Chef Tom’s Recipe of the MonthChocolate-Coffee Layer Cake with Mocha-Mascarpone FrostingValentine’s Day is approaching and this Chocolate cake will be a delicious ending to that special dinner or to give to that special person in your life for Valentine’s Day. The cake is moist, dense and not overly sweet. The frosting tastes like coffee ice cream. So, if you like to bake, try out this recipe. You are sure to impress that special someone.

Ingredients

Cake:

2 cups cake flour

3/4 cup natural unsweetened cocoa powder

1 1/2 teaspoons baking soda

3/4 teaspoon salt

3/4 cup (1 1/2 sticks) unsalted butter, room temperature

2 cups (packed) golden brown sugar

3 large eggs

1 1/2 teaspoons vanilla extract

1 cup buttermilk

4 teaspoons instant espresso powder dissolved in 3/4 cup hot water

FROSTING:

1/3 cup natural unsweetened cocoa powder

1 tablespoon instant espresso powder

1 1/2 cups chilled heavy whipping cream, divided

1 1/3 cups sugar

2 8-ounce containers chilled mascarpone cheese*

Bittersweet chocolate curls (optional)

Method of preparationFOR Cake:Position rack in center of oven; preheat to 325°F. Generously butter two 9-inch cake pans with 2-inch-high sides; dust with flour, tapping out any excess. Line bottom of pans with parchment paper.

Sift 2 cups cake flour, cocoa, baking soda, and salt into medium bowl. Using electric mixer, beat butter in large bowl until smooth. Add brown sugar and beat until well blended, about 2 minutes. Add eggs 1 at a time, beating well after each addition. Mix in vanilla. Add flour mixture in 3 additions alternately with buttermilk in 2 additions, beating just until blended after each addition. Gradually add hot espresso-water mixture, beating just until smooth.

Divide batter between pans; smooth tops. Bake cakes until tester inserted into center comes out clean, about 40 minutes. Cool cakes in pans on rack 15 minutes. Run small knife around sides of pans to loosen cakes. Invert cakes onto racks; lift pans off cakes and remove parchment. Place wire rack atop each cake; invert again so top side is up. Cool completely. DO AHEAD: Can be made 1 day ahead. Wrap each cake in plastic and store at room temperature.

FOR FROSTING: Sift cocoa powder into large bowl; add espresso powder. Bring 1 cup cream to boil in small saucepan. Slowly pour cream over cocoa mixture, whisking until cocoa is completely dissolved, about 1 minute. Add 1/2 cup cream and sugar; stir until sugar dissolves. Chill until cold, at least 2 hours. DO AHEAD: Can be made 1 day ahead. Cover; keep chilled.

Add mascarpone to chilled cocoa mixture. Using electric mixer beat on low speed until blended and smooth. Increase speed to medium-high; beat until mixture is thick and medium-firm peaks form when beaters are lifted, about 2 minutes (do not overbeat or mixture will curdle).

Using pastry brush, brush off crumbs from cakes. Place 1 cake layer, top side up, on platter. Spoon 1 3/4 cups frosting

in dollops over top of cake. Using offset spatula, spread frosting to edges. Top with second cake layer,

top side up, pressing to adhere. Spread thin layer of frosting over top and sides of cake. Chill 10 minutes. Using offset spatula, spread remaining frosting over top and sides of cake, swirling decoratively. Top with chocolate curls, if desired. DO AHEAD: Can be made 1 day ahead. Cover with cake dome; chill. Let stand at room temperature 20 minutes before serving.

MEMBER/MEMBER MATCH PLAYThe event will play 5 nine-hole matches among a flight of six 2-man teams. Each team will play every team in their flight once. The first match begins at 8:30 am on Friday, March 26, the second match at 11:00 am; lunch from 1:00 to 2:00 pm. The third match will begin at 2:00 pm followed by a putting contest at 5:00 pm.

Saturday, March 27, the fourth match will tee off at 8:30 am and the 5th match at 11:00 am. After the 5th match, all flight winners make up the final shoot-out. Flights will be determined by total handicap of each team, using the handicaps effective March 15. Mark your calendars today!

“SPECIAL” SHOOTERSOur regular “shooters” game will be special on February 5th. Shooters will be a 1:00 pm shotgun start followed by hors d’oeuvres in the men’s grill following play. The dollar entry will be $30 for senior and clubhouse members and only $50 for guest. A $10 charge per person will be billed for food. The scoring will be the same as regular shooters. Cart fees will be an extra charge. This is a great opportunity to invite a friend or return a favor. Sign-up for this “special shooters” will start immediately in the golf shop.

MIXED 2-BALLThe Mixed 2-Ball will be on February 14, starting at 1:00 pm. We are using this 2-Ball as a qualifier for the “Celtic Couples Challenge” a modified chapman format event. Twenty private clubs in Florida are holding qualifiers to play at the finals on April 30 at Lakewood Ranch in Sarasota. Winners at the finals will win a trip to Ireland in September 2010. Interested couples may pay $30.00 a person to qualify and the club needs 20 couples for a qualifier. After the shotgun start, groups can enjoy hors d’oeuvres and a prize presentation after the round in the lounge. Players may call the golf shop to sign-up or email at [email protected]. Mark your calendars for March’s event on the 7th.

JUNIOR GOLF CLINICThe Junior Clinic continues on Tuesdays and Thursdays for ages 6 to 10 from 4:00 to 5:00 pm and 11 and above from 5:00 to 6:00 pm. Wednesdays from 4:30 to 5:30 pm are for juniors ages 5 and under. Let Joe and Justin help your juniors learn the game! Just show up is the way to sign up.

PUTTING CONTESTA Couples Putting Contest will be held on Friday, February 12. Qualifying will run from 6:00 to 7:30 pm with the 16 low teams advancing to the match play format. Food and drink will be served at greenside. Please call the golf shop to sign up.

LADIES’ SPRING GOLF CLINICThe golf staff will conduct a ladies golf clinic on March 10, 11, 17, 18, 24, and 25. This clinic is for beginner and intermediate lady players. Joe Hodge, Director of Golf, will cover swing fundamentals, rules, course etiquette, and course management. Each session runs from 9:00 to 10:00 am. Please sign up early for there is limited space.

GASPARILLA INVITATIONAL GOLF TOURNAMENTThe 55th Annual Gasparilla Invitational Golf Tournament will be contested on Friday, February 26, through Sunday, February 28. A “Get Acquainted “ Scramble will be held on Thursday, February 25, starting at 3:00 pm. Golfers from over 20 states with handicaps of three or less will enjoy Palma Ceia’s challenging layout.

Members are certainly invited to come and witness some great golf, especially on Sunday afternoon with the leaders teeing off at 1:00 pm.

The golf course and the practice facilities will be closed to all non-Gasparilla participants from Thursday to the following Tuesday.

Honoree Trudy Barkin gave a wonderful speech at lunch and all enjoyed a surprise visit from Gil. Golf Course NewsDue to the hard work of your Agronomy staff and a lot of help from Mother Nature, we have a wonderful stand of winter overseed. I would like to make the following suggestions to continue to improve the condition of your golf course:

Please observe cart path rules. John Foy, regional 1. agronomist with the USGA, said it best, “Most golfers have a limited appreciation of the significant negative impact cart traffic has on course conditioning and quality.” Please follow the 90-degree rule and resist the primal urge to take the shortest route to your ball. Kindly keep all four wheels of the golf cart off of the tee and green slopes. Note the areas of weak turf near most tee and green walk-ups. Ropes aren’t placed to be a hindrance or obstacle. They are there to distribute wear patterns and minimize damage to wet or worn areas. Cart control is imperative and provides the greatest chance of improvement you could make as a golfer at Palma Ceia.

Please repair ball marks. Most are aware we no longer overseed greens. 2. The increase in play in the cooler winter season brings, coupled with the short day length make it difficult to manage ball marks. The bermuda isn’t actively growing and has little chance when photosynthesis is limited. Golfers should limit chipping practice to the chipping green or utilize the practice areas to chip to a target placed in the fairway.

Please fill divots. Use enough sand to completely fill the divot and level 3. with the scoop or your foot insuring it is level. An under-filled divot leaves a depression while and over-filled divot can cause undue wear to mower reels. Ryegrass has little lateral growth making filling your divot even more important. Your maintenance staff seeds landing areas and any divot we fill. I have contemplated mixing the seed and sand. My hesitation stems from timing. If this mix sits to long the seed will germinate in the container or the heavier sand settles causing the seeding rate on the top to be excessive.

Please rake bunkers. A good rule is to leave the bunker better than you 4. found it. Always enter the bunker on the low side and try not to walk up the steep faces. This allows the bunker to remain firm and reduces fried-egg lies. As you exit the bunker “bump” the sand from your spikes to limit its tracking onto the putting surface. Place the bunker rake on the outside edge of the bunker parallel to the line of play.

To help achieve the goal of providing you and your guests with the best playing conditions possible please keep these suggestions in mind the next time you play. Thank you in advance for your cooperation.

Functional Fun Facts About FatA fantastic, fabulous, fun-filled and fat-free February to all of the forceful fitness faithful of our familial facility. Now that all of the holidays and festivities have come to an end it is time to once again focus on the task at hand. This month’s installment deals with fat, a word few of us wants to hear, especially at this time of the year. Fat has a definite negative connotation in our society, especially when it pertains to our bodies. We associate fat with ever expanding beer guts, tighter pants and diminished social acceptance and effectiveness.

Fat, however, plays an extremely critical role in our day to day lives and the processes our bodies go through each and every day. Some of these processes are positive, some are negative. Let’s take a closer look at some of fat’s secret facts.

Fat cells can swell up to six (6) times their minimum size- When you consume more calories than you 1. burn, fat cells in the body expand to up to six times their minimum size and they begin to multiply- from 40 billion in the average adult to up to 100 billion. We all have fat cells, they begin to form and take shape before we are born. Once we reach the age of about 16 or so our fat cells are mature. After that lifestyle and genetics determine our gaining or losing weight as we age. Fat cells are critical for our survival and provide our storage and management energy system. Fat that is not used for fuel is stored for later use. A combination of high calorie meals and inactivity will cause fat cells to swell and multiply resulting in weight gain.

Fat cells secrete extra estrogen- Carrying a few extra pounds wreaks havoc on the hormonal balance 2. of the body and can lead to a variety of illnesses and health risks. Estrogen, known as the female hormone is present in small amounts in males; when you gain weight this level rises and health problems may present themselves. Common maladies may include fatigue loss of muscle tone, decreased sexual function, enlarged prostrates, and increased blood sugar and cholesterol levels.

If you lose weight, your fat cells shrink but do not disappear- As previously mentioned, when you gain 3. weight your fat cells increase in size and multiply. When you lose weight the fat cells in your body shrink; unfortunately they do not usually decrease in number significantly. It is for this reason that it is better to maintain a normal weight rather than “yo-yo” up and down.

Fat tissue attracts cells that promote inflammation- Normally we feel poorly when we gain weight, 4. there are also internal complications which may result. Fat tissue attracts immune system cells call macrophages which promote inflammation in the body. This may result in your body beginning an immune response similar to the reaction when you develop the flu or suffer an injury. Losing weight will reverse this effect.

Fat cells behave differently in different parts of the body- Men typically carry excess weight in 5. their midsections. When you gain weight the majority of it will present itself in this region. Belly fat increases blood sugar levels and LDL (bad cholesterol) which can have long reaching medical implications. Unfortunately, spot reducing is not possible (as I have mentioned on numerous occasion) so overall weight loss and increased exercise become a necessity.

If you consume NO fat at all, you will short-circuit your body- If you avoid consuming ANY fats at 6. all you will short-circuit your body’s natural system for transporting vitamins through the body and regulating cholesterol levels. Fats are critical for maintaining the body’s processes including vitamin transport, absorption of calcium, hormone production and the blood’s ability to clot correctly. Unsaturated fat can also play a vital role in regulating the level of bad cholesterol (LDL).

Fat calories should only be 30 percent of your total daily calories- In spite of what many believe, fat is 7. not the enemy. A certain amount of fat is necessary to maintain the normal functioning of your body. A healthy diet should include approximately 30% of its total calories from fat. It is important, however, to keep in mind that some fats are healthier than others. Saturated fats, which comes from red meat and dairy products tend to raise LDL levels more than other types of fats such as monounsaturated and polyunsaturated fats found in nuts, olive oil and fatty fish.

Despite its negative connotations, you can have a good working relationship with fat and maintain a lean, toned body. Some tips to achieve this include:

TennisNewsFebruary Tennis Tip: “A quick reminder”Now that we’re starting the second part of the season, please try to help your doubles game by playing some or more singles to compliment the areas of your game that are lacking. The cooler weather allows you to play a more physical game- just make sure you stretch and warm up well.

Cardio TennisStart the New Year by working out vigorously. Make sure you sign up ahead of time because classes will be filling up quickly. Classes will be taught by Andres and Emerson because of Ernesto’s departure. We need a minimum of four per class, so please sign up 24 hours in advance or there will be no class.

Ladies’ ClinicsThe participation for Ladies Clinic continues to be excellent so please let us know in advance if you will be attending. We hope you will continue to bring the same enthusiasm as last year.

Interbay LeagueWe have added a new 3.0 Ladies’ League on Mondays mornings. Please come and support our league teams!

Beginner, Intermediate & Advanced Junior Camp ProgramThe Junior Camp is continuing to do well. Tiny TotsThe response to Tiny Tots has not been as good as expected. These are the future players of the club so please encourage your kids to participate. We will continue to make it as fun as possible without sacrificing good instruction. Please call in advance if your child will be joining us. Tiny Tots is on Fridays from 3:30 to 4:30 pm (Minimum of 3 is required).If you haven’t signed up for the Cinderella Tournament, it is going to be held on Saturday February 6th. 2010 Palma Ceia Swim Team Sign-Up Dayfebruary 13th from 11:00 am to 1:00 pm ($25 discount for registering at Sign-Up Day!)* Every spring, Palma Ceia participates in the Private Club League (PCL), a competitive swim youth league comprised of 10 Bay Area clubs. The season consists of a series of dual/tri-meets (about 4 home and 2 away), two invitational meets (away), and culminates in the highly competitive PCL Championship Meet in Clearwater. Todd Hoffmeier has served as the Palma Ceia Swim Team’s Head Coach since 1998. He works well with little tykes and teenagers, alike and is dedicated to ensuring a positive experience for his swimmers. Children and grandchildren (ages 5-18) of members are eligible to join the team.

Do you want to help Palma Ceia bring home the gold this year? If so, stop by the pool deck on Saturday, february 13th anytime between 11:00 am and 1:00 pm. for our Annual Sign-Up Day. New and returning families will have the opportunity to register their swimmers, purchase team swimsuits and receive important information about the upcoming season. Coaches and Team Captains will be on deck to answer any questions and get everyone fired up for a fast and furious season!

The first day of swim practices will be Monday, March 15th (Age Group II, Junior, and Senior Team) and Monday, March 22nd (Dolphin and Age Group I). ALL Swimmers 6 & younger new to the swim team need to participate in an introductory group during the first two weeks of practice. A swimmer will advance onto the team once the coaches agree that he/she is developmentally ready for competitive swimming. Have questions? Coach Todd’s Swim LessonsBelow is the swim lesson information for this spring and summer. There are several available options to meet the needs of you and your children.

1. Mom and Tot Swim ProgramIn the pool with a parent, Children 6 months to 24 months of age are introduced to their first swimming experience. This program is designed to help young children become comfortable in the water. Mom and Tot classes also teach parents information and techniques to safely orient their children to the water.

Tuesday and Thursday | 9:30 am - 10:00 am

Session 1 will begin May 4th-27th Session 2 will begin June 1st-24th Session 3 will begin July 6th-29th

2. Beginner Lessons (approximate age: 2-4 yrs.)Tuesday, Wednesday and Thursday | 8:00 am - 3:00 pm 30 minute lessons. No classes from 12:00 - 1:00 pm. (Limit 4 swimmers per group)

The coaching staff and other qualified and trained swimmers will work with all groups. Intermediate swimmers should be able to swim to the flags and float on their back using their arms.
