MexImport was launched by entrepreneur Katya Torres de la Rocha. After 12 successful years in the food industry setting up restaurants and online grocery store MexGrocer.co.uk, Katya decided it was time to create a new type of business in order to supply the trade fine Mexican ingredients and beverages.

Katya is supported by a team of individuals who share her passion and vision and aim to provide the best customer service and create long term commercial relationships.

Francisco Yong is the former CEO, EMEA of Gruma, the world’s leading branded tortilla and corn flour producer. Francisco handles major MexImport accounts such as supermarkets, fast food and coffee shop chains.

Eduardo Gomez Resendiz founded the Tequila and Mezcal Fest, the UK’s only festival for agave spirits. Through the event, he has introduced many fine tequilas and mezcal to the UK for the first time. He has worked in the drinks industry in the UK for over 10 years.

Mexican food has been misunderstood in the past. It is about much more than nachos and fajitas. Our cuisine goes back thousands of years when the Aztecs ground corn to make tortillas, fermented the agave plant for tequila and created rich, complex sauces, dips and salsas to accompany dishes.

There is a growing interest in authentic Mexican cuisine and our vision is to bring some of these wonderful products to the European marketplace for food lovers to enjoy.

Food is an important part of Mexican culture and at MexImport we’re committed to sourcing the best fine food.

Maize

Corn tortillas, basis of traditional Mexican cooking

The tortilla, made with variants of white, yellow and blue corn, has been a staple food item in Mexico since pre-Columbian times. The dough is made by soaking maize in limewater; called nixtamalization, it causes the skin of the corn kernels to peel off Then grinding and cooking it, kneading it into a dough called masa, creates a tortilla.

Corn tortillas are the basis of many traditional Mexican dishes, such as tacos, tostadas, enchiladas, flautas, quesadillas, chilaquiles, and tortilla soup. Warmed corn tortillas are also often served as an accompaniment to stews, soups, grilled meats and other dishes, as bread might be served in other cuisines.

Traditional Mexican drinks

In most food markets and taquerias in Mexico you will find large, oversized glass containers of “aguas frescas”. They come in a variety of flavours, the most popular being Agua de Jamaica (made with hibiscus leaves), Agua de Tamarindo and Agua de Horchata. Horchata is a delicious combination of rice, vanilla, cinnamon and spices.

They’re refreshing, delicious and the hibiscus flower has proven health benefits. It’s high in vitamin C and studies have shown that hibiscus flowers reduce blood pressure.

Herencia de Plata Tequila is a 100% agave Tequila produced by Tequilas del Señor, a fourth generation family run business in Jalisco, Mexico. The word ‘Herencia’ is Spanish for ‘heritage’ and Herencia de Plata has an impressive heritage. It was

originally produced in 1997 to commemorate the wedding of Juan Garcia, son of the of the company founder, Manuel Garcia. It has been served by Mexican President, Vicente Fox to Queen Elizabeth II during his visit to the UK in 2002. Authentic mezcal tradition since 1893

There are over 150 species of maguey exclusive to Mexican territory. Of these species more than 30 can be utilized to make mezcal, Oaxaca being the state with the highest concentration and variety of them. In Oaxaca, it is common to mix together crops of corn, squash, beans and maguey, as this

maintains the land in optimum conditioning for planting.

For the elaboration of Tradicion Chagoya mezcals, the maguey known as “Espadín” is exclusively employed. Maguey Espadín takes ten years to mature and is one of the finest and noblest of this species of plant, whose characteristics have led it to become the emblematic maguey of Oaxaca.

Tequila is Mexico’s most representative drink. Its history is long and rich and is surrounded by stories, myths and legends. Tequila transcends simple definition by reaching into the heart of Mexico, past and present. One cannot fully appreciate Mexico without some understanding of tequila’s place in its history and culture

Super Foods

Super Food Amaranth was domesticated over 6000 years ago by the Aztecs in Mexico. It was considered an important food crop of the Aztecs and today it is called the Superfood of the Aztecs. Amaranth is gluten free and its seeds contain about 30 percent more protein than rice, sorghum, and rye. It is also relatively high in calcium, iron, potassium, magnesium, and fibre. Experts believe Amaranth’s amino acid profile is as close to perfect as you can get for a protein source.

Maize

Most historians believe maize was domesticated in the Tehuacan Valley of Mexico 10,000 BC. The Aztecs cultivated numerous varieties throughout Mesoamerica, and cooked, ground or processed it through nixtamalization. Maize was so important to Aztec society that it played a central part in

their mythology. Just like wheat in Europe or rice in most of East Asia, it was the food without which a meal was not a meal.

Mexican cuisine was inscribed in 2010 on the Representative List of the Intangible Cultural Heritage of Humanity by UNESCO due to its complex and rich variety of cooking ingredients and dishes. Chilli peppers were domesticated more than 6000 years ago in Mexico, in the region that extends across southern Puebla and northern Oaxaca to south eastern Veracruz, and were one of the first self-pollinating crops cultivated in Mexico.

There are over 140 varieties of chile in Mexico which vary in flavour and heat. The most popular being De Arbol, Pasilla, Jalapeño, Cascabel, Guajillo, Habanero and Poblano.
