Whats the most interesting thing youve learned about beans so far Thiscomes with a little bit of convenient pride Fenugreek one of my absolute favorite spices isin the bean family I just love the flavor of fenugreek Ive never had anything with it that Ididnt like To know that it belongs in the same category as another one of my favoritethings makes me so proud And it also has its own unique history but thats somethingsaved for the book

Do you have a new favorite typeof bean Yeah so far I have a favoritenew one that I knew about but hadnever really used before Its the lupinibean I soaked it for three weeks and itwas still hard but it has this reputationI ended up turning it into just a snackbecause it was so shy like [after] threeweeks still kind of hard I put it in thecrock pot for like three daysnothing Iresearched and thought maybe it wasjust a bad batch or whatever and its notThe bean is just like that Italians areknown for even putting it in their bathtub and running it constantlyI donteven know why I bothered But I triedSo I ended up making a little crunchysnack

What is your favorite way to cookbeans Ive been experimenting withdifferent ways and so far one of thebetter dishes that Ive made was theNew Year dish Hoppin John We madethat over New Years just to you knowadd some good fortune on top ofeverything That was really good and itsjust a smoked ham hock with black eyedpeas and collard greens There aredifferent superstitions around itobviously Certain people want to docollard greens other people dont butgenerally accepted you want to docollard greens But either way just tocover all the bases I did all of that and that was really good

What besides beans are you obsessed with right now I cant stop drinking sherryI love it I just want to try all the sherries Im all about the sherry right now
