Rolled Sugar Cookies (Makes 5 dozen)

1 1/2 cups butter, softened3 cups white sugar4 eggs2 teaspoons vanilla extract5 cups all-purpose fl our2 teaspoons baking powder1 teaspoon salt

1. Cream together the butter and sugar in a large bowl until smooth. Beat in the eggs and vanilla.

2. Mix the dry ingredients together and add to the wet ingredients until incorporated. Cover and refrigerate the dough for at least one hour.

3. Preheat the oven to 400 F. On a surface coated with some confectioners’ sugar, roll out the dough to between 1/4 and 1/2 inch thickness (a thinner cookie will be crispier). Cut out shapes with a cookie cutter.

4. Line a cookie sheet with parchment paper.

5. Bake around 5 to 7 minutes, or just until the edges of the cookies start to brown. Remove promptly from the cookie sheet and cool on a rack.

Cookie Icing (Covers 1 dozen cookies)

1 cup confectioners’ sugar2 teaspoons milk2 teaspoons light corn syrup1/4 teaspoon almond extract Assorted food coloring

1. In a small bowl, stir together confectioners’ sugar and milk until smooth. Beat in corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup.

2. Divide the icing into separate containers to add choice of colors. Mix until well blended.

Ingredients2 tbsp (30mL) Western Family canola oil1 onion, chopped1 garlic clove, minced1/2 tsp (2mL) ground ginger1/4 tsp (1mL) ground clovessalt and pepper to taste1-1/2 cups (375mL) Western Family fresh or frozen cranberries

1 1/2 cups (375mL) Western Family orange juice1/4 cup (60mL) packed brown sugar2 tbsp (30mL) red wine vinegar2 tbsp (30mL) fancy molasses1 tsp (5mL) grated orange zest1 tsp (5mL) seeded and minced chipotle peppers3 lbs (1.4kg) pork ribs

Preparation: In saucepan, heat oil over medium heat. Sauté onion and garlic until softened, about 5 minutes. Add ginger, cloves, salt and pepper and cook for 1 minute. Add cranberries, orange juice, brown sugar, vinegar, molasses, orange zest and chipotle peppers; bring to boil. Reduce heat and simmer, stirring often, until reduced by one-third and cranberries pop, about 20 minutes. Let cool slightly. Transfer to blender and purée until smooth. Set aside or make ahead and refrigerate until ready to use. Season ribs with salt and pepper. Place, meaty side up, in single layer in foil-lined roasting pan. Cover with foil and roast in preheated 400°F (200°C) oven for 1 hour.Remove ribs and drain fat from pan. Return ribs to pan and brush with cranberry orange sauce. Roast, uncovered, at 400°F (200°C) until browned and edges are crisp, about 20 minutes.

1 (1 1/2-lb) sourdough loaf, cut into 1/3-inch dice (18 cups)

1 lb coarsely chopped pancetta slices(about 3 cups)

1 stick (1/2 cup) unsalted butter, cut into tablespoons

3 cups chopped celery (5 to 6 ribs) 4 cups chopped onions (2 large) 2 tablespoons chopped fresh sage 1 1/2 teaspoons salt 1/2 teaspoon black pepper 3 (7- to 8-oz) jars peeled cooked whole

chestnuts, halved (4 cups) 3/4 lb pitted prunes (2 cups), quartered 5 cups turkey, heated to liquefy, or

reduced-sodium chicken broth (40 fl oz)

4 large eggs, lightly beaten

Special equipment: a 4-quart shallow ovenproof baking dish (15 x 10 x 2”)

Put oven rack in upper third of oven and preheat oven to 400°F.

Scatter bread in a single layer in 2 large shallow baking pans (17 by 12

inches) and toast, stirring once or twice and switching position of pans halfway through baking, until golden and dry, about 15 minutes. Transfer to a very large bowl.

Cook pancetta in a 12-inch heavy skillet over moderate heat, stirring occasionally, until browned, 12 to 15 minutes. Add butter and heat until melted, then add celery and onions and cook, stirring occasionally, until softened, about 12 minutes. Stir in sage, salt, and pepper and cook 1 minute. Add pancetta mixture along with chestnuts and prunes to bowl containing bread. Whisk together stock and eggs, then stir into bread mixture until combined well. Transfer to baking dish (stuffi ng will mound above dish).

Bake, loosely covered with a buttered sheet of foil (buttered side down) 30 minutes, then remove foil and bake until top is browned, 10 to 15 minutes more.

Remove from Oven, let rest for 10 mins. Serve.

1 boneless leg of lamb (approx 1-2 pounds)

3/4 cup Crown Royal whiskey1/4 cup fancy molasses1/2 cup beef stock8-10 pieces dried apricot1-2 cloves garlic minced3-4 leaves fresh sage leaves2 lbs mixed root vegetables

(carrot, squash, parsnips, yams, etc)1/4 white onion1/4 cup brown sugar2 tablespoons olive oilsalt and pepper to taste

Slice apricots into thin strips and put into a bowl. Mince the garlic and onion; add half the garlic and onion to apricots, pour half the whiskey into the bowl, then add brown sugar and let sit for 30 minutes. Toss root vegetables in half the olive oil, rest of the garlic, and some salt and pepper. Roast for about 25 minutes at 425°F.

While vegetables are roasting prepare the lamb, cut off any excess fat and connective

tissue (will make it tough). Sprinkle with salt and pepper all over. Drain apricots and reserve the liquid. Place apricots and sage leaves in center of leg and roll. Tie up leg with butcher cord or a skewer will work to hold it together. In a heavy skillet, that is oven safe, add oil and heat up on medium high heat. Place leg in pan and sear on all sides until browned. Pull out vegetables from oven and lower the temperature to 375-400°F. Add vegetables to pan. Add half the beef stock, remaining whiskey and half the molasses to pan and bring up to a boil and place into oven. Cook until desired doneness, 30-40 minutes for medium rare-medium. Once fi nished, place leg of lamb aside to rest, and strain liquid into a small pot and add rest of the beef stock, bring to a boil, and simmer until reduces by half.
