This class consisted of 10 girls who were from diverse backgrounds and had varied eating habits. The girls were chosen at random by school staff from a large pool of students who were all eager to attend this class. Throughout the six-week Cooking Matters course, the students were immersed in everything that was happening in the classroom. They enjoyed reading and under- standing the recipes, measuring ingredients, stirring the mixtures and using the griddle. They capped off each week sharing the foods they made as a group. This class comprised of a two-hour after school session, lasting for six weeks. The instructor discussed nutrition guidelines, MyPlate, basic cooking skills, and gave an introduction about how to shop on a budget. The students were always enthusiastic about the class and were eager to make and try new foods. It was amazing to see how all the kids teamed up together to learn about nutrition and were willing try out new recipes. Some of the favorite recipes made in class were yogurt parfaits, French toast and turkey tacos. The kids liked relating the lessons learned in class to their own lives, asking questions such as how to change a bad eating habit and how to better themselves. This course was taught by instructor Kim Labbe and she said, “It was amazing to see what these young girls wanted to learn about good nutrition.”
