For those of you traveling this summer, the new Gatehouse was officially opened on Wednesday, July 23. About one-third of the project is still to be completed including demolition of the previous Gatehouse, paving, installation of the new gate arm, curbing, and landscaping. Some of the finishing touches on the Gatehouse cannot be completed until after the paving is done. Some equipment and materials from the old Gatehouse are being saved for use elsewhere around Moss Creek. During demo-lition and sitework, it may be necessary to close some of the lanes of traffic for safety purposes. We appreciate your patience. August is a quieter month at Moss Creek, thus a good time to schedule completion of the road work.

With the first six months of 2014 behind us, this issue of the Advocate is a good time to review how Moss Creek is doing finan-cially. The net operating surplus through June is $221,119 which is $278,722 better than budget. Most activities met or ex-ceeded its financial goals for the first six months of the year; however, bad weather impacted golf revenue. As of June 30, 2014 Moss Creek has total cash on hand of $4,710,052, including $2,262,903 of unrestricted cash, and $2,447,149 set aside for future capital projects or otherwise designated as restricted funds. The line of credit debt is $1,950,000 and the longer term equipment and Water Oak Utility debt total $1,515,582. Payment on the line of credit debt and contribution to the reserve fund balance are made at the end of the year. Through June there are 538 Activity Fee participants as compared to 527 through June 2013.

Non-Operating surplus, which is comprised mostly of certificate income less interest paid on MCOA debt, is $726,969 year to date and ahead of budget by $106,809. However, 2014 certificate income is $71,500 behind the first six months of last year and there are fewer transactions in the pipeline than there were this time last year. The certificate income goal for 2014 is $1,320,900. The year to date results will be reviewed in more detail at the Special Members Meeting on October 21, 2014.

In June the Master Plan Task Force conducted a Member survey to obtain a better understanding of the demographics of our Community. Although not everyone responded, the committee feels the 628 responses or approximately 35% of all adult prop-erty owners, is statistically significant. The following is what you told us: • The average age at which you purchased property was 56 years. • 38% were retired when they purchased and 62% were not retired. • The people who responded have lived in Moss Creek an average of 10.3 years and now are an average of 66 years; 68%

of those who live here are retired and 32% are still working. • Moss Creek is the primary residence for 76.8%. Approximately 5% of the respondents rent their property. Half of the peo-

ple who are not residents plan to become residents over the next few years. For the other respondents, Moss Creek will continue to be a second home.

• Approximately 8% are one adult households and 9% of the households have children. • 28% of the respondents own a dog.

We also asked questions to determine Members current and future interest in activities. 87% of those who responded partici-pate in some sporting activity. Golf, pool, and leisure trails ranked the highest. 78% said they regularly participate in some din-ing activity at the Clubhouse. The Grill Room had the highest response which supports the increasing interest in casual dining. 40% responded that they participate in clubs with the Yacht Club and Book Clubs ranking highest. When asked “What amenity of Moss Creek is most important to you?” the highest responses in ranked order were: Golf, Boating, Pool, Tennis, Fitness, Clubhouse Dining, and Leisure Trails.

In the last question, we asked respondents to force rank (highest to lowest) what new amenities Moss Creek should consider. The rankings from highest to lowest were: Waterfront Dining Facility; Outfitter-Naturalist Center; Community Garden; Library-Reading-Media Center; Craft-Art-Game Center; and Pickleball Courts. A number of people objected to the forced ranking and asked if they could respond to each question individually, so we sent out a supplemental question to allow ranking each item separately. The revised question provided five choices from strongly in favor to strongly opposed. The order of the responses were the same as the earlier forced ranking question with the exception that the Library ranked slightly higher than the Com-munity Garden. The major difference in the second answer is approximately 85 people or 13.5% of those who responded, strongly opposed any new amenity. Likewise in answer to each question a number of people were strongly in favor of each amenity. For example 113 or 18% strongly favored Waterfront Dining and about 8% strongly favored Pickleball, the Community Garden, and the Library.

The Master Plan Task Force is continuing its work to develop a strategic Master Plan for the highest and best use of available land to produce the highest value in the context of Moss Creek’s Vision, Mission, and Brand statements adopted by the Board of Directors in 2013. The Task Force is working toward making a presentation before the end of the year at a Member’s Town Hall Meeting.

Community News Rally For the Cure:

Golf Tournament, Raffle, Silent Auction, & Dinner Sunday, October 5, 2014

Our Rally raises money for breast cancer programs through Susan G. Komen. All of our fundraising dollars will remain local through the Komen Affiliate Network. If you are not playing golf, please join us for the Dinner and Silent Auction. There are many opportunities for volunteering before and during this event. Volunteers do not need to be golf-ers. It is a wonderful way to meet fellow Moss Creekers and be part of this worthwhile event. If you are inter-ested, please contact Mary Jane Reeves at 836-3355. Also, Silent Auction items are needed. MCOA Kayak Loaners

Moss Creek purchased 2 doubles and 4 single kayaks for Members and guests to borrow. MCOA also provides life jackets and paddles for these boats (upon availability). Contact the Fitness Center (836-6160) for infor-mation or to reserve the boats (can reserve 2 weeks in advance). Everyone must check in at the Fitness Center and sign a waiver of liability before heading out on the water. Please use the kayak carts located along the kayak storage area to transport kayaks to and from landing. Do not drag the kayaks, as this will destroy the bottoms of the boats. Thank you!

2015 Board Candidates On Tuesday, September 23, at 6:00pm, come by the Clubhouse and “meet the candidates” who will be on the ballot for the October election. Each candidate will have the opportunity to discuss their position along with a short question and answer session.

Results will be announced at the MCOA Special Meeting on Tuesday, October 21, 2014 at 6:00pm at the Moss Creek Clubhouse. Those elected will take office on January 1, 2015. The three positions to be filled are currently held by Jan Alpert, David Neff and Jim Vogel whose terms expire December 31, 2014. We thank them for their outstanding service to the Community.

Q. What areas of your background do you feel would benefit or add value to the MC Board of Directors? A corporate career gave me the opportunity to interface with executive decision makers on a daily basis. Sales management re-sponsibilities included recruitment, manpower development, team training, customer service, logistics, and P&L accountability.

Q. What challenges do you see facing MC currently and/or in the near future? A. Challenges associated with a mature plantation that include an aging infrastructure; common and private property mainte-nance; and replacement of outdated facilities. We need to remain sensitive to the changing demographic profile of Moss Creek.

Q. Do you feel Moss Creek is competitive with similar communities? What are your thoughts on issues and/or projects that need to be addressed to either become or remain on a competitive level? A. I feel Moss Creek is competitive with similar plantations, but we need to be cautious about “automatic” annual POA increases and the activities associated with it. Moving to a single activity fee structure several years ago provides Moss Creek with a com-petitive advantage.

Q. Are there areas you feel could be improved or perhaps added in order to enhance the quality of life for current and future Moss Creek residents? A. The new gatehouse enforces our commitment to security, privacy, and upgraded facilities. We have an opportunity to further enhance our marquee waterfall entrance. An increase in pedestrian and bike traffic on our narrow roadways coupled with an ab-sence of pathways is problematic and potentially dangerous. The Bostwick area offers great opportunity for expansion and en-hancement, but warrants further study for return on investment.

Summary Statement: Living in a financially sound, responsibly managed, active, and friendly community is reassuring. We have a great deal of positive momentum working in our favor, but we should not overlook the challenges associated with an aging plan-tation. In summary, Moss Creek is a good place to call home.

Q. What areas of your background would benefit or add value to the Moss Creek Board of Directors? A. I believe that as an elected member of the Board of Directors one must listen to and act on behalf of the membership. With almost 20 years experience as a Senior Financial Advisor, I listened to my clients, whether individuals or entire boards of compa-nies and nonprofits to discern their financial goals and dreams, both short term and long term. I then worked with them, using all the analytical tools available to me, to establish an action plan for the next 5, 10 and 20 years to meet those goals and dreams. In much the same way The Moss Creek Board of Directors must work together to make sure they are meeting the needs of our cur-rent members as well as planning for the needs of our future members.

Q. What challenges do you see facing Moss Creek currently and/or in the near future? A. The biggest challenge that I see facing Moss Creek is staying attractive and up-to-date to potential buyers, while continuing to be financially secure as our community continues to age. As one of the mature communities in the area, we need to get the word out that we are continuing to add to our amenities and that we are open to change as needed in the current offerings. As our certifi-cate income declines, we must look at other sources of income, while being prudent in our spending and debt load for the future.

Q. What areas of your background would add benefit or add value to Moss Creek Board of Directors? A. My background in finance, accounting, systems design and management will enable me to contribute to the management of Moss Creek as a member of its Board. Using common sense, good judgment, and listening will also enable me to contribute to the Board. Moreover, I am always looking for "the better way" and I am willing to work hard, ask questions, and am eager to learn.

Q. What challenges do you see facing Moss Creek currently and/ or in the near future? A. Moss Creek has created its brand to be a "private ......residential community providing exceptional value to its members.......with its advantageous amenity fee structure, golf, marina, swimming, tennis........etc." Maintaining and enhancing that lifestyle as the infra-structure ages and providing for this without financially burdening Moss Creek members is a challenge. Moss Creek and the Board has been able to do this in the past and must continue to do so now and in the future. Other challenges I see are insuring that Moss Creek has in place a comprehensive Disaster Recover Plan and as Beaufort County continues to grow and experience challenges with law enforcement that Moss Creek's Security Plan keeps pace.

Q. Do you feel Moss Creek is competitive with similar communities? What are your thoughts on issues and/or projects that need to be addressed to either become or remain on a competitive level? A. In my opinion, Moss Creek compares more than favorably to our neighboring communities that offer the same amenities and lifestyle, namely a private community, fully member owned, with outstanding amenities and security. Completion of the Gatehouse, developing a comprehensive plan for the causeway project and completing a plan for the Dog Park are the projects now underway and important to Moss Creek. Moreover, the Board has committed to developing a comprehensive Master Plan for Moss Creek and to continually update its Long Range Plan. The current Long Range Plan identifies potential projects that will insure Moss Creek re-mains competitive with similar communities and provide its members with the amenities they desire. The goal must be to continue to look at our amenities, listen to our owners, survey the competition and consider adding value and incorporate more offerings to our current and prospective members without diminishing our financial stability.

Q. Are there areas you feel could be improved or perhaps added to in order to enhance the quality of life for current and future Moss Creek residents. A. Reading the 2013 Long Range Plans and the 2014 MCOA Goals it appears to me that the potential plans for keeping Moss Creek the "best value, full amenity private community in the Hilton Head area" are thoughtful and comprehensive. The recent Demographic Survey builds on the planning process and seeks residents’ opinions about several potential projects, including but not limited to Im-proving the Bostwick Area, Community Garden, Pickle Ball Courts, etc. The Moss Creek Board continues to understand the lifestyle demands of today's residents and future residents. Decisions about how to add to, enhance, and change our community to meet these demands and challenges, will be made based on the results of these surveys. Insuring the quality of the existing amenities and adding new amenities, as warranted by demand, usage and viability is key to insuring a vibrant, active, marketable community.

Summary Statement: Moss Creek is an amazingly beautiful place to live. We are fortunate to call it home. My commitment is to work hard and smart, listen, learn and help Moss Creek move forward and continue to be the best the low country has to offer.

Q. Do you feel Moss Creek is competitive with similar communities? What are your thoughts on issues and/or projects that need to be addressed to either become or remain on a competitive level? A. Based on the survey that was completed in 2013 for the Long Range Planning Committee, I believe that Moss Creek is very competitive with other similar communities and a real value with all of the amenities that we offer our members. Future projects that are under consideration will be work on the causeways, the dog park, improvements to our golf courses and tennis courts, and fur-ther development of the Bostwick and fitness areas. The Moss Creek Board needs to continue to be diligent in considering these and other future improvements by getting input from our members, by developing committees to make recommendations to the Board and by continuing to be good stewards of the members' funds.

Q. Are there areas you feel could be improved or perhaps added in order to enhance the quality of life for current and future Moss Creek residents. A. It is critical that we listen to our members as far as suggestions for improvements and enhancements are concerned. The Moss Creek Board has been and continues to be open to discussions regarding improvements to our golf courses and tennis courts, bike paths, the dog park, Pickle Ball courts, enlarging the Fitness Area and Casual Dining at Bostwick. Decisions will have to be made and a time line developed to address these and other future improvements that will enhance Moss Creek and ensure that it contin-ues to be a community of choice in Hilton Head.

Summary Statement: Moss Creek is a hidden gem of the Low Country. I would consider it an honor to serve on the Board and would work diligently with other Board members to make good, thoughtful decisions for the future of our community, thus ensuring Moss Creek would continue to meet the expectations of its current and future members.

Earlier this month we sent a short survey to the Membership asking for opinions on our Clubhouse operations. To date, we have received completed surveys from nearly 500 Members. Overall, the responses indicate a relatively high level of satisfaction with our food and beverage services. Over two-thirds of the respondents rated the overall quality of the food above average or excellent; less than 5% rated the food quality as below average or poor. On menu selection, 46% rated it above average or excellent, and another 46% rated it as average. We asked a variety of questions re-lated to service quality, and roughly 80% answered each question with a rating of above average or excellent, whereas three percent or less responded with below average or poor on the service measures. We also asked for opinions on the price-value of dining at Moss Creek, which 52% of the respondents rated as above average or excellent and an-other 38% rated as average. Several of the respondents included comments which, like in most surveys, ran the gamut from very positive to strongly critical, and included several constructive suggestions for us to consider. While we are generally pleased with the responses, the survey also points out that we have room for improvement. Our goal in the coming months will be to continue to improve the dining experience at the Clubhouse, and in the process earn “excellent” or “above average” responses from even more of you. One of the improvement projects that we plan to complete this year is an addition to the leisure trail system in the Com-munity. The segment that we plan to add this year is a paved trail along Toppin Drive, from Moss Creek Drive to Victo-ria Drive. Recently, we placed yellow flags in the ground to identify the approximate route for the new trail. This project has been in the long range plan for several years. It is seen as a high priority project because it will provide a much safer path for the many walkers and bikers who traverse this section of Toppin Drive.

Community News

We had an excellent turnout for our recent Emergency Pre-paredness Seminar with over 70 Moss Creek Members. Captain David Zeoli, of Beaufort County Sheriff’s Depart-ment and Assistant Director of Emergency Management, provided some excellent information that is posted on Moss Creek’s Website for everyone to view. One concern discussed was the possibility for assistance should an evacuation be implemented. Beaufort County does have a procedure in place to assist should people have no means to evacuate. However, it would be more comfortable for all concerned to make every effort to have a plan and be prepared. Remember to leave early so you will be able to travel to your preplanned destination with no is-

sues. If you wait until a mandatory evacuation has been ordered, you will be forced to travel roads as directed at each intersection. Moss Creek would like for each and everyone needing as-sistance or who knows someone that needs assistance, to contact Melissa Sheire [email protected] or 843-836-6121. We would like to have this list not only to include your name and address, but current phone numbers, relatives or fellow Members to be con-tacted, and a description of any special needs required dur-ing an evacuation.

I want to recognize two important people that keep our equip-ment running and have a major part in helping Moss Creek look-ing good. The Head Mechanic, Nathan Leach, and Assistant Mechanic, Bobby Riley, are two of the best in the Lowcountry. In the 24 years I have been in the Lowcountry, they are the best team of mechanics I have seen. The beauty of Moss Creek and the enjoyment could not be achieved without these two. Now, enough about those two guys. This summer has been wetter than the past five years here at the Creek and both courses have handled the rain very well. We continue to move forward on the Advantage Tees on the North, with 1, 7, 8, and 9 being the last tees to be built. I look forward to finishing the North side by the end of the year.

Grounds & Golf Course News

Roadside pick-up of landscape debris that is done by Members (not contractors) can be placed on the edge of the road by your drive-way for easy access. Roadside debris should be placed curbside as close to your scheduled pick-up day as possible, but no later than 7:00am on your scheduled pick-up day. It may not be placed on common property, on the golf course, or vacant lots. Pick up begins Monday morning and runs through Thursday. Please check the website for your property’s scheduled day.

Yard Debris Reminder

July Twilight Golf was awesome, 79 play-ers. There was a cool breeze and zero percent chance of rain, does not get any better than that! The event was played on the South Course and the format was a Step-Aside Scramble. Front Nine winners were Jeanne and Ken Seavers and Barbara and Bill Kindred with a net 31.7. Back Nine winners were Brenda and John Lozan, Bob McLaughlin and David Mauk with a net 29.6

Congratulations to Assistant Golf Professional, Tracy Schooler. Tracy officially becomes a Class A Member of the PGA of America on August 1, 2014. An apprentice program including passing a playing ability test, three levels of schooling, and working full-time under a Class A PGA professional is required to become a Class A Member. The three levels of schooling educate professionals on teaching, rules of the game, turf maintenance, merchandising, customer service, golf cart fleet maintenance, food & beverage, budgeting, and more. As most of you know, Tracy joined the Moss Creek team in February and he has been a fantastic addition to our professional staff. Please be sure to congratulate Tracy on this accomplishment next time you see him.

Tracy can also be congratulated on his involvement with PGA Jr League Golf this summer. PGAJLG was integrated with the HHIJGA this summer and Tracy coached one of the teams in the six-team league. Tracy’s team won the regular season and Tracy will now lead the All-Star team including four of his players and selected All-Stars from the other teams. The other clubs participating include Country Club of Hilton Head, Hampton Hall, Old-field, Dolphin Head, and Golden Bear at Indigo Run. All of the involved professionals are to be congratulated for this labor of love in donating their time to grow the game of golf with the youth in Hilton Head and Bluffton.

Congratulations to Head Professional, Tom Logue, for shooting a great round of golf on the South Course from the Fazio tees on July 22nd. Tom’s father, Jim Logue, also a PGA Professional, was visiting and the foursome included Tom, Jim, and Members, Bob Fulton and Charlie Boles. Tom’s dad fired a 2-under, 70, but that could not hold up to Tom’s 5-under, 67, that included six birdies!

Be sure to look ahead at the calendar of events so you can start planning to participate in the many upcoming events in the fall. The premiere Annual Mixed Member-Guest is being held October 9, 10 & 11 and invitations will be emailed to the Mem-bership on Monday, August 4. Tournament chairs, Paul and Carmela Juenger, are already busy planning a great event for you and your guests. This event is a wonderful opportunity to spend three days of fun, golf, dining, drinks and a lot of laughs with your friends for a tremendous value. We hope you can join us!

Is your equipment right for you? I was asked the other day what it means to be fitted for clubs. A club-fitting session with a staff professional takes place at the driving range and includes taking measurements to determine your height versus your arm length to the ground to help determine your lie angle and length of the club. Your hand size is meas-ured to help determine proper grip size. We use the Mizuno shaft optimizer to help determine your swing speed, tempo, shaft toe down, shaft kick angle, and release factor to get a starting point on what shaft material and flex are best for you. After lie angle and shaft are determined, we focus on what club head style and set make-up are best suited for your game. We also utilize a launch monitor that measures ball speed, launch angle, and spin, which is es-pecially great when fitting drivers. Knowing these statistics can help determine which club is best for you to maximize your distance. We currently carry fitting carts with Callaway, Ping, TaylorMade and Mizuno, but any brand of clubs can be ordered. A club fitting typically lasts an hour and the fee is $45.00. If a club purchase of $500 or more is made, the fitting fee is waived.

WGA Qualifying Championship Flight

Moss Creek Golf Club hosted the HHIAGA Four-Ball Championship on the North Course Saturday and Sunday, July 19 & 20, 2014. The weather cooperated except for a fast downpour on Sunday afternoon and course conditions were fantastic. The field was divided into three flights: Championship, Senior and Handicap. Overall Champions were Benji Gecy and Keith Potts with an 11-under, 133. Keith Guise & J.R. Evans won Low Gross in the Sen-ior Flight with a score of 140 and Gibby Young and Chris Morris won Low Net in the Senior Flight with a net score of 142. Brendan and Jeff Reilly won the Handicap Flight with a net 128.

There were 120 players in the July 4th Mixed Member-Member. The format was a Four-Person Scramble on the North Course. The field was divided into three mixed flights and one men’s flight. Sometimes as tennis players we are unable to find a partner to play with or against. Don’t forget, here at Moss Creek, we have two different practice partners that are always available and will rarely ever miss a shot. Those two partners are the hitting wall next to court #7 and the ball machine located on court #2. The ball machine is especially good to work on your technique of a specific shot. The ball machine can be reserved in 30 minute increments. It can send balls with a variety of speeds and spins. If you need help in operating the machine, please stop by the Tennis Center and we will be glad to help you. Club Championship The Club Championship is quickly approaching us this year. Be sure you have your calenders marked, your partners picked, and your forehands in order. The dates for the event are as follows: Singles (Sept. 15-20), Mixed Doubles (Sept. 22-27), and Men’s & Women’s Doubles (Sept. 29- Oct. 3). The finals of each event will be on Saturdays. Adult/Senior Championships Moss Creek will be hosting a USTA sanctioned Adult and Senior NTRP Tournament. This tournament will be held at two venues—Moss Creek and Tennis Club of the Lowcountry. Senior events are open to those players 50 and Over and Adult is open to any player 18 and Over. There will be prizes for the winners of each division. The tournament will run from Friday, Oct. 10 to Sunday, Oct. 12. Please see Tom for more information and how to register.

New Strength Training Equipment The Precor Icarian Smith Machine was recently installed in the Fitness Center. It is an ideal way for users of all strength levels to perform a wide range of both upper and lower body exercises. We welcome everyone to take advantage of all the wonderful equipment your Fitness Center has to offer.

Eat on a Schedule Eat breakfast within an hour of waking up and then eat every three to five hours. Starting your day with a healthy meal and enjoying evenly spaced meals will maximize your metabolism, regulate your blood sugar and insulin levels, and level out your appetite.

It is tempting to significantly cut back, but starving yourself backfires. Eating too little forces your body to switch into conservation mode which burns fewer calories, meaning you’re more likely to hang onto body fat. Under eating can cause your body to breakdown muscle mass for fuel, which also causes a metabolic slow down. Unless you want to wind up thinner but flabbier, eating enough and at regular intervals is key. Drink Lots of Water Water supports metabolism and research shows it curbs your appetite, helping you feel fuller. Drinking more water helps your body flush out excess sodium, to help you quickly debloat, and get things moving in your di-gestive system. Aim for 8 to 10 glasses a day.

Enjoy your Exercise Get moving, your way! Short workout sessions, at least four times a week, will get you on track. Run, golf,

walk, play tennis, weight train, bike, swim, play with your grandchildren, take one of our fun fitness classes or

set up personal training sessions with Jay. Whatever you choose to do; be sure you enjoy it and vary your

routine, both your body and mind will thank you!

Please help me welcome to the Moss Creek family, Mario El-Asmar, who is our new Assistant Clubhouse Manager. He brings extensive knowledge of food and beverage as well as private club experience. I look forward to having him meet and work with all the Members at Moss Creek. Dear Members, It is a pleasure to be writing to you. I am so thankful for the opportunity to join the Moss Creek team. I am relocating from south Florida and love the Lowcountry area so far. I have a wonderful son, Anthony, who is 14 and will be visiting me regu-larly. My 23-year career of progressive experience in the hospitality industry has given me the platform to be successful in many avenues of this wonderful profession. Prior to officially beginning my career I completed my Bachelor’s Degree at St. Vin-cent L’azariste Ecole Hotelier in Lebanon. My passion is food and beverage management. I have excelled in the private club field at clubs such as Radley Run in Pennsylvania and Weston Hills in Florida. I look forward to utilizing this experience to assist Mr. O’Connor in the Clubhouse operation. My diverse cultural background will help with diversity in cuisine and service styles. As a bonus of my world travels, I can speak English, French, Lebanese and Portuguese. I feel the strengths I bring to the Moss Creek team include; Member and guest relations, staff training and service, dedication to my work, cost controls, increasing revenue and developing new programs for Member enjoyment. My basic philosophy is that SERVICE is a mindset that starts with a caring approach to people coupled with proper training. I am a very positive person and will provide the staff clear direction with follow through of the standards outlined by Mr. Miller and Mr. O’Connor. In concert with Moss Creek’s standards, I believe in the Ritz Carlton philosophy of “Ladies and Gentlemen serving Ladies and Gentlemen.” The culture of service never takes a day off and doesn’t settle for mediocrity. We may make mistakes pe-riodically, but the way we turn those errors into positive experiences is how we separate ourselves.

I saw an ice cream truck the other day and it reminded me of how excited the kids in my neighborhood would get excited for ice cream when we were young. I like ice cream as much as anyone, but it just seems to lose a little of its sparkle when you get older and suddenly feel guilty about eating it. The conclusion I have come to, is that life is way too short to skip all your guilty pleas-ures, but if you are going to have a cup of ice cream on occasion, make it worth it.

Get that ice cream maker out from the back of your kitchen cabi-

net. This one is worth it. When you taste the finished product of

this very easy Rum Raisin Ice Cream recipe, not only will you

know that it’s worth every delicious calorie, but also that it may not

be appropriate for the kids and grandkids! This one is just for us

adults. Kick back on a Lowcountry August afternoon on your

porch with a few spoonfuls of this Captain Morgan laced treasure

and be excited about ice cream again. Of course, you’ll probably

have to be equally excited about a few extra minutes on the ellipti-

cal machine.

Rum Raisin Ice Cream

• 1.5 cups raisins, chopped • 2 TBL ginger puree • 1/2 cup spiced rum • 1.5 cups brown sugar • 1 tsp. cinnamon • 4 cups heavy cream • 4 cups whole milk • 2 tsp. vanilla extract 1. Combine raisins, ginger, and rum in bowl and

cover and stand for 1.5 hours 2. Strain rum and discard liquid 3. Dissolve sugar into rum-raisin mixture 4. Mix all ingredients together 5. Process in ice cream maker
