SAVORY SAUSAGE STUFFING

Ingredients 1 stick butter 3 cups diced celery 3 cups diced onion 3 cups crumbled breakfast sausage 25 slices white and wheat bread 1 teaspoon salt 1 1/2 teaspoons black pepper 1 1/2 teaspoons poultry seasoning 3 1/2 cups turkey stock

Directions In a large pan, melt butter over medium heat. Add celery and onion; sauté for five minutes. Add crumbled sausage and cook until browned, about ten minutes, stirring frequently.

Cut bread slices into bite-sized cubes and mix with seasonings in a large bowl. Stir in sausage and vegetable mixture. Add turkey stock, and mix well. Makes enough stuffing for a 15-pound bird or an 8”x8” baking pan. Cook inside your turkey, or bake for 30 minutes in a 300° preheated oven. Serve warm.

Directions:

In a large saucepan, bring broth and water to a boil. Add wild rice and onions. Cook on low 35–40 minutes or until rice is tender.In a medium saucepan, melt butter or margarine. Stir in flour, salt, poultry seasoning, and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly. Add Half & Half, then cook, stirring constantly, until mixture thickens slightly. Slowly add Half & Half mixture to rice mixture, stirring constantly. Add turkey, bacon, pimientos, and sherry. Heat thoroughly, and serve.

It has a starchy texture and

is ground into flour to make

hominy, polenta, tortillas,

and tamales. Whole kernels

are good for popping.

Arizona is home to many fascinating wildlife parks, zoos, and habitats, but now comes the largest, state-of-the-art aquarium in the Southwest.

This two-level facility spans 200,000 square feet, with two million gallons of salt water and fresh water flowing through its 50 amazing fish and aquatic animal exhibits. OdySea Aquarium is part of the larger OdySea in the Desert entertainment complex, which also features Butterfly Wonderland and Polar Play.

This great new attraction is located on the Salt River Reservation near Scottsdale and provides an oceanic adventure offering guests of all ages an educational, interactive, and entertaining visit. The journey follows a drop of water falling from the sky into lakes and rivers. The rivers wind their way to the shores and down into our planet’s vast oceans. Along the way, visitors encounter thousands of aquatic creatures.

OdySea includes a 3-D theater featuring underwater giants, SeaTREK— an actual underwater ocean walk in an OdySea wet suit—and a cool Living Sea Carousel that rotates viewers seated in the auditorium from one massive ocean tank to another, showcasing eight species of sharks, rescued sea turtles, sleek, whiskery sea lions, and thousands of colorful tropical fish. The aquarium is home to some 30,000 animals (500 species) including giant Pacific octopi, baby Siamese crocodiles, big tooth river rays, piranha, South African penguins, and playful Asian small-clawed otters.

To complete the experience, visitors can be hands on at the 37-foot touch pool, enjoy a tasty bite at the Lighthouse Cafe, and shop the OdySea Treasures Gift Shop. It’s an unforgettable underwater adventure.

Rekindle that warm holiday mood with an enchanting evening at one

of Arizona’s sparkling ZooLights events. Thousands of glimmering holiday lights saturate tree-lined paths and grounds while shimmering reflections dance on ponds of water to festive music. Animated animal characters appear to leap, fly, or swim against the night sky.

Tucson’s Reid Park Zoo previews its ZooLights December 2–4, then runs the event from December 7–23. Visitors

can stroll through the lights and synchronized holiday music with cookies and a cup of hot cocoa while enjoying live entertainment. From November 23–January 8, the Phoenix Zoo celebrates 25 years of ZooLights by premiering a new 4-D experience. Fan favorite, Jengo the Talking Giraffe, returns with his pal, Tortuga. Heritage Park Zoological Sanctuary in Prescott powers up its ZooLights on weekends from November 25–December 31.

Back in 1947, on his yearly flyover, Santa noticed something special about Winslow, Arizona, and began a wonderful holiday tradition here that continues to this day. On November 19 (annually the first Saturday before Thanksgiving), Santa kicks off his 70th annual Christmas Parade.

SAVORY SAUSAGE STUFFING

Ingredients 1 stick butter 3 cups diced celery 3 cups diced onion 3 cups crumbled breakfast sausage 25 slices white and wheat bread 1 teaspoon salt 1 1/2 teaspoons black pepper 1 1/2 teaspoons poultry seasoning 3 1/2 cups turkey stock

Directions In a large pan, melt butter over medium heat. Add celery and onion; sauté for five minutes. Add crumbled sausage and cook until browned, about ten minutes, stirring frequently.

Cut bread slices into bite-sized cubes and mix with seasonings in a large bowl. Stir in sausage and vegetable mixture. Add turkey stock, and mix well. Makes enough stuffing for a 15-pound bird or an 8”x8” baking pan. Cook inside your turkey, or bake for 30 minutes in a 300° preheated oven. Serve warm.
