SNAPPYSNACK RECIPE

Curried Sweet Potato Fries*Serves 44 medium sweet potatoes1 Tb coconut oil or olive oil1 Tb curry powder (or to taste)1 tsp cumin powder (or to taste)Salt and pepper to taste Preheat oven to 400 degrees F. Line baking sheet with aluminum foil; set aside. Peel sweet potatoes with a peeler. Cut potatoes in half lengthwise then cut into 1/2-inch thick fries. You can also use World Cuisine’s Spiral Vegetable Slicer to cut fries or even make curly fries. (See below.) Place sweet potato fries in a large mixing bowl. Add oil and spices. Toss until potatoes are thoroughly coated. For spicier fries, use more curry. For milder fries, use more cumin. Spread fries in a single layer on prepared baking sheet. Place in preheated oven. Bake for 30-35 minutes, turning once to ensure even cooking. Remove from oven when tips start to turn dark brown and serve hot with fry sauce (1/2 Vegenaise, 1/2 ketchup).

Chronic abdominal pain is one of the top 5 reasons that people to go to the doctor. Unfortunately, for many it is also very poorly treated. The typical approach is to rule out ulcers, appendicitis, gallstones, uterine problems, or cancers, which should be readily solved. But many people with abdominal pain do not have these health issues. For them, all of the tests come back negative. They are told that nothing is wrong and left with the impression that it’s all in their head.
