My Dear Club,
Once again we have survived the beauty and wonder that is July, Oregon Craft Beer Month.
As I sip through a Who Ate All The Pies?, a delightfully sessionable gose with rhubarb and strawberries from
Gigantic, I reflect on previous Augusts in the OBC. Traditionally, in July our volunteers are out helping and teaching at multiple fests, doing demonstrations, working, and enjoying beer, and then in August, it’s quiet. Some years, we’ve skipped meetings and newsletters altogether, and just basked in the calm, or perhaps recover from the hangover, that is August.
So let’s keep this month light and/or restful: one season of the club has ended and the next is around the corner. Fall Classic Competition time is just beyond the horizon, but today, let’s celebrate our successes to date.
If you are around this month, we do have some fun stuff going on for our members:
First, our August meeting at FH Steinbart (Aug 14) will include something for everyone: our annual chili cook-off returns (with prizes), our Style Competition Program features Beers of Bavaria (with prizes), AND we’ll be doing live demos and presentations on BeerSmith 2, a brewing software that does many
calculations and conversions for you (Yes! with prizes!). (Full disclosure: ‘prizes’ may be one single prize per event).
Second, we’ve partnered with FH Steinbart to host a Homebrewers’ Garage Sale. If you’re like me, or have ever made beer, you might have a few extra bits of brewing equipment floating around. Ready to get rid of it? Maybe you’re looking for a new-to-you brew toy? Come on down to FH Steinbart, August 17th 10-2pm. All Portland-area clubs are invited and the OBC will have its own section of the event where you can have us sell your brew stuff for you. Well, we’ll try at least. I am looking for a couple volunteers to help with that last part.
Oh, and there will be FREE STUFF and BEER.
Finally, THANK YOU:
• To all the members who volunteered on behalf of the OBC, representing the club at festivals and at the AHA Mead Day event this last month. Particularly to those who presented demonstra-tions to the public, educating beer lovers about the craft of brewing. Your active participation in the club is what keeps our presence in the community thriving.
• To Brian Haslip (and his crew) for building out the new storage area for the club at FH Steinbart AND for leading a brewing demonstration on behalf of the club for the Multnomah County Library.

OBC Point StandingsYour club has historically offered two different ways for members to be recognized for helping and representing the Oregon Brew Crew.
This year we made a few changes and clarified the two programs we offer to members for being recognized for their contributions.
The OBC Cup is for our members who enjoy entering (and winning) homebrew competitions.
The Member of the Year award (AKA “The Silver Bung”) is to honor the member that most actively participates in supporting the club.
Both of these awards are based solely on individuals reporting their activity. AND both of these programs reward participants with additional RAFFLE tickets at our end-of-year holiday party.
Likewise, both of these programs have pre-determined point awards for specific activities. ALL other reported activities are awarded points at the sole discretion of the OBC/MOY committee.

Craft beer and Portland history come together
It is not often that people are encouraged to drink beer in the cemetery, but that is just what is happening Aug. 16 at Lone Fir Cemetery in front of the Bottler Tomb.
The Friends of Lone Fir Cemetery and the Lone Fir
Cemetery Foundation have teamed up with the Oregon Brew Crew to hold a free beer tasting to celebrate the lives of pioneering brothers George Michael Bottler and George Frederic Bottler and to raise awareness of the dilapidated half-empty tomb in dire need of repair.
The brothers immigrated to the United States from Schillingsfürst, Germany. After working as barrel makers in Indiana, they moved to the Pacific Northwest and established some of the first breweries in the area.
By 1860, George Frederic was running a brewery in The Dalles and George Michael had established the second brewery in Portland: City Brewery, which was located on Front Street. In 1863, the brewery in The Dalles was sold and both brothers owned City Brewery.
Peri Muhich, volunteer historian and chairman of the Bottler Restoration committee for Friends of Lone Fir, said the story of these brothers has been forgotten despite both being an important part of early Portland brewing history.
“You mention Henry Weinhard, and everyone knows that name,” Muhich said, adding that Weinhard bought City Brewery from the Bottlers.
The Bottler brothers’ legacy was cut short when both brothers died in the 1860s. George Frederic Bottler died of tuberculosis in 1865, when he was about 31 years old.
He was buried at Lone Fir Cemetery. George Michael bought the lot next to his brother, intending to be buried by his side, and erected the Bottler tomb over both spaces.
But George Michael Bottler never got to be buried next to his brother. In 1868, while travelling in Germany, he died of an infection in his lungs and was buried in his native country.
Neither brother had married nor left behind any known children, which left the tomb to decay over time.
Metro’s cemetery program estimates the tomb needs $80,000 to be repaired. The mortar around the brick has deteriorated and the wooden structure that held the roof has damage from moisture. The tomb has been fenced off because the walls are vulnerable and may collapse if leaned on, according to Muhich.
Local descendant Tim Bottler, the great-great-grandchild of cousin Michael Bottler, didn’t know the tomb existed until recently. He said he is overwhelmed by all the outside support that has rallied around the tomb.

the Oregon Brewers Festival, to support the restoration.
The event at Lone Fir will bring together more than a dozen craft beer submissions. All beers submitted to the tasting will be German-style, like hefewiezens. The winning beer will be named Bottler Bier.
Will Minderhout of the Oregon Brew Crew brought together the home-brewers who are supplying the beer. Minderhout said the German-style beers present a special challenge for the brewers.
“They are a little more complicated to make for home brewers because they require a specific temperature for fermentation – they have to be cold fermented,” Minderhout said, which also means they will take longer to brew. Undeterred, Minderhout is entering two beers in the competition.
The winning Bottler Bier is likely to be kegged and sold in select pubs. It will also be served at a Bottler tomb restoration fundraising dinner in November.
Bottler, a semi-retired contractor, intends on donating his time to repairing the tomb.
“As soon as we raise enough funds, my services will be free and so will be my sons’,” Bottler said.
For Muhich, the event is an opportunity to raise awareness about the history of Portland – an overarching theme for Friends of Lone Fir.
“There are these two men who were such a part of early Portland, and this tomb is just falling apart,” Muhich said. “It would be nice to put this thing back and let Lone Fir shine even more.”

Club Beer Style of the MonthBelgian Tripel is a beer of low to medium body, high in alcohol, and deep gold in color. Higher than usual carbonation contributes to the perception of the drier than ordinary finish for a beer of this caliber due to the use of simple, but flavorful sugars in the boil. The aroma is of pilsner malt and noble hops which can be low to moderate in nature. Slightly darker and more full bodied than it’s cousin the Belgian Golden Strong ale, this beer is very thirst quenching and refreshing when fresh, and the best examples show this with varying amounts of spiciness and fruitiness from the fermentation character of the yeast. The yeast character combined with the carbonation and the dry finish makes these beers ideal for a hot Summer’s day. Popularized by the Belgian monasteries like Westmalle, this beer archetype demonstrates the popularity with which this beer has become synonymous with the word “Tripel.” Below is a recipe which makes a nicely balanced and flavorful Belgian Style Tripel.
Belgian Style Tripel Recipe Extract version
OG: 1.083 TG: 1.013
7-1/2 lbs. Pilsen Light DME
1-1/2 lbs. Dextrose or Clear Belgian Candi
1/2 lb. Aromatic Malt
1/2 lb. Biscuit Malt
2 oz. Liberty hops
1 Whirlfloc Tablet or 1/2 tsp. Irish Moss
3-3/4 gms. CaCl2 at beginning of boil
Wyeast 3522, WLP550, Giga-Yeast Belgian
Ale Blend
Procedure:
• Heat 2-5 gallons of water to 165°F
• Place grains in a steeping bag and steep
at 160°F to 170°F for 30 min. Remove
grains.
• Turn off heat and add malt extract,
stirring until fully dissolved.
• Return to Heat, bring to boil for 5 min.
then add 2 oz. bittering hops. (Liberty)
• At 20 minutes add Whirlfloc or Irish moss.
• Turn off heat and cool mixture by placing
kettle in an ice bath or using a wort chiller.
• Add mixture to fermenter, removing hops,
and bring total volume to 5 gallons using
non-distilled bottled water or filtered tap
water.
• Aerate unfermented wort (shaking works)
• Pitch yeast and ferment at 68°F to 75°F.
(up to 80°F for those who want more
yeast character)
Package up as usual; bottled versions
should use 180 gms. (1-1/4 cups) corn
sugar, or kegged to 30 psi, and allow two
weeks to come into condition. Serve at
45~50°F in a proper tulip or thistle glass,
share and enjoy!
All Grain version:
OG: 1.084 FG: 1.012
11 lbs. Pilsner Malt
1/2 lb. Aromatic Malt
1/2 lb. Biscuit Malt
1-1/2 lbs. Dextrose or Clear Candi
2 oz. Liberty Hops(bittering-60 min)
1 Whirlfloc Tablet or 1/2 tsp. Irish Moss
3-3/4 gms. CaCl2 in both mash and
beginning of boil
Wyeast 3522, WLP550, Giga-Yeast Belgian

Procedure:
• Infusion mash at 148°F for 90 min.
• Sparge until 6~6-1/2 gal wort has been
obtained.
• Boil for 1 to 1-1/2 hours
• Adding bittering hops after 15 minutes
boiling and continue to boil for 75 more
minutes
• Add Whirlfloc or Irish Moss at last 10~15
minutes
• Gravity may vary depending on system
efficiency, so adjust accordingly
• Aerate unfermented wort
• Pitch yeast and ferment at 68°F to 75°F.
(up to 80°F for more yeast character)

big opening at the Widmer Gashaus on Russell St.
Come down and support your fellow OBC member for a pint
or two, between 5:30pm and 7:30pm Tuesday, August 26th.
This may be the simplest brewing recipe around. 100% floor-
malted German Pilsner malt and 100% Czech Saaz hops,
pristine Bull Run water and a German Bavarian Lager yeast
give this beer its crisp, clean, straightforwardly delicious
flavor. Malty but medium-bodied and balanced by hop
bitterness and flavor.
