RS I’d nurse and save money so that I could travel the world, come back to Australia, nurse some more, then travel some more. On one of these trips I decided I’d follow a dream and try my hand at fashion design. V Did you find any success? RS Oh yes a bit. I worked with the top models of the time, Naomi Campbell, Helena Christensen - so yes it went well. Why did you stop? RS I hurt my back and dropped out of the industry while waiting for it to heal. I moved down here to be with my parents and then two years ago opened my business. V Do you have an embarrassing story for us? Many years ago I went camping and was too nervous to wash in the local shallow river. I finally drummed up enough courage, walked down, made sure no one was about, stripped off and waded out into the water. When I turned round there was a huge group of horse riders slowly moving along the river bank. I couldn’t get out so I stayed and waved. The problem was that they all slowed down to stare. V What do you like about the area? RS I love that we’re near parks and the beach. People are so friendly; we’re having a Christmas party in the street this year. Down here you wave to people passing in their cars and its perfectly safe for my son to ride his bike down to the shops to pick up the newspaper.

What’s New on the Island...

The Vibe is always out and about checking out what new ventures are happening around the place. In this issue, The Vibe visits Pit Stop Pizza, a new pizza place in Chapel St, Cowes.

When you’re really hungry and you just don’t feel like cooking, you can’t go past a pizza. Newcomer Pitstop Pizza has just arrived on the Island, bringing good old traditional pizzas and pastas to satisfy any appetite.

After many school holidays soaking up the sun and surf on the Island, James, Jake and Erin were left with a nagging desire to move to the Island one day and make it their home. Since finishing school, they’ve spent the last couple of years working in hospitality around Trafalgar where they grew up, hoping to eventually start up their own food business. With supportive parent backing, their dream has finally come true. The trio has just opened Pitstop Pizza in Chapel St and they have all the youthful energy, enthusiasm and passion to turn the business into a buzzing success.

While the place has operated as a food shop under several guises over the years, the young team has just given Pitstop Pizza a massive facelift, fitting it out with stainless steel, black, white and red décor. It’s modern, fresh and promises to deliver.

While Pitstop offers many time tested favourites, the team also makes a great range of gourmet style pizzas. Repeat customers rave about the Vedura – a tasty mix of shredded potato, spinach and garlic. Other tempting toppings include: Satay with prawn and chicken, a low fat vegetarian and a busy Mediterranean. And if you’re not in the mood for pizza or pasta, they also do a range of eat in meals such as chicken parmigiana and homemade lasagne all served with chips and salad.

As the holiday season heats up, the team also plans on extending the café experience, opening all day serving great coffee, cakes, slices and muffins.

What’s Cooking?

Pastel de Tres

Leches My friend Sam is the quintessence

of the dinner party hostess. Lively, gorgeous and welcoming she manages to turn the simplest casual dinner into an event to remember.

At the last ‘event’ we attended, Sam had been inspired by all things South American. We started with DIY nachos at entertainment station number one and progressed to a huge paella at dining zone number two. All washed down with several litres of Sangria.

Dessert was a traditional cake with Mexican origins called Pastel de Tres Leches, literally ‘3 Milks Cake’. It was delicious, rich and pleasing. Just like our hostess.

What You Need 6 eggs, separated 1 cup white sugar ½ cup milk 1 cup thick whipping cream 1 x 400ml tin sweetened condensed milk 1 x 400ml tin evaporated milk 1 cup plain flour 1 tbsp baking powder 2 tsp vanilla extract

What You Do

Preheat your oven to 175 C.

Grease a 25cm x 25cm non-stick baking dish with butter.

In a large mixing bowl, beat egg whites with an electric

mixer until stiff peaks form.

Gradually beat in the sugar until the mixture becomes

glossy.

Now beat in the egg yolks, one at a time, making sure

each yolk is combined before adding the next one.

Turn the mixer speed down and slowly add the flour,

about 1 tbs at a time, mixing continuously.

Beat in the baking powder, milk, and vanilla extract.

Pour the batter into the baking dish you’ve already

prepared.

Bake for about 25 minutes until the cake is a little

brown. Just to be sure, insert a skewer into the centre of the cake and if it comes out clean then the cake is ready.

Let cake cool in its tin for 15 minutes.

Turn the cake out and place in a large ceramic casserole

dish. In the meantime, pour the cream, condensed milk and

evaporated milk into a blender and pulse a few times until it’s completely blended. You could use a stick mixer if you don’t have a blender.

Pour the milk mixture evenly over the cake.

Refrigerate cake until it’s cold and all the milk mixture

has soaked in. This takes at least 1 hour.

When you’re ready to serve, cut cake into squares and

serve with some seriously thick cream and some fresh berries of your choice.

Wild Oceans EcoBoat Adventures at Phillip

Island, Victoria

On December 8 Phillip Island Nature Parks will launch two new EcoBoat Tours allowing visitors to venture beyond the island’s shores and explore the rugged coastline and wild ocean up close. Dive in to find out more.

There’s a spot along Phillip Island’s southern coastline, between the Nobbies and Penguin Parade, that rivals the views of Victoria’s Great Ocean Road. Look west and the seascape is dominated by gently undulating penguin habitat dramatically punctuated by cliffs that tumble into Bass Strait. Look east and the cliffs give way to the gentle slope of Summerland Beach and the Penguin Parade.

For the first time this rugged coastline can be explored up close on a fully supported EcoBoat Tour. Phillip Island Nature Parks has teamed up with John Dickie, the island’s long-time local boat tour operator, to offer the new service as of December 8, 2014. Operating daily, the Wild Oceans EcoBoat Tours will take thrill seekers on a high speed tour to the local Australian fur seal colony and the base of Summerland Peninsula’s cliffs, including the explosive blowhole at the Nobbies.

As locals attest, the waters surrounding Phillip Island teem with wildlife. From June to September, migrating whales such as southern rights and humpbacks are spotted, along with smaller orcas or ‘killer whales’. Keep your eyes peeled for any ‘rafts’ of little penguins out fishing, or look towards the shore to spot a soaring bird of prey such as a peregrine falcon.

Within 20 minutes of departing from the Cowes jetty, the tours arrive offshore to one of the country’s largest Australian fur seal colonies. A ranger-guide from Phillip Island Nature Parks is aboard to give tour guests a special insight into the history and ecology of the colony. Underwater cameras aboard the boat also reward guests with a unique glimpse into the playful antics occurring beneath the waves as seals surround the boat. Visit in January and you’ll see fur seal pups taking their first swim lessons. Look ashore and you may be lucky to spot one of the 300kg male bulls taking charge at a rival.

The return journey takes guests towards the Nobbies and the coastline of Summerland Peninsula. Discover the Aboriginal and European history of the area and get a unique and exciting view of the Nobbies blowhole carved into the cliffs by thousands of years of explosive wave action. Further on as the tours heads back towards Cowes, the EcoBoat Adventures pass by Cat Bay, a National Surfing Reserve famous for its longboard break. Return to Cowes jetty in time to explore the sights of town before heading out to see the little penguins waddle ashore at dusk for the world-famous Penguin Parade.

With over 20 years of experience, our operator and ranger guides are experts at finding seals, whales, dolphins, penguins and other seabirds. Seating up to 47 people and operating year round, our world-class RIB (rigid-hulled inflatable boat) is also equipped with WiFi. The Case of the Errant Spouse By Leon Herbert

Mary, Mary, quite contrary, How does your garden grow?

With silver bells, and cockle shells, And pretty maids all in a row, maybe

not forgotten by an angry sow.

Leroy, the famous, although somewhat eccentric

sleuth of Phillip Island, stood in front of a small suburban house in Cowes with a neatly trimmed lawn and beautiful flower beds. He watched as the seat of the sedan in the driveway alongside a flowerbed was moved forward in order to remove the corpse wedged between the front and back seat. It was the portly body of Guy Edmunds- recently married, recently deceased.

Leroy knew of him and his reputation as a serial womaniser and a regular at the RSL pub with his beer swilling mates, regaling his exploits, particularly with some of the married ladies of the village. Well clearly having stopped chasing women, overeating, and smoking- all at the same time- his funeral would be noteworthy as would be the determination of culprit.

Inside the house Inspector Jack Flint was questioning Guy's new bride, Mary. When Leroy entered, the Inspector paused and summarised what he had learned so far. Guy's body was discovered in the back seat of his car that morning by Joseph the postman. Mary said she

and her husband had had an argument the previous night around 11 o'clock. She claimed Guy had left in a huff and had not returned. ‘So you went to bed and just found out about your husband's death this morning when the police came to

the door?’ Leroy asked the petite young lady who sat at the kitchen table sobbing and wringing her hands. Leroy could not help but feel sympathy for her and her failure to find a loving and faithful husband - anyway her married pain was short-lived in comparison to incarceration in gaol if she was the culprit - something that needed immediate resolution.

‘No,’ she said, getting up to pour Leroy a cup of

'I was awake most of the night listening to music and worrying about Guy,’ she said. Leroy raised his eyebrows wondering who apart from Guy's mother could worry about him. Still he must be careful not to lose his objectivity when evaluating the attractive widow.

‘Had he left in a huff before?’ Leroy asked. ‘Yes. He doesn't talk things out. He just drives around, I

think, and settles down. He's usually back in an hour or so. We both apologise, and the spat is forgotten.’

‘Did you hear the car drive in?’ Flint asked believing there was only one suspect here and it was the grieving wife who had cause to have more spite than spat.

‘No, the music,’ she said. ‘I’m afraid, Mrs. Edmunds.........,’ Flint began. ‘That someone killed your husband, drove his car home,

and left it here with his body in the back seat, and that someone isn't you,’ Leroy said, finishing Flint's sentence with probably a different conclusion. Flint looked at his friend in amazement.

‘Come on Leroy, let's not rush to judgement.’

Well, readers of The Vibe - has our resident sleuth in reaching this conclusion been beguiled by the charms of Mary and his dislike for Guy - surely Mary had all the

motive and opportunity to rid herself of her beastly husband and focus on her garden?

Whodunnit Solution 44 The Case of the Errant Spouse Leroy did not rush to judgement. He had noticed the car

seat had to be moved forward to remove the body. By deduction someone had put the body in the back and then moved the seat back, wedging the body in between the seats.

Being only five feet tall, our Mary would have moved the seat forward. It was also doubtful of course, that such a petite woman would have been able to lift the portly body of a full grown man in the first place - no it was more likely to be the action of a very disgruntled husband of a deflowered wife.
