Le Cordon Bleu Ottawa Launches bistro Cordon Bleu (Ottawa, February 26th, 2007) – Le Cordon Bleu Ottawa will on April 3 rd launch bistro Cordon Bleu its new application restaurant. Le Cordon Bleu, with its dedication to preserving and passing on the mastery and appreciation of the culinary arts and its related fields, will launch “bistro Cordon Bleu”, it’s new application restaurant on April 3 rd 2008. Cost-conscious gourmands will be delighted to discover Bistro Cordon Bleu. Le Cordon Bleu Ottawa’s new application restaurant will be the school's full-service, fine-dining restaurant, run and staffed by students. At the end of their 9 month curriculum, students will be required to work in the restaurant, putting their newly acquired culinary skills and training to the test while having an opportunity to gain hands-on experience in the dinning room. Students will take turns preparing the food, waiting tables, and running the restaurant and will spend time at all five stations: hot line, pantry, pastry, prep, and dining room. They will also learn the finer points of tableside service as well as carving, saucing, and plating under the supervision of Signatures restaurant banqueting maitre D. This experience is bound to give our graduating students a hands-on experience in a microenvironment that they will soon be dealing with on a day to day basis. Students will prepare and serve meals on an ever-changing thematic basis that will be defined by their supervising master chef instructor. The themes however will be focussed on seasonal French bistro favourites of all times. The set price for the three course menu will be 24,95CAD and 32CAD with one glass of wine. Bistro Cordon Bleu Restaurant will be located in the salle Cointreau of Le Cordon Bleu Ottawa Culinary Arts Institute as to dissociate it from Le Cordon Bleu Signatures restaurant also located in the same building. In the heart of Sandy Hill, the school’s application restaurant will face the Strathcona Park and will seat up to 30 people. The restaurant will be serving on Thursdays and Fridays for lunch, starting at noon; and reservations are a must. Bistro Cordon Bleu will be a treat offering great gourmet food in pleasant surroundings for an unreal price.
