DESCRIPTION

Enzymes are used by bacteria to help break down components in meat so they can pass through the bacterial cell wall mort efficiently. Enzymes are proteins and are easily oxidised or broken apart by ozone. Bacterial cell walls have a structure called a phospho lipid packet. These packets are easily broken down by ozone. When this happens, the cell wall starts to come apart and ultimately the cytoplasm inside the cell wall, including DNA is spread out and the bacteria no longer functions.
