OBITUARY

BERNARD (BERNIE) MCCARTHY PASSED AWAY UNEXPECTEDLY ON 11/07/18. Born in Edinburgh, Scotland, he came to the US 1967 and lived in Erieville for over 25 yrs. Bernie is predeceased by his wife Anita. He is survived by his daughter Jennifer Tainter (Jim), son Jamie McCarthy, grandsons Nate Tainter, Ben Tainter, and Aaron McCarthy as well as granddaughter Abby McCarthy. Fry bread is a real treat, served up warm and usually topped with powdered sugar

or one of our favorite duos, cinnamon, and sugar. We often see it at festivals or farmers markets, but we’ve also been known to whip up a batch or two at home and let me tell you, there’s nothing better than a fresh piece of warm fry bread. This simple, rustic recipe is something we love to make on the weekend as a special treat after a long week. Here’s how we do it.

Because we’re making bread, we need to prepare the dough and let it rest and rise, at least 30 minutes, until it has at least doubled its size. Then we take a generous handful of the dough and roll it into a ball, then elongate to become oval-like. A dip in a skillet of hot oil will turn the dough into a golden brown puff of soft, slightly sweet bread. Once cooled, we like to top it with just about anything, but we definitely have our favorites. Besides sugar, we’ve used fresh jam or preserves or a little bit of honey. These can be savory too! There’s no wrong way to eat this amazing fry bread.

Fry bread is one of those classic recipes that’s almost too good to be true, just a bread dough that’s fried in oil – it’s that simple. And with so many ways to top the bread, there’s really no end to the delicious possibilities. It’s a family favorite in our house, something that is often requested as a special treat or just for a Saturday morning at home. This bread is good stuff!

I N G R E D I E N T S : 3 0 minutes active, 30+ minutes inactive to prepare serves 4-6

1 ⅔ cup milk1 ½ tablespoons shortening1 tablespoon yeast½ teaspoon kosher salt1 ½ tablespoons sugar

1 large egg, beaten4 cups bread flour1 ½ cups oil (vegetable or

canola)PREPARATIONScald milk and shortening in a small saucepan. Remove

from heat and cool until slightly warm. Some baking recipes call for scalded milk; that is, milk brought nearly to a boil and then cooled down. Scalded milk makes yeast breads lighter and sponge cakes springier. It also helps dissolve sugar and melt butter, and extracts the most flavor from vanilla beans, cinnamon, citrus peels, and other flavor agents.

Combine yeast, salt, and sugar in a bowl and set aside.Once cooled, transfer milk mixture to a large mixing bowl.

Add yeast-salt-sugar mixture to milk along with one egg, beaten, and 1 ½ cups flour. Use a wooden spoon or bread attachment on an electric mixer on low speed to form into a dough. While mixing, add 1 more cup of flour. Slowly add remaining flour until dough no longer sticks to side of bowl (add more flour if needed). Remove dough from mixer and form into a ball.

Transfer dough into a new bowl, lightly greased, and cover with plastic wrap or a towel. Place bowl in a warm spot to rise. Dough is ready once it has doubled in size.

Place paper towels on a baking sheet to drain cooked dough.Add oil to a large skillet and heat to medium. Pull off a

generous handful of dough and roll gently to form into an oval shape.

Cook dough on first side until just golden, approximately 60-90 seconds, then flip and cook an additional 60 seconds or so. Use tongs to remove from frying pan and place on prepared baking sheet to drain.

Madison County Announces Funding for

School Patrol OfficersWampsville, NY – When the Madison County Board of

Supervisors adopted a $122 million budget on December 4, 2018 it included funding for School Patrol Officers (SPO).

The County has agreed to pay $18,000 a year toward having a SPO in every school building within the County. The total cost of an SPO per year is $37,000, the school district will be responsible for the additional $19,000.

An armed officer has been offered countywide to be placed in buildings for grades K-12. As of right now the schools that have expressed interest in taking part in the program are Chittenango, DeRuyter, Madison, Brookfield, Morrisville-Eaton, and Oneida City School Districts.

“We live in a time where we must consider the safety of our youth as a top priority,” said Madison County Chairman John M. Becker. “Being able to aid our school districts with providing this safety is a no brainer. I am proud that the Board of Supervisors made this funding a priority in this year’s budget.”

Madison County is already accepting applications for the School Patrol Officer positions. Those interested and qualified can find the position at www.madisoncounty.ny.gov. SPOs will be responsible for upholding the law, maintaining order, and providing security in the Madison County School Districts. These officers will be under the supervision of the Madison County Sheriff’s Office.

“The objective is to ensure a safe environment for the children of Madison County,” said Sheriff Todd Hood. “Our officers will be there to uphold the law, build relationships with the students, and provide a safe place. The program is in the beginning stages, but we are hoping that every school will take part in this program.”

Faint Starlight In Hubble Images Reveals Distribution Of

Telescope have employed a revolutionary method to detect dark matter in galaxy clusters. The method allows astronomers to “see” the distribution of dark matter more accurately than any other method used to date and it could possibly be used to explore the ultimate nature of dark matter. The results were published in the journal Monthly Notices of the Royal Astronomical Society.

In recent decades astronomers have tried to understand the true nature of the mysterious substance that makes up most of the matter in the Universe -- dark matter -- and to map its distribution in the Universe. Now two astronomers from Australia and Spain have used data from the Frontier Fields programme of the NASA/ESA Hubble Space Telescope to accurately study the distribution of dark matter.

“We have found a way to ‘see’ dark matter,” explains Mireia Montes (University of New South Wales, Australia), lead author of the study. “We have found that very faint light in galaxy clusters, the intracluster light, maps how dark matter is distributed.”

Intracluster light is a byproduct of interactions between galaxies. In the course of these interactions, individual stars are stripped from their galaxies and float freely within the cluster. Once free from their galaxies, they end up where the majority of the mass of the cluster, mostly dark matter, resides.

“These stars have an identical distribution to the dark matter, as far as our current technology allows us to study,” explained Montes. Both the dark matter and these isolated stars -- which form the intracluster light -- act as collisionless components. These follow the gravitational potential of the cluster itself. The study showed that the intracluster light is aligned with the dark matter, tracing its distribution more accurately than any other method relying on luminous tracers used so far.

This method is also more efficient than the more complex method of using gravitational lensing. While the latter requires both accurate lensing reconstruction and time-consuming spectroscopic campaigns, the method presented by Montes utilises only deep imaging. This means more clusters can be studied with the new method in the same amount of observation time.

Madison County Awarded $500,000 for Delphi Falls

Wampsville, NY – Yesterday, Madison County was awarded $500,000 from the Regional Economic Development Council for the development of Delphi Falls.

The funding is part of more than $763 million in economic and community development funding awarded through Round VIII of the Regional Economic Development Council initiative. Delphi Falls funding was just one of the over $4.9 million awarded for 13 projects here in Madison County.

The Madison County Planning Department, in conjunction with the County Highway and Facilities Departments, has been working hard to develop a plan to improve the park. Currently, the falls are viewable and accessible only from the bottom. With this funding from the New York State Office of Parks, Recreation and Historic Preservation will come the development of Phase I improvements, which include: more accessible features for viewing the falls other locations other than the bottom, trail development, overlooks, parking, restrooms, day use features, and more.

Madison County acquired the 65-acre property in May of 2018. The park includes acres of woodland and riparian forest along the East Branch of Limestone Creek, steep gorge walls, a house and barn, and the Upper (54 Feet) and Lower (62 feet) Delphi Falls. Delphi Falls County Park opened to the public in August 2018. It is currently open year round from sun up to sun down for people to enjoy the majesty of the falls.

Sir Frederick Grant Banting (1891)Banting was a Canadian physician who, with Scottish

physiologist John Macleod, won a 1923 Nobel Prize for the discovery of the hormone insulin. Banting and his assistant Charles Best experimented on diabetic dogs, demonstrating that insulin lowered their blood sugar. Insulin was proven effective on humans within months of the first experiments with dogs. In acknowledgment of Best’s work, Banting gave him a share of his portion of the Nobel Prize.

The results of the study introduce the possibility of exploring the ultimate nature of dark matter. “If dark matter is self-interacting we could detect this as tiny departures in the dark matter distribution compared to this very faint stellar glow,” highlights Ignacio Trujillo (Instituto de Astrofísica de Canarias, Spain), co-author of the study. Currently, all that is known about dark matter is that it appears to interact with regular matter gravitationally, but not in any other way. To find that it self-interacts would place significant constraints on its identity.

For now, Montes and Trujillo plan to survey more of the original six clusters to see if their method remains accurate. Another important test of their method will be the observation and analysis of additional galaxy clusters by other research teams, to add to the data set and confirm their findings.

The team can also look forward to the application of the same techniques using future space-based telescopes like the NASA/ESA/CSA James Webb Space Telescope, which will have even more sensitive instruments able to resolve faint intracluster light in the distant Universe.

“There are exciting possibilities that we should be able to probe in the upcoming years by studying hundreds of galaxy clusters,” concludes Ignacio Trujillo.

E-bandage Generates Electricity, Speeds Wound

Healing In RatsDate: December 19, 2018Source: American Chemical SocietySkin has a remarkable ability to heal itself. But in some cases,

wounds heal very slowly or not at all, putting a person at risk for chronic pain, infection and scarring. Now, researchers have developed a self-powered bandage that generates an electric field over an injury, dramatically reducing the healing time for skin wounds in rats. They report their results in ACS Nano.

Chronic skin wounds include diabetic foot ulcers, venous ulcers and non-healing surgical wounds. Doctors have tried various approaches to help chronic wounds heal, including bandaging, dressing, exposure to oxygen and growth-factor therapy, but they often show limited effectiveness. As early as the 1960s, researchers observed that electrical stimulation could help skin wounds heal. However, the equipment for generating the electric field is often large and may require patient hospitalization. Weibo Cai, Xudong Wang and colleagues wanted to develop a flexible, self-powered bandage that could convert skin movements into a therapeutic electric field.

To power their electric bandage, or e-bandage, the researchers made a wearable nanogenerator by overlapping sheets of polytetrafluoroethylene (PTFE), copper foil and polyethylene terephthalate (PET). The nanogenerator converted skin movements, which occur during normal activity or even breathing, into small electrical pulses. This current flowed to two working electrodes that were placed on either side of the skin wound to produce a weak electric field. The team tested the device by placing it over wounds on rats’ backs. Wounds covered by e-bandages closed within 3 days, compared with 12 days for a control bandage with no electric field. The researchers attribute the faster wound healing to enhanced fibroblast migration, proliferation and differentiation induced by the electric field.

Cap’n Bill gathered two berries and placed them carefully in his pocket. Then they went around to the east side of the island and found the tree that bore the dark purple berries. “I guess I’ll take four of these,” said the sailor man, “so in case one doesn’t make us grow big, we can eat another.”

“Better take six,” advised the Ork. “It’s well to be on the safe side, and I’m sure these trees grow nowhere else in all the world.”

So Cap’n Bill gathered six of the purple berries and with their precious fruit they returned to the shed to bid goodbye to Pessim. Perhaps they would not have granted the surly little man this courtesy had they not wished to use him to tie the sunbonnet around the Ork’s neck. When Pessim learned they

were about to leave him, he at first looked greatly pleased, but he suddenly recollected that nothing ought to please him, and so began to grumble about being left alone.

“We knew it wouldn’t suit you,” remarked Cap’n Bill. “It didn’t suit you to have us here, and it won’t suit you to have us go away.”

“That is quite true,” admitted Pessim. “I haven’t been suited since I can remember, so it doesn’t matter to me in the least whether you go or stay.”

He was interested in their experiment, however, and willingly agreed to assist, although he prophesied they would fall out of the sun bonnet on their way and be either drowned in the ocean or crushed upon some rocky shore. This uncheerful prospect did not daunt Trot, but it made Cap’n Bill quite nervous.

“I will eat my berry first,” said Trot as she placed her sunbonnet on the ground in such a manner that they could get into it. Then she ate the lavender berry and in a few seconds became so small that Cap’n Bill picked her up gently with his thumb and one finger and placed her in the middle of the sunbonnet. Then he placed beside her the six purple berries--each one being about as big as the tiny Trot’s head--and all preparations being now made, the old sailor ate his lavender berry and became very small, wooden leg and all! Cap’n Bill stumbled sadly in trying to climb over the edge of the sunbonnet and pitched in beside

Trot headfirst, which caused the unhappy Pessim to laugh with glee. Then the King of the Island picked up the sunbonnet--so rudely that he shook its occupants like peas in a pod--and tied it by means of its strings securely around the Ork’s neck.

“I hope, Trot, you sewed those strings on tight,” said Cap’n Bill anxiously.

“Why, we are not very heavy, you know,” she replied, “so I think the stitches will hold. But be careful and not crush the berries, Cap’n.”

“One is jammed already,” he said, looking at them.“All ready?” asked the Ork.“Yes!” they cried together, and Pessim came close to the

sunbonnet and called out to them, “You’ll be smashed or drowned, I’m sure you will! But farewell, and good riddance to you.”

The Ork was provoked by this unkind speech, so he turned his tail toward the little man and made it revolve so fast that the rush of air tumbled Pessim over backward, and he rolled several times upon the ground before he could stop himself and sit up.
