Labor Day is Monday, September 4! Time for a barbecue, a getaway, Labor Day sales shopping, and more! As you enjoy the three– day weekend, check out these fun facts about this holiday, honoring American workers! Recipe: Broccoli Fritters Ingredients: 1 bunch of broccoli, 3 eggs (beaten), 13 cup grated parmesan cheese, 2 Tbsp flour, 1 tsp salt, 12 tsp garlic powder, 12 tsp pepper, 2 Tbsp olive oil Instructions: Cut the broccoli into florets and place in a steamer basket. Pour water into a saucepan until it's an inch deep. Place the steamer basket in the saucepan and bring the water to a boil. Cover and steam for 4 minutes. Chop the steamed broccoli into small pieces and set aside. In a large bowl, combine the eggs, cheese, flour, salt, pepper, and garlic powder and stir into a thick paste. Fold in the broccoli. Heat the olive oil in a non–stick skillet over medium heat and drop 3 or 4 tablespoons of the fritter mixture onto the skillet. Press lightly with a spatula to flatten. Cook the fritters on both sides until they are golden brown, about 4 minutes. Repeat these steps until you've used all the batter. Drain the fritters and serve.
