mL) chopped dried apricots

½ cup (125 mL) freshly squeezed lemon juice

½ cup (125 mL) cider vinegar

1 tbsp (15 mL) freshly grated gingerroot

1 dried cayenne pepper, crushed

1 tsp (5 mL) ground cardamom

1 tsp (5 mL) crushed coriander

½ tsp (2 mL) dried hot red pepper flakes, optional

2 cups (500 mL) +2 tbsp (25 mL) packed brown sugar

• Peel: Using a vegetable peeler, remove the zest from the lemons, being careful not to include the white pith. Finely chop the zest. Using a paring knife, cut away and discard the white pith from around the lemons. Coarsely chop the lemons, discarding the seeds.

• Combine: In a non-reactive bowl, combine the zest, lemons and salt. Cover with a clean cloth and set aside in a cool place overnight.

• Cook: In a Maslin pan or large saucepan, combine macerated lemon mixture, garlic, currants, apricots, lemon juice, vinegar, ginger, cayenne, cardamom, coriander and hot pepper flakes. Bring to a light simmer over high heat. Reduce heat to medium and stir in the brown sugar. Stir constantly until the sugar is dissolved.

• Simmer: Adjust the heat to keep the mixture at a regular simmer and cook, frequently stirring for 30 to 45 minutes, or until the mixture becomes thick and mounds on a wooden spoon.

• Jar: Meanwhile, place four, 1 cup (250 mL) Mason-type jars in a canning kettle. Cover with water and bring to a boil. Place 4 flat lids in a saucepan and pour boiling water over, set aside.

• Fill: Skim and discard any foam on chutney. Fill hot jars one at a time, leaving a ¼ inch (0.5 cm) headspace. Wipe rims with a clean cloth, top jars with flat lids and screw on metal rings. Return jars to the hot water bath, topping up with hot water if necessary to bring the water one inch (2.5 cm) over the tops of the jars. Cover the canner, bring water to a full rolling boil and keep boiling for 10 minutes.

• Cool: Turn the heat off, remove canner lid and wait 5 minutes before removing jars to a towel or rack to cool completely. Check seals, label and store in a cool place for up to one year.

• Use: Once it has “aged” for a month or more, serve Lemon Chutney right from the jar with baked whitefish (as shown), trout or salmon. You can also mix 1 cup (250 mL) with 3 tbsp (45 mL) chopped capers for a flavourful and different tartar sauce. Mix with orange juice or an equal amount of yogurt and coat chicken before baking. Mix ¼ cup (50 mL) chutney with the same amount of soy sauce and use as a sauce for stir-fried foods. Serve as a condiment for cooked chicken, cold cuts of meat and with a cheese platter or over brie, cream cheese or goat cheese. OH

• Combine the milk, ginger, vanilla and cinnamon, and steep for 10 minutes. Pour into a saucepan over medium heat. Add the honey and bring to a simmer. Cook, stirring constantly, for two minutes. Do not boil. Discard the ginger slices.

• Add the brewed espresso to a serving cup. Pour the warm milk over the espresso. Serve immediately.

• If desired, pour some steamed, frothy milk on top.

INGREDIENTS

¾ cup milk

1-inch fresh ginger, peeled and thinly sliced

1 teaspoon raw honey

¼ tsp pure vanilla extract

¼ tsp ground cinnamon

2 ounces freshly brewed espresso

Ginger Green Smoothie

Start your day with a burst of energy with this fresh, superfood smoothie. The hemp seeds bring protein and a great creamy texture. If you’re battling a bug, a few glasses are sure to name you victorious.

• Add water to high-speed blender, followed by fresh ingredients then frozen ingredients.

• Blend until smooth.
