The pure, high-quality syrup produced at Bissell Maple Farm in Northeast Ohio defines maple syrup and stands in a class of its own. The flavor of this artisan product bears little resemblance to the big brand names commonly found on grocery shelves, and will surprise and delight amateur and professional palates alike!

Bissell is a 6th generation family farm with over 1,500 trees tapped. The harvest begins in early spring, when the temperature inches above freezing. Sap runs up each maple tree from the roots and is collected at the tap. From there, the sap is processed with a reverse osmosis machine to extract 75% of the water, and further reduced in stainless steel pans over a traditional wood fire.

In addition to classic maple, the Bissell family produces special barrel-aged syrups in American Oak rum and bourbon barrels. This aging process infuses the flavor of toasted oak and light rum or bourbon notes into their premium, pure maple syrup.

The aroma and flavor of these exceptional products demonstrates the skill and knowledge of master maple syrup farmers like the Bissell family!

Whatever the origin, ‘nduja has become one of Calabria’s most well-known foods. It is delicious on crusty bread and also a star ingredient in the kitchen; it is a perfect addition to pasta sauce, amazing mixed into scrambled eggs, and seriously indulgent when brushed on grilled meat just before serving.

Originally produced in Italy’s Calabria region, ‘nduja is a cured, spicy, spreadable salumi that you may have noticed popping up on menus and at cheese counters! Unlike typical firm salami meant for slicing, ‘nduja is made with a soft, spreadable consistency. Pronounced ‘in-DOOJ-ah’, this salumi is made with various cuts of pork, pork fat, and famous Calabrian peppers. Calabrian peppers add a deep, rich red color to the salumi and infuse it with a fiery kick. These peppers are not just an ingredient to native Calabrians; they represent the tradition, culture, and history of the region, and distinguish ‘nduja from other spreadable salami.

There are conflicting theories about the origin of ‘nduja, but it is thought that the name was derived from the French andouille. Some say the Spanish introduced the idea of ‘nduja to Calabria in the 1500s when they brought their spreadable salumi, sobrassada, to Italy.
