Halloween-inspired treatsPart of the fun of Halloween is arriving

home after a day of trick-or-treating andhaving some spooktacular treats to enjoy.

Mummy Wraps: Take the "pigs in ablanket" concept to a new level with thisclever treat. Simply wrap hot dogs withstrips of dough cut from refrigerator bis-cuits or breadsticks to simulate the look ofmummy shrouds. Place them on cookiesheets. Cut small slits for eyes and placepeppercorns or black mustard seeds toserve as the eyes. Bake for about 15 min-utes, or until golden brown. To serveupright, place shish kabob skewers in themummies before baking and then stick themummies in a piece of craft foam coveredin cheesecloth.

Cheesy Fingers: What's scarier thandismembered digits on a plate? All it takesis a package of mozzarella string cheese, aknife and some small, thin slices of greenand red bell peppers for this gross delica-cy.

Cut the cheese sticks in half and thenuse a knife to carve straight indentations tosimulate the bends in the skin around theknuckles of the fingers. At the top, carveout a flattened area for the fingernail. Thenplace very small slices of red or green pep-pers to serve as the spooky fingernails.Adhere with a dab of cream cheese.

Bottomless Bog: This eerie bog willmake children question what is inside.

Make a large bowl of green gelatindessert and pop in different edible creepycrawlies before allowing the gelatin to set.Gummy worms, grape "eyeballs," sourfish, pieces of fruit tape, and anything elseyou can think of can be added. Kids willscoop out the dessert and discover thefrightening things inside.

Skull Potatoes: Turn ordinary potatoesinto something seemingly more sinister.

Halve baking potatoes and carve eachhalf into a skull shape, sort of like the out-line of a pear. Bake until the potatoes arecooked through. Frost with sour cream.Use pieces of cheese to mimic decaying

teeth. Black olives can be eyes and nosesockets of the skull.

Quesadilla Ghosts: An open-facedquesadilla can be turned into a spookyspecter.

Cut ghost-shaped pieces from flour tor-tilla shells. Sprinkle with shreddedMonterey jack cheese and allow to bake inthe oven until the cheese has melted andthe ghosts are crisp. Spread sour creamover the cheese and then use slices of scal-lion for the eyes and a ring of jalapenopepper for a mouth. Ghosts can be madegory with salsa as blood.

Vampire Veggies: What if veggiescould suck blood? Conduct this scienceexperiment and enjoy eating the researchafterward.

Cut the ends off of stalks of celery.Place the celery in a tall glass filled half-way with tomato juice overnight. The cel-ery should absorb the juice through thethin channels in the stalks. The next daykids can bite into the stalks and see the redstreaks inside.

Spiderweb Garnish: Top cupcakes,cookies and cakes with delicate, home-made spiderwebs.

Melt white chocolate baking melts inthe microwave or per the manufacturer'sinstructions. Use a squeeze bottle or asmall spatula to drizzle the chocolate ontoa piece of waxed paper in the shape of aspiderweb. Allow the chocolate to cooland then carefully peel off the paper.

Mashed Brains: Create a shepherd'spie-inspired dinner that's inspired by thelook of brains.

Make your favorite meatloaf or ham-burger recipe and place into a ramekin oreven cupcake pans. Whip up a batch ofhomemade or instant mashed potatoes.Using a pastry bag fitted with a basic holecake decorating tip, pipe squiggly lines ofpotato across the meat. Bake for around 20minutes, until meat is thoroughly cookedand potatoes are crisp.

Alternatives to trick-or-treatingJack-o-lanterns and costumed kids are

among the many things people instantlyassociate with Halloween. So is the tradi-tion of trick-or-treating, where kids godoor-to-door asking for treats that maymake dentists cringe.

While trick-or-treating is somethingmost kids love, for parents the safety con-cerns can be overwhelming. Kids inno-cently knocking on strangers' doors andasking for candy is not necessarily thesafest way a child can spend an autumnafternoon. But parents concerned abouttheir children trick-or-treating can embraceseveral fun alternatives to trick-or-treatingthat still embody the spirit of Halloween.

•Host a haunted house. A hauntedhouse for kids and their friends allowschildren to dress up in their favorite cos-tumes and enjoy their favorite treats whilebeing scared witless. Parents can join inthe fun by dressing up in their own cos-tumes. At the end of the night, award thechild who had the best costume, and besure to send each child home with a pack-age of goodies.

•Make your own Halloween treats.Invite kids into the kitchen to create theirown Halloween treats. Make sure choco-late is a key ingredient and invite kids'friends over for a tasting or even to join inthe fun of cooking. Set the tone for theevent a week or so before Halloween byhosting a jack-o-lantern carving thatencourages kids to carve their own uniquedesigns in their very own pumpkins.

•Go the retail route. Recognizing thesafety concerns associated with traditionaltrick-or-treating, many of today's commu-nity centers and malls open their doors tocostumed kids on Halloween, providingtreats in much the same way kids wouldget them if they trick-or-treated the old-fashioned way. Once kids complete theirjaunts through the mall, they're likely tohead home with a bag filled with goodiesand maybe even some coupons or gift cer-tificates to their favorite stores.

•Camp out. Another safe and fun alter-

native to trick-or-treating is to host a cam-pout under the full moon of Halloween.Kids can invite their friends over for somebackyard camping, while Mom and Dadmake s'mores and share spooky stories.Decorate the yard with fake tombstonesand other Halloween-themed decorativeitems, and make sure each kids goes homethe following day with his or her own bagof treats.

Though traditional trick-or-treating getsall the glory, there are several alternativesthat are just as fun and much more safe.

Halloween superstitionsMany different superstitions abound,

some of which are tailor made forHalloween haunting.

•If a candle goes out on its own onHalloween, it is thought a ghost has cometo call.

•A burning candle inside of a Jack-o-lantern on Halloween keeps evil spirts atbay.

•A person born on Halloween can bothsee and talk to spirits.

•Seeing a spider on Halloween couldbe the spirit of a dead loved one who iswatching you.

• If you hear footsteps behind you onHalloween, don't look back because itcould be the dead following.

•Don't look at your shadow in moon-light on Halloween night. Otherwise, youwill die within a short period of time.

•When a person lived a good life, flow-ers will grow on his grave. If he was evil,weeds will grow.

•Never slam a door; otherwise, youcould hurt a ghost and risk haunting.

•Holding your breath while driving bya cemetery keeps evil spirits from enteringyour body.

•If a bat flies around a house threetimes, it is a death omen.

•Ringing a bell on Halloween will scareevil spirts away.

•Knock on wood to keep bad luckaway.

Legendary mythical creatures are popularSo long as there are myths and folk-

lore, there will be legendary creatures toserve as integral characters of these sto-ries. Although many creatures haveremained locked within the pages of agood book, there are many others thathave escaped to become part of popularculture.

During a season when hauntings andspooky sights are celebrated, many peo-ple may be excited to learn about someof the mythical creatures that can put ascare into us all.

Phoenix: The symbolism of risingfrom the ashes to start anew can bedirectly traced to the myth of thephoenix. This is a bird with colorfulplumage and a tail of various colors,depending on the particular legend. Thestory of this sacred firebird that can befound in the mythologies of the Persians,Greeks, Romans, Egyptians, Chinese,and even Phoenicians.

The story says that the bird can livebetween 500 and 1,000 years. At the endof its life, the phoenix makes a nest oftwigs that then ignites, burning both thenest and the bird to ashes. From the ashesa new, young phoenix or egg is in itsplace. Typically the phoenix is consid-ered benevolent, though variations of themyth warn humans against the phoenix.

The phoenix has long been presentedas a symbol of rebirth, immortality andrenewal. It is often looked at for inspira-tion and may adorn buildings or coinsaround the world.

Werewolf: The wolf has long been asymbol of evil and darkness in folklore.The idea of a wolf being a mindlesskiller was a common thought in the 19thcentury, with people decimating popula-tions of wolves around the world inefforts to protect people and livstock.

The werewolf is the combination ofhuman and wolf, a shape-shifting crea-ture able to retain either form. The trans-formation is a curse and is often associat-

ed with the arrival of the full moon. Thewerewolf legend may have been createdby the Olde English or Norse. AncientGreeks called werewolves lycanthropes,from the Greek "lukos" for "wolf."

Werewolf shifting may be involuntaryor voluntary, depending on legend. Thosewho shape-shift voluntarily were thoughtto do so to engage in nefarious acts inconcert with a pact made with the devil.Being bitten by another werewolf andthen transforming into one as a form ofillness is a common horror story, butactually rare in legend.

Many have speculated that werewolflegends may have been used to explainserial killings because of the tendency ofsome modern serial killers to indulge inpractices commonly associated withwerewolves, such as cannibalism, mutila-tion and cyclic attacks. Others surmisedthat the fear of the wolf itself lends theinevitable horror implications of ahuman/wolf hybrid. There are also histor-ically documented cases of individualssuffering from porphyria, a condition ofphotosensitivity and reddish teeth whomay have been mistaken for an actualwerewolf.

Sasquatch: There are believers whofeel there was an evolutionary splitbetween Neanderthals and modern manthat goes beyond what is generallyassumed today. Such a split may havebeen instrumental in creating the legendof Sasquatch, or Bigfoot, as a human-likebeing that walks upright but resembles ahairy ape.

Sasquatch is an anglicized derivativeof the term "sesquac," a word that means"wild man"in Salish Native Americanlanguage. Some contend that Bigfoot isjust a case of mistaken identity; somescientists have expressed interest andbelief in the fact that bigfoots may exist.

Wild-man stories have proliferated forcenturies among the indigenous popula-tions of the Pacific Northwest, where

many cases of sasquatch sitings havetaken place. Bigfoot is reported to bebetween 6 and 10 feet tall, with dark,reddish hair, and giving off an offensiveodor by those who have encountered it.Today there is no definitive scientificevidence that Bigfoot exists, but themyth prevails.

Vampire: The general public hasbeen fascinated by the concept of a vam-pire for as long as horror stories havebeen told. In recent years through booksand movies, the vampire has regainedpopularity and is often seen as a popularcult symbol and often the antagonist ofstory plots.

There have been many theories on theorigins of the vampire myth. In Hebrewapocrypha texts, Lilith I may have sym-bolically acted like a vampire, killing andreveling in a life of blood, which shelater shared with Cain. However, theBible and the Torah mention little ofCain and Lilith at all and nothing of thissupposed vampire connection.

Perhaps the most iconic person to beassociated with vampires is the legend ofVlad Tepes III, also known as Vlad theImpaler, who lived in Transylvania. Vladwas known for his atrocities, includingthe slow and painful form of executionnoted in his nickname.

Kraken: Sea monsters have instilledfear in sailors and those who have livedby the sea for some time. One of thefeared sea creatures is the kraken, a leg-endary sea monster of very large size.

The kraken was thought to live off ofthe cost of Iceland and Norway andbecame a common form of terror inNorse sagas. The kraken is often por-trayed as a giant octopus or squid, resid-ing deep within the shadowy swells ofthe water. It is likely the kraken mythoriginated from the real giant squid thathave been known to inhabit many differ-ent waterways.

Fruits and vegetables are easier to comeby in the summer months than in the falland winter. But to stay healthy and wardoff diseases, it's important to include fruitsand vegetables in your diet year-round.Here are some of the superstar fruits andvegetables of the fall and winter months.

Sweet potatoes: They're loaded withbeta-carotene (which the body makes intovitamin A), vitamin C, potassium, fiber,iron and vitamin B-6. Sweet potatoes havemore nutrients than regular white potatoesand can replace white potatoes in somerecipes. Try them mashed, baked or as adessert.

Apples: A traditional fall favorite,apples are easy to find in the supermarket,or you can pick your own at a nearbyorchard. They are a quick, easy snack andcan be paired with peanut butter or cheesefor protein. Apples contain antioxidants,which may help protect against certaincancers and reduce levels of LDL or badcholesterol. Apples have vitamin C, vita-min K and fiber.

Pumpkin: Pumpkin is a great source ofbeta carotene, a powerful antioxidant thatis good for the eyes. They also containpotassium. Canned or prepared freshpumpkin can be made into a variety ofsoups, baked goods and desserts.

Broccoli: This is one vegetable that canbe eaten raw or cooked, hot or cold, byitself or with other foods. Broccoli canhelp prevent cancer and heart disease, andboost the immune system. Nutrients inbroccoli include vitamin C, vitamin A,vitamin B-6, iron, calcium, magnesiumand vitamin E.

Pumpkin Apple ButterYou can use canned sweet potatoes that

have been drained and mashed instead ofpumpkin, if desired. 8 (1/4 inch thick) boneless pork

chops

1 egg, beaten with 3 tablespoons of

water

1/4 cup oil for frying

Whisk together pumpkin puree, applejuice, water, brown sugar, nutmeg, gingerand cinnamon in a saucepan until smooth.Bring to a boil, then reduce heat to medi-um-low and simmer until the mixture hasreached the consistency of applesauce,about 10 minutes. Set aside.

Meanwhile, sprinkle pork chops with1/2 tablespoon poultry seasoning, 1/2 tea-spoon salt and pepper, and cayenne pepper.Pulse pecans, bread crumbs and remaining1/2 tablespoon poultry seasoning andremaining 1/2 teaspoon salt and pepper ina food processor until the pecans are finelychopped. Pour into a shallow dish. Dip thepork chops in the egg, shake off excess.Press pork chops into the pecan mixture tocoat on both sides.

Heat oil in a skillet over medium-highheat. Add breaded pork chops and cookuntil golden brown on both sides andcooked through, about 3 to 4 minutes perside. Remove and drain on a paper towel-lined plate. Place 2 tablespoons of pump-kin apple butter on each plate. Place porkchops on the pumpkin butter. Serve with aside of steamed spinach, green beans orbroccoli. Makes 8 pork chops.

1 (4-serving) package sugar-free

vanilla cook-and-serve pudding mix

1 (4-serving) package sugar-free

orange gelatin

1 1/4 cups water

2 (11-ounce) cans mandarin

oranges, rinsed and drained

1 (6-ounce) purchased graham

cracker crust

1/2 cup reduced-fat whipped topping

1. In a large saucepan, combine drypudding mix, dry gelatin and water. Cookover medium heat until mixture thickensand starts to boil, stirring constantly.Remove from heat.

2. Reserve 8 mandarin orange slicesfor garnish. Gently stir in remaining man-darin oranges. Let set for 5 minutes.Spread partially cooled pudding mixtureinto pie crust.

3. Refrigerate for at least 2 hours.Spread whipped topping evenly over setfilling. Evenly garnish top with reservedmandarin orange slices. Serves 8.
