MEAT PROCESSING TRAINING AT NERCC In an effort to rehabilitate the inmates and prevent recidivism, Northeast Regional Corrections Center (NERCC) requires the inmates to participate in work assignments, one of which is a licensed and permitted food and meat processing facility. This project created a pilot meat processing certificate training program for inmates and the NERCC. This initiative rehabilitates inmates by providing high demand job skills.
Intended Impacts:• Create sources of local and nutritious food production• Provide more opportunities for local farmers, helping bring products to local markets • Rehabilitate inmates
Related Food Charter Strategy:• Establish enterprises that can provide healthy food to nearby communities and institutions

“Minnesota doesn’t have enough
butchers or meat processors to meet

supported agriculture. This program
is a win-win for hungry communities
and workforce opportunities.”
