Easy Mandarin

Chicken Salad

Ingredients (serves 4) 1 head romaine lettuce

4 cooked chicken breasts,

sliced

4 mandarins, sectioned

1 onion, sliced

1/2 cup slivered almonds

Dressing 1/4 c balsamic vinegar

1/2 cup olive oil

1/4 fresh squeezed mandarin

juice

1 c. fresh mandarin sections 1/4 c. orange juice 4 c. fresh cranberries 2 c. sugar 1 c. chopped, unpeeled apple 1/2 c. raisins

1/4 c. chopped walnuts 1 tbsp. vinegar 1/2 tsp. ground ginger 1/2 tsp. ground cinnamon Combine all ingredients in a large saucepan and bring to a boil. Reduce heat and simmer 5 minutes until berries begin to burst; mix well. Cool. Store

in jars or serving dish in the refrigerator. Perfect to use in place of cranberry sauce dur-ing Thanksgiving dinner. Easy to can and great to give as a gift!

Fresh, frozen, canned, and dried all count toward getting more fruits and veggies. Buying canned or fro-zen fruits and veggies can be a more cost effective way to add

fruits and veggies to your dishes. For the healthiest option, buy canned veggies with-out added salt and canned fruit without added sugar. Stock up on canned fruits and veggies, so you’ll have them on hand to add to your favorite reci-pes.

Mandarin fruit grows on trees. You can buy mandarin trees at local nursery or garden centers almost anytime of the year. Sometimes citrus trees go on sale during late summer.

To Plant: First, amend your soil with compost, tilling it in to a depth of 6 inches. Then, dig a hole a little bit bigger than the citrus container. Place the root ball (part of the plant that contains the root and soil) in the center of the hole. Next, fill the soil in around the root ball. You may need someone to hold the tree while you do this. Use your hands or feet to push the soil down around the root ball firmly. When you’re done, the soil on the top of the root ball should still be on top. Do not cover the top of the root ball with soil. Finally, water your tree with several gallons of water. You can even make a trough around it to help hold the water. Use a citrus fertilizer according to instructions.

Note: there is no need to add soil to the planting hole, as you already amended the soil ahead of time.
