O-MU-RICE Omelette Fried Rice ()

- is a contemporary Asian dish consisting of an omelette made with fried rice. Its name derives from the combination of the English wordsomeletteandrice. Omurice is said to have originated from Japan and it became a popular dish at a western-style restaurant in Tokyo's Ginza district around the turn of the 19th century.- a relatively simple dish, it typically calls for rice fried with ketchup, chicken and onions wrapped in a thin sheet of fried egg. Different variations of this dish can include peas, carrots, mushrooms, green peppers, onions andkimchi. Pork or beef can be substituted for chicken as well.Omurice Recipe #1

Ingredients: 1/8 cup carrot 1/8 cup yellow sweet pepper 1/8 cup green sweet pepper 1/8 cup red sweet pepper 1/8 cup jalapeno 1/3 cup yellow onion 1/8 cup chopped long green onion 1/3 cup potato 1/2 cup chopped ham 2-4 tablespoons soy sauce 2 cups of short grain rice 6 whole eggs saltDirections:1. Fully cook 2 cups of short-grain rice so that it is ready to go when you need it.2. Chop up all of your filler vegetables into small pieces, setting them aside into a bowl.3. Put a frying pan with a couple tablespoons of vegetable oil on the stove over mediumto high heat until the oil is hot. Next, add in your bowl of omurice vegetable filling. Fry it for three minutes.4. Next, dump in the two cups of finished, fully cooked rice that youve already prepared. Add salt any any other flavoring ingredients you want. Some omurice recipes call for fish sauce, oyster sauce, tomato sauce, ketchup, or pretty much anything else you can imagine. Others introduce spicy pepper paste or even very fermented kimchi. It really is personal preference.We added quite a bit of soy sauce as we enjoy the taste mixed in with the fried rice. This gave it a darker color. From the time you add the rice, you are going to need to continue frying the contents of the pan for another 5 minutes.5. Once thats done, divide the omurice contents into three piles. Each of those three piles will serve as the filling for a single omurice dish.6. Take two eggs, beat them with a couple pinches of salt, whisk them, then strain the mixture so you only get the smoothest liquid. In a freshly oiled frying pan, pour the egg until it is 1/3rd the way cook, which should take practically no time if the pan was sufficiently hot, less than 30-60 seconds in our kitchen.7. Wrap the eggs around the omurice filling so that it holds it all in a burrito-like pocket.8. Flip the omurice so the other side can cook. Depending on your setup, this could take 30 seconds to 3 minutes.9. Transfer the finished omurice to a plate, garnish with ketchup, and serve. If you want a more traditional American option, you might go for green onions and sour cream.

Final Step Go back and finish the other two omurice servings as you should still have 4 eggs and 2 piles of filling left (each egg shell is two eggs). The final dish should provide for three individual meals.Omurice Recipe #2

Ingredients: lb chicken breast (or any other choice of meat) 1 onion 1 green pepper 4 white mushrooms 4 tbsp ketchup 1 tbsp vegetable oil 4 eggs 4 cups of cooked/steamed rice Salt and pepper to season

Directions:1. Dice chicken, green pepper, mushrooms, and onion.2. Heat vegetable oil in a frying pan and saut diced chicken.3. Add diced onion, mushrooms, and green pepper in the frying pan and saut together.4. Add cooked/steamed rice in the pan and mix well. Sprinkle some salt and pepper.5. Stop the heat and add ketchup and mix well.6. Heat another frying pan and put some vegetable oil.7. Whisk an egg in a bowl and pour the egg in the frying pan. Quickly spread the egg in the frying pan and make a thin, large, and round omelet.8. Place chicken rice in the middle of the omelet and fold top and bottom sides of omelet over the chicken rice.9. Cover the frying pan with a plate and turn them over to place the omurice in the plate.10. Put some ketchup on top of omurice and serve hot.11. Repeat steps 6-10 to make four plates of omurice.

Omurice Recipe #3Ingredients: Cups Cooked Short Grain Rice 6 Eggs (6 Pinches Salt) Cup Spam or Ham Cup Well FermentedKimchi(Optional) Cup Potato Cup Onion Cup Zucchini Cup Button Mushrooms Cup Red Sweet Pepper Cup Green Sweet Pepper Cup Yellow Sweet Pepper Cup Carrot 2 Tbsp Cooking Oil tsp Salt Ketchup (for Garnish)Directions:1. Finely chop all the vegetable and meat ingredients: cup spam or ham, cup well fermented kimchi (optional), cup potato, cup onion, cup zucchini, cup button mushroom, cup red sweet pepper, cup green sweet pepper, cup yellow sweet pepper, and cup carrot. Depending on your tastes, you can substitute other veggies and/or meats. Just obtain about 2 generous cups of them in total.2. Add 2 Tbsp of cooking oil and all the chopped ingredients in a heated pan. Fry for about 3 minutes on medium-high.3. Add about 2 cups of cooked short grain rice and mix everything together.4. In this step, season the fried rice with tsp of salt. I prefer mine with salt, but you can use ketchup, oyster sauce, fish sauce, or SempiosYoundooinstead. If you skipped the kimchi, you will have to add more salt or other seasoning ingredients for flavor.5. Fry for another 5 minutes on medium and divide the fried rice evenly into 3 groups. Each group will be one serving.6. Break 2 eggs and add 2 pinches of salt. Whisk gently. Each serving will need 2 eggs and 2 pinches of salt. You will perform this step 3 times. This way, you will get an even amount of egg for each serving.7. Strain the egg mixture once to get a nicer color and smoother texture.8. Preheat an 8-inch nonstick pan on medium-high. Drizzle a little bit of cooking oil in the pan and gently wipe the surface with a paper towel. Reduce to medium-low. This helps make it easier to get a nice shape.9. Pour the egg mixture and cook it for about 3 minutes, or until the surface of the egg is half-cooked. Then, put one serving of fried rice in the center of the flat egg. Spread the rice evenly down the center.10. When the egg is cooked, the edge of the egg will become like very thin paper.11. Fold up each side of the egg to cover the rice. Leave it that way for about 2 minutes to finish cooking the egg.12. Flip it once and cook for another 3 minutes, or until the other side has finished cooking.13. Move the finished omelet rice onto a serving plate.14. Decorate it with some ketchup. It looks good and tastes good. Serve it with a salad, kimchi, pickled radish, or any other side dishes that you like. It is very good for brunch, a kids meal, or a lunch box. Enjoy

Ingredients: Vegetable oil 2 cups chopped vegetables (onion, carrots, capsicum, beans, etc.) 2 cups steamed rice 1 chopped stalk of spring onion 1 tbs tomato sauce/ketchup 1 tbs soy sauce 1 tsp chilli oil (optional) 4 free-range eggs salt and pepper tomato sauce/ketchup

Directions:1. Drizzle a large pan with some oil and saut vegetables over high heat until just soft.2. Mix in rice and spring onion with vegetables and season with tomato sauce, soy sauce and chilli oil (if using).3. Set rice aside to fry omelette.4. Drizzle a medium pan with oil and pour in 2 beaten eggs, seasoned with salt and pepper.5. Fry over low heat and flip to cook the other side (or cover with a lid).6. Turn off the heat and wrap the Omurice by spooning the rice onto the centre of the omelette and folding in the sides (about 5 times).7. Repeat steps for the second Omurice.8. Top the Omurice with tomato sauce/ketchup.

Omurice Recipe #5Ingredients: Small Carrots 1 small red onion 1 cup frozen or fresh Red, Yellow and Green Capsicum 1/2 cup frozen peas 8 tablespoon Tomatoes sauce 6 Eggs or use Egg replacer for vegetarian 1 tablespoon Worcestershire sauce 1 tablespoon grated ginger and garlic puree salt and pepper to taste 3 cups steamed rice (I used leftover cold rice) Olive oil for stir frying Tomato Ketchup and Chopped Cilantro for for Garnish

Direction:1. Chop and cut Carrots, Red Onions, Capsicum (if using fresh).2. Preheat a wok or large nonstick Omelet pans on medium heat.3. When Pan is heated, add 3 tablespoon olive oil.4. Add ginger, garlic paste and stir fry it for a few seconds.5. Add frozen peas and cut vegetables and onions.6. Stir fry it fast with wooden spatula for 3-4 minutes until vegetables are soft and cooked.7. Add Tomato sauce and vegetarian Worcestershire sauce to vegetables.8. Mix it well.9. Add steam rice to mix and mix it well on low heat for 1 minute or so.10. Once everything is mixed, take it off from heat and keep it aside.11. Make Omelet cover.12. Take about 2 eggs for each serving.13. Beat eggs in mixing bowl, add salt and pepper to taste.14. Heat frying pan, add oil.15. When oil is hot, add egg mixture and pour it covering the bottom of the pan.16. Make it very thin, large Omelet.17. Place rice and vegetable mix in middle and fold the sides of omelet like a burrito on each 4 sides.18. Do it slowly, especially at first so you do not break the Omelet.19. Slowly flip it on a plate, garnish with Tomato Ketchup spread and Chopped Cilantro.20. Repeat 2 more times. Roughly makes 3 servings.

Ingredients: 2 cups cooked short grain rice 6 eggs 1/2 cup finely chopped spam/deviled ham 1/3 cup finely chopped kimchi (optional) 1/3 cup finely chopped potato 1/3 cup finely chopped onion 1/3 cup finely chopped zucchini 1/4 cup finely chopped button mushrooms 1/3 cup finely chopped red sweet peppers 1/3 cup finely chopped green sweet peppers 1/3 cup finely chopped yellow sweet pepper 1/3 cup finely chopped carrot 2 tbsp cooking oil 1/4 tsp salt Ketchup (for garnishing)

Directions:1. In a saucepan over medium high, heat the oil and all the finely chopped vegetables and fry them for about 3 minutes on medium-high heat.2. Stir in the cooked short grain rice, add salt and mix everything together and fry for another 5 minutes on medium heat. Divide the fried rice evenly into 3 groups. Each group will be one serving for the omelet rice.3. In a mixing bowl, break 2 eggs and add 2 pinches of salt, whisk gently. Each serving of the omurice will need 2 eggs and 2 pinches of salt. Repeat this step 3 times for 3 servings of the omurice.4. Using a strainer, strain the egg mixture once, to get a smooth texture.5. Heat an 8-inch nonstick pan on medium-high heat.
