the central theme of hearts and roses is seen everywhere. During this time, people are also inspired to let their food creations reflect the essence of Valentine’s Day. There are many different foods you can serve dur-ing the holiday with a heart-shaped presentation.

For breakfast, you can make mini heart-shaped pancakes for your family. This is not hard. You can simply use a small heart-shaped cookie cutter into which you will pour the batter into on the skillet. Once the pancake has started to bubble around the edges, you can remove

the cookie cutter to prepare another pancake. For this idea, however, it would be easier and definitely not as time-consuming if you have several cookie cutters you can use at once.

There is also the idea of heart-shaped meatloaves. You can shape the meatloaves by shaping them in a pan or shaping them by hand. Depending on your serving needs,

you can make one large heart-shaped meatloaf or several smaller sized ones. You can then top the meatloaves off with tomato sauce, ketchup or another red sauce of your

choosing a few minutes before the baking time is complete.

A cool and re-freshing heart-shaped Valen-tine’s Day treat

is a Valentine’s Day strawberry torte I make ev-ery year. I cre-ate my torte by baking two white cake layers in h e a r t - s h a p e d cake pans. I mix my favorite straw-berry f ros t ing with Cool Whip and top each cake layer with the frosting/cool whip mixture and sliced strawberries. This dessert is easy to assemble and makes for a refreshing and fruity dessert.

The only items you need to fulfill the objectives of your heart-shaped cooking creations are heart-shaped eight- or nine-inch baking pans, heart-shaped baking muffin tins as well as heart-shaped Jell-O molds. However, creativity is key, because some dish-es can be shaped into a heart design or pattern without the necessity for a specific baking instrument.

Just remember that this is Valen-tine’s Day so think chocolate, cheese, strawberries and champagne as you begin the development of your heart-shaped meal. You will learn a lot from this process, and it may inspire future unique and creative cooking endeavors.

NicholsIf you live in coastal California and

are wondering when to prune your roses, just remember this: After the start of the new year is the best time to prune.

Experts say when it comes to pruning, January is the most favor-able month in which to do it. That’s because it needs to be done before new growth starts popping out. If you prune too late, you may end up stunt-ing the rose’s growth and hurting its chances to bloom.

It’s a delicate balance in coastal California, because roses often never completely go dormant, as they do in colder parts of the country. Our temperatures rarely dip below 30 degrees. Sometimes roses don’t appear as though they’ve entered dormancy at all.

Nevertheless, if you prune, Janu-ary is probably your safest bet. This is usually when coastal California will get its coldest temperatures of the year. The weather often starts warm-ing in February and new growth can be quite rapid at that point.

And yes, most roses do better after being pruned. Cutting away the dead growth and excess canes will enhance the beauty of the plant as well as its health. Pruning encour-ages strong new growth as well as improving air circulation throughout the plant, which can help curtail the fungal diseases that some roses are subject to.

Gardeners should arm themselves with a pair of long, thick garden gloves, a bypass pruner and a long-handled lopper or hand saw. The gloves are to prevent thorn pricks, while the lopper or hand saw will help you with stub-

born canes. The bypass pruner is for more precise work. Also handy are a small rake to clean up de-bris.

Yo u r t o o l s should be sharp and clean for ef-ficient cutting. If you go to buy a new tool, check for ergonomic features such as padded handles that will make the chore easier on your hands.

Modern roses like hybrid teas, g r a n d i f l o r a s and floribundas should be cut back by about half their height. Cuts should be made at a 45-degree angle just above a bud whenever possible.

Also, pay attention to the shape of the rosebush. Unless it is trained into a tree, you will want to make it into an open vase shape, cutting out any canes in the center or those that are crossing. Also eliminate any dead, broken, weak or diseased stems or leaves.

Your rose will look a bit bare when you are finished, but rest assured, it will grow quite quickly given a few warm days.

Other rose varieties need more specialized care. Old rose varieties don’t need to be pruned, except for

shaping. Ramblers, climbers, repeat bloomers, Bourbons and Portlands should be pruned lightly to remove dead wood and can be pruned more thoroughly after their first bloom.

Be sure to pick up what you’ve cut off and dispose of it appropriately. This removes any source of potential disease, as well as dangerous thorns.

treating your sweetheart with a home-made dinner and an easy decadent dessert this Valentine’s day. I’ll leave the dinner up to you, but below are five sweet and delicious suggestions for desserts to make for your Valen-tine this year!

Simple but Yummy Brownie Sun-dae

The key to making this common dessert special is to cut your favorite baked brownies into individual hearts with a 3 ½ inch heart shaped cookie cutter. To assemble, use a white plate and squirt some raspberry sauce in a decorative pattern. Place a scoop of strawberry ice cream on one side of plate. Lay your heart shaped brownie up against the ice cream. Make the mood more romantic by slowly feed-ing this delish dish to your valentine!

Chocolate FondueWhat would Valentine’s Day be

without chocolate fondue? Serve while the fondue is warm. Load up skewers with fruits of all kinds: bananas, strawberries, pineapples, apple slices, pear slices, and marsh-mallows. This dipping dessert is only

limited by your imagination. The pos-sibilities are endless!

Brownie Heart CupcakesThis is simple yet will convey your

love on Valentine’s Day. Bake your favorite cupcake and brownie recipes. Use a 1 ½ in heart cookie cutter to cut heart shapes from the brownies. Frost your cupcakes with a pink Basic But-ter cream Icing recipe. Then carefully place your heart shaped brownie on top of the cupcake. Optionally, you could place a cherry on top of the brownie!

Chocolate and Banana Waffle Pa-nini (perfect to serve your Valentine for breakfast in bed)

This is an easy recipe, but will make a big impression. Simply take 2 frozen waffles, spread 1 side of each waffle with butter. Place sliced bananas, and 1 oz. of chopped chocolate in between the non-buttered sides of the waffles. Heat the waffle Panini, buttered sides out, in a medium skil-let, covered, until he chocolate melts and the waffles are crisp and done, about 2 minutes per each side!

Chocolate Drizzled Nuts with Sea Salt

If your Valentine is a nut lover

(notice I didn’t say nut), but a lover of nuts, try this sweet and salty recipe to have with a glass of wine after your romantic dinner. You can make this with a single nut of your choice or a can of lightly salted mixed nuts. I prefer the mixed because I’m a lover of all nuts!

Line a rimmed cookie sheet with parchment paper and spread out 2 cups of nuts on it. Next melt ¼ pound of semi-sweet chocolate, chopped in 30 second intervals, stirring after

each interval, until the chocolate is melted and smooth. Drizzle nuts with the chocolate and ½ teaspoon flakey sea salt. Place the cookie sheet with the nuts in the refrigerator until set, about 15 to 20 minutes. Break apart into pieces before serving.

Any of these five easy yet deca-dent recipes will be appreciated by a chocolate lover, especially if they are made and presented with a kiss and an “I love you.”

V for Valentine cookies like these Chocolate Chip Cookie Hearts. They’re a simple way to share some love. Even the youngest bakers can help make them by pouring ingredi-ents and using cookie cutters to make the heart shapes. Have fun decorat-ing them with pink, red and white icing and Valentine sprinkles.

E for an elegant dessert like this Chocolate Raspberry Mousse Pie. It’s easy enough for anyone to make, yet pretty enough to show off at a Valen-tine’s Day party or a romantic dinner.

ChoColate Chip Cookie hearts

Prep: 20 minutesBaking: 18 minutes(Makes about 18 hearts with 2 1/2-

to 3-inch heart cutter)

2 1/4 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon salt 1 cup (2 sticks) butter, softened 3/4 cup granulated sugar 3/4 cup packed brown sugar

1 teaspoon vanilla extract 2 large eggs 2 cups (12-ounce package)

Nestlé Toll House Semi-Sweet Choc-olate Morsels

1 cup chopped nuts Metal or heat-safe heart cookie

cutter(s) of desired size(s), 1 inch in height

Various icings, sprinkles, Nestlé Toll House Semi-Sweet Chocolate Mini Morsels

Directions PREHEAT oven to 375°F. Line 15

x 10-inch jelly-roll pan with foil; lightly grease.

COMBINE flour, baking soda and salt in small bowl. Beat butter,

granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Spread dough into prepared pan.

BAKE for 18 to 22 minutes or until golden brown. Cool completely in pan on wire rack. Lift from pan with foil handles to cutting board. Cut out hearts with cookie cutter(s). Remove hearts while peeling away foil.

DECORATE as desired.

ChoColate raspberry Mousse pie

Prep: 15 minutes

Cooking: 5 minutesRefrigerating: 2 1/2 hoursYield: 8 servings

1 can (12 fluid ounces) Nestlé Carnation Evaporated Milk

2 large egg yolks 2 cups (12-ounce package)

Nestlé Toll House Semi-Sweet Choc-olate Morsels

1 container (8 ounces) frozen whipped topping, thawed, divided

1 container (6 ounces) or 1 1/3 cups fresh raspberries, divided

1 prepared 9-inch (6 ounces) chocolate crumb crust

WHISK together evaporated milk and egg yolks in medium saucepan.

HEAT over medium-low heat, stirring constantly, until mixture is very hot and thickens slightly; do not boil. Remove from heat; stir in morsels until completely melted and mixture is smooth. Pour into large bowl. Refrigerate for 30 minutes until cool. Gently stir in 2 cups whipped topping.

REFRIGERATE for 2 hours until thickened. Sprinkle 1 cup raspberries over crust. Spoon chilled chocolate mousse over raspberries. Dollop remaining 1 cup whipped topping on center of pie; top with remaining rasp-berries.

At SOTA, Chef/Owner Sota Akiyama has been in practice since the young age of 16. Coming to the US when he was 12 was quite the culture shock, but the foodie in him had only awakened. Sota has worked along many master chefs and considers his learning still only just beginning. He has worked up and down the coast and also owned a catering business. All his life ventures have fi nally lead to this, his own restaurant.

In the heart of OC, this diamond in the rough restaurant space, had some major cleaning up. Of the menu, the service, and the surface interior. All of it was

done with in 2 months. The menu of course has been created for years by Sota, on little scraps of paper all around his home. Like a musician would be when they think of a new verse. Sota, who also studied music at Cal State Long Beach, creates his dishes like an artist. Like a composer.

When asked “why name your restaurant SOTA after yourself”. Sota tells me “so friends near and far know where to fi nd me. This is my home. And I want it to feel like their home too. I want my customers to feel as if they can call me personally or the restaurant and ask for a special request of any kind. I want them to know that what you get at my restaurant is what they will always receive here. My friends know that when it comes to service and food that if I can put a smile on their face and they are having fun when they are with me that this is how a restaurant would be when I open one. So to have the restaurant be named after myself, its a way to solidify the fact that when they enter those doors they are entering into my home.”And with that philosophy, the seats have been packed since their soft opening in July.

And the reGrand opening in October has only increased the rush. During the months in between Sota had Jason Neddleman of Origin Teak and Shaun Schisler of SS Interior come in and sweep the surface with teak, stone and warm earthy textures. “The two did an amazing job transforming the space and making it feel so welcoming.”

Sota’s food has been inspired by his years of training under master chefs, from his growing up in Japan, and mostly from the discerning and ever changing palette of his Orange County following. Sota combines ingredients such as daikon wasabi and yuzu to create a dressing atop crisp thick veggies and mixed greens. Every day he is shopping for the freshest ingredients. The fi sh that comes in regularly is inspected and made sure to be the best of the best “if its not, I dont hesitate to return, I want my fi sh, my veggies and ingredients to be perfect. If not, I can’t make tasteful food. I don’t want sauces to hide the natural taste. I use them to accompany the dishes and enhance fl avors”. When asked what is his favorite on the menu and the most popular dish, Sota said, “ The Hama Jala which is very thin slices of yellowtail topped with serano chili and drizzled with a citrus soy. And the SOTA Pop is the most popular roll with Salmon, Tuna, Shrimp, Snow Crab, Mango, Avocado, Jicama, and cilantro wrapped in cucumber with a special homemade ponzu.”

SOTA has a full lunch and dinner menu. And is anticipating other specialty menus for the future. Possibly happy hour, and a kids menu. But for now the menu refl ects his traditional Japanese ingredients with the creativity of his own. Desserts and daily specials are changed up regularly, so that he can get a feel for what his new customers are liking. But to Sota, its his passion, his life, and maybe he will change things with the seasons or the revolving customers and the loyal base he already has. One thing for sure is that no request is turned down. Sota is always inspired.

Following a multi-million-dollar renovation, Center Club celebrated its Grand Re-Opening and Annual Charity Classic fundraiser by unveiling its new and tech savvy Club to the Orange County business and social community. This year’s Charity Classic Fundraiser exceeded everyone’s expectations by rais-ing $30,000 for the three selected Charities; Orange County Museum of Art, MDA Augie’s Quest, and Employee Partners Care Foundation.

With over 400 attending, this was also a time to honor its founder, Henry T. Segerstrom. “It is hard to express in words about how proud I am to be working with Henry Segerstrom,” stated Chair of the Club’s Board of Gover-nors, Dr. Victoria Collins.

New at the Center Club were a plethora of items but one that everyone enjoyed was the Encore Lounge. This area where most guests gathered features an upscale bar with a gastro pub-style menu, a media center with a 103 inch flat screen TV, cabanas with TVs and an elegant communal dining table complete with IPads.

Guests attending enjoyed great food, drinks, and live entertainment. Dur-ing the course of the evening, guests feasted on a Slider Station consisting of a Buffalo Chicken Slider, Filet Mignon Slider, Truffle Chips and House Made Cheetos, a Korean Short Rib Taco Bar, an Authentic Sushi Bar, and sumptuous Desserts including French Macaroons, Root Beer Floats, Lemon Meringue Lollipops, Chocolate Cream Pies, and Chocolate Pate and Peanut Butter Crunch.

Augie Nieto founded Life Fitness over 40 years ago. If you’ve stepped into a gym since then, you’ve seen his work. His quest in that time was to make the world healthier through physical fitness. to do something a little more creative for their wedding guestbook. Instead of the traditional lined paper guestbook that people sign there names in, guests are asked to sign there names on something a little more unique. Check out these 37 cool wedding guestbook ideas. I have created a Pinterest board to help you visualize the idea and see how other people have brought these ideas to life.

A Polaroid message guestbook would be a lot of fun for the guests to interact with. Frame a large blackboard and ask your guests to take a Polaroid photo of them and post the photo to the board and write a message.

Ask your guests to write a message on a piece of paper and roll it up and place in a bottle. This message in a bottle guestbook would be great for a beach or nautical themed wedding. It would also make a great conversation piece for your home.

A birthday calendar guestbook serves as a dual purpose. Ask your guests to sign their name to the date of their birth on the calendar. This also lets the couple know when everyone’s birthdays are and they can send a nice card to their guests on their birthday with an additional thank you for being a part of their lives.

Ask your guests to sign some nice stones and keep them in a jar as an artistic display in the couples home or us them in a rock garden.

Having your guests sign Christmas ornaments is a festive addition to a Christmas or winter wedding. These ornaments will be used to decorate the couples’s tree as they celebrate their first Christmas together as a married couple.

Guests could sign large Champaign bottles and the happy couple could crack a bottle open on their upcoming anniversaries. What would even be nicer is to save the Champaign bottles for a milestone like their 10-year an-niversary and share these bottles with some of the guests that originally signed them at their 10-anniversary party.

Large monogram letters would make a great guestbook that could be hung in the couples home as a piece of art for one of their rooms.

Plates are another idea that could be signed by guests and hung as an artistic display in their home.

Paper butterflies punched out of paper can be signed and framed to make a really pretty piece of artwork. Be creative with the type of paper you use. I would highly recommend using scrapbook paper because the papers are typically treated so they do not fade. However, if you want to use something

like old sheet music you can purchase a can of archival spray that you can spray your papers with so that they will last for years to come. Also be creative with the shape. You do not have to use a but-terflies, any shape that would look great framed in your home would be perfect.

Guests could take photos of them with a Polaroid camera and place them in an already made scrapbook with a message to the happy couple. This is really awesome because at the end of the day you have a completed Polaroid photo scrapbook and the bride and groom didn’t have to do a thing to it. Keep the cover blank and later add a photo of the couple in their wedding attire or the wedding party or you could use an engagement photo as the cover.

Advise cards are fun for the guests to fill out as an alternative to a guestbook. These cards could be stored in a wide variety of boxes and containers. The advice could be serious or funny. A nice way for each guest to give the bride and groom a personal message.

Balloon picture is another really fun idea. A framed photo of a bride and groom holding a large number of bal-loons in which each guest will sign. Makes for a great piece to hang in their home.

Asking your guests to sign quilting squares or completed quilt is a really unique idea. This quilt would look great in the new couples home.

A globe that the guests could sign is another piece that would look great in a den or man cave. For those jet-setting couples this could be a fun addition to a travel themed wedding.

Wine corks signed by guests are a

creative idea that could be stored in a really beautiful glass jar. Could be beau-tifully displayed in a Tuscan themed kitchen or a rustic room.

A guestbook tree is a cute idea where guests hang cards they sign with mes-sages on them.

Large engagement or wedding photo would be a beautiful piece to have your guests sign and could be hung in a great room or family room of the couples home.

Having an engagement scrapbook made with lots of extra room for signa-tures and messages would be another awesome guestbook idea.

Wine bottles signed by guests can be set aside to be cracked open on the couples 1st, 5th, 10th, etc. anniversary.

A monogrammed canvas board would be another awesome piece guests could sign and could later hang in the couples’ home.

Guests could sign ceramic tiles that could be used in the home on walls, decorative pieces or furniture.

I loved this peacock picture I saw on Pinterest where the guests sign the feathers of the bird. It would be really beautiful for a peacock themed wedding.

A video guestbook is really fun for the guests and the bride and groom. This is fun for the couple to actually see their guests give them a message. Something they will cherish forever!

A piece of art on canvas that might go with the theme of a room in their home would be a nice piece to have everyone sign.

A guest blog is another fun high-tech idea. A computer can be set up for the

guests to jump on and leave a mes-sage. The fun part about this is that everyone can check out the blog and see what other wrote!

Postcards signed by guests are a great idea for those designation wed-dings. Purchase post cards that have photos of area attractions and land-marks of the place the wedding is held. Ask guests to sign them with a message or advice. This would also be a nice idea for those couples that plan or would like to travel together. You could have post-cards of places the couple has been or would like to visit together. These photo postcards would look beautiful compiled in a scrapbook.

Another unique idea is to have a large butcher block, bar or counter top signed by guests to be installed in the couples home.

A blank journal book would be a really nice idea for those that would like their guests to leave them messages and advice. This would look great as a per-sonal coffee table book for the couple.

Vinyl records are becoming more and more like a pieces of art. Ask guests to sign records and hang them in an artistic way on a wall of the couples home. Great for those couples with a passion for music.

Having guests sign a guitar is a really cool idea. This could be displayed on a wall or nestled in the corner of a home.

Large wooden music notes (mono-grammed letters or letters the spell out a word) signed by guests would make a cool wall accent for any room.
