Prior to 1902, almost all sugarcane produced was being processed for manufacturing jaggery and khandsari. Due to the pressure of industrialization, utilization of sugarcane for jaggery making has reduced significantly. However, liking for jaggery due to its nutritional and medicinal value and taste has not waned as it meets requirement of ethnic food needed by the masses. Despite the tremendous scope for jaggery industry, this has always remained in the background with problems of low recovery, poor hygiene, reduced shelf life and aesthetics. Further, the production of jaggery at national level has declined sharply in the recent past. To reduce the gap between demand and supply of sweeteners and also to meet the requirements of food security, there is a need to reduce post- harvest losses, improve process and machine efficiency and thus increase the productivity. Jaggery based value-added products like reori, gajak, chikki, patti etc. are very popular throughout the country. Liquid jaggery is part of daily life in most part of Maharashtra and is gaining commercial importance. Rab and powder/granular jaggery are also popular particularly with rural masses. These value-added forms of jaggery with suitable modifications are the potential source of export. In view of the gradual erosion of this industry from rural areas, there is an urgency to address various problems associated with this important rural based cottage industry in India. This National Meet is being organized to share the problems and latest developments in sugarcane processing for jaggery and its value-added products. Research personnel, entrepreneurs, manufacturers and farmers from different parts of the country are expected to take part in this meet. The knowledge shared in the meet would help in revitalizing and modernizing the jaggery industry for improved socio-economic prosperity, nutritional security and employment opportunities. Present scenario of jaggery making in India. Modernization of jaggery units for improved quality and efficiency: semi-automatic jaggery plants. Value-addition in jaggery for better nutrition, income and export. Manufacturers’ views on various problems related to jaggery making and modernization of processing units. Emerging technologies in drying and packaging of jaggery. Storage, marketing and quality standards including new storage practices such as MAP, CAP, HACCUP etc. for jaggery. Strategies and policy issues to revive jaggery industry and export promotion. Sugarcane growers, jaggery manufacturers, traders, research and development personnel, agri-business managers, consultants and advisors, manufacturers of jaggery based value-added products, suppliers and entrepreneurs, processing machinery manufacturers, scholars and students should participate in this meet to share their knowledge and experience for upliftment of sugarcane based cottage industry. Extended summary of papers not exceeding 500 words typed in Times New Roman in font size 12 should be sent as soft copy to email id: [email protected]. The abstract should include Title, Author(s), Organization/Affiliation with e-mail and should be divided into Introduction, Objective(s), Methodology, Results and Conclusion.
