Superfood Soup Ingredients (serves 10 x 300ml portions) 1 medium onion, 1cm dice 1 clove garlic, minced 1 tbls olive oil 400g carrots, 1cm dice 300g sweet potato, 1cm dice 2 x 400g tinned black beans (no sugar or salt), drained and rinsed ½ tsp crushed red pepper flakes ½ tsp black pepper 1 tsp chilli powder 1 tsp cumin 600ml vegetable juice 600ml vegetable broth, low-sodium 100g fresh green beans, 1cm pieces 80g coarsely chopped kale Sea salt to taste 30g fresh cilantro, chopped Method 1. Sweat the onions and garlic in a heavy bottomed pot with the oil until translucent. 2. Add the carrots and sweet potato and cook for a few minutes more. 3. Add the spices and cook for 2 minutes. 4. Add the stock, juice and the black beans and cook until the veg is tender. 5. Add the green veg cooking until tender. 6. Season and add the coriander.
