DO say Bless you!whenever a person around sneezes. Turkish people never neglect to say ok yaa! after every sneeze they hear, even those they do not know.
DONT expect the drivers to stop while passengers are passing across the road.
DO place your fork and knife together on your plate to signify you are done with your meal.
DONT try to understand the dolmu phenomena in Turkey. Just relax and enjoy your time!
DO keep eye contact with those you are speaking with. Turks see eye contact as a sign of honesty.
DONT argue on the issue of some food belonging to Turks or Greeks. Just enjoy your meal and leave the rest to the history.
DO always accept the offer for a cup of tea. Because otherwise is considered as a rude manner for Turkish people. A cup of tea is the equivalent of friendship in Turkey.
DONT be surprised by others smoking at a meal, because it is common to do so in Turkey.
DO greet the eldest person in the environment first as seniority is highly important in Turkish culture.
DONT be surprised if a Turkish person stands close to you during a conversation. It is totally normal in Turkey.
DO start the conversations of negotiations with football topic. It always opens doors for communication as Turkish men (even women sometimes) are fanatic about football.
DONT turn your back to someone while sitting, as this can be construed as rude and unfriendly.
DO know that the O.K. sign in Turkey means that someone is homosexual.
DONT ask personal questions such as salary or age, until a friendship has been established.
DO remove your shoes when entering a Turkish home. Your host will give you slippers to wear during your visit.
DONT be surprised by seeing younger people or children kissing the hands of the elderly. It is a way of showing respect in Turkey.

eidiyye(Lamb Stews with Vegetables and Fruits)Konyal Restaurant, Istanbul/Aydn DemirIngredients (Serves 10)50g butter50ml vegetable oil10 x 250g pieces of shoulder of mutton100ml pomegranate syrup50ml honey200g black damson plum100g pomegranate juice500ml boiled water300g minced mutton10 dried apricots10 fresh damson plums, stoned50g almond3green apples, peeled and quartered50ml rosewater5g wheat starch1g musk, crushedsaltseeds from 1 pomegranate
Method
1. Place vegetable oil and butter in a large pan and put over medium heat.2. Fry each piece of mutton until browned and place in a large stewing pot.3. Place the black damson plums in a food proces-sor and process till becomes puree.4. Place honey, pomegranate juice and pomegran-ate syrup and bring to boil and pourmixture over the meat, cover and cook over a low heat until the meat is tender and separates from the bones.5. Knead the minced meat, roll into 30 small balls and add to the meat in the pot.6. Add dried apricot, plum, almond and apple to the pot.7. Dissolve the starch and musk in the rosewater, add to the pot and carefully stir. Remove from heat when fruit is cooked.8. Adjust the seasoning and rest for 30 minutes.9. Serve with pomegranate seeds sprinkled over the top.
