Chef Laura Agnews As You Like Products and Catering It is all about local and all about custom. On the catering side, she helps clients find the right mix of local flavour and price point. On the retail side, shes selling a variety of sauces, soups and pre-serves along with some of the other things she grows on her small farm in Union Bay. Shes also working with the North Vancouver Island Chef s Association to help deliver the monthly food fests at the Market.
The journey started twenty-two years ago in a Brentwood Bay eatery. The key culinary creation was a sweet, spicy Chiang-Mai sauce for Thai crab cakes.
How important is the Market?After her children were born and shed stopped working in restaurants, Chef Laura started making and selling her Chiang-Mai sauce at Victoria-area farmers markets. Early success led to further devel-opments, including a signature BBQ sauce inspired by a famous BBQ venue in Chef Lauras home town of Windsor.
Its a great to be at the farmers market, she says. I enjoy hearing what people like, and how they react to new products. It helps me develop a product that works.
The move to the Comox Valley meant a smaller sales market, but it also meant a new opportunity. Own-ing their own small farm allows them to organically grow much of what they need to feed both business-es the sauces and preserves, and the catering.

INGREDIENTS;1 butternut squash, peeled, cut into 2-inch pieces*2 Tbsp vegetable oil1/2 cup maple syrup 1/4 cup hazelnut oil*1/4 tsp cayenne pepperTo taste black pepper, sea salt *500 ml Tree Island Chai Yogurt*2 cups hazelnuts Happy Creek Farms*
DIRECTIONS;In bowl toss squash with vegetable oil, seasoning with salt and pepper. Place on baking sheet and roast in 350F oven 15-20 minutes until tender. Remove, placing squash in a casserole dish. Toss with hazelnut oil and 1/4 cup of maple syrup. Sprinkle top with spiced hazelnuts. Bake 15-20 minutes until golden. Serve with a spoonful of Tree Island Chai Yogurt.
Spiced hazelnuts: Place shelled hazelnuts on a baking sheet and toast at 350F for 5-10 minutes, until fragrant. Fold nuts in a tea towel and rub vigorously to remove the skins. Toss with remainder of maple syrup, cayenne and sea salt. Place back on baking sheet and toast for 5-7 minutes. Cool and crush lightly.

INGREDIENTS;1 butternut squash, peeled, cut into 2-inch pieces*2 Tbsp vegetable oil1/2 cup maple syrup 1/4 cup hazelnut oil*1/4 tsp cayenne pepperTo taste black pepper, sea salt *500 ml Tree Island Chai Yogurt*2 cups hazelnuts Happy Creek Farms*
DIRECTIONS;In bowl toss squash with vegetable oil, seasoning with salt and pepper. Place on baking sheet and roast in 350F oven 15-20 minutes until tender. Remove, placing squash in a casserole dish. Toss with hazelnut oil and 1/4 cup of maple syrup. Sprinkle top with spiced hazelnuts. Bake 15-20 minutes until golden. Serve with a spoonful of Tree Island Chai Yogurt.
Spiced hazelnuts: Place shelled hazelnuts on a baking sheet and toast at 350F for 5-10 minutes, until fragrant. Fold nuts in a tea towel and rub vigorously to remove the skins. Toss with remainder of maple syrup, cayenne and sea salt. Place back on baking sheet and toast for 5-7 minutes. Cool and crush lightly.
