Beetroot Hummus, Carrot & Spinach Wrap with Spicy Yoghurt Ingredients (Serves 2) 2 large wholemeal wraps ½ x 400g tin cooked chickpeas, drained and rinsed 1 cooked beetroot, chopped 1tbls tahini small clove garlic ½ lemon juice 1 small carrot, grated 50g baby spinach leaves, washed and dried few mint leaves, chopped 1 tsp harissa 2 tbsp 0% fat Greek yogurt Method 1. Put the chickpeas, beetroot, tahini, garlic, a dash of lemon juice, salt and pepper into a

small food processor and blend until consistency of hummus. 2. Stir through the mint. 3. Generously spread the hummus over the wraps. 4. Liberally scatter with baby spinach and the grated carrot. 5. Mix the harissa into the yogurt and drizzle over. 6. Rollup the wraps and cut in half.
