It is difficult for someone at

such times to imagine how the

charming story of Ouzo, the leader of the

Greek drinks, began, our national drink

which requires art in order to produce and

art to indulge it.

The Art of distillation

From the alembic tradition-al copper boiler of distilla-

tion which was discov-ered by the Arabic peo-ple and operated initially in the laboratories of the alchemists during the

Middle Ages. Their discovery of “Al-kool”, the water of life, had for years been used for medi-cal purposes. From the Arabic

people the art of distillation passed to

the Byzantium and to the monks of monas-teries. Raki the ancestor of Ouzo.

From the above mentioned the secrets of distillation spread to the agricultural population of Greek regions which pro-duced Raki (Tsipouro) which was the main drink distilled from grapes and from other fruit locally produced. Originally its taste was sour and anything else but inviting. In fact it was mainly used as medicine.

Ouzo its history.

In effort of producing better quality and

taste of the particular drink, a producer of

that time in Tirnavos of Thessaly, - a

region in which the economy was interwo-

ven with the cultivation of vineyards and

the silkworm – became possessor of a

Raki boiler as part of the dowry given to

him, a common occurrence of that period

in Tyrnavos. By using leading for that

period ingredients and methods, and by

adding various aromatic plants and

herbs, he managed to produce a new

high quality distillation. This new

product was Ouzo.

Reading the sources of the time, we

learn with great joy and emotion that

the person who worked hard and

first produced the drink that brings

together all the characteristic elements

of the Greek temperament, the sim-

plicity and the spontaneity of the

Greek people, the “National drink”

of Greece, was the forefather and

founder of our company, Katsaros

Nikolaos.

The production of this true Greek drink, which identifies completely with the Greek soul, hospitality, sea and Greek way of life, is an art form which is as demanding as provocative. The art of dis-tillation hides within it agony and great expectations…

Ingredients

Alcohol – Ouzo Katsaros is produced from grape alcohol of superb quality.

Water – crystal clear, rich in mineral from the heart of the plains of Thessaly.

Aromatic seeds and herbs – the secret mixture of seeds and herbs, gives to every ouzo its individual taste and its character-istic aroma.

Its unique fine aroma and its rich natural taste flows from the “marriage” during the distillation of the 14 aromatic seeds and

herbs such as fennel, aniseed, asteroidal, cinnamon, nutmeg, (you will of course allow us not to mention them all) etc which are chosen with great care in par-ticular at the time of harvest.

The “pure” double distillation

During the first distillation we remove the “head” (which consists of a high alcoholic grade and aldehyde which gives a “rusty” taste) and the “tail” (which consists of many higher graded levels of alcohol which weighs down the taste and the aroma and are responsible for headaches). Keeping the “heart” of the distillation we carefully move on to the second distilla-tion process, using the exact same proce-dures so that the concluding distillation has a cleaner and finer aroma as well as a more mature taste.

The end product is then filtered and stored in the stainless steel tanks so that it can settle and

for it to become a more homogeneous product before it is bottled.

Ouzo straight or with ice accompanies mainly traditional cuisine, as an appetizer. The aroma of the seeds and herbs are released, the synthesis of the drink intensi-fies, the taste softens and the senses are delighted. Stin ygia sas! Cheers!

The ancestor of ouzo is the tsipouro. It is the distillation of the Raki (tsipoura) that is to say the grape skins which remain after crushing for the extraction of must which is where the name of drink Tsipouro is derived from.

The presence of tsipouro in the traditional etiquette and the way of life of today is essential, for get togethers, for welcoming, in hospitality and in celebra-tions and in time of festivities.

During the harvestWe methodically choose from 40,000,000 sq. meters of vineyards from the region of Tyrnavos, the best varieties of grapes. We then store the grapes skins, so that by blending them their saccharine transforms to alcohol. Then we place small quanties into traditional copper distillers.
