the basic form of the nesmuk knife follows a type of knife
that has existed for 3,500 years. inspired by the aesthetic
appeal, efficient functionality and logical shape of this
“original knife”, nesmuk has re-interpreted and per fected it.
in order to achieve superior results, nesmuk draws on
many years of studies and comparative analytical tests.
these ensure the production of all nesmuk knives according
to the optimisation principle for every scope of application,

perfect blade geometry and maximum precision.
the range includes the exclusive, hand-crafted knives

the high-performance steel selected for the nesmuk
diaMoR®, nesmuk JanuS and nesmuk Soul knives has
an extraordinarily high niobium content. this provides the
blade with a very fine metal structure, resulting in a sharp-
ness close to that of the handforged nesmuk eXkluSiv
even though the steel is stainless. the nesmuk JanuS
also has a black dlC (diamond-like carbon) coating.

64 – 65 hRC. the collar is made of finest silver and the

the nesmuk eXkluSiv full damascus has a blade crafted
from 480 layers of selected damascus steel with an
elegant wild damascus pattern, a handle made of Juma –
perfect faux ivory – a fine silver collar and a Rockwell
hardness of 62. alongside Juma ivory, you can select from
seventeen other high-quality materials for the handle.

Practically no other knife in the world conveys its prove-
nance and the consistency in its artisanry as clearly as the
handmade knives from nesmuk. around four dozen work
steps are involved in the production of a nesmuk eXkluSiv
knife, from drawing and forging, tempering, annealing and
the wet grinding of the hollow ground blade to the mounting
of the handle. this is unusual, even in a craft establish-
ment, resulting in maximum precision and perfection.
the nesmuk eXkluSiv with cutting edge is a masterpiece
that is hand-crafted at our forge by our nesmuk blade-
smiths. it takes focused concentration over a period of
many hours and, in some cases, days to produce the very
fine black cutting edge in the best carbon steel below the
wild damascus. the nesmuk eXkluSiv with cutting edge
has a Rockwell hardness of 64 – 65.
the nesmuk eXkluSiv full damascus consists of up to
480 layers of selected carbon steel. it is distinguished by
its double-sided hollow ground blade with the finest cutting
edge, an elegant wild damascus pattern and a Rockwell
hardness of 62. an aesthetic silver collar is precision-inte-
grated into the perfectly ergonomic knife handle.
only when a knife satisfies our requirements for flawless
perfection during the final inspection will the blade ultimate-
ly receive the archaic bat stamp as a mark of its quality and
authenticity.

nesmuk eXkluSiv stands for first-rate craftsmanship
and practically unbeatable sharpness. Matching leather
sheaths individually tailored to the blade are produced for
the high-quality knives available in this collection. Sewed
together out of anthracite-coloured, vegetable tanned lea-
ther, the sheath is furnished with steel reinforcement and
a magnetic strip by hand to ensure the blade is held secu-
rely in place and to facilitate easy handling. the nesmuk
leather sheath thus guarantees that this exclusive knife
receives both an elegant and protective storage solution.
every nesmuk eXkluSiv knife is supplied in a piano lac-
quer coated box together with a nesmuk strop and
nesmuk Chinese camellia oil for the optimum level of care
(see nesmuk accessories on Page 57).

unique elegance and highest precision: the intricately
hand-forged damascus blade on the nesmuk eXkluSiv
folder consists of two different types of steel, which have
been folded and twisted repeatedly to produce the blade's
unique pattern (torsion damascus). this blade of extreme
and long-lasting sharpness has a Rockwell hardness of
60 (+/-1) hRC. the handle is made out of lapis lazuli –
a precious stone that is only formed under the effects of
high pressure and high temperature in different types of
rock such as marble. other precious stones are available on

the blade is hollow ground by hand on both sides and coat-
ed with diamond-like carbon (diaMoR®) on one side. it guar-
antees extremely long-term edge retention and outstanding
cutting performance. the coating’s hardness is eight times
higher than the hardness of the blade’s steel. the collar is
made of stainless steel with a Cocobolo handle. alternative

nesmuk diaMoR® is a revolution that combines expertise,
experience and advanced materials in a unique way. in
collaboration with the fraunhofer institute for Material and
beam technology in dresden, the blade is hollow ground on
both sides and a diamond-like carbon (diaMoR®) coating
is applied on one side to maximise the blade’s edge
retention. the coating thickness is only 1.5 μ, yet its
extraordinary hardness is eight times higher than the hard-
ness of the blade’s steel. diaMoR® is a registered trade-

does not have the initial biting sharpness like the other

a design object that fits every kitchen: the nesmuk knife
holder showcases nesmuk chef’s and office knives in a

knives into focus. it is made of high-gloss polished chromed
aluminium and its integrated high-performance magnets
hold up to four knives perfectly. the blades are protected by

the nesmuk cutting and serving boards are distinguished
by their unique quality, timeless beauty and aesthetic
appeal. they are made with meticulous care from best
Southern German oak. only the hardest part of the wood –
the crossgrain wood – is used.
oak has a high tannic acid content. as a result it has
natural antibacterial properties and satisfies high hygiene
requirements. the individual slats are all-heart wood and
handpicked to ensure optimum quality. these living
structures are then precisely assembled to create a typical,
symmetrical pattern that is enhanced by the simple shape
of the boards. each one is absolutely unique. a very fine
surface polish and subsequent treatment with linseed oil
(plus beeswax for the nesmuk cutting boards) produces a
silky surface sheen and exclusive appearance.
the cutting board has two wide grip indents and a
generously-dimensioned juice groove which is very easy to
clean. Rubber grip feet are integrated in the underside to
anchor the board for safe cutting. the boards are available
either in a natural version or, following old tradition, in a
dark smoked version. a slight bend of the cutting board is
normal when the board is exposed to moisture. the cutting
board will normally regain its shape once it is dry.

four-sided handmade strop for a professional final blade
polish. this very efficient strop is a new development by
nesmuk that restores the original sharpness of chef’s
knives with lasting effect. three of the four strips of leather
on the stable, oiled oak core have diamond pastes with
different degrees of fineness applied to them. the fourth
side without diamond paste is used to polish and care for
the blade’s cutting edge, like a barber would polish his
razor in the olden days. Sharpening premium knives on
whetstones as recommended involves considerable effort.
but with the new nesmuk strop it only takes one minute at
the most to restore the blade’s original sharpness. also,
“stropping” is a very simple procedure.

the patented steel exclusively processed by nesmuk guar-
antees an extreme and prolonged level of sharpness. we
exclusively recommend the use of the nesmuk folder strops
when caring for and maintaining the sharpness of the folder
blades. the strop is as well-conceived and exceptional as
the nesmuk folder itself: the core made out of dark brown
Grenadilla – a high-quality african hardwood – carries two
tough, fine-pored strips of leather, one side with a rough
and the other with a fine diamond paste coating. drawing
both sides of the blade three to four times across the two
strips of leather – first rough and then fine – is sufficient to
maintain the condition of the blade and keep it permanent-
ly sharp. the nesmuk folder strop comes with a matching
leather pouch for convenient storage.

100 ml bottle
Pure Chinese camellia oil is recommended for intensive
conditioning the handmade blades of the nesmuk eXkluSiv
chef's knives. this 100 % botanic, edible and natural product
is acid and water-free, non-resinous, non-volatile and very
economical to use. it is ideal for preservation and only a
thin film has to be applied to effectively protect the blade
against corrosion.

wax oil reduces board absorbency and strengthens the
surface of the wood. Made of pure vegetable oils, valuable
natural resins and finest beeswax. use to condition all

the nesmuk leather sheath is particularly suitable for pro-
tecting and storing our high-quality knives. Sewed together
out of anthracite-coloured, vegetable tanned leather, the

Hrc/rockWELL
Rockwell is an international unit of measurement of the
hardness of technical materials. the abbreviation which is
used to designate hardness consists of hR (hardness
Rockwell) followed by another letter indicating the specific
Rockwell scale. if the letter is C (C stands for cone), a
spherical diamond-tipped cone of 120° angle with a defined
pre-load and main load is used. the difference of the
depths before and after applying the main load is the meas-
ure for the Rockwell hardness of the material. this provides
information about the quality and resistance of material
structure in daily use. the higher the hRC/Rockwell value
of a knife, the harder it is. Good knives are generally hRC
58. however, depending on the model, nesmuk knives can
achieve hRC 61 to hRC 65.
vIckErS
vickers denotes the hardness of a material. in the vickers
hardness test, a square-based pyramid with a diamond tip is
pressed into the surface of the material, whereby hardness
is expressed in terms of the ratio of applied load to area of
indentation. Conventional knives have a vickers hardness of
approx. 650. the dlC coating on the nesmuk JanuS has a
vickers hardness of 2,300 vickers and the hardness of the
diaMoR®'s coating is actually 5,500 vickers.
uSEfuL LIfE
the useful life of a knife is the length of time that the blade
remains sharp. the longer the useful life, the less frequent-
ly you have to sharpen the knife. for example, a nesmuk
diaMoR® knife has a useful life that is up to 10 times
longer than that of the best-performing knife (without
diaMoR® coating) in tests at a reputed testing institute.
NIobIum
the nesmuk diaMoR®, JanuS and Soul knives contain a
high quantity of niobium. niobium is a rare element found
in the minerals columbite, coltane (columbite-tantalite) and
loparite. Steel with a high niobium content has higher me-
chanical hardness i.e. the blade is much more rigid and
tough, and the metal structure is finer. this extends the
blade's useful life, edge retention and sharpness.
StEEL
non-stainless steel has a finer structure (smaller grain size)
than stainless steel. this finer and more dense structure
means that a more rust-prone blade can be ground to a
much higher degree of sharpness. the additives which are
used to make the steel stainless increase its grain size,
making the structure less fine and preventing the blade
from being ground to such a high degree of sharpness.
however, because of this, stainless steel blades are less
susceptible to rusting. the knife industry always uses steel

with one of these two sets of properties. in other words, it
can make sharper knives by accepting constraints on corro-
sion protection or achieve better corrosion protection by
accepting constraints on sharpness. nesmuk makes no
compromises with the diaMoR®, JanuS and Soul knives

used before by the knife-making industry. they unite the
best properties of both types of steel, they do not rust and
they are extremely sharp. that's what makes the nesmuk

SHArpENING
as the owner of a nesmuk knife, you benefit from our free
30-year re-sharpening service. if you want to sharpen your
nesmuk knife yourself, we exclusively recommend the use
of the purpose-made nesmuk strops for cooking knives and
folders (Page 56). Regular use of the strops is the easiest
way to regain and maintain the original sharpness of the
knives.
profESSIoNAL cHEfS ANd NESmuk
Gourmet chefs such as dieter Müller are big fans of the

cArE
Good knives should never be put in the dishwasher be-
cause chemicals and salts attack the steel and can cause
it to rust. extraneous rust can also attack the steel blade.
always wash the knife by hand in warm water. Read the
nesmuk care instructions for further information.
AcIdS
acids are highly aggressive substances that cause fast sur-
face oxidisation. this can look strange but it is entirely
harmless. to avoid surface oxidisation, always rinse your
nesmuk knife immediately after cutting lemons, onions or
other acidic foods.
HANdLING
nesmuk knives cut with outstanding precision in all working
environments, guaranteeing easy and fatigue-free working.
do not bend the sensitive cutting edge or use it to lever,
hammer or butt. the most effective way to use the nesmuk
knife is to apply pressure when cutting. avoid contact with
hard materials (bones etc.), unsuitable cutting surfaces
(glass, stone etc.) and other metal objects (e.g. other
knives).
