“what’S nEw?” pEoplE oFtEn grEEt EaCh othEr with those words out of habit, almost without thinking. but if you say them to a medical center executive these days, you’d better have a few minutes to spare for the answer. that’s because health care is full of new things—it’s changing so rapidly that there are always new technologies to explain, new government health policies to adapt to and new initiatives to undertake.

at Saint barnabas medical Center, we welcome a new CEo (see page 28)—and much else is new as well. on page 30, for example, we introduce our CyberKnife system, which makes the delivery of radiation far more precise and effective, promising a dramatic improvement in treating many kinds of cancer. and on page 34, learn about a new robotic joint-replacement technology that will help restore mobility with less pain and fewer complica-tions. (You’ll also want to read of an injured firefighter’s inspiring comeback, page 32, and an “old” seizure-fighting diet that has drawn new attention, page 35.)

in this issue we also discuss something called “population health management.” is that a new phrase for you? what it means, put simply, is that medical centers today can’t limit their focus or concern to the patients who walk through their doors. we must also promote health in the broader community, among the potential patients of tomorrow. that approach is the most prudent use of health care dollars, as today’s preventive care may help head off tomorrow’s costly crisis. more importantly, it’s also a way to help people live longer, feel better and get more out of life.

Yes, we’re responding to the need for a new orientation and new approaches. but in a sense, our objective when we embrace population health management isn’t really so new. the “population,” after all, is just another term for the community, and it has been our proud privilege to serve our new Jersey community now for 150 years. with today’s clinical technology, data capabilities and proac-tive approach to keeping people healthy, we can serve you better than ever before.

Plug leaks. Check doors, windows and ducts for drafts. Caulking and sealing leaks is critical. “About 40 percent of heat is lost because of leaks,” says Blassmann. Make sure basement windows have window well covers. And don’t forget electrical outlets on exterior walls. For less than $3 you can buy a pack of covers that will keep air out. Wrap your water heater. Wicked cold affects your water heater, especially if it’s in a shed in your backyard. Put a blanket around it to help it stay warmer and not have to work so hard.Insulate. Brave a trip to the attic to make sure insulation is at least 16 inches thick. Blassmann also advises insulating pipes under sinks. “Don’t let them freeze,” he warns. Leave cabinet doors open occasionally so warm air flows in. Set and forget. Invest in a programmable ther-mostat, which allows you to set temperatures for certain times of the day and days of the week. You can program it to automatically lower the temperature when you’re at work, for example. Change filters. Heater filters should be changed every 30 days, says Blassmann. When they’re dirty they have to work harder, shortening their life span.Clear gutters. Make like Santa and go up on the roof, clearing gutters before torrential rains and blizzards come. “Clogged gutters can cause wa-ter and ice to build up, which creates problems.”

Blassmann says many people are shy about admitting what they don’t know and do things in-correctly. “Just ask,” he says. “We’re here to help.”

Forty-two-year-old Xian Zhang will be-come the first woman and the first Chinese national to lead the New Jersey Symphony Orchestra next year. Zhang is a familiar face to some concertgoers in the area; she has conducted the orchestra several times and spent a few years as an associate con-ductor at the New York Philharmonic before relocating to Europe. “This actually feels quite like a homecoming,” she has said. Zhang, who began studying the piano in Dandong, China, at the age of three, begins her four-year con-tract as music director in September.

On the other side of the world, a 28-year-old Mendham native is making headlines. Maggie Doyne was recently named CNN Hero of the Year for her decade of life-changing work with women and children in Nepal. Dur-ing a backpacking trip through the country

after high school graduation, she was struck by the plight of the many children struggling to survive and decided to start a children’s home (she hates the word orphanage) with her $5,000 in babysitting savings. That incred-ible accomplishment led to the creation of a community school educating 350 students, a health clinic and a women’s center. And the construction of a high school is under way. “I wake up every day saying, ‘I love my job,’” Doyne has said. “That’s my message for young people, especially for young women: Do what you love and what makes you feel good.” Learn more about Doyne’s work on her foundation’s website, blinknow.org.

Ben Rich’s second choice became his first love. Rich, a science teacher at Mont-clair Kimberley Academy and an environ-mentalist, wanted to stop using gasoline. In 2008, he had his heart set on buying an electric car but couldn’t afford one. So he settled for an electric motorcycle, and do-ing so turned out to be heaven sent. “I fell in love with motorcycle riding,” he says.

The wheels of his Zero SR have touched many parts of the country on his quest to show off the power of an electric

motorcycle. This past summer he took his longest trip, nearly 7,000 miles, venturing through the Shenandoah Valley in Virginia, Florida, Mexico and Montreal. “The Blue Ridge Parkway is incredible,” Rich recalls. “The views are stunning, the roads fun and curvy. I met a lot of bikers along the way.”

Even though he now has an electric car, unless the roads are icy, he’s on his motorcycle. “I ride it to open up conver-sations about electric vehicles, with stu-dents, parents, faculty, anyone,” he says. “There are a lot of misconceptions. Some people think electric vehicles are slow, but that’s not true.”

His goal is simple. “I want to see more electric vehicles on New Jersey roads,” Rich states. “I also want people to see that they have the power to make change by what they purchase. There is nothing more American than driving an electric vehicle.” —Sheryl nance-naShH

stephen p. ZieniewicZ, the new president and chief executive officer of saint barnabas medical center in livingston, grew up on long island in a family devoted to helping others. his mother and two sisters are nurses. his father is a retired firefighter with the new york city fire department. “i come from a family with a focus of service to others,” he says.

he was particularly drawn to health care. as a college student at st. John’s university, he worked in the emergency department of north shore university hospital and knew right away that health care administration would be his chosen career. “i have always felt comfortable serving patients and their families. and i have a passion for high quality and safety. i want to provide the safest environment possible for patients, employees and everyone in the hospital, and safety is foundational for qual-ity outcomes.”

Zieniewicz assumed his new position at saint barnabas medical center on sept. 8, 2015. af-ter graduating from st. John’s with a bachelor of science degree, he earned a master of public health degree from columbia university school of public health. he is a fellow of the american college of healthcare executives (fache), a board certification that demonstrates his profes-sionalism, focus on excellence, continuing edu-cation and service to the community.

he has extensive leadership experience at nationally recognized, complex academic medi-cal centers. prior to joining saint barnabas, he was executive director of the university of wash-ington medical center, which he served since 2007. he was chief operating officer at saint louis university hospital in st. louis, missouri, from 2004 to 2007. from 1977 until 2004, he held administrative positions at several hospitals in new york, including south nassau communities hospital, long island health network, winthrop- university hospital, memorial sloan-kettering cancer center and north shore university hospital.

“steve’s consistent focus has been on safety, quality, physician alignment, evidence-based per-formance improvement and population health, among many areas,” says barry h. ostrowsky, president and chief executive officer of barnabas health, the parent company of saint barnabas medical center. “i am extremely pleased that our world-class medical center will be guided by a proven health care leader whose strengths cor-relate so directly with our system’s goals.”

Zieniewicz joins saint barnabas medical cen- ter at an auspicious moment. new Jersey’s oldest nonprofit, nonsectarian hospital is celebrating its 150th anniversary in 2015 with an ambitious expansion program in the works. that is partly what drew him here. “i like to solve challenges and build programs,” he says.

in 2016, four new operating rooms will become operational. “they are state-of-the-art, with advanced technologies in a thoughtfully engineered space, to accommodate our expansion of procedures,” he says.

a new technology coming online in January 2016 will be the cyberknife, a robotic radiation oncology system that delivers beams of high-dose radiation to tumors with extreme accuracy and offers a noninvasive alternative to surgery. (see page 30.)

in the summer of 2016, a new parking facility is scheduled to open. and in summer 2017, the new west wing building will open, adding about 250,000 square feet of space that will include a new neonatal intensive care unit and new, private patient rooms.

among Zieniewicz’s biggest challenges is meeting the require-ments of the affordable care act, which are chang-ing how hospitals do business. the aca contains provisions intended to shift focus from individual patient care to population-based health measures—which means from just treating existing disease and injury to helping people maintain their health. it also holds hospitals accountable for lowering rates of infections, falls and readmissions. “we are redesigning how we provide care toward population health management, to keep our community healthy and treat chronic diseases outside the hospital,” he says. “my passion and focus are to create the safest environment for our patients and their families and continue achieving exceptional outcomes.”

his past experience has prepared him well for these tasks. during his career he has helped introduce the use of safety checklists, built such pro-grams as sports medicine and transplant services and enhanced clinical research both in the lab and at the bedside through clinical trials. and he starts from an already strong position. the medical center was selected as a top hospital for the second year in a row by the leapfrog group. among its many nation-ally recognized services are the burn center, new Jersey’s only certified burn treatment facility (see page 32), and the living donor kidney transplant program, the fourth largest in the nation.

Zieniewicz and his wife, linda J. hipps, m.d., a gynecologist soon to join the saint barnabas medi-cal center staff as well, live in livingston. in his free time he stays fit with running and golf, and he and his wife enjoy music and the fine arts. he also has volunteered his time in the past to such organiza-tions as the american heart association—he was chairman of its seattle chapter, and he plans to offer his support to the regional chapter here after he settles into his new position.

every year, more than 220,000 american men learn they have prostate cancer, the second most common form of cancer behind skin cancer. treatments, which vary depending on age, overall health and the tumor’s severity, may include radiation to kill the cancer cells—especially with early-stage cancers. in January, saint barnabas medical center ups its game when it begins treating patients with the most advanced radiation

delivery technology available for attacking early-stage prostate cancer. known as cyberknife, it’s a robotic radiosurgery system that uses advanced computer guidance software to allow radiation oncologists to target cancerous lesions with more precision.

“it delivers high-dose beams of radiation with extreme accuracy to hard-to-reach tumors anywhere in the body,” says alison grann, m.d., chair of the

department of radiation oncology at saint barnabas medical center. “it’s helpful in treating not just prostate cancer, but also tumors of the lung, brain, spine, liver, pancreas and kidney.”

because the radiation is so precisely delivered, patients can receive a higher dosage per session than they would normally. sessions are longer—about 30 minutes versus 10 minutes for traditional treatment—but far fewer of them are required. “typically, patients with prostate cancer need 40 to 45 treatments over eight weeks, but with the cyberknife we can deliver the radiation in five treatments over five consecutive days,” says dr. grann. that makes it more convenient and less disruptive of the patient’s life, and helps ensure that the patient completes the course of treatment.

and the benefits don’t end there.

some tumors are more radiation-resistant and require higher dosages. cyberknife can deliver these higher doses because it’s three-dimensional. “it has a robotic arm, so unlike most radiation delivery systems that can only rotate 180 degrees in one plane around the patient, this one rotates a full 360 degrees along multiple planes. that allows us to pinpoint the radiation we can deliver, maximize its strength, and minimize exposure to other tissues,” notes grann. it also tracks the tumor in real time during treatment. “cyberknife continues to take images while delivering radiation,” dr. grann says. tumors in the prostate may move if, say, there is gas in the bowel or the bladder is full. the imaging tracks this movement within 1 millimeter and adjusts accordingly.

because cyberknife treatments deliver such high doses of radiation, they require a highly specialized team of radiologists, physicists and dosimetrists. (a dosimetrist is a member of the team who works with the radiation oncologist to help develop the safest treatment plan.) “we have three ph.d. physicists and three dosimetrists trained specifically in cyberknife, and we have the infrastructure in place to deliver high doses of radiation with the right safety protections for patients and technicians,” says dr. grann. indeed, the medical center built a new protective vault just to house the cyberknife.

cyberknife is a means of delivering both stereotactic body radiation therapy (sbrt) and stereotactic radiation surgery, which saint barnabas medical center already offers. cyberknife has been available for several years, but dr. grann felt that now was the prudent time for saint barnabas to acquire the technology. “sbrt types of treatment have expanded in the past few years,” she says. “now, with more trials showing how effective cyberknife is, i felt it was a good addition. and as more patients become eligible for sbrt treatment, it has really evolved into the new standard of care.”

On JasOn FaziO’s 41st birthday Five years agO, he nearly died. a firefighter serving as acting captain of an asbury Park Fire department truck company, Fazio was seriously burned. he beat the medical odds simply to survive, but then faced years of physical pain from the scarring caused by his burns—and equally debilitating emotional pain from the trauma, his injuries and their aftermath.

today, though, Fazio’s life is back on track, thanks to a unique plastic surgeon at saint

barnabas Medical Center. that doctor—Mokhtar asaadi, M.d.—not only treats his scarring with an aggressive and unique laser treatment, but also helped Fazio regain the emotional strength to push through injuries that have led others to despair.

Fazio, who turns 46 on January 10, lives in Ocean township, with his wife, barbara. he has two children from a previous marriage, nicholas, 13; and nathan, 10. On Jan. 10, 2011, his company got a 9 a.m. call to a fire at bangs avenue and Main street in asbury Park. the building had 12 second-floor apartments over stores. the fire was upstairs, and it was believed—incorrectly—that a woman was trapped in it. heavy smoke billowed out of the windows. Fazio

went up to look for the woman in a back bedroom when the fire “flashed.” the heat had risen to such a point that the room erupted in an explosion of fire.

“i basically was torched,” says Fazio, who somehow found a win-dow and dove out, fracturing several bones as he landed.

he was hosed down to extinguish the fire and rushed to a nearby hospital, then sent by helicopter to the burn Center at saint barnabas Medial Center, where dr. asaadi chairs the department of Plastic surgery. it was unclear at first whether Fazio would sur-vive the night.

the mortality rate for people in his condition was about 90 percent. there were third-degree burns over 50 percent of his body, including his face, head, arms and legs.

Fazio was put into a medically induced coma, which he re-mained in for almost four months, and was given seven skin grafts and a dozen blood transfusions. but he survived. “i am nothing less than a miracle,” he says.

a year after the fire, Fazio still had terrible scars on his face and lips, no hair on his face or scalp and one missing ear, and he could barely move his arms because the scars on them had made them so tight. “you lock up almost like an ape,” he says. “i couldn’t reach for a can on a shelf.” he was emotionally locked up as well, and though

State-of-the-art care for burnsof all kindsthe injuries sustained by firefighter Jason Fazio (see main article) were grave, but he did have one thing going for him: he was treated at one of the nation’s finest facilities of its kind.

the burn Center at saint barnabas is the only state-certified burn treatment facility in

new Jersey and one of north america’s largest. With 12 intensive care beds and a 16-bed step-down unit for less critically injured patients, it provides expert care for patients of all ages.

the center offers a full range of specialized services, including a dedicated outpatient department, where individuals with small

or minor burns receive treatment and discharged patients return for follow-up care. each year, some 325–350 inpatients are treated along with nearly 6,000 outpatients.

besides burn intensive care and step-down care, the center of-fers hydrotherapy and rehabilitative services, according to its med-ical director, Michael a. Marano, M.d. there’s also peer support, so that burn victims can share feelings and coping strategies.

the burn Center is also committed to lowering the incidence of burn injury throughout the region. through the saint barnabas burn Foundation, it offers a variety of individualized educational programs aimed at burn prevention and fire safety.

he was treated for post-traumatic stress disorder (ptsd) for a while, that treatment had ended. unable to work, in pain and severely disfigured, fazio fell into a depression. dr. asaadi, who has been treating burn patients for more than 35 years, helped address fazio’s depression as well as his disfigurements.

first, he fitted fazio with a hairpiece. “that made me feel good, gave me some positive energy,” fazio says. dr. asaadi also began reconstructive surgery on his ears, nose, lips and chin. and he employed an aggressive technique called aponeurotomy, which he has pioneered in treating burn scars. with it, he cuts into and under the scar tissue with laser light and a sharp needle to release the tight tissue. then he grafts fat to the scarred area, which helps prevent new scar formation. “this technique has been used for other procedures, but it is new for burns,” says the doctor. “it has never been written up in

the literature, but i have done it many times for burn patients and found it very successful.”

he also fought to get fazio workers’ compensa-tion coverage for more ptsd treatment. “at first the case manager said no, but dr. asaadi stayed with me and forced them to keep me going for therapy,” fazio says. “he told me to get back to the gym, stay off pain pills and get straight. he gave me back some dignity. my family loves him, and he loves my family. he says, ‘i am so proud of you,’ and i appre-ciate that.”

fazio sees dr. asaadi once a month for contin-ued aponeurotomy treatment. since the accident he

has remarried, and this past summer he went back to work—as superintendent of public works for the borough of deal.

“i never thought i would work again,” says the ex-firefighter. “dr. asaadi gave me my life back.”

Joint replacement surgery has gone main-stream. in recent years, new

surgical techniques and better prosthetics have allowed ever younger individuals to maintain their active lifestyles by replac-ing worn-out knees and hips. indeed, about 1 million knee and hip replacements are per-

formed each year, and nearly 5 million people are now living

with an artificial joint. now joint replacement has

gone robotic too, thanks to a new technology called maKoplasty.

michael rieber, m.D., an orthopedic surgeon at Saint Barnabas medical cen-

ter, says this robotic surgical system makes a good procedure even better. “Joint replace-ment has been touted as one of the greatest medical advancements of the late 20th century, and now the robot makes it more precise, leading to a quicker recovery and longer-last-ing replacement,” he says.

maKoplasty is currently approved for partial knee replacement—in which only the diseased and damaged portion of the joint is replaced—and total hip replacement procedures. it uses three-dimensional computed to-mography (ct) imaging to determine the precise implant size, position and alignment for each patient, and it helps the surgeon accurately map the areas of bone and soft tissues

that need to be removed. During surgery, a robotic arm is partially controlled by software to help follow that map. “it won’t let you go where it is not programmed to go,” Dr. rieber says.

For partial knee replacements, this helps pre-serve healthy tissue and ligaments. “With this ap-proach, the knee is better balanced for a normal arc of motion,” he says. “that means there will be less pain, because the position of the implant is optimized. patients recover better and have a more natural-feeling knee.”

in total hip replacement, maKoplasty increases the accuracy of implant placement, which reduces the potential for complications. “Sometimes there are problems with uneven limb length and with dislocation, but there are so many data points and so much information with the robotic system, it reduces the likeli-hood of any limb inequalities or dislocation,” says Dr. rieber.

He adds that the Food and Drug admin-istration recently approved the software and procedure for total knee replacement with the robot. “that’s really exciting,” he says. “We don’t do that many partial knees, and the total knee will be launched in the next few months here at Saint

Barnabas. We will be one of the first in the area to do it robotically.”

robotic replacement surgery is “good for all comers,” he says, with the possible exception of patients seeking a revision of an existing implant. “it is a great tool to have,” the doctor adds. “it gives surgeons and patients more confidence. every-body wins.”

it iS Said that eVeRYthing oLd iS new again, and that adage surely applies to a treatment for children with certain forms of epilepsy. a century ago, doctors found that changing a child’s diet to include high amounts of fat and very low amounts of carbohydrates helped control seizures. over the next several decades, pharma-cologists developed new anticonvulsant drugs to treat the disease, and this high-fat regimen—the ketogenic diet—fell out of favor. but now physicians are recommending the diet again for children who fail to respond to two or more medications—and with good success. Studies have shown that more than 50 percent of children who adhere to the diet have a greater than 50 percent improvement in seizure control. in fact, 10 percent become seizure-free.

“believe it or not, the ketogenic diet is 90 percent fat,” says Rina F. goldberg, M.d., a pediatric neurologist at Saint barnabas Medical center. “it breaks down fats instead of carbohydrates to create the energy necessary for the epileptic’s survival. Most of us use sugars, in the form of carbohydrates, as an energy source, but when some epilepsy patients, especially kids, switch to using fats to fuel the brain, seizures lessen.”

here’s the drawback: every meal must be carefully calibrated to

ensure the proper mix of fat, carbohydrates, proteins and other nutrients. heavy cream, for example, is incorporated into many dishes to increase the fat content and cut the appetite. but these strict diets can be especially hard on kids. “So much of their social activity involves food,” she says. “So it’s not easy when every meal has to be planned and weighed, when even one potato chip at a birthday party can throw off that balance.”

and it’s not just foods that need to be considered. “the kids also have to use carb-free medicines, toothpastes and shampoos, things that you don’t think of as having carbohydrates,” says alexa bacino, a Saint barnabas Medical center dietitian. She works with these patients’ families to calculate nutrient ratios and plan meals. “there are ketogenic cookbooks on the market, and new products like ketogenic breads that allow kids to feel like they are having regular food.”

She says creative recipes make the food taste fine, but the social adjustments are difficult. “we recently had a kids’ club event for these patients, and they complained about having to bring their own food everywhere,” she says. “but when they and their parents see that adhering to a special diet successfully controls seizures, they understand that the rewards outweigh the challenges.”

tomato soup with smoked paprika and baconserves 4–6

n 4 slices thick-cut bacon

n 1 Tb. unsalted butter

n 1 yellow onion, chopped

n 2 cloves garlic, minced

n 2 cans (28 oz. each) crushed tomatoes

n 3 Tbs. heavy cream

n 1¼ tsp. smoked paprika

n salt and freshly ground pepper

In a large, heavy saucepan, fry the bacon over medium heat, turning once, until crispy, 8–10 minutes. Transfer to paper towels. Let cool, and then crumble.

Add the butter to the pan and melt over medium heat. Add the onion and garlic and saute until very soft, about 5 minutes. Add the tomatoes and bring to a boil. reduce the heat to low and simmer for 20 minutes. remove from the heat and let cool slightly.

Working in batches, puree the soup in a blender. return to the sauce-pan and add the cream, paprika, and ½ tsp. salt. return just to a boil, turn off the heat, taste and adjust the seasoning.

serve, topped with the bacon and a generous grinding of pepper.

n 1 tsp. saffron threads

n ¼ cup dry white wine

n 2 Tbs. olive oil

n ½ lb. medium shrimp, shelled and deveined

n ½ lb. medium scallops, tough muscles removed

n 1 small yellow onion, chopped

n 2 cloves garlic, minced

n 2 cups chicken broth

n 1 cup fregola (Sardinian cous-cous) or Israeli couscous

n salt and freshly ground pepper

n ½ lb. clams, scrubbed

n 2 Tbs. minced flat-leaf parsley

Crush the saffron in a bowl and add the white wine. set aside.

In a large, heavy pot, warm 1 Tb. of the oil over high heat. When the pan is very hot, add the shrimp and sear for 1 minute on each side. (Do not cook all the way through.) Transfer to a bowl. Add the scallops and sear for one minute on each side, also without cooking all the way through. Transfer to the bowl with the shrimp.

Add the remaining 1 Tb. oil, onion and garlic to the same pot and saute until soft, about 5 minutes. Add the saffron mixture and cook for 2 minutes. Add the broth and bring to a boil. Add the fregola, stir to combine, and reduce the heat to medium-low. Cook for 12 minutes. season with salt and pepper.

Add the clams, discarding any that do not close to the touch. Cover the saucepan tightly and steam for 3 minutes. remove the lid and quickly add the shrimp and scallops. Tightly cover the saucepan again and con-tinue to cook just until the clams open and the shrimp and scallops are cooked through, about 3 min-utes. Discard any unopened clams. serve, sprinkled with the parsley.

SquaSh Soup with Sage brown butterserves 4–6

n 1 butternut squash (2 lb.), peeled and diced

n 3 Tbs. olive oil

n salt and freshly ground pepper

n 2 Tbs. unsalted butter

n 1 yellow onion, chopped

n 2 cloves garlic, minced

n 4 cups vegetable broth

For the SAGE BROWN BUTTER:

n ¼ cup unsalted butter

n 6 sage leaves

OPTIONAL:

n heavy cream for garnish

Preheat the oven to 400˚F and line a baking sheet with parchment paper. Toss the squash with the oil and season with salt and pepper. Place on the prepared baking sheet and roast until tender, about 25 minutes.

In a large, heavy pot, melt the butter over medium-high heat. Add the onion and garlic and saute until translucent, about 5 minutes. Add the roasted squash and broth and bring to a boil. reduce the heat to low and simmer for 20 minutes to blend the flavors. remove from the heat and let cool slightly.

Working in batches, puree the soup in a blender. return to the pot and season with salt and pepper.

To make the sage brown butter, melt the butter in a small frying pan over low heat. Add the sage leaves and cook until the butter begins to brown and the sage is very aromatic, 3–4 minutes.

serve the soup drizzled with the brown butter, 1–2 sage leaves, and a swirl of cream, if desired.

n 2 Tbs. olive oil

n 1 small white onion, finely diced

n 2 cloves garlic, minced

n 2 tsp. ground cumin

n ½ tsp. ground coriander

n salt and freshly ground pepper

n 2 sweet potatoes (1½ lb.), peeled and diced

n 3 cups vegetable or chicken broth

n 1 red bell pepper, seeded and finely diced

n 8 ears fresh corn, husks and silk removed and kernels cut from cobs, or 3½ cups thawed frozen corn kernels

n 2 Tbs. minced cilantro

n 1 ripe avocado, pitted, peeled and diced

n ½ cup sour cream (optional)

In a large, heavy pot, warm the oil over medium-high heat. Add the onion and garlic and saute until translucent, about 5 minutes. Add the cumin, coriander and salt and pepper to taste and cook for 1 minute. Add the sweet potatoes, stir to coat, and cook for 3 minutes.

Add the broth, bring to a boil, and reduce the heat to low. simmer until the sweet potatoes are tender, about 20 minutes. Add the red pepper and corn and cook until the vegetables are tender, 10 minutes. remove from the heat and let cool slightly.

Puree half of the soup in a blender. return to the pot. stir in the cilantro and season with salt and pepper. serve, garnished with the avocado and the sour cream if desired.

n 2 cans (15 oz. each) white beans, drained

n salt and freshly ground pepper For the CORN BREAD CROUTONS:

n 1 Tb. unsalted butter

n 1 small loaf corn bread, cut into ½-inch cubes

set a large, heavy pot over medium-high heat. Add the bacon and cook until crispy, about 8 minutes. Transfer to paper towels to drain. Let cool, then crumble into bite-sized pieces. set aside in a bowl. Add the ham to the pot and cook, stirring often, until browned, about 4 minutes. Add the ham to the bowl with the bacon.

what distinguishes ordinary barley from barley malt, used in making beer and whis-key? simply put, barley malt is grain that has been soaked and allowed to partially sprout, giving it a slightly sweeter flavor. But the process is anything but simple, and certain carefully

chosen strains of barley are known to be better for malting.

BUY/STORE/SERVEthe biggest consideration for the barley buyer is whether to choose a hulled or pearl variety. Pearl barley takes less time to cook, but the refining process it goes through means it’s not considered a whole grain. Hulled barley requires a bit more care, but because the bran layer is left intact it has more nutritional value and a deeper flavor. whichever you choose, keep barley as dry as possible as you store it. Before boiling, give it a quick wash and let it sit in water for a bit. Adding barley to onions, carrots and beef stock in a soup is a great way to enhance texture; also, barley combines well with mushroom in dishes and makes an excellent addition to a kale and nut salad. finally, in many recipes that call for rice or risotto, barley is an able understudy that can step in and play the part well.

Famous as a destination For carousing spring breakers, cancun may seem an unlikely place to embark on a fitness journey. but that’s just where i went recently to jump-start mine.

Located in a beautiful natural setting on the eastern tip of mexico’s Yucatan peninsula, it’s about four hours away by air via flights to cancun international airport. the JW marriott, a quiet 448-room resort just off the busy “hotel zone,” offers a Wellness beach retreat package that includes oceanview rooms, a spa treatment, one-day cabana rental and credit toward group fitness classes.

i hoped to get some sun, have some fun and get back into a fitness routine. First up: a surefire way to punch up one’s wellness quest—an hour-long boxing class. truth be told, i was curious, as i’d never done it. but when some friends suggested that i pop two ibuprofens beforehand, well, curiosity turned to fear. (this, of course, says more about my level of fitness than anything else!) calling the five-person group session “fun” might be a stretch, but there were plenty of giggles amid the panting and sighs. as in many boot-campesque sessions, there were stations, all designed for different benefits—strength, speed, agility, endurance—and we rotated among them. our instructor, malcolm, a former national body-building champ and certified fitness pro, offered encouragement amid shouts of “Venga, venga!” (loosely translated as “Faster,

faster!”) Afterward, we sipped recovery smoothies at the health bar. The barista recommended the Green Juice, made from celery, spinach, orange, cucumber and pineapple. The drink was delicious—refreshing and not too sweet.

Feeling proud of myself, I reasoned that I’d earned a retreat to the poolside, oceanfront Bali-style cabana. There you can read, daydream or just indulge in people-watching. For lunch, healthy options abound at BeachWalk, a bathing suit-friendly eatery, with choices such as Thai shrimp spring rolls, Mexican ceviche, crab cakes and my favorite, a blackened grouper sandwich served with grilled onions and mustard seed roulade sauce.

Next, for more relaxation, a spa appointment. Every spa on earth promises to help you “relax, refresh, restore and renew.” This one delivers. After the 75-minute Stress Victims Spa Cure, you’ll feel all those “re”s and more. The tension melts away as your back, neck and shoulders are kneaded and massaged for the first 25 minutes. (Ask for Yesica; she has the hands of a goddess.) Once you’re thoroughly relaxed, next up is a 50-minute facial, including a lovely hydrating mist.

When I was well rested, it was time for a night on the town. The restaurant Porfirio’s reimagines the best of traditional Mexican fare in a beautiful setting. (Sit outside if you go around sunset.) Prepare for a multi-sensory experience: The food and service are great. Music videos play in the background, making it feel a little Las Vegasesque—but that adds to the fun. Later, a live band roams through the space, serenading patrons with classic Mexican tunes.

Want another way to up the fun quotient? Head to Champions Sports Bar. A favorite of locals, tourists and hotel staff, it offers karaoke nightly. It’s located at the CasaMagna Cancun next door to the JW Marriott. (Stay at either hotel and enjoy the amenities of its sister property.)

Of course, no wellness weekend would be complete without yoga, which is great for flexibility, stress relief and a host of other health benefits. (Studies show it reduces the risk of heart disease, decreases blood pressure and lowers low-density, or “bad,” cholesterol by more than 10 points.) In a group class geared toward all experience levels, the emphasis was on breathing, balance and being comfortable with your body now. Yoga isn’t your thing? There are daily stretching and spinning classes too.

If you can tear yourself away from the gym and the beach, consider the Aquafun Marina Jungle tour, during which you’ll power through the waters of the Nichupte Lagoon in a two-seat speedboat. After an exhilarating ride with a constant cool spray offering a respite from the sun, you can dive into the turquoise water and do some snorkeling.

Back by late afternoon, it’s time for drinks. For a refined alternative to the sugary margarita, try tequila tasting at the lobby bar. Locals enjoy tequila with sangrita, a spicy nonalcoholic beverage meant to cleanse the palate between shots, and JW’s mixology team will explain the differences among these low-calorie sips. For dinner, try Gustino, where low-carb linguine with shrimp, grilled veggies and poached salmon are popular, waistline-friendly options. The Bran-zino al cartoccio con finocchio e sedano, Chilean sea bass with lemons, fennel and leeks, is a delicious—and healthy—choice.

Turns out Cancun wasn’t such an unlikely spot for a wellness retreat. After all, true wellness means finding balance, not just physically, but socially, emotionally, intellectually and spiritually. And a beautiful beach doesn’t hurt one bit.
