My best advice for Thanksgiving: Plan Ahead! Most things you need to do can be prepared in advance. Make your guest list, plan your menu,

write your shopping list and your to-do list. Chop vegetables days before and store them in the fridge.

Peel potatoes and keep them in a pot covered with water in the fridge. Make and freeze pie crusts weeks before. Even whole pies should be prepared beforehand, (bake or leave in the fridge ready to bake the morning of). Prepare the turkey in the baking pan so on Thanksgiving morning you can pop the bird into the oven. Clean your house. Have your kids make special name

cards for each guest and set the table. Hang a sign that says, "Do Not Touch!" Don't do it alone. Guests will be happy to make a last

minute run to the store. If you have guests who cook, ask them to make a side dish - be specific. Keep or create traditions. Simple traditions matter and are

the ones you remember! We have a funny family tradition that the newest guest (usually an unsuspecting new boyfriend or girlfriend) gets - in my father's opinion - the best part of the bird. We all get a good laugh when my father singles out the newest guest and presents them with the turkey butt! My parents are

responsible for cooking the "Guest-of-Honor" and my three sisters and I are responsible for side dishes and dessert. I make the bread stuffing. Here's my easy recipe, and it can be prepared days before. Make a

chicken stock by covering 6-8 chicken wings with water; add a peeled onion, a bay leaf, a stalk of celery, and one whole unpeeled carrot. Boil two hours; drain through a sieve. Discard the solids; cool the stock before putting it in a container in the fridge or freezer. You will need one quart for this recipe. Cut bread into cubes (you will need six cups) and place in a single layer on a baking sheet. Preheat your oven to 350 degrees, place the bread in the oven, turn the oven off and let the bread dry in the oven overnight. The next morning, bag the bread cubes. Chop two onions and ten celery stalks. Warm the stock. Place bread cubes in a bowl. Saute the onions and celery in 1/2 pound of butter (no substitutes, please). When onions and celery are translucent, pour mixture into the bread cubes and stir completely. Pour chicken stock over bread and stir together. Add two eggs to mixture, two teaspoons salt and 1/4 teaspoon black pepper; stir until liquid is absorbed. If mixture is dry, add a bit more stock. All bread should now be moist but you should still be able to see the shape of the bread cubes. Press the mixture into a baking dish and cover with foil. Put in the fridge and bake on Thanksgiving morning 350 degrees for 35 minutes.

With Thanksgiving upon us, you may well be overwhelmed by so many tips on roasting a turkey. To brine or not to brine? To use an oven

roasting bag or just a roasting pan? To stuff or not to stuff? If you have in mind an old-fashioned turkey that is bronzed and succulent, let me add my two cents and suggest a few tips that have worked well for me over the years.

1. As to what size turkey to buy, figure that a 15 pound turkey feeds 10 people with leftovers for those great sandwiches later on. Go from there. 2. If you’ve selected a frozen turkey, thaw it properly in

the refrigerator. It will take three days for a 20 pound turkey to thaw.Rinse the turkey with cold water inside and out and pat dry

with paper towels. 3. Defrosted turkeys take a little longer to cook than

fresh turkeys.Figure 20 minutes per pound for a defrosted turkey and 10

to 15 minutes per pound for a fresh turkey in a 350 degree oven. 4. We all know that stuffing from inside the bird tastes

best, but you might consider cooking it in a casserole dish

to avoid overcooking the turkey. The stuffing is fully cooked at 165 degrees at which point the white meat may become dry. What I do is infuse the dressing with a few tablespoons of the cooked turkey juices to give it a roastturkey flavor. Fill the cavity loosely with aromatic

vegetables suchas celery, carrots, onion, garlic as well as fresh greens like

parsley, thyme and tarragon. 5. Tie the legs together with the tail and fold the wing tips

under for more even cooking. 6. Before roasting, use your fingers to loosen the breast

skin carefully without tearing it. Rub softened butter under the skin and coat the outside of the bird as well. Salt and pepper the bird. The turkey should be placed on a rack in a roasting pan. You can tent the breast with a piece of aluminum foil to make sure it doesn’t brown before the bird is done. Remove it about 45 minutes before the bird is done. 7. You may be tempted to baste the bird, but every time

you open the oven door, you lose heat and risk a dry bird. 8. If your bird has a pop-up thermometer, don’t trust

it. Use a meat thermometer or instant read thermometer inserted into the thickest part of the turkey. Test the temperature in more than one place including the thickest part of the thigh. When the internal temperature reaches 165 degrees, take the turkey out. Tent loosely with foil for at least 15 minutes before carving. 9. Present your glorious bronzed bird to your guests’

oohs and aahs and then whisk it back to the kitchen to carve. This way you can carve it on a proper cutting board and sneak a piece of crispy skin.Carve your turkey with a very sharp knife. 10. I like Sara Moulton’s carving advice. She suggests

pulling the leg back until the joint “pops”. Then cut at the joint to remove the legs and separate them between the drumsticks and thighs. Similarly, the wings can be pulled back and cut at the joint. The wishbone should be removed with a small sharp knife, thus allowing the breast halves to be easily removed and neatly sliced. An attractive arrangement can then be placed on the serving platter.

People who aren’t familiar with Multiple Sclerosis often say that they don’t know anyone who has it. But MS can be an “invisible” disease…and so the

truth is, many people may not realize that they actually do know someone living with MS. That’s one reason why people with Multiple Sclerosis talk

about the frustration it causes – they may look "fine" on the outside, but are often struggling on the inside. It’s a complex, confounding illness, in every way.MS is an unpredictable disease of the central nervous

system that “disrupts the flow of information within the brain, and between the brain and body,” according to the National Multiple Sclerosis Society. Or, as my daughter says, “it makes it hard to do things.” When I first explained MS to my kids, I told them to look

at the coating on an electric cord and imagine the wires transporting information inside. When the protective coating is rubbed off, the wires are exposed and damaged, making it impossible to accurately transmit the information. That’s what often happens in the brain and/or spinal column of a person living with MS – the coating that encases nerves becomes damaged, which impacts the ability of those nerves to transmit impulses. And that can make it hard to do things.What kinds of things? Eighty percent of people with

MS suffer from fatigue. Some individuals have difficulty with vision, sensation, dizziness or pain. These invisible symptoms are frequently impossible to spot just by looking at a person. There can also be other, more visible symptoms, such as issues with gait and balance.For those of us who suffer from a disease that can make

it hard to do things, what we crave more than anything is some measure of control – the ability to take positive, meaningful steps that might change the course of our

illness. While there is no diet that’s proven to definitively change the course of MS, making positive, healthy changes can be rewarding on many levels.Eating healthy foods, stretching and exercising regularly,

Many things can interfere with a person’s ability to make a commitment to or enjoy the intimacy of a healthy relationship. By intimate, I am referring

to the different aspects of closeness between couples, specifically emotional intimacy, as well as sexual intimacy. Many people complain that their partner or spouse is not emotionally available to them, or is acting like a single person despite being in a monogamous relationship. I sometimes refer to these people as ‘independent contractors’, acting as though they are not responsible to their partners. Often, they will not share their thoughts, feelings, desires, or even time with their partners. They may acknowledge that they are in a relationship, but are not really willing to consider that means changing their behaviors, or taking their partner’s needs into consideration. They sustain a level of independence that goes beyond what is necessarily healthy in a relationship in order to create a feeling of safety for themselves. They seek protection from the perceived fears of vulnerability and hurt that can come from being in love, committed and intimate with their partner.Fear of commitment usually masks an underlying fear of

intimacy. It is the protection from being called upon to have an intimate connection with another human being. This fear of intimacy generally guards against one or two things. This can be an and/or situation, and usually references back to earlier relationships; sometimes romantic, sometimes familial. Our early relationships often form our views of relationships, either in what we experienced or what we observed.The first is a perceived fear of rejection or abandonment.

If deep down (or not so deep down) someone has experienced being hurt in an earlier relationship, they may carry those fears into their current relationship. So, for example, a person who experienced a parent moving out, or a parent so involved with work that they neglected them as a child, may grow up guarding against another potential abandonment. Also, an earlier relationship where they were cast over for someone else (having an unfaithful partner) or had a demeaning parent or partner, may cause them to protect themselves from another painful rejection. These are some examples, but the experience is not limited to

these. The fear may be unconscious or conscious, and the resulting behavior may be purposeful or incidental. The irony is that not correcting the behavior actually brings about the thing they are trying to prevent…loss of love and acceptance. However, sometimes having brought it about yourself is a better alternative than the vulnerability of having it happen to you.The second thing that may prevent people from

experiencing and enjoying being intimate in a relationship is a fear of losing one’s sense of self; one’s personal identity. This can go two ways – a belief that your identity is so strong that you will overcome and subsume your partner’s identity or vice-versa, that they will take over yours. The fear may manifest in men or women who think they will end up living in their partner’s shadow, or under their thumb. They believe that being giving, is giving something away. Often they will be confrontational, as though participating or compromising is an unnatural demand. Understanding hidden motivations may help people make changes toward a more secure relationship and allow for more accessibility to feelings and emotional connections.Relationships are tricky business, and require

understanding of ourselves and our partners, as well as consistent care and nurturing. We sometimes think that a good relationship should just be easy and happen naturally, but that is not reality. The concepts expressed here are difficult and psychologically complex. Healing requires the conscious desire for change, and the willingness to choose different behaviors, even if it is out of one’s comfort zone. Being a loving and supportive partner means (among other things) helping to identify underlying fears, and then being supportive by giving or asking for the assurance needed to be a more considerate and dedicated partner.

Sweet Potato-Pecan Casserole Per serving: Calories 160; Fat 4g (Saturated 1g); Cholesterol 25mg;

Ingredients Cooking spray

3 1/2 lbs. sweet potatoes (about 5 medium), peeled & cut into 1-inch chunks 1/3 cup honey

1 large egg 1 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1/8 teaspoon ground ginger

Kosher salt 1 tablespoon packed dark brown sugar

1/3 cup finely chopped pecans

Directions Preheat the oven to 350 degrees F. Mist an 8-inch square baking dish with

cooking spray. Bring a few inches of water to a boil in a pot with a large steamer basket in place. Put the sweet potatoes in the basket, cover and

steam until tender, 20 to 25 minutes. Transfer the potatoes to a bowl and let cool slightly. Add the honey, egg, 1/2 teaspoon cinnamon, the nutmeg, ginger and 1/2 teaspoon salt; whip with an electric mixer until smooth.

Spread the sweet potato mixture in the prepared baking dish. Mix the brown sugar, pecans and the remaining 1/2 teaspoon cinnamon in a bowl; sprinkle over the potatoes. Many tax deductions, credits, and incentives, are on a year-to-year extension basis, and, depending on the mood of Congress, may or may not be

extended to this year. There are deductions which have expired in 2014 and unless Congress acts to retroactively extend them to the beginning of 2015, will not be available as tax incentives for 2015. Here is a list of expired tax provisions:• Deduction for up to $250 of expenses for elementary and

secondary school teachers for school books, supplies , and other materials they use for their classrooms.• Exclusion from income a discharge of indebtedness for

your primary residence. This means that if your home is foreclosed or you sold it in a short sale in 2015, the debt you owed on the mortgage and didn’t repay is now taxable .• Deduction for the cost of mortgage insurance premiums

as qualified residence interest.• Deduction for general sales tax in lieu of state income

tax. This allows a deduction for sales tax where your state income tax paid is very low or if you live in a state with no income tax.• Deduction for tuition and other related college expenses

for individuals with low gross income. This should not be confused with the American Opportunity Tax Credit for qualified college expenses which does not expire until December 2017. In some cases, the deduction is more of a tax advantage than the credit.• A credit of 10 percent of the cost of qualified energy-

efficient improvements. Qualified improvements include adding insulation, energy-efficient exterior windows and doors, and certain roof. Additionally, a credit is available for certain high-efficiency heating and air-conditioning systems, as well as high-efficiency water heaters and stoves that burn biomass fuel. There is a lifetime limitation of $500, of which only $200 may be used for windows. There are two different bills in Congress, one in the

Senate and another in the House, to extend some or all of these incentives. In the past, they have either been extended late in December or in the beginning of the next year, retroactively. This makes much of your tax planning difficult if not impossible.

With the holiday season just a few weeks away, there’s an energy and festivity in the air that makes us feel alive and thrive. However, as our

lives start filling up with responsibilities and tasks, it’s easy to go from thriving into survival mode. When we thrive, we prosper and flourish, when we survive, we continue to exist. The holidays often trigger emotions and seduce us with

food and alcohol. We get busy prioritizing and trying to meet everybody else’s expectations. With the Thanksgiving holiday countdown just 25 days away, avoid the downhill health slide by setting intentions. Setting intentions will ground you on making smart choices so you can thrive this season, not simply survive them. Just following through on one intention can take you from surviving to thriving in all areas of your life.Here are my top 5 tips to thrive the season and beyond.

Challenge yourself to one or more.1- Make water your drink of choice - Water is a key part

of a balanced diet. Skip the soft drinks. Many are high in sugar (or artificial sugars) and artificial ingredients. They cause you to crave more, make you irritable and pack on weight (yes, artificial sugars too). 2 – Give up sugar! Sugar contributes to nutrient

deficiencies by leaching minerals from your body plus all of the above.3 – Give up processed packaged foods. Only eat foods

when you can identify all the ingredients. Add in more vegetables and fruits, no label required.

4 – Get some “R & R”, read a book, get a massage, and take time for a bath.5 – Get physical, take a

walk, a run, a bike ride or a hike in nature.Balance your life; eat

well, sleep well and remember to make time to play! Challenge yourself, make your intentions know so you will have accountability, post it on facebook, do it with a coach, sign up for my 21-day “clean-eating” course, just do it and watch how you will thrive through the season and into the New Year.

Ingredients: Dry ingredients:• 1 cup almond flour• 1/2 cup rolled oats• ½ tsp. cinnamon• ¼ tsp. nutmeg• 1/8 tsp. cloves (to taste)• 1 tsp. flax meal (optional) Wet ingredients:• 3 tbsp. coconut oil (heat in oven to make it a liquid)• 3 tbsp. cup maple syrup • ½ tsp. vanilla extract• ½ tsp. grated fresh ginger (optional)• 2 apples, peeled and sliced (or chopped) Directions:• Pre-heat oven to 350 degrees• Grease baking dish with a small amount of coconut oil• Place apples in the bottom of your baking dish (sprinkle

with cinnamon)• In a bowl, mix dry ingredients (almond flour, oats,

cinnamon, nutmeg, cloves) • In a separate bowl, mix the wet ingredients (coconut oil,

vanilla, maple syrup, ginger)• Combine the wet ingredients with the dry ones and stir

well. Create a crumble consistency.• Spread / crumble this over the apples. • Bake approx. 40 minutes until the apples are juicy and

bubbling or until the top is brown/crisp.

Thanksgiving is a great time of year to reflect on gratitude and family. Amidst the hustle-bustle of meal prep and travel plans, most of us find at least

a minute or two to think about all we have and all that we are thankful for. But focusing on gratitude is a great practice to continue even as the calendar flips and the seasons change. Here are some tips on how to incorporate giving thanks on a daily basis.The first thing to consider is how much gratitude is

expressed within your home. Some parents and children are super polite regardless of the setting and others generally forgo the pleasantries within the comfort of home-base. If you fall on either end of the extreme, shifting toward the middle may be a good practice. For example, if the words “thank you” pass your lips dozens of times an hour, it may help to pause and consider if all those statements are genuine or just a habit. If there are rarely words of thanks uttered, ramping up your efforts may help shift the tone. For one day (or even one hour) think about how you would speak to your family members if they were strangers. See if you are more apt to say thank you under those imagined conditions. Another point to think about is the way you communicate

things or actions you are thankful for. Saying, “I appreciate you picking up your shoes” or “Thanks for helping your brother with that” typically have a greater impact than a pat “Thank you.” Also, if you miss an opportunity to show gratitude to a family member in the moment, don’t hesitate

to revisit the conversation at a later time. Some of the biggest, broadest smiles I have seen come from a child or spouse hearing about something they did that was much appreciated even after the fact. Making the effort and taking the time to bring the topic up again shows just how much of a positive impact was really made. Finally, it’s important not to get too hung up on the details.

Overthinking gratitude is not necessary, but as parents we are in the spotlight. So if you see patterns in your children or within your family that you are not necessarily pleased with, take the lead role and show your family what you want them to do. In less time than you think you will probably see others stepping up and copy-catting the very best you have shown them. So, after the turkey is sliced, the pie is served and the

kitchen is cleaned, make a point to bring thanksgiving with you. When all is said and done, being grateful can take practice, but expressing this sentiment will bring as much joy to those giving thanks as it does to those receiving it.

Bullying will always be an issue in school or in the community. It has been a problem in most societies and will probably remain to be a dilemma unless

the people involved do something to stop it. Stopping here does not mean exacting aggression but teaching your children to stand up against bullying and fight back the proper way.Part of the reason why bullies abound is because children

lack the proper skills to tackle them. When vulnerable kids are sized up by bullies, they immediately recreate a “movie” in their heads, imagining how the bully might hurt them if they try to fight back. This stems from the child’s fear, and this actually paralyzes them. Bullies can sense this, and they gleefully take advantage of the situation.This scenario is often overlooked by parents and teachers.

They teach the children to say “No” to bullies, but the “imagining” part still happens. This creates fear in the child, and instead of saying no, his resolve gives way.You can change this with a more positive approach. It

is important that you teach your child to not only stand up against bullies, but to stand up against fear. Imagine the outcome is alright, but encourage your child to imagine a different scenario.For example, your child imagines the worst scenario

possible if she said no to handing her allowance over to bullies. Your kid might say “I’m afraid. They might hit me.” Acknowledge this, but let your child see it the other way around. Ask her: What if you knew a bit about martial arts? If you knew how to defend yourself, would you still be afraid? Suppose the bullies see that you’re a black belt in karate, would you think they would still try to hurt you?

These questions would then send a signal to your child that she can fight for her right and safety. Knowing self-defense skills will make your child more confident in facing bullies in school, and she wouldn’t have to be afraid of whatever outcome she pictured. Your child will then entertain these outcomes and even imagine possibilities with this new skill, hence giving her confidence instead of fear. You should teach your child to be responsible as well.

Knowing martial arts doesn’t mean she could use this to get even with those who bullied her. This shouldn’t even be used to threaten the bullies back. Aside from teaching your child to put up her guard, part of the education is teaching her to use these defensive skills in the right context. Moreover, help your child predict outcomes positively. This “time machine method” will encourage them to anticipate events and to play with options and choose wisely from these options. With a positive mindset, your child will no longer be a victim of bullying. Instead, she will exercise courage and confidence.Bullying may not be resolved completely in a community,

but through the collective effort of parents, schoolmasters, and children, they could easily win the fight against bullying

and breed a culture of cooperation and kindness in society.

5th GRADE FUN CLUBCortlandt Youth Center, 3 Memorial Drive, CrotonThe fifth grade fun club program allows participants to be in a safe, structured environment after school while challenging themselves with a variety of games, activities and special projects. During this time, these children get acclimated as to what the Town of Cortlandt Youth & Recreation Center has to offer. A BBQ marks the end of fun club for these participants and are then able to come to the center and enjoy all of our programs on a daily basis. Children are bussed on the days listed below from their school by Henderick Hudson School District to the Youth Center.
