The multi-parameter measuring system Thanks to the METTLER TOLEDO multi- parameter measuring system, all analy- ses can be performed in a fully automated system, managing comprehensive calcu- lations to a single record, which can then be printed or saved to a PC. The operator simply places a sample tube containing 20 mL sample onto the rack of the sample changer and begins the measurements. The system measures the pH value direct- ly in the sample tube and then fills the flow through cell of the colorimeter and triggers the measurement. The new Excellence titrator is an inte- gral part of this system. It controls the Rondo 60 sample changer, which can pro- cess up to 60 samples. The titrator also automatically activates pumps that clean the system after each sample. It sends the signal to the colorimeter to start the measurements and waits for the results, which are calculated and saved in the ti- trator. LabX titration PC software gathers all data and saves it to the database where it can be recalled at a later date. Fish oil oxidizationFish oil is known to provide many health benefits such as protection against heart disease. However, as it oxidizes rapidly, it not only affects the taste of the supple-mented product, but the oxidized fish oil can also contain toxic chemical elements. Therefore, detailed knowledge of the oxi-dation stability of fish oil provides valu-able information for research and devel-opment, quality control and the storage conditions for the supplemented food products.

Investigating the oxidation stability by HP DSCFish oil should be investigated for stability using oxidation induction time (OIT). For

Stability of Alginates and Fish Oil

Many food manufacturers have taken advantage of healthy attributes

by the inclusion of fish oil in conventional food products. However, a

common problem associated with the use of fish oil is the rapidity with

which the oil oxidizes and becomes rancid. High pressure differential

scanning calorimetry is an excellent technique for investigating the

oxidation stability of fish oil and alginates.

OIT the onset of exothermic oxidation is evaluated. A long OIT indicates the good oxidation stability of a substance. The following example illustrates how the METTLER TOLEDO High Pressure Differ-ential Scanning Calorimetry (HP DSC 1), equipped with an FRS 5 sensor, was used to investigate the oxidation stability of a pure fish oil sample and a processed fish oil/alginate sample. The samples were heated from 30 °C to 100 °C at a heating rate of 100 °C/min in an oxygen atmo-sphere with 35 bar pressure. At 100 °C the measurement continued isothermally.

The HP DSC curves in figure 1 show that the OIT of the processed fish oil/alginate

sample is significantly shorter compared to that of the pure fish oil sample. This suggests that the pure fish oil has a high-er oxidation stability. The curves also show very good reproducibility.

High pressure differential scanning calo-rimetry is an excellent technique for in-vestigating the oxidation stability of fish oil and alginates. The METTLER TOLEDO HP DSC 1 is a valuable instrument for research and development and quality control. The wide temperature and pres-sure range enable reactions to be acceler-ated. This process results in shorter anal-ysis times, which can lead to reducing the time required for stability testing.

In an effort to optimize their processes, TheraSkin has adopted the

METTLER TOLEDO Good Weighing Practice™ (GWP®) guideline for their

weighing instruments and, as a result, has reduced maintenance and

calibration service costs by 27%.

Process breakthroughTheraSkin is a Brazilian company with more than 13 years of experience in the development and production of skin treat-ment products. Based on scientific prin-ciples, GWP (a method for risk manage-ment and quality control introduced by METTLER TOLEDO), mapped the applica-tion of 78 balances used by TheraSkin in its laboratory in order to analyze specific instrument risks and their subsequent cor-relation with process tolerances.

For Marcos Vinicius, TheraSkin’s instru-mentation technician, the adaption of

GWP meant an overhaul of the entire sys-tem. “There was even a reformulation of internal processes, including a change of habits and culture. Now, all balances have tags that inform the operator of the mini-mum weight that each one supports. This has certainly resulted in a processes break-through for our company," he explains. Weighing without riskThe GWP methodology analyzed the five stages in the life cycle of a balance, start-ing with a full evaluation of weighing process characteristics. This included po-tential risks of inaccurate measurements

and process impacts in regard to relevant regulations or standards. From this sur-vey, the guideline further provided spe-cific and individual recommendations for each balance including information about minimum weight, required tests for routine checks, regularity of checks and calibra-tions, standard weights required and the control limit for each test. The entire pro-cess, from data collection, analysis, pre-sentation, implementation and training, lasted three months.

here. The study highlighted that the bal-ances we maintain and calibrate every three months could have this period ex-tended to every six months and, similarly, those maintained and calibrated every six months extended to once a year,” says Pasquale Loiacono, TheraSkin’s engineer-ing and maintenance manager.

"GWP identified that our calibration pe-riod and the frequency of periodic verifi-cation tests were overestimated. The tool was applied to TheraSkin’s installed base resulting in time and labor reductions as the total plant’s balance checking time

was greatly reduced, increasing equipment production time,” explains Daniela Soares, METTLER TOLEDO’s Laboratory Division product manager.

Pasquale Loiacono said that the metho-dology created by METTLER TOLEDO pro-vided the missing reference to justify the weighing equipment used by TheraSkin. "There weren’t specific technical standards directing us towards the regularity of checks and calibrations, except for the balance manufacturer’s recommendations. GWP helped us to determine the range of tests, weights required for each balance, correct tests and tolerances for regular checks and systematic tests that minimize risks and reduce costs. We have adopted all of these GWP recommendations as our standard operating procedures,” said the engineer, adding that, "the method was so effective for laboratory processes that, in June, AN-VISA (National Agency for Sanitary Vigi-lance) carried out their inspection in oc-currence with Good Practice of Production. They were not able to identify any instances of non-compliance regarding weighing processes.”
