Introduction The Nutritional analysis software allows you to easily calculate the nutritional value of your recipes. To do this, you first need to create your food (recipe) by specifying the name of the food. Thereafter, you simply enter the ingredients in your recipe. These ingredients can come directly from the Canadian Nutrient file or be your own ingredients (manual input). If you use ingredients from the Canadian Nutrient File, we recommend that you copy them to your ‘Food’ database, so you can name them properly because the name of the file items in then Canadien Nutrient file may be too long for your labels. Refer to the section "Copying a food '. If you want to use an ingredient where it’s nutritional values come from a nutrition label or a sheet from a supplier, please refer to the section 'Manual input'

Create food item

When you are in the Nutritional analysis software, click (Add). The ‘Adding food item’ window will open to let you enter the name of your new food item. When the name is

entered, click .

Add ingredients

In the main window, click (Ingredients), the ‘Ingredients in the food item’ window will open.

To add ingredients, click , the ‘Adding ingredient’ window will open.

Search ingredients

Select the database in which you want to search. The ‘Food items’ database includes all your recipes and ingredients. The 'CNF2001', 'CNF2005', ‘CNF2007b' and 'CNF2010' databases are the Canadian Nutrient Files. In the ‘Criteria’ text zone, enter one or more words representing the ingredient you are

looking for. To start searching, click . The list zone will be filled with all the ingredients matching your search criteria.

Add ingredients Back in the ‘Ingredients in the food item’ window, enter the quantity and unit of your new

ingredient. Click .

Repeat this procedure for all ingredients.

When you have finished adding ingredients, type in the yield of your recipe: the number of servings, size of the edible portion and the unit of measure of the serving.

Click . Make sure your final yield is logical. Your ending weight and your ending moisture % should be less than or equal to your starting weight The starting weight is the total weight of your ingredients. The ending weight is the number of servings times the edible portion.

Click to accept your ingredients. You will return to the main window.

The nutritional value of your food item will be calculated per 100 grams and for the serving size you will have defined.

Print food item

To print the food item data sheet, click (Print) in the main window; the ‘English printing of the food item data sheet’ window will open.

Set the desired parameters and click .

Print label To print nutritional labels, click (Nutrition labels) in the main window; the ‘Nutrition

labels’ window will open.

In the dropdown lists on the right, choose the desired format. The label will appear on the left. You can use the Options tab to change the settings to print your labels for the food.

Click to print the selected nutritional label.

The software will offer you the possibility to include a description in French and English for your serving. For example: 1 slice, 2 cookies, etc.

Manual input If you can’t find the food item you want in the Canadian Nutrient Files, you can input the nutritional value of a food item directly from a technical data sheet provided by the food item supplier. To do so, create a food item as described at the beginning of this guide. Then, to capture the nutritional value, simply click the nutrient for which you wish to record the value.

The input wizard will assist you in this task. The first window will ask the serving size, which is recorded on the product data sheet.

If your unit of measure is by weight, the wizard will prompt you to enter the value for the chosen nutrient.

If your unit of measure is by volume, the wizard will ask for a conversion factor. This conversion factor will allow the software to convert the values captured for a given volume into values calculated for a given weight. To calculate the conversion factor, you must measure a volume of your product in milliliters, calculate the weight of this volume in grams, and then divide the weight measurement by the volume measurement. This will give you the conversion factor.

You can then enter the nutrient value of your product 'by value', ‘For Canadian RDI %' or ‘For USA RDI %'.

Copy food item This function will allow you to copy one of your own food items or an item from the Canadian Nutrient File.

If you want to copy a food item from the Canadian Nutrient file, select the desired

database by clicking on the icon and go to the desired food item. When you are in

the food item you want to copy, click (Food item copy).

The window will tell you the number to which your food item was copied. This number is

managed by the software. Click to finish your copy.

Export / import To export your food items database, click the ‘Tools’ menu and then click ‘Data export’.

Click to choose the drive or directory where your data will be saved.

To import your food items database, click the ‘Tools’ menu and then click ‘Data import’.

Click (Browse) to choose the drive or directory where your files were saved.

Select the directory and click .
