Lewis, a blackie for more than 30 years, believes the work is valued at between $15,000 and $20,000 and is the result of his respect of military history and a passion for his craft.My grandfather served in the Boer War, so in a way it's honouring his work, and that of other servicemen. Lewis hopes the steel creation will attract the interest of a war memorial committee or community group.     e founder of a Melton animal rescue service has slammed last-minute amendments to breeding codes, accusing the state government of back ipping on policies designed to stamp out puppy farms.

    MELTON MOTHER STABBED IN DAYLIGHT ATTACKCRIME

    Horri ed shoppers were unable to save a Melton West mother of four who was stabbed in a busy Sunshine shopping strip.

    Police said the woman, 33, was stabbed several times to the upper body about 12.30pm on Wednesday following an altercation with a man at the corner of Hampshire and Devonshire roads.

    Despite members of the public rushing to her aid and administering CPR, the woman died at the scene.

    A Sunshine North man, 38, was charged with murder a er handing himself in to police at 10.30am on ursday.

    Police launched a manhunt on Wednesday in the wake of the daylight killing. Witnesses said a man ed down Devonshire Road in a red Holden sedan before crashing into another car and eeing on foot.

    Police said the woman had been at Sunshine Magistrates Court with her partner of 18 years before leaving to attend a womens

    refuge and her lawyers o ce on Hampshire Road.

    clubs grant lacks long-term benefit

    BACCHUS MARSH

    A $5000 grant awarded to Bacchus Marsh Soccer Club for a temporary light tower sends the wrong message to the community, according to a Moorabool councillor.

    e grant, from the councils East Moorabool Recreation Reserve Fund, will be used to add mobile lighting for soccer training at Masons Lane Recreation Reserve.

    e club will also contribute $5000 .Despite a report showing a surge in

    participation at the club in the past 18 months, Cr David Edwards said more money should be spent on open spaces to bene t a wider group of people.

    We have little open space [in Bacchus Marsh] and we will have none if we keep spending money like this, he said.

    We have to consider how we use these funds; theres no long-term bene t.

    However, Cr Tonia Dudzik said the council had a one-o chance to help pay for the lights.

    About 30 people had their hair foiled or dyed pink as part of a breast cancer fund-raiser held by Melton Primary School .

    Last Wednesdays Pink Strips event was hosted in support of teacher Tammy Velden , who was recently diagnosed with the disease.

    Organiser Lauren Marriott said sta from the school had pink strips dyed into their hair by hairdressers at Meltons Chic Hair Studio .

    It was amazing. Everyone came dressed in pink and there were pink banners, pink balloons, pink lollies, cupcakes, cheesecake and fairy bread.

    A manicurist painted nails, and a sausage sizzle and silent auction supported the fund-raising e ort.

    About $2000 has been raised for the Breast Cancer Network Australia.

    Melton and Moorabool councils remain in the dark about future funding under the federal governments Roads to Recovery program .

    Western Victorian Liberal MP Simon Ramsay has accused Labor of being all talk on roads funding a er the ALP and Greens voted down a ve-year, $1.75 billion extension of the program in the Senate.

    But a spokesman for federal Infrastructure Minister Warren Truss said this week the government was committed to extending the national program and would provide $350 million a year.

    in the amendment would not a ect funding for this nancial year.

    speci c funding allocation, he said. Moorabool was allocated $908,043

    this nancial year. e Infrastructure Departments website lists two Moorabool projects in planning, at Blakeville Road, Ballan, and Yendon-Egerton Road , Lal Lal .

    Mr Trusss spokesman said the council would submit a progress report by April 30.

    town split over joining sunbury shireDIGGERS REST

    e Diggers Rest community remains divided about the possibility of the town being included in a new Sunbury municipality.

    Diggers Rest resident Alex Jinks has attended several listening posts about the Sunbury out of Hume issue, including one in Diggers Rest on April 4.

    He is among those who believe the town would be a logical inclusion for the new shire.

    Diggers Rest is presently split between the municipalities of Melton and Hume.

    Were not service-rich here, and Melton has looked a er our town, but thats history, Mr Jinks said.

    An eight-member community consultative

    committee was appointed in March to help the state government develop Sunbury as a new local government municipality.

    In a submission to the panel, the Melton council vowed to ght against any plans to include all of Diggers Rest in the new municipality .

    Melton chief executive Kel Tori sought to hose down speculation that the panel may recommend that all of Diggers Rest should form part of a Sunbury shire.

    ere has been no consultation to date and certainly no plebiscite conducted of residents of Melton, he said.

    e council believes it would be most inappropriate for any recommendation from

    the panel to in any way impinge upon the current arrangements within the City of Melton.

    Diggers Rest resident Christine Finlay feared her rates could increase if her

    property was included in the new municipality.

    We dont want to be pushed into a new municipality that cant provide adequate service, she said.

    But fellow resident Paul Tyquin said Sunburys proximity to Diggers

    Rest made it more appealing. e bus, train, shopping centre and pool

    are all ve minutes up the road, whereas Melton is 20 minutes away, Mr Tyquin said.

    a er its outer-fringe suburbs like Diggers Rest. Resident Lynette Stanye said the entire consultation process had been a bit confusing.

    It couldve been managed better, because I think the people of Diggers Rest werent aware of the rami cations, she said.

    Mr Jinks believes Sunburys secession is inevitable.

    People are getting out of shape over the emotional aspects, but the reality is Sunbury will stand alone.

    Local Government Minister Tim Bull will decide on the matter in July. \

    A man and woman escaped injury when their light plane ipped on landing at Bacchus Marsh aerodrome about 1.20pm on ursday.

    An aircra engineer at the air eld told the Weekly the husband and wife, aged in their 50s, ew regularly from there and had built the aircra themselves.

    Bacchus Marshs Senior Sergeant Edward Lappin said the plane veered to the right of the runway on landing.

    and standards can only decline to the detriment of the profession.

    My shout Like most budgetary measures, the Abbott governments plan to increase the retirement age to 70 will be strongly felt in the north-western suburbs. While I can imagine sitting at a desk writing missives such as this well into old age, its a lot to ask for people whose work is mostly labour intensive. For those who cant work until theyre 70, the nancial burden will be worse. Blue-collar workers approaching retirement age have not had the bene t of superannuation most of their working lives. Superannuation wasnt compulsory and was mostly a management perk until the early 1990s, meaning many people approaching retirement wont have a signi cant nest egg. Small-business people, stay-at-home mums and migrants will be even worse off. Meanwhile, the government has axed the Income Super Contribution scheme for low-income earners. \

    Detective Sergeant Robert Henleys relentless passion for justice is clear when he describes the work that went into smashing a cock ghting ring in Rockbank .

    It was the best Ive felt in a long time it all came together so well, he says of the 2012 operation, which has earned him a divisional commendation from Victoria Police.

    Detective Sergeant Henley, 53, has worked with Melton police for eight years.

    He received the award last ursday for leading the operation, which resulted in the arrest of 76 people and the seizure of more than $207,000 in cash.

    I pulled it together in ve working days and seven night shi s, so it was pretty hard stu . We were all under the pump, he says.

    Its a ritual thats been played out for centuries across the hillside villages of Sicily, people troop to the door of the local farmer-cheesemaker to collect fresh-cooked hot ricotta for lunch.

    The scene repeats itself in a somewhat surprising location, with Italians from all over Melbourne flocking to the citys industrial heartland every Sunday for an authentic taste of the old country.

    Men, women and children armed with an array of saucepans, bowls and buckets line up at the Alba Cheese factory shop in Tullamarine waiting for the next batch of ricotta to flower.

    As the proteins rise to the top of the simmering whey and clump together they are scooped steaming into receptacles customers have brought from home.

    Its a tradition first church for Mass and then here for cheese, says Gina Agliozzo, of Avondale Heights, as she joins a cheerful, chatty queue.

    The story of Alba Cheese begins in Sortino, a Sicilian village with a population of just 9000 people. It was there on a dairy farm owned by their father that brothers Mario and Gaetano Bongiorno first learned to make fine Italian cheese.

    They discovered on migrating to Australia in the 1960s that this was not a terribly useful skill in a country where Kraft processed cheese dominated the household market.

    Like many new migrants they first found employment as labourers, before being able to return to their craft in one of the first Italian cheese-making companies established in Melbourne.

    By the late 1970s, the two men were ready to strike out on their own and they bought three lots in Assembly Drive, Tullamarine.

    Their factory opened in 1982: the obvious name for the business founded by the Brothers Good Morning as Bongiorno translates was Alba, meaning dawn.

    And true to the business name, for the next 30 years Mario and Gaetano would be at work well before the first light broke, getting up at 2am to be at work by 3am and often working until 7pm seven days a week.

    I brought up our three boys by myself and there were times I felt like a widow, says Gaetanos wife, Lena, who is also Albas office manager.

    But the work has paid off. Today Alba Cheese occupies five lots and produces 30 award-winning cheese products, from the finest ricotta and feta to stretch curd cheeses like bocconcini, mozzarella and haloumi through to matured pecorino and parmesan.

    The point of difference between this company and, say, one like Bonlac is that here things are still done manually, Lena says.

    Nothing is done by machinery. Its still made the old-fashioned way.

    We have our own farms as well. We have a truck that picks up milk from the farms each day, carries it down, puts it in our tank. We take it out of the tank and produce cheese out of it.

    We dont take cream out of it, we dont separate cream and water, so it all goes into our cheese.

    Alba Cheese churns through 60,000 litres of milk a day, enough to make 5-6 tonnes of mozzarella and 2.5 tonnes of ricotta the much-loved by-product of the cheese-making process.

    Some of the products like the dried salt-crusted ricotta salata actually have a waiting list of customers.

    As Lena explains: We simply cannot make enough of that because it has to be made from ricotta that is left over. And, well, we never have ricotta left over. So sometimes because people are so demanding of it we actually do a whole ricotta production just to make

    that product. And its not just for the local market. Increasingly, Alba is making its name abroad.

    Production has increased by almost one third in the past 18 months, thanks largely to a growing Asian appetite for dairy products in general.

    During the recent (March 2014) International Food and Beverage Trade Week almost one third of the South East Asian delegates elected to visit Alba Cheese and thats already translated into new business.

    Four years ago they didnt know what bocconcini

    was, now they cant get enough of it, Lena says with a laugh.

    But the success of Alba goes way beyond this factory and its 66 permanent employees.

    A whole community of Italian wholesale businesses has grown up around the cheese factory, turning Assembly Drive into one of the best food and grocery shopping destinations in Melbourne.

    James Packington Vallence was born in Maddingley on January 20, 1877, to James and Margaret of the Vallence Family Hotel (otherwise known as Stoneys).

    Pack, as he was known locally, had an interest in all things military.

    He started with the local cadets and went on to form a Bacchus Marsh light horse troop.

    He was so committed to the light horse that when numbers dwindled he would ride his horse to Ballarat to take part in parades.

    He was determined to represent his country when he enlisted for duty in the 1899-1902 Boer War.

    At a send-off for him and a number of other local lads, Pack said he wanted to show the world Australians are brave as well as loyal.

    Many letters were written back to loved ones and published in the Bacchus Marsh Express.

    Censorship was not as strict as it became during World War I a few years later, and many details were published that perhaps should not have been.

    In one account Pack wrote: The Boers have got about enough of it. They have to be flogged up to the guns. The officers have to stand behind them with loaded rifles to make them fire. (Express, February 2, 1900). Pack was one of the chosen few to be selected to represent

    Australia at Queen Victorias jubilee celebrations in 1897.

    In 1906, he married Katherine Theresa Maloney and they settled down to life in Bacchus Marsh.

    The Vallences were community-minded and were involved with the Red Cross, Australian Natives Association, fire brigade and high school council. But before long, Pack again heeded the call to bear arms and

    enlisted at the outbreak of World War I in 1914. Leading the first group of enlistees from the Marsh, Vallence was appointed second lieutenant in the 4th Light Horse on March 23, 1915.

    During the war, he was to serve in the 4th Light Horse, 1st A & NZ Mounted Regiment,

    2nd Anzac Regiment, 22nd Corps Light Horse Regiment, Light Horse training depots, 22nd

    Mounted Regiment, 13th Light Horse Regiment, Salvage Party 25th Division, and the anti-aircraft section.

    He was appointed captain at the end of the war.Having survived two wars, Pack returned to Australia

    on September 15, 1919, but had little time with his wife as she succumbed to illness on Boxing Day that year.

    They had no children, so Pack threw himself back into the community and became the first president of the local branch of the RSL.

    When he died in Caulfield Military Hospital on December 2, 1926, the Express carried the following tribute: The members of the Bacchus Marsh RSL desire to record their deep sorrow at the early death of their late comrade, Captain Packington J. Vallence, and their admiration for his public spirit, his long and loyal service as a soldier, his intense patriotism, his sincere and unselfish comradeship. Never was there a better friend or a truer soldier. The heartfelt sympathy of the members is extended to his brothers and friends in their great sorrow.

    brothers do a powerful job, to tongas delightsolar farm

    Long-standing power problems in Tonga have been eased in part thanks to the work of Bacchus Marsh-raised Nicholas Guys and his older brother, Shane Kennedy.

    e brothers, who live and work in Brisbane, recently completed a seven-month contract to build a 500-kilowatt hybrid solar farm on the island of Vavau .

    e whole experience was awesome, said Mr Kennedy, who undertook all the electrical and safety equipment installation.

    We had a ceremony when it was completed and met Tongan royalty and other o cials. Seeing it come together felt great.

    e solar farm was opened by Crown Prince Tupoutoa Ulukalala last December .

    It produces enough energy to cover about 13 per cent of Vavaus annual electricity needs and up to 70 per cent of demand during peak hours.

    eir mother, Suzanne Guys , who lives in Bacchus Marsh, said she was proud of how

    much her sons had achieved in installing 1680 panels.

    My youngest, Nicholas, supervised the trench digging and looked a er a team of local workers, who only worked by hand, she said.

    Mr Kennedy said the Tongans made the brothers feel right at home

    with their friendliness and generosity, even when many had so little.

    It was quite attering, actually, when they kept taking

    my shirts and wearing them around, and eventually they all had

    one, he said, laughing. When I asked them why, they said they

    all wanted to look like me. e Vavau solar farm is part of the Outer

    Islands Renewable Energy Project, which includes eight other Tongan islands.

    e project is designed to help Tonga reduce its fossil fuel imports for power generation by half and ease the nations carbon footprint and million-dollar diesel bills. \

    The white grapes of the Rhne Valley are the cause of much tension in my home. I love them, my wife rates them alongside sauvignon blanc (a wine she refuses to drink), and

    Ikeep sneaking them into our glasses at the dinner table.I like to pour wines that are best suited to what were eating and

    these fuller-bodied grapes marsanne, roussanne and viognier tend to have the guts to stand up to richer foods.

    After a summer of salads and delicate wines, Ive lately been in the mood for gutsier whites and more robust dishes.

    These grapes work brilliantly when blended as they regularly are in the Rhne or left to their own devices as single-varietal wines, as they usually are in Australia.

    The story starts at the north of Frances Rhne Valley around the towns of Vienne and Condrieu, where viognier is planted.

    Scarcely planted, viognier was, in fact, almost extinct 50 years ago.

    Now its found all over the world, including Australia, where Yalumba is leading the way. Yalumba considers its Virgilius viognier as the companys most prestigious white wine.

    I bought a cookbook recently, featuring recipes from the year Iwas born, by restaurateur Franoise Point from his Restaurant LaPyramide in Vienne, south of Lyon.

    Half a dozen pages are dedicated to its wine cellar and one winery in particular, Chteau-Grillet, which has its own appellation and exclusively makes viognier from the right bank ofthe northern Rhne.

    Its a similar story in nearby Condrieu, too.DNA profiling has shown that viognier is a sibling, or possibly a

    grandparent, of shiraz, which comes as little surprise after tasting the plush, full-bodied wines it produces. As the Rhne flows

    south, marsanne and roussanne start appearing in vineyards, in particular around the Hermitage region south of Lyon.

    Blended with marsanne in France and often with a dash of viognier in Australia, roussanne is thought to be named after the russet colour of its grapes (roux in French) when theyre ripe.

    Australian winemakers are having a good crack at roussanne as a single-varietal wine, which is characterised by high-acid, full-bodied pear and honey flavours, and a perfume similar to herbal tea made with dried flowers.

    A few producers in Australia co-ferment it with shiraz in a similar way to how viognier is used, and roussannes high acid

    means it has the ability to age well.The first record of marsanne was in 1781 in Hermitage,

    where examples from the sun-drenched slopes of the Hermitage Hill, above the Rhne river at Tain lHermitage, command hundreds of euros a bottle.

    Today, Tahbilk near the central Victorian town of Nagambie has the largest single area of marsanne vines

    in the world. Tahbilk has been growing the variety for 150years, and the oldest vines it has growing were planted in

    the1920s.Marsanne has large bunches with small berries and is

    characterised by lemon, peach and honeysuckle characters. It ages well, too; Ive tasted vintages of Tahbilk and M.Chapoutier

    that date back decades and, when the corks were kind, the wines were superb.

    Further south again, around Orange and Avignon in the Ctes-du-Rhne appellation, the white grape varieties broaden and the regions white blends will include grenache blanc, ugni blanc, clairette, bourboulenc, and picpoul. \

    Theres something about New York thats got Kara Liu hooked. The Shanghai-born designer spent three

    months in Manhattan last year for an internship with Alexander Wang before returning to Australia to launch her own label.

    Drawn to the Big Apples energy and charisma, and inspired by the refined elegance of the fashion set, Liu translated the citys best features for her commercial debut collection.

    I grew up in Shanghai and I love big cities, Liu says. But New York has always been special because I feel connected to the people.

    Liu speaks highly of New Yorks buzzing streets of fashion lovers. New Yorkers are many things they are elegant, refined but also bold and daring, she says.

    They are quite romantic, but also very realistic, hardworking and efficient. They get things done. They always wear the classics but wear them creatively. The clothes always complement the wearer, never overtaking him or her, and these things align perfectly with my own design philosophy.

    Lius choice of fabrics reflects this wintry New York influence. Theres plenty of luxurious wool and alpaca textures in her collection, but she calls on heavy structured silks to soften the silhouette. The RMIT fashion graduate works from a city studio and splits her time between Melbourne and

    Shanghai.Liu says she would have become a surgeon

    if she had followed the footsteps of her parents. I went on a school trip to Melbourne in grade6 from Newcastle and absolutely loved it, says the designer whose mother was then doing her PhD in Newcastle.

    My mum then made the decision for us to move to Melbourne when I was 14. We love the lifestyle and mum felt that Australia was an environment that suited me better than Shanghai.

    Working as an intern at Alexander Wang in New York was a fashion highlight for Liu, although her time there was cut short so she could return to Melbourne for LOral Melbourne Fashion Week 2013, where her collection was selected as part of the National Graduate Showcase Runway.

    It was an incredible experience to assist the designers and work alongside the best pattern-makers in New York, she says. I had the opportunity to see how the company operates, as well as get first-hand knowledge of the New York garment industry. Assisting backstage at a major show was an experience likeno other, she says of helping on the ready-to-wear fall and resort collections.

    For her own collection, Liu keenly follows simple design aesthetics. She plots this seasons message on reminders of New York; from the grey winter skies to concrete skyscrapers and flashing neon lights. Shes

    big on box pleats, organza and geometrical shapes, pinning her fashion forecast on all that is a tad unusual.

    A capsule collection by Liu is also available in Glue stores nationally this sub range is a result of her winning the 1% Glue fashion design competition last year.

    Titled [SLEEP. WORK. PLAY.], it is an exploration into the simple joys of

    domestic life, inspired by the familiar and the sensation of comfort of home, Liu says.

    The collection combines my edited, minimal design aesthetics with Glues relaxed, fun-loving

    lifestyle. It has been such a fun collaboration and a great experience for

    me to be immersed in the commercial end of the industry.

    The driven designer has also collaborated with Australian footwear label Belmore Bootmakers to complement her capsule collection.

    We share modern, refined, minimal aesthetics, which is reflected in the collaboration range, Liu says.

    It is a very beautifully edited range that promotes design and longevity. All the shoes are made by skilled craftsmen in Belmores NSW factory and available in their stores now. \
