Select your Woolworths ham, 4-7kg

375mls verjuice (or apple cider)

100mls honey

1 tsp salt

Cracked pepper

1 tablespoon chopped rosemary 1 tablespoon chopped sage

2 cloves garlic crushed

2 cloves crushed

2 star anise crushed

Skin o one lemon grated

100mls extra virgin olive oil

1 onion roughly chopped

1 carrot roughly chopped 1 stick celery roughly chopped

1Place carrot, celery and onion in a baking tray. Remove the skin rom the ham leaving

a generous layer o at. Mix spices, herbs, lemon and garlic with oil to orm a paste.

Cut some incisions into the ham with a thin sharp knie. Rub ham with the

paste generously and place on roasting tray. Season. Add 3 cups o water to

the tray.

2 Place tray in hot oven 180C or frst 30 minutes the reduce heat to 160C and

cover ham with oil. Cook or 1 hour checking rom time to time and basting. I

juices dry add a little more water. Meanwhile combine honey and verjuice/applecider and bring to the boil. Reduce or 5 minutes.

3When the ham is cooked remove it rom the oven and uncover and rest or 20

minutes. Baste with some o the verjuice/apple cider honey mix and place back in

hot oven to orm a glaze. Ater 5 minutes baste again and repeat a couple more

times. The juices rom the baking tray can be made into a delicious sauce.

Stung Ingredients

3 small shallots, peeled and fnely diced

4 small cloves o garlic, peeled

and fnely minced

150g ciabatta or baguette,

torn into small pieces

100ml water

160g minced veal or pork or

a mixture o the two

6 slices o prosciutto, sliced into batons

1 apple, washed and grated

6-8 resh or dried fgs, roughlychopped (optional)

10 resh or dried apricots, roughly

chopped (optional)

1 bunch o resh sage, picked, washed

and roughly chopped

1/2 bunch o resh thyme, picked,

stalks discarded

80g pistachio nuts, shelled and

roughly chopped

150ml o brandy, Armagnac, cognac

or Vin Santo

1 egg (preerably ree range organic)

Turkey Ingredients

1 whole Macro Wholeoods Market

Frozen Free Range Turkey weighing

around 3-4 kg

100ml best quality extra virgin olive oil

Sea salt and reshly cracked pepper

50ml extra virgin olive oil 2 carrots, peeled and roughly chopped

2 onions, peeled and roughly chopped

4 sticks o celery, washed and

roughly chopped

2 bay leaves

80g butter, sotened

1 Combine diced shallots, garlic and bread pieces in bowl. Add water, and soten

the bread by hand. Then add remaining ingredients and mix by hand. Season

with salt and pepper. Mix again.

2 Loosen skin around breast meat using your fngers. Pack hal the stung

between the skin and the breast meat. Evenly spread it by patting. Pack the

cavity with the rest o the stung.

3 Add 50ml o oil to a large baking tray. Scatter roughly chopped carrot, onion,

celery and bay leaves. Place the turkey on top.

4 Tie the two drumsticks o the turkey together. Rub sotened butter over the skin

and season generously.

5 Place turkey on a low shel o your preheated oven and cook at 220C or 20

minutes. Reduce heat to 180C and continue cooking or another 3 hours,

basting with pan juices. Check turkey is cooked by tilting it on an angle. I the

juices run clear, then its done. I the skin is becoming too brown cover with oil.

6 Once cooked remove to a chopping board and cover with oil so the bird can

rest or about 5-10 minutes beore serving.
