THERE’S NO DOUBT we’ve been through some unique times in recent months. When I take a minute to reflect on how our business has fared, I couldn’t be more proud to work for this 100 per cent Australian family-owned and operated company.

Palm Lake Group is the largest privately-owned operation that covers the three sectors of retirement villages, over-50s manufactured home estates and aged caring communities here in Australia. We employ and support 1300 employees across three states as well as more than 2000 contractors. While JobKeeper has been a great incentive for Australian workers in their time of need, our business has not had to rely on it to get us through. Established in 1977 and with more than four decades of experience in developing these types of communities, the modern Palm Lake Group benefits from the strong foundations laid by company owners Walter Elliott and Scott Elliott. Managing Director Scott brings fresh new ideas to the table on a regular basis to forge the company ahead. Being a space fanatic myself, I’m reminded of NASA’s Mars Exploration Program and the recent launch of the Mars 2020 ‘Perseverance Rover’ with its mission to explore the surface of the Red Planet. It’s been with perseverance and determination over the decades that Palm Lake Group is now in a position to chase new frontiers, with the goal of blasting Palm Lake Resort securely into the new future!

Among those exciting new frontiers are three sites in particular which will no doubt prove to be iconic for our company. These include Palm Lake Resort Forster Lakes (read all about it on Page 10), the Pelican Waters Golf Club precinct and, in a major news announcement for our company, a brand new beachfront greenfield site at Old Bar Beach, near Taree, in New South Wales. We know these three new communities will become icons for us. They already boast that magic mix of stunning geographic locations, with plans for truly inspired world-class facilities (Old Bar Beach will have its own 18-hole golf course) and architectural home designs in the award-winning style of our newest Palm Lake Resorts. With the bold ideas and grand plans mooted for

each of these sites, they will become arguably three of the best over-50s community lifestyle resorts that Australia has ever seen – and they will never be repeated! When they are complete, no one will find a better lifestyle resort.

Our sector has become very busy of late, with many unproven new players coming to market more intent on purchasing sites than putting their residents’ needs first. We are lucky here at Palm Lake Group that we don’t need to satisfy a large investor base with ‘numbers’ like other listed companies. Unlike new players to the industry, most of which are owned by foreign investors, Palm Lake Group management and owners take direct calls from our most valuable assets - our residents - on a daily basis. For our family-owned company, it’s about bringing passion, desire and willpower to the table, to provide quality, safe and secure resorts with all those world-class facilities that make the Palm Lake Resort product so enticing for over 50s. Our competitors might try to emulate what we’ve achieved but they can’t copy our ever-evolving array of new ideas in line with our overarching philosophy to provide an even better lifestyle for our residents. Our efforts were applauded recently by the Master Builders Association Queensland who presented our company with a highly sought-after construction award. Given this is the construction industry’s peak independent body, we couldn’t be prouder. And in further proof, interest in our product continues to be very strong and we are currently fielding enquiries from countries as far afield as Singapore, the United States, Canada and the United Arab Emirates.

So, just like the Mars Exploration Program, we are setting some lofty goals for our company (more than ever before) but we know with perseverance, we too will rocket into the new future.

NEED A LIFT?

IN A FIRST for the Group, Caloundra Cay now offers two-storey home designs complete with an internal elevator as standard. These slick elevators are equal parts convenience and glamour talking point. The first display home with an internal elevator at this location is our Florencia design.

ACTIVITY ON Palm Lake Resort’s newest construction site has really hotted up these past few months. Situated perfectly on the edge of Wallis Lake and taking its inspiration from the Florida coast, Palm Lake Resort Forster Lakes will be quite the destination when complete. Almost 300 luxury homes (single- and double-storey) will make up the resort, along with all the usual world-class Palm Lake Resort facilities including the newly named Belleair Country Club and The Cove Reception Centre. We’ll even have an Oyster Bar! The best home sites will

enjoy prestigious lakefront positions and there will even be marina berths available for those ‘toys’ that make our homeowners’ retirement years the most rewarding.

Residents will also delight in the health and wellbeing aspect of this resort. While Palm Lake Resort Forster Lakes will be a luxurious and modern wonder when complete, the land itself holds some vivid memories for those kids who grew up in the Forster area in a much simpler time. One of those ‘kids’ is Lyn Brokenbrow.

As a tween growing up in the Baulkham Hills district of Sydney, Lyn and her best friend Tracey would spend holidays in Forster, due to Lyn’s aunty and uncle having a holiday house there. For the two pony-crazed young girls,

there was one main destination at Forster that drew them back time and time again – Follyfoot Farm – a popular horse-riding school that was operated on the land that now exists as Palm Lake Resort Forster Lakes.

“Tracey and I would ride at Follyfoot Farm every school holiday,” Lyn recalls with glee. “And when we weren’t riding, we’d go there just to pat the horses.

“I remember it as a very flat trail ride and when it rained, we’d love riding through the puddles. You’d go on a 60- or 90-minute ride following your guide. My horse was called ‘Girlie’ and Tracey always rode a horse called ‘NoName’ – I’ll never forget that.”

Now aged 56 and still best friends with Tracey, Lyn says the pair was back in the Forster area in March this year to attend a family reunion. Now based in South-East Queensland, all those childhood memories flooded back for Lyn and her friend, who went exploring their old stamping ground while in town.

“We turned up at Follyfoot Farm and, while the business had long gone, the original sign was still hanging there at the old entrance. It was amazing. And then we also saw all the signage for Palm Lake Resort. I called the number on the sign and spoke to (Sales Manager) Jen. We asked her what they were doing with the old Follyfoot Farm sign and, if possible, could we have it, if it was being taken down. Jen said yes - we were so thrilled!”

From childhood trail rides to riding the high life. Palm Lake Resort Forster Lakes sits on one impressive waterside block of land that has seen much change over the past 50 years.

Lyn says it was no mean feat to disassemble the sign (pictured above) which had stood the test of time for more than half a century. It took two men to carry it to a truck, complete with all its original rusty fixtures. While COVID has the borders closed, Lyn’s sign will remain safely stored at her Forster-based cousin’s home before it will be relocated and proudly erected on Lyn’s two-acre property at the back of the Gold Coast.

“I told my husband that when our land becomes all too much for us, we should think about downsizing to Palm Lake Resort Forster Lakes. How great would that be? You just never know where we’ll end up!”

All we do know is that when Lyn decides to bring her life story full circle with a return to Forster for a lifestyle of luxury at Palm Lake Resort, she brings with her the Follyfoot Farm sign. What an iconic piece of local history.

Palm Lake Resort Caloundra Cay and Beachmere Bay residents were very excited to rub shoulders with golfing royalty at Pelican Waters Golf Club recently. Not only do these lucky homeowners play the Palm Lake Group-owned and Greg Norman-designed course for free, they also enjoyed playing alongside World No. 8 golfer Adam Scott. The course has been voted the best public access course on Queensland’s Sunshine Coast and in the Top 25 public access courses in the country.

Almost two years ago, in the blink of an eye, Donald and Anne Haisman’s family’s life was changed forever. Unfortunately, it’s a situation all-too familiar for our care team. But through all the frustration, anger, confusion and despair, the Haismans found unwaivering support and unexpected sanctuary in Palm Lake Care. And a perfect fit across the road at Beachmere Bay.

IN NOVEMBER 2018, Anne and Donald Haisman were visiting their son and daughter-in-law on the Gold Coast. It should have been a time of family fun and connection, as had always been the case when Mum and Dad came down to visit. In fact, the weekend started out just like that. Happy chatter, shared laughs, family bonding. But, in the blink of an eye, their weekend away became months of heartache when Don suffered a completely unexpected and catastrophic stroke.

“It was incredibly stressful,” recalls Anne. “After 12 weeks at the Gold Coast Hospital we had to make other arrangements but being away from our long-time home in Burpengary, I didn’t even know where to start.”

The couple’s son, John (along with his wife, Jane), was right by his parents’ side through the shock and sadness of that weekend and the months that would follow, with Anne supported at his Helensvale home while the family together sought a care plan for Don. John and Jane organised a visit to Palm Lake Care Bethania and while there was no availability at the time, the Haismans hit an even greater jackpot in finding Don’s ultimate care champion - Care Solutions manager Jacinta Sutton. It was Jacinta who suggested Palm Lake Care Mt Warren Park might be a better fit for the family patriarch and who has stayed in close contact with the Haismans ever since.

“From the moment we first arrived at Mt Warren Park, I just loved it,” gushes Anne.

Anne says the Palm Lake Care team has made her family’s stressful year infinitely easier. In keeping with their name, the Care Solutions team has helped Anne in a variety of ways – even putting her in touch with an independent financial expert who helped coordinate Centrelink support.

“I haven’t had to worry about things one bit,” says Anne. “My daughter-in-law has also kept in contact with Jacinta, and I can’t say enough about the staff who have been looking after Don marvellously.”

It has been quite a tumultuous time for the Haismans, with the impact of Don’s unexpected stroke compounded by the global pandemic that arrived just as unexpectedly on Australia’s doorstep. While abiding by government-imposed COVID-19 restrictions, Palm Lake Care was able to support Don’s need to have his family by his side as he himself continued to learn to navigate his new world. Large, plush, individual suites have always benefitted Palm Lake Care Mt Warren Park’s occupants, but during COVID-19 they benefitted the Palm Lake Care staff by more easily keeping visiting family members socially distanced from all the other residents.

FROM ONE WELCOMING FAMILY HOME TO THE NEXT Anne and Donald (pictured right) lived in Burpengary, on Brisbane’s northside, ever since they permanently moved from England to Australia to retire, some 25 years ago.

“We had first moved out here when the children were much younger and we were true ‘ten-pound Poms’,” recalls Anne. “It was such a long distance to travel back and forth in those days that we went home to visit family and ended up living in England again. Don then got a good job with Exxon, but when he started going deaf in his left ear he told them the last thing he wanted to hear was the ocean in Australia and so they gave him an early retirement.”

Anne adds that when Don’s stroke took all of his senses down his right side, miraculously, his right ear retained its hearing.

“Since Don’s stroke, it had been hard being so far from Burpengary, which I know like the back of my hand. Over the past year, I realised that both Don and I needed to be somewhere that feels like home.”

Anne had heard through the grapevine about the Hamptons-inspired delight that is Palm Lake Resort Beachmere Bay. But it was (at the time) when she

learned that there would be a brand new Palm Lake Care community opening directly across the road, she knew it would be the solution their entire family needed.

“The support we have received from the entire Palm Lake team has been absolutely amazing, so I knew I myself wanted to stay within the Group,” Anne says. “I don’t know how we have managed to get so lucky.”

Having newly moved into her Palm Lake Resort Beachmere Bay home at the time this magazine went to press (with Don the very first resident to move into Palm Lake Care Beachmere when it opened in recent weeks), Anne admits she is nervous to live by herself for the first time ever but doesn’t think she’ll feel alone. “There is so much to do at Palm Lake Resort Beachmere Bay and the people have been so welcoming already,” says Anne. “And, being just across the road from Don, I’m able to continue to stay by his side.”

As Anne admits, it’s like everything magically fell into place and Don is right where he needs to be. He’ll stay near Anne, he will continue to be supported by a team of experienced carers and welcoming neighbours, and he will be more than comfortable in his sparkling new Hamptons-inspired home right by his beloved seaside. As will she. Perfect.

Your Time magazine sat down with celebrity chef Miguel Maestre to find out what ingredients are vital when entertaining at home - because we know that’s what Palm Lake Resort residents thrive on.

PALM LAKE RESORT residents are a social bunch – with thriving community groups, world-class facilities in which to enjoy one another’s company and luxury homes to en-tertain in, why wouldn’t they be? While recent events have made socialisation challenging, the thought of one day reconnecting with neighbours, friends and family helped us through. Now, that day has come for most of us – and the only question is, how should we celebrate? According to Miguel Maestre, with a dinner party, of course! He’s the king of the kitchen on Network Ten’s ‘The Living Room’ and was the king of the jungle on ‘I’m A Celebrity… Get Me Out of Here!’ so it comes as no surprise that Miguel is the king of the dinner party at home, too. The Spanish-born father-of-two (known affectionately as ‘The Crazy Bull’ or ‘El Toro Loco’) has penned two cookbooks, and even has his own range of ‘Maestre Family Food’ featuring cured meats and ingredients to make his signature Spanish dishes. But outside his busy work life, Miguel focuses his boundless energy on what he loves most: food and family.

“My wife Sascha and I have a big family, and her parents and sister live close by so there is always someone to eat breakfast, lunch or dinner with,” says Miguel. “I love cooking, so we often end up hosting friends or family at our house – I have a dinner party even if I don’t want to have a dinner party!”

For Palm Lake Resort residents, Miguel says the secret to hosting a good dinner party is simply to take the pressure off yourself and focus on the food instead. You don’t need to run around all day preparing everything for your guests – Miguel’s simple hack to make things fun will allow you to enjoy the night, too.

“Talking to your guests while you cook or assemble a meal makes it fun, so serve dishes that people can put together themselves,” says Miguel. “Don’t slave away pre-making san choy bao, tacos or pizza for everyone – instead, lay out all of the ingredients and let your guests make their own. You could even set out sauces and skewer chunks of steak for your guests to grill themselves. It’s a lot more fun, and it takes the pressure off you so that you can actually enjoy everyone’s company.”

When it comes to dishes that bring people together, Miguel’s obvious favourite is a paella. Cook yours over a burner while you talk to your guests – this turns the main dish into the entertainment, Miguel says.

“The secret to being a good host is making sure people feel welcome and involved – that’s what makes for a mem-orable dinner party,” says Miguel. “It’s all about creating a nice flow, offering them a cheese platter when they arrive and moving from champagne to some nice cocktails to sangria, then finally pushing the furniture aside for a dance at the end of the night!”

No stranger to large family get-togethers (Miguel’s mother is one of 20 siblings), Miguel says food is the secret to true connection. Making the time to come together and break bread is a tradition we should hold onto, even if it means making a little extra effort.

“The Sunday get-together is something we’re slowly los-ing, but it’s the most important thing to do,” says Miguel. “Confidence, trust and connections are made when a family is sitting around a table together – it’s when people

are their best, most true selves. If you have the time to enjoy good conversations around a delicious meal, why wouldn’t you?” Miguel adds that it doesn’t matter your age - some good old-fashioned dinner party games are another favourite way to bring your guests together and create lasting memories.

While Miguel doesn’t see himself ever retiring (“What I do now doesn’t feel like work, so why would I stop? I’ll just get older and fatter, with less hair!” he laughs), he does envy the extra time that Palm Lake Resort’s over-50s have to enjoy the company of their family and friends.

“When you retire, you have so much more time to cook with your loved ones,” says Miguel. “It’s an opportunity to be adventurous! Buy that paella pan and make a sangria to enjoy with your favour-ite people.

“It doesn’t have to be complicated – we watch too many cooking shows, believe me! Know your audience, but don’t forget that you should enjoy the party, too. A chef who keeps himself happy keeps every-one happy.”

Churros con chocolate

Ingredients

250ml milk1 teaspoon caster sugar100g unsalted butter, chopped2 vanilla beans, split, seeds scraped out115g plain flour3 egg yolksVegetable oil, for deep fryingCaster sugar, to dust

Method

Bring milk, sugar, butter and vanilla beans and seeds to a boil in a medium saucepan. Discard vanilla beans. Remove from heat. Sift in flour. Stir with a wooden spoon until combined and dough comes away from side of pan. Remove from heat. Stand, covered with plastic wrap, for 3 minutes. Beat in egg yolks with wooden spoon, one at a time. Spoon dough into a piping bag fitted with a 2cm star nozzle. Heat oil to 180°C (when a cube of bread turns golden brown, oil is hot enough). Pipe 5cm lengths into the oil, cutting off the dough with a sharp knife. Deep fry churros until golden brown, then drain on absorbent paper. Dust with caster sugar and serve with a chocolate sauce. To make a chocolate sauce, stir condensed milk in a small saucepan, over medium heat until hot. Add chocolate. Whisk until smooth, then whisk in milk and rum. Remove from heat and cover to keep warm. Serves 4.

Spanish-style stew Ingredients

4 Maestre free-range Chorizo sausages, thickly sliced100g Maestre Jamon Serrano, diced100g piece salami, diced100g piece pancetta, diced5 garlic cloves, sliced5 pink eschallots, quartered1 bunch of thyme, leaves only2 x 400g tins chickpeas, drained100g morcilla, sliced (optional)1L beef stock1 bunch parsley, chopped

Method

Heat a large saucepan. Add chorizo, jamon, salami and pancetta. Cook, stirring occasionally, over a medium heat for about 10 minutes or until lightly browned. Add garlic, eschallots and thyme. Cook, stirring occasionally, for about 10 minutes or until eschallots are very soft. Stir in chickpeas and morcilla. Cook, stirring occasionally, for 5 minutes so chickpeas can absorb flavours from meat and thyme. Stir in stock. Bring to the boil. Simmer, for about 1 hour or until slightly thickened. Garnish stew with parsley. Serves 4.

Rice pudding

Ingredients

1L full fat milk200g Maestre Spanish Rice165g caster sugar2 vanilla beans, split, seeds scraped out1 cinnamon quillPinch of salt125ml full-fat creamFinely grated rind of 1 blood orange2 tablespoons caster sugar, extra

Method

Rinse a medium heavy based saucepan with cold water but don’t dry it. Add milk and rice to pan. Bring to a boil over medium heat. Reduce heat. Stir in rind, sugar, vanilla beans and seeds, cinnamon quill and salt. Simmer, stirring occasionally, for about 30 minutes or until pudding is thick and creamy and rice is tender. Remove from heat. Stir in cream. Remove vanilla beans and cinnamon. Divide mixture among four flameproof ramekins, 13cm round x 3cm deep. Combine more blood orange rind and extra sugar in a small bowl. Sprinkle over puddings. Cook under a hot grill until sugar melts and caramelises (you can use a kitchen blow torch if you have one). Serve rice puddings with mandarin segments. Serves 4.

Heat milk, cocoa powder and sugar over low/medium heat in a small saucepan, whisking fre-quently until warm (not boiling). Add chocolate and whisk con-stantly until melted and evenly distributed. Whisk in vanilla extract. Serve immediately. Serves four.

Hot chocolate

Add instant coffee and sugar to a bowl and mix, then pour in hot water. Using a hand mixer, blend until thick and creamy. Fill half a glass with milk and ice cubes, then spoon whipped coffee mix-ture on top. Serves two.

Dalgona coffee

Mix 1 shot Scotch and 1.5 shots Drambuie in a glass, and top with warm milk. Serves one.

Woolly sheep

2 cups milk¼ cup pure pumpkin puree¼ cup sugar1 teaspoon pumpkin spice1 teaspoon vanilla essence1 cup coffee

In a saucepan, whisk milk, pumpkin, pumpkin spice, vanilla and sugar together over medium heat. Keep whisking and heat until milk starts to bubble. Remove from heat and pour into mugs, then garnish with caramel syrup, cinnamon or whipped cream if preferred. Serves three.

WARREGO WAY Winding from Brisbane to Birdsville, the Warrego Way is a must-travel for those hoping to experience Outback Queensland. Beyond Toowoomba, you’ll experience Australia’s richest grain and cotton growth in Dalby, the rambling Warra Hotel and fossicker-favourite, Chinchilla – home to Chinchilla Red petrified wood. Next, in Miles, explore a replica historical village and hear tales from the past in the Dogwood Crossing Centre – and, if your trip coincides with the September spring rains, don’t miss the Gurulmundi wildflower tour. Then, travel to Roma, synonymous with all things ‘big’: the Big Rig, the Southern Hemisphere’s biggest cattle yard (open Tuesdays and Thursdays) and the start of big sky country. Drive through Mitchell and Morven and onto Charleville, looking skyward at the Cosmos Centre and the Royal Flying Doctor Service, then downward to find opals in Quilpie. Fishermen will love dangling a line in the Ward River, too. When you finally make it to Birdsville, climb ‘Big Red’ and watch drivers tackle the steep and sandy tracks. Enjoy a beverage and some shut eye at the historic Birdsville Hotel – but not before visiting the ghost town of Betoota.

WALK WITH DINOSAURS Before cattle and sheep grazed Queensland’s pastures, herds of dinosaurs called the Sunshine State home. And while those prehistoric creatures are long gone, evidence of their life here in Australia remains – and

is visible throughout the state. Winton, dubbed the palaeontology capital of the Outback, is home to the Australian Age of Dinosaurs Museum of Natural History and the world’s largest collection of native dinosaur fossils. The surrounding Mitchell Grass Downs area – once an inland sea – has long fascinated palaeontologists looking for remnants of underwater and land-based dinosaurs, including nearby Lark Quarry, considered the world’s only known record of a dinosaur stampede. In fact, much of Central West Queensland is littered with dinosaur fossils and footprints. In Richmond, you can view the country’s leading collection of marine fossils dating back 110 million years – or hunt for your own – and in the nearby Porcupine Gorge National Park, 500-million-year-old fossils are etched into the gorge walls. Further south, the internationally recognised Eromanga Natural History Museum can be found in – you guessed it – Eromanga, just off the Warrego Way, and offers the opportunity to come face-to-face with Australia’s largest dinosaur fossil discoveries, including ‘Cooper’ and ‘George’. Fun fact: Eromanga is also Australia’s furthest town from the ocean.

LADY ELLIOT ISLAND The first island on the Great Barrier Reef, Lady Elliot Island tells a much-needed story of hope and regeneration for the greater region. Situated within a highly protected ‘Green Zone,’ the world-renowned coral cay is a sanctuary for some 700 individual manta rays, countless turtles and unspoilt coral reef. Destroyed by years of neglect, the island and surrounding reef has flourished back to its former self under the careful watch of its first custodian, Don Adams. Since Adams arrived in 1969, the lush forest, coral cay and local wildlife have thrived, and the Lady Elliot Island Eco Resort, now led by environmentalist Peter Gash OAM, has officially achieved 100 per cent sustainability. A haven for holidaymakers and scuba divers alike, Lady Elliot Island is the perfect place to see – and hear – the healthy Great Barrier Reef in all its glory. TONY MCKENZIE knows the South-West Queensland aged care industry like the back of his hand. Having worked in the Darling Downs region for more than a decade, includ-ing further afield in Kingaroy and beyond, he has experi-enced it all - from cutting his teeth in community services to his current field of expertise in residential aged care.

“I was born and bred in Toowoomba – my whole family is here, and we’re all very much involved in the community,” says Tony. “Over my years working in aged care here, I was always aware of the Palm Lake name. Palm Lake Resort is particularly significant here in Toowoomba for its excellent reputation so, needless to say, when I heard they were introducing an aged care branch, it piqued my interest.”

Since being appointed as the service manager of the upcoming Palm Lake Care Toowoomba, Tony has already spent more than a month so far immersed in life at our other locations – specifically, Palm Lake Care Bargara, Beachmere and Bethania. His extensive career in aged care means Tony is already well acquainted with a number of experienced staff members within Palm Lake Care’s ranks, though seeing how each location operates from within has been eye-opening for him.

“I have been able to reconnect with managers I knew before and have seen first-hand how resident-focused the

staff are here, particularly through the turbulence of the last few months,” says Tony. “Their commitment to the res-idents is evident, and the teams work tirelessly to maintain the high standard of care no matter what comes their way.”

Tony believes it’s the job of a Service Manager to make sure everyone is happy; ensuring staff are excited to come to work each and every day, that residents feel supported and cared for and that their families feel confident in their choice. He is particularly excited to make his mark on a brand-new site, and his love for people and community reflects Palm Lake Group’s overarching vision.

“The new-site factor was a huge drawcard for me, as it means I can lay a strong foundation that emphasises com-munity,” says Tony. “The build itself has been designed to bring people together, with a number of communal spaces for residents to enjoy. My initial focus will be on making sure everyone feels welcome and creating that warmth, which I think is one of my strengths.

“Having Palm Lake Resort Toowoomba right next door is a brilliant idea - reflective of all the stages of life,” says Tony. “Offering this kind of care, which allows couples to stay together and families to have peace of mind, is the way of the future. I’m excited to be part of the next chap-ter of the Palm Lake Group’s story.”

MASTER CHEF He has worked across Europe and for Australia’s most luxurious hotels, but now Russell Middleton is utilising his catering nous for his new role as Palm Lake Care’s Hotel Services Coordinator.

COOKING UP restaurant-quality dishes is Russell Middleton’s bread and butter. Classically trained for three years in London, Russell cut his teeth in four- and five-star accommodation in Germany, Spain and across the United Kingdom. He managed and cooked in the kitchens of Europe’s top-rated hotels, eventually moving to Australia to work for the likes of Sheraton and the Gold Coast’s Versace Hotel.

“I came out here around 15 years ago, and I’ve been here ever since,” says Russell, who is originally from Middlesex, just outside of London. “I’m thankful that this passion I had growing up has allowed me to travel the world. It hasn’t always been easy, but it’s certainly been worth it – getting to live in Australia is a bonus.”

From hotels on the Gold Coast, Russell found his way into aged care. He worked for another provider for three years as group chef, managing 15 kitchens across Queensland. “The only real difference between working in hotels and working in aged care is the cooking style – what I do now is a lot warmer and more comforting, and feels more homemade,” says Russell. “Other than that, the passion I put into every dish is the same. It’s about creating an experience for the client, no matter who. I give my all each and every time.”

When a former colleague told Russell that Palm Lake Care was looking for a new Hotel Services Coordinator to join their ranks, he was excited by the potential of becoming more involved in enhancing residents’ food experiences.

“Previously managing 15 kitchens throughout the state, often only spending half a day at each one, it was hard to focus in depth on the needs of the residents,” says Russell.

“Here, I can devote quality time to immersing myself in each location, spending days at each one, rather than minutes. Not to mention the added challenge of managing the housekeeping and laundry services, which I am really enjoying thus far. The focus on food here is incredible and I’m enjoying being able to create that dining room experience for every resident.

“I’m very lucky to have such accommodating chefs and colleagues to deal with on a day-to-day basis, and it is evident that we all have a common goal to make sure the residents feel comfortable and supported,” says Russell. “I get to have a lot of back and forth with residents, tailoring our offering to their preferences, while also doing a lot of auditing, checking and reporting, as well as finding new systems and equipment to help us perform even better.”

In particular, Russell applauds the role of the Palm Lake Care Central Support Office, both in upholding a supportive culture for the hundreds of personnel and for maintaining good communication channels between locations – all in the name of creating a positive experience for residents.

“I feel so lucky to be able to enjoy my passion for food and feeding people in this positive way, and in such a positive environment,” says Russell. “I really do get to have my cake and eat it, too.”
