E legant, whimsical, romantic and bold: these are all words that can be used to describe the gorgeous designs of Samantha Wills. Raised in Port

Macquarie, Samantha is an excellent example of the way hard work and a driving passion can bring amazing success. Spending her time between Sydney and New York, designing and running her jewellery empire, she is the epitome of the modern creative.

With her love of all things beautiful and the keen support of clients from the everyday bride to international celebrities, Samantha’s business is thriving. With her collections expanding to include an e-magazine, homeware and stationary

there seems to be no limit to her creativity.And, like many successful entrepreneurs

before her, Samantha chose a less traditional path to get where she is today going from Bondi Beach market stall holder to international star. “I’m a completely self-taught jewellery designer,” she says, “but I can credit my mum for star ting me off by enrolling me in a bead making course when I was in primary school”. It’s an early talent and a belief in her ability that paid off immediately.

From making jewellery for friends and family Samantha showed her first collection at Fashion Week in 2004. “Fashion Week in 2004 was where I placed my first big order. I quit my job the next day and star ted designing full time,” she says.

Yet it’s not just about having financial success. “Jewellery making was always a hobby and a passion, so I can definitely say I’d still be making jewellery even if I wasn’t getting paid for it”.

While her designs initially focused on elegance and difference in both evening and daywear, Samantha extended her collection in November 2012 to include designs specifically for bride’s

offering modern and romantic pieces. The inclusion of this category in her collection s t e m m e d from increasing customer feedback for a dedicated bridal line.

These designs draw their inspiration from Art Deco chandeliers and incorporate back necklaces, turquoise stones and truly divine, drop earrings. It’s a style that is affordable, unique and completely elegant and continues the effortless style she is famous for.

Yet this isn’t all Samantha offers with this collection. “My biggest inspiration,” she says, “are our SW fans and I always strive to deliver according to their wants”. As such, Samantha also offers style advice through her website www.samanthawills.com and e-magazine SW Brides.

The bridal section of the site - including the magazine, ‘Visual Feast’ and shop - invites clients into an “…inspiration room that applies the SAMANTHA WILLS style to different themes of weddings, covering everything from invites to décor.” It’s a concept that Samantha is justifiably proud of and one that gives brides-to-be a

tangible and complete style guide no matter what their taste or budget.

From her website to her own look, it is clear that Samantha’s passion is gorgeous styling. To look through her

work is to discover page after page of beautifully styled bodies and

interiors, photographs that call you in with wishful longing. It’s the

perfect place for any bride to star t to look for inspiration.

While Samantha is all for a woman staying true to their own personal style

she does suggest thinking outside the

square: “Choosing turquoise jewels can double up as ‘something blue,’ and cocktail rings for bridesmaids

are beautiful bridal gifts,” she suggests.

be. It’s the ideal tool for a bride who wants to style herself without the dramas of trying to coordinate pieces from a variety of outlets. It’s the kind of service that pushes Samantha’s brand ahead of all the others.

“Our customers have been the most influential in deciding the direction of the brand,” says Samantha. “The opinion of our customers is very important to us, and we always take feedback on board and incorporate it in future designs”.And it is this communication with clients that gives SAMANTHA WILLS the edge. “Developing a relationship with our customers is our highest priority, which works seamlessly with social media. Our customers are able to talk to us, and I love that we can talk back and have a two-way interaction,” she says.

It’s a value and way of doing business that has enabled Samantha to go from strength to strength in the 8 years she has had her brand. “Staying true to the brand’s values and vision has been a big factor in keeping the business alive over the years,”she says. “It has also been a credit to the amazing team at SAMANTHA WILLS that the business has grown the way it has”.

So who is the SAMANTHA WILLS client? “I don’t have a particular age or personality in mind when describing the SW woman,” Samantha says. “SAMANTHA WILLS is for anyone who wants to create a bohemian luxe style with statement jewels that take them from day to night”.

Catering

Usually the biggest expense in any wedding budget it is important to get the catering right. Many wedding guests remember the

food more than anything else from a wedding so it’s important to get your choices and quantities properly organised. Again, research is vital so that you are making informed choices about food style and how much you’re going to need. Ask around and check out the websites of local catering companies, collect menus and taste.

Because the catering is the biggest expense of any wedding you need to make the best use of your money while giving your guests a meal to remember fondly. Taking into consideration where the reception is located, how many guests you’re going to have, the style of your wedding and whether or not any of your guests have special dietary requirements is key to getting it all right.

Happily, a good caterer will help with all of these issues but what should you be looking for? Jeremy, from The Larder in Byron Bay (thelarder.com.au), believes there are a number of factors you need to consider when choosing a caterer for your wedding day. “Quality, consistency, reputation and length of time in business are crucial,” he says. “You also want a caterer that keeps your needs in mind including budget, style of food, specific theme and level of service.”

Communication is of course, key, so you need to make sure that you are comfortable with the caterer you choose. It’s no good having the best around if you can’t get them to listen to what you want and manage any changes. Make sure you meet with a few possible caterers and that you consider the rapport you have with each of them as well as cost and style before you commit.

Once you have a caterer it’s time to get down to the nitty gritty of choosing what to serve. “Keeping food along the same lines and feel as the reception is important,” points out Jeremy. “So if you’re having a casual beachfront wedding you probably wouldn’t then sit down to a formal three

course dinner”. Instead, you might opt for cocktail food, a buffet or even share plates.

The timing of your wedding and what guests may or may not have eaten before is also worth keeping in mind. “If a wedding ceremony starts at 2pm, most people would have skipped or at least only have had a light lunch,” says Jeremy. “Having sufficient food over the course of the afternoon/evening is paramount to getting the balance of food (and alcohol) right”.

While you might imagine that food options are pretty standard – cocktail food, sit down meal or buffet, if you’re the kind of bride that likes to do it differently, veering away from tradition to something more suited to you is an option. Jeremy suggests considering cocktail receptions with lots of well-presented interesting foods, flavours & textures such as mini degustation menu’s, miniature desserts, and locally sourced produce, or individual food stations with the chefs working in front of all the guests.

Whatever your choices its paramount that guests have enough to eat and that you have made sure that anyone with food allergies is being taken care of. It’s also important to consider what your guests will be doing/eating the day after - especially those who have had to travel long distances to get there.

“My thoughts are normally for planning the day after the wedding also,” says Jeremy. “With all of the family and friends still around it’s a good idea to keep it casual, but have the caterer deliver platters of foods, interesting salads and a selection of things that can be cooked on the barbecue”.

The CakeBut it’s not just the meal you need to organise for the reception. The wedding cake is a huge choice for any couple and can be lavish or simple depending on taste and budget. Just like choosing a caterer, you need to do some homework to make sure you’re going to get what you want.

“When choosing a cake designer you should

have a good look through their portfolio to see what their style is like, says Bree of The Cake That Ate Paris (www.thecakethatateparis.com.au. “If you like what they’ve done then good chances are they can create something beautiful for you. If not, keep searching!”

Another point is to not only consider the look of the cake but the taste as well. “Ask what flavours they can do,” suggests Bree. “Most cake makers should be able to bake pretty much any flavour. Also, make sure you understand what price range they cater for and the delivery options. You also need to consider whether or not you’re going to provide dessert as well as cake”.

Before going to your chosen cake maker, says Bree there are a few things you should have thought about. “You should have a rough idea of the type of design you would like and the colours you want used. From there the designer can help fine tune what you want, but any photos of designs you like are always a good idea”.

When it comes to the style of the cake, Bree says there are many different trends to look at. “At the moment there are a lot of bright pastels which I love. Traditional sugar flowers, cakes patterned with intricate stencils, and simple exposed butter cream cakes with fresh flowers are also gorgeous”.

Remember to keep in mind the overall look and feel of your wedding as you plan your menu and cake. Styling should run through every area of the wedding ceremony and reception to create and reinforce an atmosphere that represents you and your groom.

Styling The colours, theme or style of your wedding is

crucial and often the most stressful element of planning for brides because the look of your wedding sets the tone and mood for the entire day. Fun or funky, whimsically romantic or formally elegant the mood you set for your guests provides expectations of what is to come.

The look of a wedding should reflect the personalities of the bride and groom and reflect their overall style as a couple. Narrowing down the kind of style that you want can be tricky, as can sourcing the elements you need to bring your vision to life. A stylist can save you a lot of time, energy and money when it comes to getting your look perfect.

Finding a stylist can be as easy as asking your wedding venue for their recommendations, doing a Google search or word-of-mouth, says Trudy from Noosa based, Love Bird Weddings (lovebirdweddings.com.au). The important thing is in understanding what you’re getting.

“When hiring a stylist, as opposed to a decorator,

you need to first understand the difference between the two,” explains Trudy. “A decorator typically sends out a decor list with prices and asks the bride what decor they are interested in. A stylist, I believe, works quite differently. They start with the end in mind, asking the bride and groom what they want to achieve from their wedding styling before going away to create a specific styling concept to fulfil the brief ”.

The brief, says Trudy, should provide a holistic design covering all elements of your day, from ceremony, through to a canapé design, and then a sit down or cocktail dinner design. “As stylists, we will also recommend a floral concept, and we work very closely with our floral partners to achieve an integrated decor and floral design for our brides”.

When deciding what kind of style you want for your wedding, Trudy suggests that looking for a theme is less important than the overall feel you want to create. “We focus on ambience and emotional impact,” she explains. “The reason for this is because we want our clients and their guests to have an emotional response to the weddings

we design...to walk away with the warm fuzzies!” In this way, you also maintain the authenticity

of who you and your partner are. “The most common mistake we see as wedding stylists is when couples are trying to achieve a style that is someone-else’s,” says Trudy, “meaning they have lost sight of what really reflects them, and their chosen venue”.

It might be useful to think of something that you and your partner love to do together or the place you met. Having a starting point that is emotional – a remembered feeling of being together or meeting – can help to simplify a process that is often too busy with choice.

THE MEETINGA mutual friend had tried in vain to set us up however nothing eventuated. A few weeks later we randomly bumped into each other at a bar and have been together ever since.

THE PROPOSALEvery anniversary we stay at the same hotel in the city. When we met that afternoon Kev was acting a little on edge. He wanted to exchange presents even though it wasn’t our anniversary until the next day. Kev had 3 presents for me: 1. Ugg Boots, so I didn’t get “cold feet” (also in winter I always stole Kev’s,) 2. A mani and pedi, so my hands would look their best and finally my beautiful engagement ring. It was an amazing moment, and whilst

emotional, instead of crying I actually star ted to laugh so much that Kev had to ask me twice.

THE WEDDINGThe day was really relaxed and went really quickly. It all felt like a bit of a dream until I was in the car driving to the ceremony. The day was a perfect 24 degrees and sunny so the Rainforest looked amazing. It was really important for us to spend as much time as possible with our family and friends so we kept our photos as short as possible, which was easy with Scott- he is such a phenomenal photographer.

THE RECEPTIONOur guests enjoyed canapés, drinks and games on the lawn before sitting down to a 3 course meal. We also hired a photo booth for the night to capture as many family and friends photos for the evening as possible - everyone loved it!

THE PROPOSALRoss and I were totally in love from the star t. He was my one. He knew that I wanted to be married under a great big old tree, like one I had grown up alongside on my family property. For a week before he proposed, he spoilt me with a bunch of flowers every day.It was Monday morning and he said we had to go for a walk. We ended up at the bottom of Mount Warning walking on a narrow track at the base of the mountain. He led me to a big old tree. Later on I found out he had asked a few people including my Dad, as to where he could find an old tree, he said it was one of the biggest in the area. He was on one knee and asked, “ Will you make me so happy and marry me?”

Cake TalkGANACHE Popular cake covering made from dark, white or milk chocolate and cream. It’s used as both a filling and a coating. It’s rich and fudgy and also gluten-free!

BUTTERCREAM A creamy, smooth icing made from butter and icing sugar. In Swiss meringue buttercream, egg whites, sugar and butter are used which results in a silkier texture than straight buttercream.

MOUSSELINE Another name for Italian meringue buttercream; a lush, buttery smooth cake filling that can be flavoured.

MACAROONS These chewy and crisp delicate almond meringue biscuits are generally sandwiched together with flavoured ganache, jam or buttercream. They make a great addition to dessert tables and can be attached to tall cones to make a macaroon tower.

TIER One level of a layered cake. Typical wedding cakes are one, two, three or more tiers.

FONDANT The smooth finish icing that can be coloured easily. This pliable dough is made from sugar, glucose and vegetable fats. Cakes iced with fondant sweat when placed in a refrigerator and must be kept cool and dry.

MARZIPAN Made with ground almonds, sugar and egg whites; this sweet pliable almond paste is not

as popular as it once was and is mainly used on Christmas cakes and decorations.

DOUBLE HEIGHT Standard tier height is 4”. A double height cake is an extended height i.e. taller than 4”

FONDANT FANCIES Squares of cake iced and decorated with coloured fondant, often displayed on a square cake board. They look similar to square, flat cupcakes and can have wording piped on.

CAKE POPS Delicious bite-sized globes of cake on a stick are dipped in milk, dark or coloured chocolate and then decorated. Perfect for lolly bars or dessert tables.

BOMBONIERE Also known as wedding favours, these are small gifts given by hosts to their guests. Traditionally consisting of a few sugared almonds in an organza bag, they now encompass any kind of sweet or symbolic item.They could be small rustic jars of homemade jams, cookies, lollies on ribboned sticks, miniature potted succulents or gourmet chocolates or fudge in tiny boxes. They are whatever fun or creative thing your heart desires to show gratitude and provide a memory to the people there on your special day.

CHOCOLATE BOXES Cute individual chocolate boxes or towers containing your cake flavour choice encased in chocolate ganache and shards of dark or white chocolate. Topped with chocolate curls or seasonal berries. The boxes are arranged on tiered stands for a dramatic and deliciously different look.

Savour the FlavourHUMMINGBIRD A moist mixture of banana & pineapple, lightly spiced with cinnamon. Similar in texture to carrot cake.

RED VELVET A smooth soft deep red cake made using buttermilk, cocoa and red food colour. Partners well with white chocolate ganache or cream cheese icing.

COCONUT Becoming more popular a rich coconut cake is perfect for summer weddings. Generally buttery and containing real coconut and coconut milk, it pairs well with passionfruit and mango.

VANILLA CHAI This flavour started off in cupcake form and is now gaining popularity as a big cake flavour. It pairs particularly well with cream cheese icing mimicking the chai lattes so beloved these days.

CHEESE Yes, a wedding cake made entirely of cheese! There are alternatives to “Sweet Tooth” and one of them is cheese served with fresh fruit and biscuits; varied size wheels of your favourite cheese stacked into a wedding cake shape and laden with dark grapes, figs and berries.

Allergies? No problemWhether it’s the canapés, main or dessert, it is important to alert caterers and cake makers to any guests with allergies. These days there are many delicious alternatives to the traditional cake, and these can be served to everyone or

Married on October 6 last year on a glorious spring day, Ashleigh and Andrew Colnan were determined to find the perfect reception venue to follow their Ballina Lighthouse wedding ceremony.

The couple, originally from Ballina and now living and working on the Gold Coast, wanted somewhere to match their relaxed personalities and lifestyle, and if possible, at a location near the water.

“It took us a long time to pick,” says Ashleigh, a nurse. “We just knew we wanted it in Ballina.”

After looking at numerous venues, Ashleigh says they stumbled across Ballina RSL Club’s Riverside Function Centre which is located on the banks of the Richmond River. “It was just perfect,” she says.

“It ticked all the right boxes for us.”In terms of food, and with 100 guests to cater

for, Ashleigh says they wanted a nice modern Australian meal without breaking their budget. “Theirs was the best,” she says referring to the Centre’s menu. “They had a really big variety and you could choose alternate meals for each person. We had a vegetarian and a lamb option for entree, and chicken breast or steak for main. It was all absolutely beautiful”.

It wasn’t just about the taste and value for money that made Ashleigh happy either. “The food came out hot and fresh, the service was really good – waitresses just came rolling out and had the food placed on the tables really quickly”. The guests, it seems, were very pleased too. “Usually you’ll find a couple of people will complain about some dish but everyone just raved about how good all the food was.”

On the beverage front, Ashleigh was equally pleased. “I just told them what alcohol we wanted and we were able to put however much we wanted over the bar for guests to have,” she explains. It was easy”.

Ashleigh is also highly complimentary of the Club’s staff, who, she says went out of their way to help make their night so memorable. “They were amazing from day dot,” she says. “I just can’t fault nor thank them enough. From booking it to the day after packing up, they were incredible and went above and beyond our expectations.”

In addition to the incredible service, another bonus Ashleigh and Andrew found in using the Riverside Function Centre was the availability of

time offered to them to arrange guest seating and decorations.

“Our colour theme was that of the bridesmaids – white, purple and white,” she says. “We had white tablecloths and chair covers with purple satin ribbons around chairs, a light purple sash table runner and the centerpiece was a cylinder vase with white and purple fake roses that we twisted into the shape we wanted – it was gorgeous and simple.”

This kind of decorating certainly takes time but thankfully for Ashleigh and her helpers, the Centre’s staff, were more than accommodating. “They let us have the venue the day before to

set up and the day after to pack up - they really were cruisey,” she says. “They made everything fall into place and run super smooth. Even when setting up on the day prior, staff kept coming in to ask if they could help - they were so nice.”

And once formalities were over Ashleigh says it was just one big party. “We just let our hair down and danced the night away,” she says. “Everyone had such a good time. It truly was a night to remember.”

Such positive feedback is not uncommon for Ballina RSL Club’s Functions Manager Sarah Dooley. “We really do pride ourselves on helping to make a couple’s wedding reception exactly as they would like it,” Sarah says. “Whether you’re looking for an intimate function space for a small wedding with close family and friends or a large traditional wedding with all the trimmings, the Riverside Function Centre is the perfect venue. “And our functions team can coordinate all your wedding requirements from cakes to decorators, floral bouquets to wedding apparel and arriving in style,” says Sarah. “We also have access to an extensive list of wedding photographers and visual professionals to cater for every taste - all from as little as $49 per head”.

Sweeping river views are just the beginning at Ballina Riverside Function Centre. Facilities include several reception rooms with private bars, complimentary car spaces, disabled access and private amenities. THE WEDDINGWe each had a lovely relaxing day with close friends and family leading up to the ceremony. Both of us were a little nervous but those nerves melted away the minute we locked eyes. It was just the two of us in our own cloud during the ceremony.

Our reception was a sit down dinner which was to die for! We made sure there were a few things to do to ensure a fun and lively atmosphere. A fantastic band kicked things off to set the mood, a photobooth for plenty of giggles and flowing wine. It was the best day of our lives and we wish we could do it all again!

THE PROPOSALSimon proposed in New York City on our last day of holidaying in the USA. We had just spent the morning in Central Park and Simon suggested we go for a walk a few blocks down to the diamond district. We spent the afternoon looking through many shops. The next day we went for a bike ride stopping for a hot dog and milkshake when out of Simon’s pocket came the ring! It was an amazing day. We celebrated with my parents that night with dinner and dancing at the Cotton Club in Harlem.

THE WEDDINGIt was a very emotional ceremony with lots of tears and smiles from everyone. We had a cocktail reception in a marquee which had fairy lights and candles. It was a classic spring wedding with a fresh colour theme of peach, gold and white, my favourite colour combination. Our flowers were gorgeous and included white avalanche roses, soft peach roses and white spray roses with gold back magnolia around the edge. There was a video booth set up so guests could record a special message for us and instead of wedding favours we had a table set up where our guests would choose a charity to support.
