Fernanda has started to work in the tourism in-dustry in 2001, while she was studying in high

school Travel & Tourism. The same time she got her first job on a local Airline company called Transbrasil.

After Fernanda’s graduation, before attending university, she decided to travel to the USA and to have her first experience abroad. Fernanda returned back to Brazil in 2003, then she gradu-ated in Hotel Management, worked for 3 years on hotels in Brazil and then moved to a Virtuoso Travel Agency. In 2008 Fernanda was invited to travel to Dubai and to take care of the whole South American Market (LEISURE and MICE). Af-ter long years in Dubai Fernanda decided to re-turn back to Brazil and proceed with her dream, to establish a Representative Company and to be able to represent her beloved destinations, exotic places that are still been undiscovered by Brazilians. NYEPI DAY OR SILENT DAY IN BALIMarch 9th 2016. Observed from 6 am until 6 am the next morning, Nyepi is a day reserved for self-reflection, anything that might interfere with that purpose is restricted.

The main restrictions are no lighting fires (and lights must be kept low), no working,

no entertainment or pleasure, no traveling and for some, no talking or eating at all. The effect of these prohibitions is that Bali’s usu-ally bustling streets and roads are empty. The only people to be seen outdoors are the Pecalang, traditional security men who pa-trol the streets to ensure that the prohibitions are being followed.

Although Nyepi is a Hindu holiday, non-Hin-du residents and tourists are not exempt from these restrictions. Although they are free to do as they wish inside their hotels, no one is allowed onto the beaches or streets and the only airport I Gusti Ngurah Rai International Airport and all seaports and Bus Terminals in Bali remain closed for the entire day. The only exceptions granted are for Ambulanc-es responding to life-threatening conditions and women about to give birth.

Architecture

Designed by Peddle Thorp Architects with the interior décor by Wilson Associates Inc, Banyan Tree Ungasan was envisioned as a symbiosis of old and new, antiquity and modern. Traditional principles and local considerations were used to maximize the unparalleled ocean views while reflecting the arrangements of a Balinese village. The entry to the villa is across a terrazzo stone pavement that appears to float over a lotus pond, leading to a living room with a five-meter pitch ceiling.

Dining Occasions

Ju-Ma-Na restaurant, which means ‘silver pearl’ in Arabic, offers modern gourmet menus. Observe the chefs at work in the display kitchen, or opt for the dramatic cliff-edge scenery, a superb setting for the ex-cellent cuisine. The adjacent Ju-Ma-Na Bar offers sundowners along with Arabic finger food and Moroccan shishas (water pipes).

Tamarind, set in the tranquil surroundings of the Banyan Tree Spa, will serve a variety of organic dishes, alongside a menu of Jamu herbal drinks, and Bambu presents popular international and local specialties in a spa-cious garden setting, sometimes with live en-tertainment.

Other Facilities

Banyan Tree Ungasan owns 2 swimming pools, our Relaxation pool located near by the Spa Area and Tamarind restaurant. While our main pool area is located in the central facilities offering fabulous scenery of Indian Ocean and also friendly for children. The kid’s club is open daily from 9 am to 4 pm.

INGREDIENTS

• 1.4kg whole chicken, cut into 4 pieces

• 2L (8 cups) water

• 2 stems lemongrass, quartered

• 4 kaffir lime leaves

• 8 garlic cloves, thinly sliced

• 1 1/2 teaspoons sea salt

• 3 French shallots, finely chopped

• 5cm-piece fresh ginger, peeled, finely grated

• 1 1/2 teaspoons ground cumin

• 1 1/2 teaspoons ground coriander

• 1 teaspoon whole black peppercorns

• 1/2 teaspoon ground turmeric

• 2 tablespoons rice bran oil

• 100g pkt bean thread vermicelli noodles

• 2 shallots, thinly sliced

• 3 hard-boiled eggs, peeled, quartered

• 65g (1 cup) bean sprouts

• 1/4 cup fresh coriander leaves

INSTRUCTIONS

Step 1

Place the chicken in a saucepan. Add the water, lemongrass, lime leaves, half the garlic and salt. Bring to the boil over medium-high heat. Reduce heat to medium-low. Cover and simmer for 25-30 minutes or until the chicken is just cooked. Transfer the chicken to a plate, reserving the poaching liquid. Cool slightly. Remove and discard the skin and bones. Shred the chicken. Transfer to a bowl and keep warm.

Step 2

Use a mortar and pestle to pound French shallot, ginger and remaining garlic until a coarse paste forms. Add the cumin, ground coriander and peppercorns. Pound until pep-percorns are coarsely crushed. Stir in turmeric.

Step 3

Heat oil in a saucepan over medium heat. Cook the French shallot mixture, stirring, for 3 minutes or until aromatic. Add reserved poaching liquid. Bring to the boil over high heat. Reduce heat to medium. Simmer for 5 minutes to develop the flavours. Strain through a fine sieve into a large bowl. Season.

Step 4

Cook the noodles following packet directions. Drain. Divide among bowls. Top with the chicken and shallot. Divide the broth among the bowls. Top with egg, bean sprouts and fresh coriander.

The Sumba Island is inhabited by the Sum-ba or Sumbanese people who are divided

by two regencies named the West Sumba Regency and the East Sumba Regency.

They refer to themselves as Tau Humba.

The Sumbanese have been able to retain much of their cultural heritage despite for-eign influences that arrived long ago. The traditional religion of the Marapu region, which includes both ancestral worship and deity worship is still very much alive among the Sumbanese society.

Marapu is the philosophical center of Sum-banese cultural expression and includes customary ceremonies, traditional places of worship (umaratu), traditional architecture, decorative carvings and textiles with its fash-ion styles such as hinggi andlau fabric as well as its jewelry and weapons.

The Sumbanese are famous horse riders and every year celebrate and demonstrate their riding skills at the Pasola Festival which is held in the month of February.
